Thirty-six Merino Branco lambs were assigned to six dietary treatments: control diet (C) consisting of 90% dehydrated lucerne and 10% wheat bran; C with 6% of oil blend (CO); C with 2.5% of grape seed extract (GS); GS with 6% of oil blend (GSO); C with 25% of Cistus ladanifer (CL), and CL with 6% of oil blend (CLO). Meat lipid and colour stability was then evaluated during 7 days of storage. The effect of inclusion of grape seed extract and C. ladanifer in diets on meat sensory properties was also evaluated. Meat antioxidant potential, determined after oxidation induction by a ferrous/hydrogen peroxide system, decreased with oil supplementation (P < 0.001), but inclusion of grape seed extract and C. ladanifer in diets protected the meat against lipid oxidation (P = 0.036). Meat colour was not affected by diets. Inclusion of grape seed extract and C. ladanifer in diets did not change the sensory properties of meat.  相似文献

The effects of three levels (0%, 10%, or 15%) of chia (Salvia hispanica L.) seed (SHS) included in the diet on the growth performance, some carcass characteristics and fatty acid profile of rabbit meat and perirenal fat was studied. At the end of the experiment, there were no significant differences among the groups in live weight, live weight gain, feed consumption, feed efficiency, carcass yield or the percentages of edible organs. The percentage values of hind legs, fore legs, loin and abdominal wall, breast and ribs, skin and limbs, and head were not affected by the inclusion level of SHS. The polyunsaturated fatty acid (PUFA) concentration in the longissimus dorsi muscle and perirenal fat was significantly increased with increasing SHS inclusion, while the saturated fatty acid (SFA) decreased. The n  6/n  3 PUFA ratio of the rabbit meat decreased from 4.55 in the control group, to 1.03 in the 15% SHS group.  相似文献

Tart formulations and fillings [peanut butter (PNTB), peanut butter sweetened with 20% clover honey (PNTB/HNY), or 50% peanut butter layered with 50% grape jam (PNTB/GRPJ)] were evaluated at the early stage of the development process by adult consumers (n = 73) and experts (food service managers and chefs). Sensory results indicated that all formulations were acceptable, however, most participants commented that the pastry needed to be softer and sweeter and suggested using less filling to prevent surface cracking of the pastry. Recommendations and comments from the first phase were used to modify the tarts. Modified tarts filled with peanut butter sweetened with 5% confectioner’s sugar (SPNTB), 50% SPNTB layered with 50% grape jam (SPNTB/GRPJ) or 50% SPNTB layered with 50% strawberry jam (SPNTB/STRWBJ) were evaluated by targeted consumers (teenagers, n = 106). Results indicated that all tarts were similar in sensory quality, although tarts filled with SPNT/STRWBJ had slightly higher ratings for all sensory attributes than tarts filled with SPNTB/GRPJ and SPNTB. All modified tarts received hedonic ratings of 5.5–6.6 (like slightly). Involvement of targeted consumers early in the development process and incorporating their recommendations to finalize product formulations will increase the product’s probability of success.  相似文献

The aim of this study was to investigate the role of the food matrix on bioavailability of (n  3) PUFA and oxidative stress in plasma. The study was a randomized, cross-over study and included 12 healthy male participants. The participants ingested a test meal, which consisted of a fitness bar, a yoghurt drink, eight oil capsules, bread and butter; 4 g of fish oil was incorporated into one of the matrices. Blood samples were collected and fatty acid composition of chylomicrons was determined together with plasma levels of conjugated dienes and α-tocopherol. Fish oil incorporated into food products were absorbed differently from those simply administered as supplements alongside of food products, and yoghurt was the best matrix for providing fast absorption of lipids in general, including (n  3) fatty acids. No significant difference was observed in the level of plasma α-tocopherol after ingestion of test meals.  相似文献

