Steaks were removed from loins of beef carcasses at 1, 3, 6 or 14 days post mortem for fragmentation index (MFI), Warner-Bratzler Shear Force (SF) and sensory panel tenderness evaluation. Also, after 1 day of storage, samples were removed for histological observations. Greatest improvement in tenderness, SF and MFI occurred within the first 6 days of storage. Sensory panel tenderness was correlated (P < 0·01) with SF and MFI. Average muscle fibre size was correlated (P < 0·01) with tenderness and SF at days 1 and 3, but not at days 6 and 14. Evidently, muscle fibre size is important to tenderness prior to post-mortem storage of meat and proteolysis, but becomes less of a factor in tenderness after 6 days of storage.  相似文献

为研究包装方式对牛排贮藏期间的品质、微生物数量和演替的影响,牛排分别采用50% O2气调包装(50% O2+30% CO2+20% N2)和真空包装在0~4 ℃下贮藏21 d,并检测贮藏期间pH值、肉色、微生物数量和微生物多样性。结果表明:50% O2气调包装组比真空包装具有更好的护色效果;贮藏21 d时,与真空包装组相比,气调包装组菌落总数、乳酸菌数和假单胞菌数降低;两种包装的微生物多样性均随时间延长呈现先升高后降低的趋势,且真空包装牛排比50% O2气调包装牛排具有更复杂的微生物多样性;牛排的初始微生物主要由不动杆菌属、苍白杆菌属、栖热菌属和金黄杆菌属组成,随着贮藏时间的延长,肉食杆菌属逐渐成为真空包装牛排的优势菌群,而环丝菌属、沙雷氏菌属和乳杆菌属则成为50% O2气调包装牛排的优势菌群;贮藏7~14 d是牛排中微生物种类产生变化的关键时间点;相比于真空包装牛排,50% O2气调包装牛排中的微生物群落具有更低的糖代谢和更高的蛋白质代谢能力。本研究结果明确了不同贮藏方法下牛排的品质变化和微生物的演替规律,为定向抑制牛排中的微生物、延长产品货架期提供了参考。  相似文献

Ribeye, top round, and eye of round steaks were treated for 30 min with 100% carbon monoxide (CO), vacuum packaged, and held in refrigerated storage. Instrumental color determinations (L*, a*, and b* values) were made on uncooked ribeye and round steaks every 7 days. Aerobic plate counts (APC), psychrotrophs, and lactic acid bacteria (LAB) were determined on eye of round samples after 1, 4, and 8 weeks. Initially, CO-treated steaks were more red (higher a* values) than untreated steaks. The a* values of treated steaks decreased during storage; at 6 weeks no differences existed due to CO treatment. CO-treated steaks were more yellow (higher b* values) at all storage times than untreated steaks. APC of CO-treated samples were 1 log cycle lower than control after 8 weeks in storage; LAB counts were nearly 1 log cycle lower for CO-treated samples after 8 weeks. Psychrotrophic counts were similar for control and CO-treated samples during the first 4 weeks of refrigerated storage but were nearly 2 log cycles lower for CO-treated samples after 8 weeks. These data suggest that CO-treated steaks are more red and that they have extended shelf-lives compared with untreated, vacuum-packaged steaks.  相似文献

The microbiological quality of restructured beef steaks was compared with that of conventional loin steaks. Restructured and conventional steaks were sampled before and after assignment to either a fresh meat overwrap (oxygen permeable) storage treatment for 1 wk or to vacuum packaged storage treatments for 1, 3 or 6 wk. Microbial counts were higher (P < 0.01) in restructured steaks than in conventional steaks. Except for Enterobacteriaceae and staphylococci counts, higher counts were observed for steaks from hot-boned sides than for steaks from cold-boned sides. Counts tended to be lower (P <0.01) for vacuum packaged steaks after 1 wk than for steaks packaged in oxygen permeable film. Aerobic, anaerobic, psychrotrophic, and lactobacilli counts increased (P < 0.01) for vacuum packaged steaks throughout the storage period.  相似文献

