This study addressed determinations of the fatty acid profile of muscle, liver and mesenteric fat in European perch originating from natural aquifers and from intensive rearing in a closed circuit on an artificial feed mixture. The qualitative composition of fatty acids was identical in both groups of perch, except for 16:4 acid identified exclusively in the reared perch. The study demonstrated equal concentrations of saturated (SFA) and unsaturated (UFA) fatty acids in muscles, liver and mesenteric fat of both groups of perch. The wild fish, however, were characterised by lower concentrations of monoenoic (MUFA) and higher concentrations of polyenoic (PUFA) fatty acids. Analyses also demonstrated similar contents of n − 3 PUFA in muscles and their diversified concentrations in liver and mesenteric fat (higher in the wild fish), as well as a higher content of n − 6 PUFA in all samples. The lower content of MUFA in the wild perch was mainly due to lower concentrations of cis18:1 n − 9 and 20:1 n − 9, whereas the higher content of n − 3 PUFA was due to a higher concentration of DHA, and the higher content of n − 6 PUFA was due to a higher concentration of arachidonic acid (AA). The biggest differences between wild and reared perch were detected for AA. The wild and reared perch were also found to differ in the n − 3/n − 6 ratio (higher in the reared fish) and to have similar values for atherogenic index (AI) (except for liver and mesenteric fat) and thrombogenicity index (TI).  相似文献

This study was carried out to determine the proximate composition, fatty acid profile and biometric data for farm fish species Labeo rohita, Cirrhinus mrigala, Catla catla raised under identical conditions. The analysed fish species were found as source of high polyunsaturated fatty acids with low fat high protein. Fat content of the fish fillets was in range 2.57–3.11 g/100 g. Whereas fat content for feed was 14.90 g/100 g. The protein level for the three fish ranged from 20.00–23.57 g/100 g and in feed it was estimated in the range of 67.70 g/100 g. The palmitic acid and stearic acid were the main saturated fatty acids (SFA), oleic acid was the predominant MUFA while the docosahexanoic acid and eicopentanoic acid were the major PUFA. The percentage of DHA exceeded that of EPA in all fish species analysed. The n−3/n−6 ratio ranged from 1.69–1.91. PUFA/SFA ratio was much higher in L. rohita (1.40) due to abundance of n−3 PUFA, particularly DHA.  相似文献

Heavy metals (Pb, Cd, Cr, Co, As, Ni) were analysed in cooked sea bass (Dicentrachus labrax). Different cooking treatments were used (baking, grilling, microwaving and frying). The results obtained were statistically compared with those of raw fish. The Co concentrations were below limits of detection in all samples (<0.05). Furthermore, Cr in fried samples and Ni in raw fish were not detected. Cd was only detected in microwaved samples. The Pb concentrations of microwaved and baked fish were significantly decreased. The As concentrations of fried and microwaved samples were significantly increased. The Cd and As concentrations of the fillets subjected to microwave cooking were 0.741 and 1.41 mg/kg, respectively. However, the As concentration was also significantly increased in fried samples. This value was 2.66 mg/kg. Microwaving and frying are not suitable for sea bass.  相似文献

Chemical composition, nutritional value and other physico-chemical parameters of sea bass from two different geographical areas (Greece and Spain) and from aquaculture and wild origin were studied. Farmed and wild fish differ in proximate composition, colour, and especially in texture, fatty acids and free amino acids (FAAs) profiles. Flesh of wild fish was firmer, which could be attributed to their lower fat content and higher level of activity. Cultured fish showed a higher content of monounsaturated fatty acids and lower of saturated and polyunsaturated fatty acids (PUFAs). Within the PUFA group, n−3 fatty acids were predominant in wild sea bass, while n−6 were more abundant in farmed fish. Some FAAs related to the characteristic flavour of fish, such as glutamic acid, aspartic acid, alanine, and glycine were more abundant in cultured sea bass. No differences between fish from both farms were found, due to the similar composition of the feed used.  相似文献

