In this paper, the changes in the composition of a red wine obtained from Tempranillo grapes (Vitis vinifera L.), stored from 12 to 24 months in bottles were studied. The wine was previously aging for 21 months in barrels made of Spanish oak wood (Quercus spp.). The changes of chromatic data, global polyphenolic families assessment (polyphenols, catechins, proanthocyanidins and anthocyanins) and individually polyphenols by HPLC during their storage time in bottles were studied and compared with these of the same wine aged in barrels made of French oak and American oak and stored in bottle for 24 months. Samples of wines obtained after 12 months in bottle were also compared with those after 24 months. The stepwise discriminant analysis with data of chromatic parameters and global polyphenolic families indicates that the wines aged in Spanish and French oak wood barrels, after 24 months stored in bottle, have similar characteristics, but they are significantly different to those of wines aged in barrels made of American oak wood. Regarding the analysis of individually non-anthocyanic polyphenols, discriminant analysis shows that wines stored for 24 months in bottle, aged in barrels made of Spanish, French and American oak woods, show overlapping results, while those from wines after 12 months in bottle are more dispersed. The discriminant analysis carried out on anthocyanidin concentrations of wines stored 24 months in bottles has shown three groups according the kind of wood used, indicating that wines aged in Spanish and French oak barrels are much more similar in anthocyanidin concentrations than those aged in the American barrels.  相似文献

The oenological quality of Spanish oak wood from Navarra (Quercus petraea Liebl.) in relation to French wood of recognised quality in cooperage has been evaluated. We have studied the effects of the Spanish wood on wine evolution during ageing, in regards to chromatic characteristics, polyphenols, and volatile compounds related to oak wood, in three different mono-varietal wines (cv. Tempranillo, cv. Cabernet Sauvignon and cv. Merlot) from the Origin Denomination Navarra. The results were compared with those obtained for the same wines aged in French oak barrels from central regions of France, obtained from five different French and Spanish cooperages.  相似文献

The objective of this study was to check whether micro-oxygenation (MO) could mimic oak barrel ageing as regard the effect on wine colour. A red wine was submitted to micro-oxygenation for three months while another lot from the same wine was matured in oak barrels for three or six months. After these times, oak-matured and micro-oxygenated wines were bottled and analyzed six months later. The chromatic characteristics of these wines were also compared with those of a control wine that remained in a stainless steel tank all the time. Anthocyanins and anthocyanin-derived compounds were studied by LC–ESI-MS. Monomeric anthocyanins and other compounds including direct anthocyanin–flavanol adducts, ethyl-linked anthocyanin–flavanol compounds, and pyranoanthocyanins were detected. The application of MO for three months produced wines with a lower concentration of monomeric anthocyanins and a higher concentration of vitisin-related pigments than the control wine, the oak mature wines showing similar results than MO wines when aged for the same period of time. Differences were also observed in the chromatic characteristics, the micro-oxygenated and the oak matured wines showing a higher colour intensity than control wine. However, after six months in bottle differences were found between the micro-oxygenated wines and oak matured wines, the latter showing a more stable colour, probably due to the beneficial effects of compounds extracted from the wood (e.g. ellagitannins or wood aldehydes).  相似文献

Wine aging in barrels is carried out to increase stability and achieve more complex aromas. In the last few years, however, the practice of macerating wine with small fragments of toasted oak (chips) has become increasingly common. This conveys similar tastes, aromas, and wooden notes to the wine as those obtained with traditional barrel aging, but much faster and at a fraction of the cost. Without proper regulation, this could lead to fraud if wine macerated with chips is offered as barrel aged wine.In the present study, 75 volatile compounds have been determined by applying gas chromatography–mass spectrometry (MS) and flame ionization detection (FID). It has been found that compounds directly related to the wood have greater discriminative power for telling apart wines aged in barrels from those macerated with oak fragments, but no single compound permits flawless classification. Therefore, we have studied the effect of the addition of oak fragments of different origins, different oak types, different formats and subjected to different toasting processes on a set of 231 samples from 6 Spanish Denominations of Origin wines (DOs), and compared them to those same wines aged in oak barrels. In light of the results, we have developed a set of criteria which allows distinguishing with high degree of accuracy between wines which have been aged in barrels and those macerated with oak fragments. The application of these criteria to different wines allows correct classification in over 90% of cases.  相似文献

The influence of oak origin (French or American oak), volume (220, 500 and 1000 l barrels) and age of the barrel (new or used) on the colour and sensory characteristics of a red wine, after 6 months of maturation, was studied. The colour of the wines is characterized by the red, yellow and blue percentages, total polyphenols index, free anthocyanins, polymeric anthocyanins, colour density, hue, tannin content and HCl index. The results of a multivariate analysis of variance showed that colour evolution is faster in small, new American barrels than in large, used barrels or in French barrels. This evolution towards a more stable colour is manifested by a higher content of polymeric anthocyanins, hue and HCl index and lower percentage of red colour. The sensory analysis also reflects these results: the samples obtaining higher scores, at this stage of maturation, are those aged in small, new American barrels. This study provides specific information about the influence of storage in bottle and in 225-L barrels made from oak (new and used for 1 year) and chestnut wood on color indexes, spectrophotometric evaluable polyphenols, anthocyanins, phenolic acids and gustative attributes of three monovarietal red wines (Piedirosso, Cabernet Sauvignon and Merlot). The results of the analysis of variance show that wood type has a significant influence on chromatic characteristics, on vanilline reactive flavans, on low molecular weight phenolics and on astringency of wines. The effect depends on the type of wine. Therefore, both traditional and alternative wood containers could be used as an instrument to regulate the polymerization, oxidation and copigmentation reaction of wine phenolics and the sensory properties of red wine. The maturation in chestnut wood could be an interesting challenge to widen the supply of red wines maturated in wood, but its use needs more care than oak.  相似文献