Seventy two male Bianca Italiana rabbits were used to study the effects of the inclusion (0%, 0.5%, and 1.0%) of a natural extract of chestnut wood (Silvafeed ENC) in the diet on productive traits, carcass characteristics, meat quality, lipid oxidation and fatty acid composition of rabbit meat. Results showed ENC had no significant effect on live weight, productive traits, hot carcass weight, dressing percentage, skin weight, pH, cooking losses, shear force and colour. The iron content was higher in Longissimus thoracis et lumborum (LTL) muscle of rabbit fed the ENC 1.0% diet than the control group. TBARS average values in the group ENC 0.5% were significantly lower (P < 0.05) than in the control and ENC 1.0% groups. Myristic acid (C14:0; P < 0.01), palmitoleic acid (C16:1 cis-9; P < 0.05) and pentadecanoic acid (C15:0; P < 0.01) contents were lower in LTL muscle of rabbits fed the ENC 1.0% diet, whereas the palmitic acid (C16:0) content was higher (P < 0.05) in the rabbits of this group. Moreover, the rabbits fed with the ENC 0.5% diet had lower (P < 0.01) levels of trans-vaccenic acid (C18:1 trans-11) compared to rabbits fed with the control diet. No significant differences were observed in saturated (SFA), monounsaturated (MUFA), polyunsaturated (PUFA) fatty acids, as well as in PUFA/SFA and n  6/n  3 ratios among the groups.  相似文献

Opportunities for the production of milk and dairy products enriched with cis-9, trans-11 conjugated linoleic acid (CLA) were investigated. Eighteen mid-lactation cows were used in a continuous-design for 7 weeks. During the first week, cows received grass silage ad libitum supplemented with 10 kg per day of a cereal-based concentrate (control) that was replaced with a concentrate containing 50 g kg−1 of rapeseed oil (RO). Changes in milk fatty acid composition were monitored on a weekly basis and milk produced was used to manufacture Edam cheese and butter. Inclusion of RO in the concentrate supplement increased the mean levels of trans-octadecanoic, monounsaturated, CLA and polyunsaturated fatty acid in the milk fat from 1.6, 25.7, 0.46 and 2.8 to 4.3, 35.3, 1.02 and 3.9 g 100 g−1 total fatty acids, respectively. In contrast, the mean level of saturated fatty acids decreased from 71.4 to 60.7 g  100 g−1 total fatty acids. Changes in milk fatty acid composition due to RO occurred within 7 days, with responses reaching a plateau after 21 days. Furthermore, the CLA concentrations in the milk fat from individual cows ranged between 0.37 and 0.65 and 0.43 and 2.06 g 100 g−1 total fatty acids for the control and RO diet, respectively. CLA enriched milk was used successfully to manufacture of Edam cheese and butter with softer textures but with acceptable organoleptic and storage properties. Processing milk into butter or cheese had no effect on the CLA concentrations indicating that enrichment of dairy products is dependent on the content in raw milk fat.  相似文献

The proximate compositions and fatty acid profiles of the flesh of the fresh water fish zander (Sander lucioperca) obtained from Eğirdir Lake and from Seyhan Dam Lake were compared. The crude protein (18.8–18.1%), ash (1.37–0.75), and dry matter (20.67–20.09) contents of fish in Seyhan Dam Lake were observed to be higher than those in the other lake. Zander in Seyhan Dam Lake had a significantly (p < 0.05) higher lipid content than its Eğirdir counterpart. Differences were also observed in the fatty acid profiles. The percentages of total saturated fatty acids (SFA) and total monounsaturated fatty acids (MUFA) were higher in the zander in Seyhan Dam Lake than in Eğirdir Lake, whereas the corresponding total polyunsaturated fatty acids (PUFA) content was lower. Moreover, the fatty acid composition of these fish showed a relatively high ratio of PUFA/SFA (1.00). Both zanders showed palmitic acid, C16:0, to be predominant, (19.6–20.8%), followed by oleic acid, C 18:1 n  9, (19.2–13.4%).The data obtained indicate that the % composition of n  3 PUFAs is greater in the flesh of zander in Eğirdir Lake. This finding is in compliance with the fact that n  3 fatty acids in fish living in cold climatic conditions have a higher % composition. It was concluded that the consumption of zander, widely found in Eğirdir Lake and having higher % composition of n  3 PUFAs than those caught from Seyhan Dam Lake, is more beneficial for human health.  相似文献