The fatty acid (FA) profiles of 11 commercially important fish species from the sea of Southern Italy (Mar Grande Sea) were investigated.The results showed significant differences among the fatty acid profiles of the examined fish (p < 0.05). A relatively high proportion of n − 3 polyunsaturated fatty acids (PUFAs), of which more than 70% were accounted by docoesahexaenoic acid (DHA) and eicoesapentaenoic acid (EPA) in salema, bogue, common two-banded seabream and sand smelt, and lower proportions of oleic acid (C18:1n − 9) and palmitic acid (C16:0) also dominating. The percentages of EPA and DHA were between 5.03-8.61% and 9.85-17.39% of total lipid, respectively.The results showed that the fish examined are a good source of n − 3 PUFAs, resulting in a very favourable n3 - n6 ratio, especially in salema, sand smelt, common two-banded seabream and picarel.  相似文献

The objectives of the present study were to determine the effects of feeding a fishmeal-based diet on color attributes and lipid oxidation in sunshine bass (Morone chrysops × Morone saxatilis) fillets during retail display. A balanced diet containing 30 percent fishmeal (FM) or a diet containing poultry byproduct meal as a complete replacement of fishmeal (PB) was fed to sunshine bass for fifteen months. Harvested fish were filleted, overwrapped with polyvinyl chloride film and stored at 2 °C (REF) or over ice (ICE), under an illuminated retail display. Samples (n = 6) were analyzed after 0, 3, 6, or 9 d storage for color attributes (CIE L, a, b, hue angle and chroma), thiobarbituric acid-reactive substances (TBARS), and pH. TBARS and pH increased (P < 0.05) during storage, indicating progress in lipid oxidation and protein changes. FM fillets demonstrated lower (P < 0.05) a (redness) value and greater (P < 0.05) hue angle than PB fillets. Since consumer acceptance of sunshine bass is dependant upon its white flesh, fishmeal supplementation could be used as a dietary strategy to improve fish marketability.  相似文献

The total fat contents and the fatty acid compositions of three common Mediterranean fish, namely sardine (Sardina pilchardus), anchovy (Engraulis encrasicholus) and picarel (Spicara smaris) were determined at bimonthly intervals for a one-year period. The purpose of this work was to study the seasonal variation of the fatty acids in the three fish that are some of the best sources of n − 3 fatty acids. The fat and fatty acid content of the investigated fish species show a significant seasonal dependency. Two of the fish (anchovy and picarel) have the highest fat content during the late winter – spring period. On the other hand, sardine shows the highest fat concentrations during the spring-early summer period. The fish that showed the highest variation in fatty acid composition was the anchovy. The sardine was found to be the best source of n − 3 fatty acids during the one-year period (35.35 g/100 g fatty acids). Finally the picarel had the highest oleic acid content (on average, 13.89/100 g fatty acids).  相似文献

Fatty acid content and sensory characteristics of meat from light lambs fed three diets supplemented with different sources of n−3 fatty acids (fish oil, extruded linseed and extruded linseed plus microalgae) and a control diet during refrigerated storage have been studied. The meat from lambs fed linseed diets had the highest levels of C18:3 n−3, while animals fed fish oil had the highest long-chain n−3 polyunsaturated fatty acids (PUFA). Thus, 100 g of meat from lamb fed the fish oil diet provided 183 mg of long-chain n−3 PUFA, representing 40% of the daily recommended intake. The levels of n−3, n−6 and long-chain n−3 PUFA decreased during a 7-day storage period. The meat from lambs fed the fish oil diet had high scores of fish odour and flavour and rancid odour and flavour and the lowest overall liking. Rancid odour and flavour increased after storage, mainly in supplemented groups.  相似文献