The aim of this study was to evaluate the similarities or differences in the phenolic composition and the sensory characteristics between wines traditionally aged in new French and American barrels for different periods of time, and wines aged for 30 days with different kinds (different geographical origin al toasting degree) of oak chips. This study was carried out with two grape varieties, Mencía and Tinta del País, and in two consecutive vintages. The results obtained indicated that it was not possible to obtain wines aged with chips with sensory characteristics similar to those aged for a long time in new barrels, independently. However, the results showed that the use of oak chips could be a good alternative for elaborating young wines with slight olfactory and gustative wood notes quite similar to wines aged in new barrels for short periods of time (about three months).  相似文献

Micro-oxygenation (MOX) was applied to a red wine for 5 months following the end of alcoholic fermentation and then both a non-oxygenated control wine and the micro-oxygenated wine were matured in oak barrels or bottles. The concentration of anthocyanin and anthocyanin-derived compounds and the chromatic characteristics of the control and micro-oxygenated wines after the maturation period were studied. Anthocyanin and anthocyanin-derived compounds composition were determined by liquid chromatography-mass spectrometry; and, together with monomeric anthocyanins, compounds including direct anthocyanin-flavanol adducts, ethyl-linked anthocyanin-flavanol compounds, and pyranoanthocyanins were identified. The results showed that the improvements in the chromatic characteristics obtained by applying the MOX technique to Monastrell wines were maintained after an aging period in bottle or barrel. The color intensity of wines increased during maturation in oak barrels, whereas the color of the bottled wines decreased, although MOX wines always showed higher color intensity than the respective control wines. Bottled wines also showed a higher increase in tint and a lower quantity of compounds resistant to SO2 discoloration than oak matured wines, indicating that the formation of these compounds is favored by the oxidative conditions in oak barrels.  相似文献

When it comes to deciding about the length of time for ageing wine in barrels it is necessary to take into account several factors such as wine composition and characteristics of barrels. Adapting wood to wine is not an easy matter. Ageing duration is highly variable depending on a wine's origin, type and quality. The aim of this study is to investigate the behaviour of new barrels and once-used barrels depending on the ageing period of wine. From the results obtained it can be seen that for ageing wine during a short period (6-9 months), there was quite a big difference in the concentration of most of the oak wood compounds between wine aged in new barrels and wine aged in once-used barrels. However, due to the chemical or biochemical transformations of certain compounds from oak wood in wine over time, their concentration in long-term ageing (12-15 months) was similar for both wine aged in new barrels and in once-used barrels. The compounds which became more exhausted from barrel use were, furanic aldehydes, phenolic alcohols, phenolic aldehydes, and oak-lactones.  相似文献

To understand effects of using oak barrels on the astringency, bitterness and color of dry red wines, phenolic reactions in wines before and after barrel aging are reviewed in this paper, which has been divided into three sections. The first section includes an introduction to chemical reactivities of grape-derived phenolic compounds, a summary of the phenolic reactions that occur in dry red wines before barrel aging, and a discussion of the effects of these reactions on wine astringency, bitterness and color. The second section introduces barrel types that determine the oak barrel constituents in wines (primarily oak aldehydes and ellagitannins) and presents reactions between the oak constituents and grape-derived phenolic compounds that may modulate wine astringency, bitterness and color. The final section illustrates the chemical differences between basic oxidation and over-oxidation in wines, discusses oxygen consumption kinetics in wines during barrel aging by comparing different oxygen consumption kinetics observed previously by others, and speculates on the possible preliminary phenolic reactions that occur in dry red wines during oak barrel aging that soften tannins and stabilize pigments via basic oxidation. Additionally, sulfur dioxide (SO2) addition during barrel aging and suitability of adopting oak barrels for aging wines are briefly discussed.  相似文献

Studies were made of changes in concentration of oak-wood-derived volatiles and the evolution of esters in red wine during storage in twice-used French oak barrels. Wine samples were taken after 8, 10, 12, 15, and 18 months maturation in the barrels. Results showed that most of the volatile compounds extracted from the wood (furanic compounds, volatile phenols, lactones) reached maximum concentration between 10 and 12 months of barrel storage. After 18 months of maturation many of the compounds showed concentrations similar to those found after 10 to 12 months. However, the concentrations of furfural, 5-methyl furfural, furfuryl alcohol, coniferaldehyde, acetovanillone and phenol in wines aged for 18 months were lower than those reached after 10 to 12 months. The concentration of the ethylphenols increased right up to 18 months of ageing, which can only have a negative impact on the quality of the wine. There were few modifications in the concentration of esters, except for ethyl lactate which reached peak concentration after 12 months maturation and decreased thereafter.  相似文献