Ostrich steaks (290) were obtained from Iliofibularis muscles. For microbiological and pH determinations, samples were inoculated with Listeria monocytogenes NCTC 11994 (80 steaks) or Escherichia coli ATCC 12806 (80), then air- or vacuum-packed and stored at either 4±1°C or 10±1°C. Analyses were carried out on days 0, 3, 6 and 9 of storage. For sensory evaluation, samples (130) were air- or vacuum-packed and stored at 4±1°C or at 10±1°C. Sensory attributes (odour, colour, drip loss, texture and general acceptability) were scored by six untrained judges using an unstructured nine-point hedonic scale on eleven sampling days (0, 3, 6, 9, 12, 15, 18, 21, 24, 27 and 30). Increases in microbial counts (log(10)cfu/g) were observed throughout storage in all groups of samples for both L. monocytogenes (from 6.39±0.43-6.62±0.32 at day 0 to 8.87±0.19-9.64±0.43 at day 9) and E. coli (from 5.57±0.15-5.68-0.40 to 7.79±0.96-9.64±0.17). Gas atmosphere influenced microbial counts from day 3 of storage with lower (P<0.05) values observed in vacuum- than in air-packed samples at 10°C (L. monocytogenes) or at 4 and 10°C (E. coli). Storage temperature significantly influenced bacterial counts throughout storage, especially in air-packed samples. Lower pH values in vacuum- than in air-packed samples were observed from day 6. Both effects (gas atmosphere and temperature) influenced the hedonic scores, with higher values assigned to vacuum-packed samples for most attributes (with the exception of drip loss) and sampling days. A marked influence of storage temperature on sensorial scores was obtained in air-packaged ostrich steaks. The shelf-life (time until the average general acceptability score fell below 5) was 6 (air-packed samples), 9 (vacuum-packed, 10°C), or 12 days (vacuum-packed, 4°C). The results being reported here suggest the importance of both oxygen exclusion and storage at low temperatures to reduce microbiological risks and improve the acceptability of ostrich meat. However, the short shelf-life of this product highlights the need to keep the time between slaughter and sale to a minimum.  相似文献

Restructured steaks were manufactured with hot or cold boned beef using alginate, alginate + dried egg albumin, or salt/phosphate formulations. Raw steaks were sampled for aerobic (26° and 35°C), and gram-negative enteric counts. Cooked vacuum-packaged steaks were sampled for aerobic, gram-negative enteric, lactobacilli and staphylococci and for the presence of Salmonella, Aeromonas, Yersinia, and Listeria during 7 wk storage (2°C). No differences in counts due to formulation were found for raw or cooked steaks. Higher aerobic counts (P<0.10) were observed for raw steaks manufactured from hot-boned sides than from cold-boned sides. Aerobic counts increased (P<0.01) with storage time. Staphylococcus aureus was the only pathogen isolated from cooked steaks.  相似文献

The objective of this study was to investigate the physico-chemical properties, the microbial counts and the sensory properties' changes of foal steaks packed under various conditions. The experimental packaging systems were: (i) vacuum packaging (VP), (ii) overwrap packaging and (iii) two modified atmosphere packaging methods (MAP): high O(2) MAP (80% O(2)+20% CO(2)) and low O(2) MAP (30% O(2)+70% CO(2)). The meat was stored at 2°C during 14days and tested for pH, colour, lipid and protein oxidation, microbial counts and sensory assessment of odour, colour and appearance. Of the two MAP, overwrap and VP, both MAP were the most effective treatments for the inhibition of the total viable counts (TVC), Pseudomonas spp., psychrotrophic aerobic bacteria, lactic acid bacteria, Enterobacteriaceae as well as moulds and yeast. According to the sensory evaluation, foal steaks packed under overwrap and MAP treatments resulted unacceptable after 7days of storage, whereas the vacuum-packed meat was still acceptable. Moreover, the redness value decreased significantly (P<0.001) with all treatments during the storage time, except for the vacuum packs, which increased significantly (P<0.001). Finally, foal steaks from overwrap packaging and MAP conditions had a greater increase of TBAR'S values and carbonyl content during the storage time. High O(2) levels affected foal meat quality negatively, while anaerobic conditions extended the meat's shelf life up to 14days.  相似文献