The present study evaluated the combined effect of Modified Atmosphere Packaging (MAP) using two different gas mixtures (40% CO2/50% N2/10% O2; treatment M1, 60% CO2/30% N2/10% O2, treatment M2), and thyme oil (0.2% v/w, T) used as a natural preservative, on the quality and shelf life extension of fresh filleted sea bass, product of organic aquaculture, during refrigerated storage (4± 0.5 °C), for a period of 21 days. Aerobically packaged sea bass fillets (A) were used as control samples. The dominant bacteria in the microflora of sea bass fillets, irrespective of treatment, were the pseudomonads and the H2S-producing bacteria while lactic acid bacteria were also part of the dominant microflora. Total viable counts for fresh sea bass fillets stored aerobically exceeded 7 log CFU/g after 7 days, while treatments A+T, M1, M2 and M2+T reached the same value on days 9, 10, 12 and 19, respectively. Among the chemical indices determined, TBA values were within the good quality limits (2–4 mg MDA/kg), during the sensory shelf lives of sea bass samples, irrespective of treatment. TVB-N proved to be a suitable index for the spoilage of sea bass fillets stored at 4 °C. Samples A and A+T, M1, M2, M2+T exceeded the proposed upper TVB-N acceptability limit (10 mg N/100 g) on days 6, 8, 9, 13 and 17 of storage respectively. TMA-N values of the samples A, A+T and M1, M2, M2+T exceeded the proposed limit (4 mg N/100 g) on days 6, 9, 9–10, 13 and 19 of storage, respectively, and correlated well with the microbiological data, indicating that along with TVB-N, TMA-N may serve as a useful index for sea bass fillets spoilage. As regards sensory evaluation, the presence of thyme oil proved to improve the sensory quality of sea bass fillets when used in combination with MAP2, providing a shelf life of 17 days as compared to 6 days of the control samples.  相似文献

This study investigated the possibility of using near infrared spectroscopy (NIRS) for the authentication of raw and cooked freeze-dried rainbow trout (Oncorhynchus mykiss) fillets. Latent variable models applied on the spectral data were developed and used to estimate proximate composition, fatty acid profile, fillet yield and cooking loss, and to classify the available dataset by the rearing farm and genetic strain of each sample.Results showed that NIR spectra can be used both to accurately estimate several chemical properties and to classify samples by rearing farm. In order to classify samples by genetic strain instead, a data fusion approach in which color and mechanical information were combined with spectral data was used. No major differences were observed between the results obtained from raw freeze-dried fillets and those obtained from cooked freeze-dried fillets, except for the estimation of certain chemical constituents of interest such as C22:6 n  3 and polyunsaturated fatty acid content, both of which were better estimated from cooked freeze-dried fillets.  相似文献

To investigate the feasibility of using the NIRS methodology to analyse the fatty acid content of rabbit meat and to discriminate between conventional and organic production, the meat of a hind leg of 119 rabbits was scanned between 1100 and 2498 nm and 104 samples were sent to the laboratory for reference analysis of fatty acids by gas chromatography. A commercial spectral analysis program (WINISI-2, v. 1.04) was used to process the data and to develop chemometric models. The better calibration equation for each fatty acid, leading to a higher determination coefficient of cross-validation (r2) and low standard error of cross-validation (SECV) was retained. Prediction of linoleic, palmitic, palmitoleic and oleic acid content was excellent or good (r2 between 0.90 and 0.70); prediction of arachidonic, stearic, α-linolenic and eicosatrienoic FA has r2 between 0.69 and 0.50. However, miristic, vaccenic, icosaenoic and eicosadienoic FA are problematic to predict. When fatty acids were grouped, the r2 of the calibration equations were: 0.85 for saturated FA, 0.83 for MUFA, 0.92 for PUFA and 0.91 for n − 6 FA, indicating excellent or good prediction. Prediction of α-linolenic FA (r2 = 0.59) needs more precision. The obtained equations have been applied for predicting meat fatty acid composition of both groups of production systems, conventional and organic, for an other 52 rabbit meat samples (2 × 26). Meat of the organic source had lower (p = 0.000) monounsaturated FA (30.54% vs. 34.64%) and higher (p = 0.019) polyunsaturated FA (27.28% vs. 23.66%) than rabbit meat from the conventional system, while the saturated FA content was similar (42%) in both groups. The discriminant model correctly classified (98%) between conventional or organic produced rabbit meat.  相似文献

In this study the effects of soybean and linseed oils on chemical and sensory characteristics of fillets were evaluated in the freshwater fish tench (Tinca tinca L.). Five experimental diets, differing only in the relative amount of soybean and linseed oil, were formulated and the experiment was conducted on 360 sub-adult tench for 12 weeks. The fatty acid composition of muscle reflected that of the diets and significant correlations were observed. Diets containing higher amounts of n − 6 fatty acids were responsible for an increased level of n − 6 fatty acids in the fish flesh. Consequently, an increase in the relative amount of n − 6-derived volatile aldehydes was also observed. These latter compounds are generally reported to contribute negatively to the general aroma of fish muscle and, consistently, the results of the sensory analysis showed a high value for the “off-flavour” attribute for fish fed the diet containing only n − 6-rich soybean oil.  相似文献