The effects of linseed content in concentrates on the fatty acid (FA) composition of adipose tissues and muscles of lambs were studied in a 2 × 4 design: males (M) vs. females (F) and linseed content (0%, L0, 3%, L3, 6%, L6, 9%, L9). FA proportions were determined both on a DB-wax and on a CP-Sil column in perirenal (PR), dorsal subcutaneous (SC) adipose tissue and in longissusmus dorsi muscle (IM). No effects of linseed contents in the diet on growth performances either in male or female lambs were observed. Linseed supplementation tended to decrease the fatness score. The proportion of linolenic acid increased linearly with the linseed content in the diet, from: 0.6, 0.5, and 0.5% for L0 to 1.9, 1.6, and 1.3% for L9, in PR, SC and IM, respectively. The increase in n  3 PUFA and in total PUFA was similar to that of linolenic acid. The n  6:n  3 ratio decreased from 5.7, 5.3 and 5.8 for L0 to 1.8, 1.7 and 2.7 for L9, in PR, SC and IM, respectively. There was no change in the proportion of docosahexaenoic acid with linseed supplementation. The proportions of C18:1trans-10 and C18:1trans-11 did not vary in PR, SC and IM with linseed supplementation. The total proportion of trans-octadecenoic acid was high in each tissue type and group of lambs. C18:1trans-10 represented about half of the total trans-octadecenoic isomers. With an increase in linolenic acid, most cis- and trans-octadecenoic isomers also increased, but trans-10 and trans-11 isomers did not and cis-9 and cis-11 isomers decreased. With linseed supplementation there was a decrease in the Δ9 desaturase indices in SC.  相似文献

Human bivalve consumption in Europe has steadily increased in the last years, particularly during summer months when seawater temperature increases. Since ocean warming is among the current global environmental threats affecting aquatic organisms, it is of paramount importance to investigate its effect on the nutritional quality of seafood products. In this context, the aim of this study was to investigate differences in the nutritional quality (in terms of protein, glycogen and fatty acid, FA, content) and condition of a native (grooved carpet shell, Ruditapes decussatus) and an invasive (Japanese carpet shell, Ruditapes philippinarum) clam species, subjected to warming. Our results clearly reveal that temperature significantly affected the nutritional quality of both clam species, particularly the FA composition. Both clam species responded similarly to warming, by significantly decreasing the content of some fatty acids, but not protein and glycogen levels. A predominance of polyunsaturated FA (PUFA) over saturated FA (SFA) and monounsaturated FA (MUFA) was observed throughout the experiment, as well as high n  3/n  6 and PUFA/SFA ratios. The native clam always revealed higher values of these fatty acids, indicating that this species has a better nutritional quality in comparison to the invasive one. Nonetheless, the loss of n  3 PUFA (in native species), eicosapentaenoic (EPA; in both species) and docosahexaenoic (DHA; in invasive species) acids was considered as the major negative outcome derived from warming, since it contributes to the loss of prime quality fatty acids for human health. However, atherogenic, thrombogenic and hypocholesterolemic/hypercholesterolemic indices (AI, TI and h/H, respectively) remained low in both species, even in warming conditions, suggesting that these food items can be used in a cardio-protective and hypocholesterolemic diet. This study provides new insights to understand and foretell the effects of climate change on nutritional quality of marine organisms.  相似文献