The evolution of a red wine, Cigales appellation in origin, was studied during its storage in three different aging systems (barrels, chips, and staves) made of different kinds of oak wood (American, French, and Hungarian). The results obtained were analyzed in order to determine the content of anthocyanins in wine according to the aging system used. The studied variables were monoglucosides of delphidin, cyanindin, peonidin, petunidin and malvidin (as acetic and p-coumaric esters), as well as vitisin A, malvidin-3-O-caffeylglucoside, and color variables. The relationship between the anthocyanins and color variables stressed the importance of these compounds during the formation of pigments characteristic of aged wine, and highlighted how they are affected by the aging system chosen.Analysis of the results allowed us to define the evolution of the wine accordingly to the aging system and the botanical species of wood used. Wine treated with chips evolved more quickly than wines treated with the other two systems, because there was a higher loss of anthocyanins and an increase in brownish tonalities. On the other hand, wine treated with Hungarian oak wood suffered a slightly higher loss of anthocyanins than those aged with French and American oak wood.  相似文献

 The phenolic composition of red and white wines from four Spanish Appellations of Origin (official classification of Spanish wines) was investigated. Different hydroxybenzoic and hydroxycinnamic acids, catechins, procyanidins, alcohols, stilbenes and flavonols were identified. Additionally, the ketone 2,3-dihydroxy-1-guaiacylpropan-1-one was identified for the first time in red wines aged in oak barrels. The concentration of most of the phenolic compounds quantified was higher in red wines than in white wines, as would be expected from the different methods of vinification and the grape varieties used. These differences could also contribute to differences in the antioxidant ability of these wines. The multivariate analysis applied to the phenolic compounds quantified allowed the relationships among these compounds to be examined and the origin of the wines to be distinguished. The effects of both wood chips addition and contact time on phenolic content, volatile composition, color parameters, and organoleptic character of red wine made by a native Greek variety (Agiorgitiko) were evaluated. For this purpose, chips from American, French, Slavonia oak, and Acacia were added in the wine after fermentation. A mixture consisting of 50% French and 50% Americal oak chips was also evaluated. In an attempt to categorize wine samples, various chemical parameters of wines and sensory parameters were studied after 1, 2, and 3 mo of contact time with chips. The results showed that regardless of the type of wood chips added in the wines, it was possible to differentiate the samples according to the contact time based on their phenolic composition and color parameters. In addition, wood‐extracted volatile compounds seem to be the critical parameter that could separate the samples according to the wood type. The wines that were in contact with Acacia and Slavonia chips could be separated from the rest mainly due to their distinct sensory characters.  相似文献

Background and Aims:  This paper reports the influence of adding oak chips to a wine being aged either in stainless steel tanks or in used barrels on aroma compounds, comparing these wines with those aged in new barrels. Both the size of the oak chips and the length of contact time were considered.
Methods and Results:  Aroma compounds were analysed by gas chromatography–mass spectrometry to determine the differences in these compounds between the samples. The results showed that chips release aroma compounds into wine very rapidly, an effect that was clearly seen when they were added to the wines stored in tanks. The wines aged in new barrels continued to extract aroma compounds for a longer time, and higher concentrations were reached in these wines for most aroma compounds. Wines in used barrels with added oak chips behaved in an intermediate manner.
Conclusions:  Although overall quality is better in wines matured in new barrels, the use of oak chips could be considered a good choice for producing short-aged wines and for reusing used barrels under good sanitary conditions.
Significance of the Study:  The rapid spread of technique alternatives to oak ageing justifies studies to assess the influence of oak chips on the chemical characteristics of wines and to evaluate any differences from traditional oak ageing systems.  相似文献

The objective of this study was to characterise oak-aged wines according to the ageing conditions by measuring colour and phenolic compounds, and to study the correlations between the studied variables to understand the relationship among them, and help to clarify some of the mechanisms involved in the modification of colour during wine ageing. The results show that the colour of aged wines can be mainly attributed to polymeric compounds and not to monomeric anthocyanins; the cluster analysis showed that the samples could be mainly separated as regards the age of the barrel. The discriminant analysis achieved a good sample separation regarding oak origin and barrel age.  相似文献

Summary Three samples of French oak and one sample of American oak were analyzed by different gas chromatographic-mass spectrometric (GC/MS) methods. Two methods of quantifying the main volatile compounds in oak wood were compared, namely, Direct Thermal Desorption coupled with GC/MS and analysis of mixtures of water-ethanol and wines that had been in contact with oak chips by extraction using an organic solvent followed by GC/MS analysis of the extract. The ratio of the two oak lactones released into the wine by the oak chips was the same as the ratio observed in original, untreated wood. These substances are of particular sensory importance in wines aged in oak wood barrels. Thus, the use of oak chips in white wines may be advantageous. The wines steeped with the oak chips improved their acceptability rating 2 points on a scale of 9.  相似文献