In order to establish an effective freezing method for quality control, the present research evaluated the effects of the different freezing treatments on the quality of Japanese sea bass (Lateolabrax japonicas) over a period of 20 days storage at 0 ± 1 °C. Fish pH value, total volatile basic nitrogen (TVB-N), K-value, trimethylamine nitrogen (TMA-N), drip loss, hardness, color, biogenic amines, microbiological characteristics were measured. Sea bass fillets were stored at −18 °C (T1), −55 °C for 24 h and then −18 °C (T2), −55 °C (T3) for 3 months prior to refrigerated storage. T2 showed lower TVB-N, pH value, biogenic amines and drip loss than T3 and T1 did. Significant lower value of bacterial loads, b* value and hardness were observed in T1, T2 and T3 than those of control group. No significant differences were observed among T1, T2 and T3 for TMA-N and a* value. The study demonstrated that Japanese sea bass fillets treated with −55 °C for 24 h and then −18 °C up to 3 months maintain better quality during refrigerated storage.  相似文献

The effects of dietary fatty acids and seasonal variation on the fatty acid profiles of farmed and wild sea bream (Sparus aurata) and sea bass (Dicentrarchus labrax) were determined by analysis of their fillets. Farmed sea bream and sea bass were fed on the same commercial feeds all year. Fatty acid profiles in the fillets reflected the fatty acid profiles of the commercial feeds. The predominant fatty acids in the trial feeds, fillets of farmed and wild sea bream and sea bass were 16:0, 18:1n‐9, 18:2n‐6, 20:5n‐3 and 22:6n‐3. The fatty acid profiles in the fillets of farmed sea bream and sea bass did not differ (P > 0.05) except in the winter season compared with those of their wild counterparts. However, the content of eicosapentaenoic acid (20:5n‐3), docosahexaenoic acid (22:6n‐3) in the fillets of the farmed and wild sea bass were significantly (P < 0.05) higher than the farmed and wild sea bream. The wild sea bream had significantly (P < 0.05) higher total saturated fatty acid and monounsaturated fatty acid (MUFA) levels, and lower total n‐6 and n‐3 polyunsaturated fatty acid (PUFA) levels in winter than in the summer and spring seasons. Similarly, in the fillets of wild sea bass, total n‐3 PUFA levels were significantly (P < 0.05) lower, and the MUFA levels were higher in winter than in the other seasons. These results indicate that the farmed fish fillets were good sources of n‐3 PUFA in each of the three seasons. However, wild fish were good sources of n‐3 PUFA in the spring and summer.  相似文献

Juvenile, red hybrid tilapia were fed diets containing cod liver oil (0%, 4%, 8%, 12% of total diet) substituted against corn oil. After 10 weeks, no significant differences between treatments were seen in weight gain, specific growth rate, feed conversion ratio, whole body or dorsal muscle (fillet) proximate composition. Gas chromatography revealed significant differences in the total n-3 content and fatty acid profiles of dorsal muscle. The total n-3 content of dorsal muscle increased from 7.6% to 18.6%, total n-6 content fell from 37.5% to 12.9% and docosahexanaenoic acid increased from 5.8–16.1% of total fatty acids, in fish fed 0% and 12% fish oil, respectively. The retention of eicosapentaenoic acid was low in all dietary groups, possibly indicating selective use as a substrate for β-oxidation. The results demonstrate the potential to enhance the total n-3 fatty acids and docosahexaenoic acid in tilapia fillets by increasing dietary fish oil.  相似文献