The objective of this study was to evaluate the effect of diet supplementation with olive leaves or α-tocopheryl acetate on lipid and protein oxidation of raw and cooked n 3 enriched-pork during refrigerated storage. Enrichment of pork with α-linolenic acid through diet supplementation with linseed oil enhanced (p  0.05) lipid oxidation in both raw and cooked chops but had no effect (p > 0.05) on protein oxidation during refrigerated storage while decreasing (p  0.05) the sensory attributes of cooked pork. Diet supplementation with olive leaves or α-tocopheryl acetate had no effect (p > 0.05) on the fatty acid composition of pork but decreased (p  0.05) lipid oxidation while exerting no effect (p > 0.05) on protein oxidation in both raw and cooked α-linolenic acid-enriched chops stored and chilled for 9 days. Moreover, olive leaves and α-tocopheryl acetate supplemented at 10 g/kg and 200 mg/kg diet, respectively, exerted (p  0.05) a beneficial effect on the sensory attributes of cooked α-linolenic acid-enriched pork chops.  相似文献

The effect of the inclusion of chestnut in the finishing diet on fatty acid profile of dry-cured Celta ham was studied. Twelve hams of each type (from three different diets: concentrate, mixed and chestnut) were used. Significant differences between treatments (P < 0.001) were found regarding total saturated fatty acids (SFA), monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). Ham samples from the mixed and chestnut groups had less SFA (35.57% and 35.63%, respectively) with respect to ham samples from the concentrate group (40.33%), while hams from the mixed and chestnut batches showed higher values of MUFA than hams from the concentrate group (50.70 vs. 49.79 vs. 43.85, P < 0.001, respectively). From a nutritional point of view, Celta hams from chestnut diets could be considered as healthier regarding their fatty acid profiles (low n−6/n−3 ratio and high hypocholesterolemic/Hypercholesterolemic ratio). Discriminant analysis selected five variables (C16:0, C16:1cis-9, C20:2, C20:3n−6 and C20:4n−6) and calculated two discriminating functions which verifies the presence of chestnut in the finishing diet.  相似文献

Fresh lamb steaks were treated with three different preparations of natural antioxidants: one group was packaged with a rosemary active film, the second group was packaged with an oregano active film, and the third group was sprayed on the meat surface with a rosemary extract before packaging in a high-oxygen atmosphere. Samples were stored under illumination at 1 ± 1 °C for 13 days. Metmyoglobin formation, lipid oxidation (TBARS), instrumental colour (CIE a1), psychrotrophic bacterial counts (PCA), sensory discolouration and off-odour were determined. The use of a rosemary extract, a rosemary active film or an oregano active film resulted in enhanced oxidative stability of lamb steaks. Active films with oregano were significantly more efficient than those with rosemary, exerting an effect similar to that of direct addition of the rosemary extract; in fact, they extended fresh odour and colour from 8 to 13 days compared to the control.  相似文献

Milk lipids are an interesting source of bioactive molecules with functional and nutritional properties. Although the composition of milk lipids is of utmost importance for food processing and human consumption, it is far from being fully known. The objective of this study was to perform a comparative analysis of the chemical composition of lipids from bovine milks produced in French Brittany during spring (fresh pasture based diet) and winter (corn silage based diet). The polar lipid content and relative proportions of the glycerophospholipids and sphingomyelin were determined using HPLC/ELSD. The fatty acid composition of total lipids and polar lipids was determined using GC. The milks collected in spring contained i) a lower amount of total lipids: 39.7 ± 0.8 g/kg vs 41.7 ± 0.5 g/kg in winter, ii) a higher amount of polar lipids: 138 ± 11 vs 112 ± 8 mg/kg milk; 3.5 ± 0.3 vs 2.7 ± 0.4 mg/g fat, which was related to a smaller size of fat globules, and iii) a higher amount of sphingomyelin, 32 mg/kg milk vs 25 mg/kg milk in winter. Interestingly, the polar lipids from the milk fat globule membrane contained a higher concentration of unsaturated fatty acids in spring (C18:1 n  9, C18:2 n  6, C18:3 n  3 and long-chain n  3 fatty acids). Milk from cows fed a fresh pasture-based diet during spring is an interesting source of dietary long chain polyunsaturated fatty acids for human consumption.  相似文献