Select beef loin pairs (n = 10) were injected (10% pump) with brine containing either 4.5% sodium-based phosphates, (CON), or 1% ammonium hydroxide treatment (AHT). Both brines also contained 3.6% NaCl and 1% Rosemary Herbalox. Steaks cut from loins were high oxygen (80% O(2)/20% CO(2)) modified atmosphere packaged, stored 4 d at 4 °C in the dark to simulate transportation, and then placed in retail display for 14 d (4 °C). On day 0, 7, and 14 of retail display steak properties were measured. Purge from AHT steaks was higher than CON (P < 0.05). Panelists were not able to visually discriminate between AHT and CON steaks through the first 6 d of retail display. After day 6, panelists rated AHT steaks higher for muscle color, percent discoloration, and overall color. Steaks from both treatments started at day 0 retail display with similar total plate counts (P > 0.05). Microbial counts increased more rapidly for AHT steaks than CON steaks (P < 0.05). AHT and CON steaks were not different in terms of lipid oxidation through day 7 retail display. By day 14 retail display CON steaks were above the threshold for consumer perception of oxidized flavors in fresh meat. However, results also indicated the AHT and CON steaks were no longer acceptable by day 14 in terms of color, were questionable in terms of microbial load, and likely were beyond their reasonable shelf life. Based on retail display properties, results indicated 1% AHT could successfully replace 4.5% SP in a meat injection brine. Practical Application: The research in this report compares steaks that have been injected with a commercial brine formulated with SP to steaks that have been injected with a brine, where the SP in the formulation are replaced with 1% AHT. Ammonium hydroxide is an USDA-FSIS approved ingredient in brines injected into fresh meats. Successful replacement of sodium phosphate with ammonium hydroxide would allow processors to significantly reduce the sodium content of injected fresh meat.  相似文献

Beef triceps brachii muscles (6 d postmortem; n= 15; muscle sections n= 45) were sectioned into 3rds and allocated to 1 of 3 treatments. The treatments were untreated (CNT), or injected at a 12% pump rate with either tap water‐only (H2O) or a solution comprising tetrasodium pyrophosphate and sodium chloride (TSPP/ NaCl) at 0.4% and 1.0% target final product weight concentrations, respectively. Each muscle (comprising all 3 treatments) was then allocated to 2, 14, or 28 d of vacuum‐packaged 1°C storage. Purge losses during storage were greatest (P < 0.05) for H2O muscles and least (P < 0.05) for TSPP/NaCl muscles. Purge losses also increased (P < 0.05) from 2 d to 14 d of storage. Steaks enhanced with TSPP/NaCl had less (P < 0.05) free water and lower (P < 0.05) cooking losses than either CNT or H2O steaks. Storage duration did not affect (P > 0.05) Warner‐Bratzler shear force (WBS) or sensory tenderness, but juiciness decreased (P < 0.05) with increased storage duration. While storage duration did not impact (P > 0.05) instrumental color characteristics, aerobic plate counts generally increased during storage. The TSPP/NaCl steaks had lower (P < 0.05) WBS values and improved (P < 0.05) sensory tenderness and juiciness characteristics compared with CNT or H2O steaks. While CNT steaks had greater (P < 0.05) L* values (lightness) than TSPP/NaCl steaks, TSPP/NaCl steaks had similar (P > 0.05) oxymyoglobin proportions (630/580 nm) and a* values (redness) as CNT steaks. These results suggest enhancement with TSPP/NaCl can improve triceps brachii yield and palatability characteristics. Increased post‐enhancement storage did not impact or worsened palatability while increasing purge losses, suggesting general deleterious effects of increased postmortem storage for this muscle.  相似文献

Five Simmentaler type calves were fed diets supplemented with 500 mg vitamin E per day and five fed control diets. Rump steaks from each carcass were PVC-overwrapped and bulk packaged in 100% CO, or 20% CO2:80% O2. Bulk packs were stored up to 42 days at 4°C and steaks displayed up to 7 days at 4°C. Bacterial counts of rump steaks from either packaging treatment were not significantly influenced during bulk storage or retail display by supplementation with dietary vitamin E. Both packaging treatments delayed bacterial growth during bulk storage. Aerobic plate counts of rump steaks stored in 100% CO2 were lower than those of rump steaks stored in 20% CO2: 80%: O2. This study showed that rump steaks supplemented with dietary vitamin E can be bulk packaged in 20% CO2: 80% O2 or 100% CO2 and stored for up to 42 days with shelf life of 4–7 days.  相似文献