Twenty-five mature Small Tail Han ewes were used to investigate the effects of supplemental oilseeds in the diet (sunflower seed, safflower seed, rapeseed, and linseed) on fatty acid composition in different tissues (longissimus lumborum muscle, tail fat, subcutaneous back fat and kidney fat). Averaged over tissue, safflower and sunflower seed was most effective (P < 0.05) in enhancing the concentration of conjugated linoleic acid compared to rapeseed, linseed, and control (1.35% and 1.15% vs. 0.80%, 0.80%, and 0.75%, respectively). Linseed supplemented ewes had lesser n−6/n−3 value (2.48, P < 0.05) compared to sunflower and safflower supplemented ewes (6.12 and 3.90, respectively). Fatty acid composition for most major fatty acids differed among tissues (P < 0.05) but tissue differences varied depending on oilseed supplement (P < 0.05). Proportions of conjugated linoleic acid were greatest in tail fat (1.54% vs. 0.82%, 0.79% and 0.70% for kidney, back, and muscle fat, P < 0.05) as were total unsaturated fatty acids (49.1% vs. 42.4%, 36.7% and 33.4% for muscle, back, and kidney fat, P < 0.05) and tail fat was the most responsive tissue to improvement in fatty acid profile through supplementation. Beneficial fatty acid content of tissues can be increased by oilseed supplementation, but the magnitude of increase varies according to tissue.  相似文献

European sea bass (Dicentrarchus labrax) is one of the finfish species preferred by the consumer, who requires fish freshness to be maintained during distribution and retail. For this reason, the purposes of this study were to define: the shelf life at three storage temperatures (−0.5, 4.8 and 16.5 °C) by applying both chemical (TVB and TBA assays) and olfactometric (e-nose) method; the actual time-temperature exposure conditions during marketing; the prediction of remaining shelf life in the commercial chain, on the basis of time-temperature history data and on appropriate integration routine. Shelf life study revealed the efficacy of chemical markers and electronic nose in describing the freshness decay and in defining a freshness threshold. Freshness of sea bass was kept for about 8 days for fish preserved in melting ice (−0.5 °C), 4 days at 4.8 °C and about 1 day at 16.5 °C. When fresh European sea bass was purchased, 9 out of 10 times the remaining shelf life was more than 55% at an average temperature of 1.19 °C. Therefore, the freshness of fish can be assured for 3-4 days in commercialization. A joint effort (sales point management and consumer advertising) could reduce the exposure temperature by 1-2 °C and justify an extension of the shelf life to 2-3 days after purchase.  相似文献

A total of 72 crossbred [(Norwegian Landrace × Yorkshire) × Duroc] male and female growing-finishing pigs were restrictedly fed diets containing fish oil to study the fatty acid composition of Musculus longissimusdorsi and sensory quality of belly and neck. Six diets were used: two low-fat diets with or without 0.5% fish oil added, and four medium-fat diets with palm kernel oil to fish oil in ratios given as % inclusion: 4.1:0.0, 3.9:0.3, 3.6:0.5 and 3.4:0.7. Feeding fish oil gave a dose-dependent response between fatty acids in the diets and in the M.longissimusdorsi and increased the level of very long chain n−3 fatty acids, especially the C22:5n−3 (DPA). A more efficient n−3 fatty acids deposition was obtained when given as a medium-fat diet rather than the low-fat diet. Female pigs had a significant higher percentage of monounsaturated fatty acids and C18:1 than males suggesting a gender related difference in the delta-9-desaturase activity. No significant differences were found in sensory attributes for short-term stored neck and belly. For pigs fed the highest level of fish oil (0.7%) long-term stored (12 months at −80 °C, 6 months at −20 °C) belly showed a slight increase in fish oil flavour. After warmed-over treatment, fish oil odour and flavour as well as rancid flavour were increased in this group. The results suggest levels of dietary fish oil up to 0.5% produce a healthier meat fatty acid composition, without negative effects on sensory attributes, even in long-termed stored belly.  相似文献

Effects of carotenoid sources on pigmentation, sensory properties and fatty acid composition of rainbow trout (Onchorhynchus mykiss) were investigated. The fish (120.51 ± 0.75 g) were fed with diets containing 1.8% marigold flower, 5% red pepper, 70 mg kg−1 commercial astaxanthin and compared with a control group for 60 days. Commercial astaxanthin provided the highest carotenoid accumulation in the fish, and this was followed by red pepper and marigold flower (p < 0.05). Dietary carotenoid sources did not significantly affect fatty acid composition of the fish fillets. Trout muscle coloured with commercial astaxanthin was more preferred than the others by the sensory panellists.  相似文献