The kinetics of isothermal crystallisation of palm stearin, palm kernel olein and their blends (20–80 g/100 g palm stearin with 20 g/100 g increment) were determined using differential scanning calorimetry (DSC). The mechanism of crystallisation (n) was calculated by applying the Avrami equation using the crystallisation curves obtained at 10, 15 and 20 °C. The DSC isothermal crystallisation data at 10, 15 and 20 °C fitted well into the Avrami equation over the entire fractional crystallisation with correlation coefficient always greater than 0.98. Based on the Avrami exponent obtained, the palm stearin and palm kernel olein have different nucleation and growth mechanisms. The suggested mechanism for palm kernel olein was high nucleation rate at the beginning of crystallisation, which decreased with time, and plate-like growth (n = 2). On the other hand, the mechanism for palm stearin was instantaneous heterogeneous nucleation followed by spherulitic growth (n = 3). For blends of palm stearin and palm kernel olein, the mechanisms of crystallisation were 2 and 3 depending on the composition of the blends and crystallisation temperatures.  相似文献

This study examined the effect of palm, soybean or fish oils on the performance, muscle fatty acid composition and meat quality of goat kids. Twenty-four male Mahabadi kids (BW = 19.4 ± 1.2 kg) were divided into three groups according to liveweight and randomly allocated to one of three diets. Animals were fed ad libitum for 84 days. Different dietary fat sources had no effect on performance and/or carcass quality attributes. The soybean oil diet decreased 16:0 and 18:0 concentrations and increased 18:2 and 18:3 and the ratio of PUFA/SFA in the muscle compared with other treatments. Fish oil feeding increased 20:5 n-3 and 22:6 n-3 concentrations and decreased the ratio of n-6/n-3 in the muscle. The results demonstrate that the use of fish oil is a nutritional strategy to improve the health claimable long-chain omega-3 fatty acid content and n-6/n-3 ratio in goat meat without changing the sensory properties or colour of meat.  相似文献

Palm olein-based diacylglycerol (POL-DAG) was blended with palm super olein (POoo) in various concentrations (10–90%), with increments of 10% (wt/wt) POL-DAG. The physical and chemical characteristics, i.e., iodine value, acylglycerol content, fatty acid composition, melting and crystallization profiles and solid fat content, for POL-DAG, POoo and their binary blends were evaluated. The mid-infrared FTIR was used to determine the absorption bands of the different concentrations of the oil blends. Only slight differences of FAC and IV were observed. POL-DAG:POoo blends showed significant changes (p < 0.05) in DAG content and decreases in TAG content with increasing POL-DAG content. The DSC thermograms showed that the addition of different concentrations of POL-DAG changed the melting and crystallization behavior of the oil blends (POL-DAG:POoo). The crystallization onset point increased (p < 0.05) with an increasing POL-DAG concentration (10–90%). POL-DAG has the same absorption bands as POoo, with the exception of several minor peaks that appeared at (I) 2954 cm 1, (II) 1267 cm 1, (III) 1199 cm 1, (IV) 1222 cm 1 and (V) 966 cm 1. This study will provide essential information for the palm oil industry to identify the most suitable POL-DAG blends with desirable physicochemical properties for food application purposes.  相似文献