Beef steaks from six Spanish cattle breeds (Asturiana de los Valles, Morucha, Parda Alpina, Pirenaica, Rubia Gallega and Retinta) were packaged under modified atmosphere (60% O(2), 30% CO(2) and 10% N(2)). Water loss, pH, thiobarbituric acid values (TBA), aerobic plate counts, lactic acid bacteria and Enterobacteriaceae counts, CIE L*a*b* colour values and the sensory properties of odour and colour were recorded before packaging (day 0) and after 5, 10 and 15 days of storage. A significant interaction (P<0.05) between breed and storage time was found for all variables, except water loss. Values of pH were between 5.3 and 5.6; maximum water loss (2.64%) was reached after 10 days of storage; aerobic plate counts, lactic acid bacteria and Enterobacteriacea counts were lower than 10(7) CFU/g, and L* increased with storage time while a* decreased (P<0.05). The maximum shelf life of beef assessed by sensory evaluation (regarding colour and odour degradation) was between days 5 and 10 in meat from Retinta breed and between days 10 and 15 in meat from the other breeds, shelf life was probably limited by lipid oxidation.  相似文献

The effect of basal dietary supplemented with vegetable oils plus vitamin E (sunflower, soybean, linseed and a basal diet control), type of packaging (MAP or vacuum), addition of natural antioxidant (grape seed, rosemary) and storage time (0, 7, 14 and 21 days) on lipid oxidation, color stability, vitamin E content, and total aerobic bacterial counts in steaks of Longissimus thoracis was studied. The triple interaction diet × time × packaging affected oxidative stability, redness and yellowness of the meat. TBARS values did not increase with time in vacuum-packaged samples for all dietary treatments. However, samples from MAP and control showed the highest TBARS values after 21 days of storage (0.72 mg MDA/kg of meat, P < 0.05). Both exogenous antioxidant extracts and MAP maintained low total aerobic counts in steaks until the 21st day. Calves should be fed a diet supplemented with L-VE, stored in MAP and treated with grape seed extract to extend the shelf life of their meat.  相似文献

The effects of electrical stimulation, kidney fat removal time, tenderloin removal time, and storage and packaging treatment on tenderness and retail display characteristics of beef tenderloin steaks were studied. Electrical stimulation increased overall desirability scores on days 2 through 4 of retail display. Steaks from sides that had kidney and pelvic fat removed prior to chilling had higher Warner-Bratzler shear force values, darker muscle color and higher retail evaluations for overall desirability on days 2 through 4 of display than did steaks from conventionally dressed sides. Tenderloin steaks that were vacuum packaged and stored 14 days had higher bacterial counts, more uniform lean color and less visual purge in the retail package than did steaks retail displayed immediately after tenderloin removal.  相似文献

Colorimetric measurements were recorded for sirloin steaks from control and vitamin E-supplemented (370 I.U./animal/day) Holstein steers. Chroma and Hunter ‘a’ values of steaks from the supplemented group were significantly greater (P&0.01) on days 2, 4, 6, and 8 of 4°C storage. Color difference (ΔE) between the two treatment groups increased from days 0 to 6 and decreased between days 6 and 8.  相似文献

Beef strip loins (n=30) were divided into halves, and each half was assigned randomly to one of four injection enhancements: (1) non-enhanced control, (2) 3% pyruvate, (3) 3% succinate, and (4) 3% lactate. Steaks were cut and packaged in either vacuum, high oxygen (80% O(2)/20% CO(2)), or PVC. Color and lipid oxidation were measured on days 0, 5, and 13 of storage at 1°C. Enhancement had a significant effect on steak pH. On day 13 of storage, steaks enhanced with lactate, pyruvate, and succinate were less discolored (P<0.05) than control steaks in PVC and high oxygen. Enhancement darkened steaks (P<0.05) compared with control steaks. Succinate had the greatest and pyruvate had the least metmyoglobin-reducing activity (P<0.05). Lactate and pyruvate decreased the TBARS values of steaks packaged in PVC (P<0.05) whereas pyruvate was most effective for lowering lipid oxidation in high-oxygen packaging.  相似文献

