通过正交试验研究用废弃蛋黄粉制备高蛋白粉的工艺条件。结果表明，用废弃蛋黄粉制备高蛋白粉的最佳工艺条件为：乙醇浸提，乙醇用量为原料的3倍，温度40 ℃，间歇搅拌，处理4 h。

The processing technology of high protein powder was studied using wasted yolk powder as materials. The results showed that the best ethanol extraction conditions were as follows: the ratio of ethanol to yolk power of 1:3, temperature of 40 ℃, extraction time of 4 h and batch blending.