Variation in the bitterness of 6-n-propylthiouracil (PROP) is partially explained by polymorphisms in the TAS2R38 gene. Based on their perception of bitterness from PROP, people may be classified into non-, medium and supertasters. PROP perception has previously been linked to liking for cruciferous vegetables in children in some studies, but only one study to date has examined TAS2R38 genotype and its relationship with vegetable intake in children. Children’s vegetable consumption generally does not meet the recommended guidelines, thus the present study aimed to examine the influence of oral sensory measures, genetic variation and social factors on vegetable liking and intake. Vegetable liking in 7–13 year old Irish children (n = 525) was measured on a 5-point liking scale, and dietary intakes were assessed via a 3-day diet history. Vegetable intakes were calculated and standardised per kg body weight. A subset of children (n = 485) were genotyped for SNPs in TAS2R38, (A49P, V262A, I296V), and fungiform papilla (FP) were counted. The bitterness of PROP and sweetness of sucrose were rated on a generalised labelled magnitude scale (gLMS). PROP and sucrose intensity were significantly correlated (R2 = 0.33, p = 0.001), although neither sucrose intensity nor FP density differed across the TAS2R38 genotype groups. Supertasters were less likely than nontasters to have tried/tasted cruciferous vegetables p < 0.04). A small, positive correlation was seen in FP density and vegetable intake, but only in the AVI homozygous children, (R2 = 0.17, p = 0.035). 174 Nutrient acceptable children reported an intake of one or more of the vegetables of interest in the 3-day period. Liking of cruciferous vegetables and reported intake were significantly correlated. In multiple regression analyses in this subsection of the cohort, socioeconomic status (SES) and gender were more important than PROP bitterness or TAS2R38 genotype in predicting intakes (approximately 15% of liking and 67% of intake was explained by these models). Overall, neither PROP taster status nor TAS2R38 genotype alone had significant impact on bitter vegetable liking or intake. Further research into FP density and vegetable liking and intake may be warranted.  相似文献

Infrared spectroscopy was used for multivariate determination of linoleic (LA) and linolenic (ALA) acids in yellow and brown flax seed samples, using partial least square regression (PLSR). The models were developed by correlating near-(NIR) and mid-infrared (MIR) spectroscopic signals with the acid content determined by GC-FID. For the flax seed samples, the best models for both, LA (R2 = 0.90, Standard Error of Prediction (SEP) = 1.61) and ALA (R2 = 0.86, SEP = 0.63) were obtained by processing the NIR spectral data. For samples of flax seed flours, the best models for prediction of the ALA (R2 = 0.99, SEP = 1.21) and LA content (R2 = 0.88, SEP = 0.76) were developed by processing the NIR and MIR spectral region, respectively. This report demonstrates that NIR and MIR spectroscopies are efficient techniques for the determination and quantification of LA and ALA in flax seed and flax seed flours.  相似文献

Drying of grape seeds representing waste products from white wine processing (Riesling), red wine processing (Cab Franc), and juice processing (Concord) was studied at 40, 50, and 60 °C and constant air velocity of 1.5 m/s. Equilibrium moisture content had a significant effect on the normalized drying curve and was determined for each grape seed at each drying temperature. Effective moisture diffusivity ranged between 1.57 and 3.96 × 10−10 m2/s for Riesling seeds, 2.93–5.91 × 10−10 m2/s for Concord seeds, and 3.89–8.03 × 10−10 m2/s for Cab Franc seeds. The temperature dependence of the effective diffusivity followed an Arrhenius relationship, and the activation energies were 40.14 kJ/mol for Riesling seeds, 30.45 kJ/mol for Concord seeds, and 31.47 kJ/mol for Cab Franc seeds. Three thin-layer models were used to predict the drying curves: Page model, Lewis model, and the Henderson–Pabis model. All three models were found to produce accurate predictions compared to the mass average moisture loss for each grape seed variety (percent error less than 10%), and the Lewis model was shown to be an excellent model for predicting all three grape seed varieties (percent error less than 5%).  相似文献

The present work was aimed to study Iberian dry-cured hams from pigs reared outdoors and either fed with acorns and grass (AG) or with oleic acid enriched concentrates (HO), by means of their fatty acid profile, sensory traits and Magnetic Resonance Imaging (MRI). The level of total saturated fatty acids (SFA) was higher in HO than in AG hams, whereas total monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) showed higher proportions in AG than in HO Iberian dry-cured hams. Besides, lower levels of the n ? 6/n ? 3 ratio were found in AG than in HO dry-cured hams. Sensory analyses only showed differences between AG and HO Iberian dry-cured hams in pastiness (higher in AG hams, p = 0.039) and marbling (lower in AG hams, p = 0.002). Pig feeding also leads to differences in two computational texture features obtained by MRI-based analysis. Thus, analysis of the fatty acid profile and MRI-based analysis might be used for classifying dry-cured hams from pigs fattened with different diets.  相似文献