SUMMARY— Boneless, trimmed steaks (U. S. Good) from the longissimns dorsi muscle (loin) and semimembranosus muscle (top-round) and conventionally cut loin steaks were removed 8 days post-mortem, quick-frozen and stored at −18°C to −23°C for three storage periods, 0, 6, and 9 months. Steaks were sampled at each storage period and cooked to an internal temperature of 70°C in a microwave oven and electric range. Quality was evaluated by chemical tests, sensory evaluations and cooking loss data.
Storage up to 6 months had little effect on loin steaks with the exception of TBA values, but significant changes occurred between 6 and 9 months. Loin steaks had increased cooking losses and decreased juiciness scores, percent moisture, and juice content. TBA values increased with each storage period. Top-round steaks at the 9-month period showed a decrease in collagen content and juiciness and flavor scores, and an increase in TBA values. Storage up to 9 months did not influence tenderness in either muscle.
Conventionally broiled loin steaks had higher palatability scores, cooking losses, percent moisture, percent total proteins, and lower percent total lipids than did microwave cooked loin steaks. Electronically cooked top-round steaks had higher total cooking losses and percent total proteins and lower collagen values than did conventionally roasted top-round steaks.
The qualities of boneless loin steaks did not differ significantly from those of conventionally cut loin steaks when compared at each storage period.  相似文献

Strip loin steaks were removed from steer carcasses fed on; (1) wheat-rye-grass pasture only, (2) wheat-ryegrass pasture followed by grain feeding, or (3) grain feeding. The steaks were analyzed for sensory panel attributes, Warner-Bratzler shear force and storage and display life. Steaks from pasture-fed steers were similar (P>.05) to steaks from grain-fed steers in sensory tenderness and connective tissue amount. Steaks from pasture-fed steers had similar (P>.05) shear force values to steaks from grain-fed steers. Off flavor incidence was greater (P<.05) in steaks from steers on pasture only than from steers on grain and pasture/grain. No differences (P>.05) due to treatment were found in visual color and discolor scores. The C.I.E. a* values showed steaks from steers fed pasture only and pasture/grain retained higher (P<.05) redness values than steaks from steers grain-fed during the 10 day display period. The results indicate pasture finishing systems could be as effective in maintaining beef tenderness and color shelf-life characteristics as grain finishing systems.  相似文献

The objective of this study was to investigate the effect of antioxidant active system on physico-chemical properties, the microbial counts, lipid and protein stability and the sensory properties' changes of foal steaks during storage time. The experimental packaging systems were: (i) control group was packaged without active film, (ii) ATOX group was packed with active film containing a 2% of an oregano essential oil and (iii) ATGT group was packed with active film containing 1% of a green tea extract. Samples were filled with 80% O2/20%CO2 atmosphere and displayed under illumination at 2 °C for 14 days. Microbial populations were reduced up to 3.60 log CFU/g on day 14 of storage with the most pronounced effect being achieved by green tea film. Active films with oregano led to a significant (P < 0.001) inhibition of metmyoglobin formation. The use of oregano active film resulted in a decreased lipid and protein oxidation of foal steaks. Active films with oregano were significantly (P < 0.05) more efficient than those with green tea extended fresh odour and colour from 7 to 14 days compared to the control.  相似文献

To determine the depth of pathogen dispersion and the ability of pathogens to survive in enhanced beef products and spent marinade, beef inside skirt steaks and tri-tip roasts were vacuum tumbled with two commercial marinades. The marinades were inoculated with Escherichia coli O157:H7 and Salmonella Typhimurium, resulting in an approximate count of 5.2 log CFU/ml. Both inside skirt steaks and tri-tip roasts were vacuum tumbled for 1 h and sampled immediately after tumbling (day 0), or were vacuum packaged, stored (ca. 4°C), and sampled on days 7 and 14. Samples of the spent marinade were taken after tumbling (day 0) and on days 3 and 7. For both marinades, Salmonella Typhimurium and E. coli O157:H7 were dispersed throughout the inside skirt steaks during vacuum tumbling. Although Salmonella Typhimurium and E. coli O157:H7 for the skirt steaks were still detectable after 14 days of storage, the log values were lower than those on days 0 and 7. For the tri-tip roasts, the pathogen distribution varied, depending on the thickness of the roasts, and pathogens were detectable on days 0, 7, and 14. The spent marinade sampled on days 0, 3, and 7 showed that the pathogens survived at refrigerated temperatures. Because pathogens can transfer to the interior of beef inside skirt steaks and tri-tip roasts when vacuum tumbled with contaminated marinade and survived during refrigerated storage, establishments should consider the potential food safety risks associated with reuse of marinade during the production of vacuum-tumbled beef products.  相似文献
