In this study, the shelf life of Lor cheese stored under different atmosphere compositions was assessed and compared. Lor cheeses were held in four different atmospheres containing: vacuum packaging (VP), 40% CO2/60% N2, 60% CO2/40% N2 and 70% CO2/30% N2 (modified atmosphere packaging). Control cheeses were stored in air. All cheese samples were kept in the refrigerator at 4°C for 45 days and investigated for physicochemical, microbiological and sensory properties. The acidity index value was significantly higher ( P  < 0.05) in the control and vacuum packaged samples than in those stored for the same period under CO2. Microbiological results showed that modified atmosphere packaging delayed microbial growth compared with air and VP samples. Of the three modified atmospheres, gas mixtures 60% and 70% CO2 were the most effective for inhibition of growth of micro-organisms. Sensory evaluation (odour and taste) results showed that Lor cheese packaged under modified atmosphere packaging (60% CO2/40% N2 and 70% CO2/30% N2 ) retained good characteristics for 45 days of storage, while vacuum and control samples were sensorily unacceptable after 10 days of storage.  相似文献

ABSTRACT:  The effect of pretreatment with pyrophosphate and 4-hexylresorcinol in combination with modified atmosphere packaging (MAP) (80% CO2, 10% O2, 10% N2, or 80% CO2, 20% N2) on the quality of white shrimp during storage at 4 °C was investigated. Shrimp pretreated with 2% pyrophosphate and 0.25% 4-hexylresorcinol and stored under MAP showed the lower microbiological and chemical deteriorations as evidenced by delayed microbial growth as well as lower trimethylamine (TMA) and total volatile base nitrogen (TVB) production ( P < 0.05). Additionally, the growth of coliforms was inhibited effectively. White shrimp pretreated with 4-hexylresorcinol had the lower melanosis throughout the storage compared with those without treatment ( P < 0.05). This was associated with the lowered polyphenol oxidase (PPO) activity in shrimp treated with 4-hexylresorcinol. Therefore, the effective retardation of microbiological and chemical deterioration of white shrimp stored under MAP with the decrease in melanosis could be achieved by pretreatment of the shrimp with pyrophosphate and 4-hexylresorcinol. Furthermore, decapitation could be another means to lower the microbial load and melanosis in white shrimp, particularly those stored under MAP.  相似文献

The effect of combining low-dose irradiation (1.75 kGy) with modified atmosphere packaging (MAP) on the microbiological and sensory quality of pork chops stored at refrigeration temperatures was studied. The microflora of irradiated MAP pork was almost exclusively composed of lactic acid bacteria, predominantly Lactobacillus spp. Modified atmospheres containing either 25 or 50% CO2, balance N2, resulted in the best microbial control in irradiated pork held at 4°C, compared to an unirradiated MAP control, and these atmospheres were subsequently used in sensory studies. The atmosphere containing 25% CO2 75% N2 maintained the uncooked colour and odour of irradiated pork chops more effectively than 50% CO2 50% N2. Therefore packaging in a modified atmosphere containing 25% CO2, balance N2, followed by irradiation to a dose of 1.75 kGy is recommended to improve the microbiological and sensory quality of pork chops.  相似文献

ABSTRACT:  Pieces of prerigor salmon fillets were packaged in modified atmosphere (60% CO2 and 40% N2) and in vacuum. The MA packages had a gas to product volume ratio (g/p ratio) of 3/1 (traditional MAP) and 1/1 (packaged with a CO2 emitter). All the samples were stored at 1.2 °C for 25 d. The MA packages had lower bacterial growth during storage compared to vacuum packages. The analyses of 16S rRNA at day 22 indicated a similar bacterial diversity, independent of packaging methods, dominated by  Photobacterium phosphoreum . The results therefore suggest that CO2 inhibited total bacterial count, including,  P. phosphoreum . Negative odors and liquid losses were detected earlier for the vacuum-packaged samples (8 d) compared to the MA samples (15 d) and higher levels were detected at the end of the storage period. The breaking strength (firmness) tended to be lower for the MA packaged samples compared with the vacuum samples after 15 d of storage, whereas the redness ( a * value) and the yellowness ( b * value) were significantly higher for the MA samples. In conclusion, MA packaging preserved the quality better during storage than vacuum packaging. MA packaging with a CO2 emitter and reduced g/p ratio gave similar or better results compared with traditional MAP, thus CO2 emitters are well suited for reduction of volume of MA packaged farmed salmon fillet pieces.  相似文献

The effectiveness of storage in atmospheres with increased proportions of CO2 to extend the shelf-life of haddock and herring was examined. Using a 40: 30: 30/CO2: O2: N2 atmosphere with haddock no useful extension of shelf-life was achieved at +5°C and only limited extension at 0°C. A more useful extension of shelf-life at 0°C was obtained by storing haddock in a 60: 20: 2O/CO2: O2: N2 atmosphere and with herring in a 60:40/CO2::N2: atmosphere. Total volatile bases (TVB) and hypoxanthine values (Hx) correlated with the cooked flavour. There were no significant differences in drip-loss between the modified atmosphere packaging (MAP) stored samples and the controls. Peroxide values (PV) in herring were lower in MAP stored samples. Whole haddock and whole herring were found to have a longer shelf-life when stored in MAP at 0°C than when stored as fillets.  相似文献

The effect of modified atmosphere packaging (MAP) (70% CO2/30% N2; 30% CO2/70% N2) on the shelf-life of fresh chicken carcasses stored at 2, 4, 7 and 9C was investigated. The shelf-lives of MAP carcasses (70% CO2/30%N2) stored at 2, 4, 7 and 9C were 25, 21, 12 and 8 days, respectively compared with 7 days for air-packaged ones stored at 4C; the shelf-life of MAP carcasses (30% CO2/70%N2) stored at the same temperatures were 20, 15, 8 and 8 days, respectively. The inhibitory effect of MAP on the growth of Enterobacteriaceae and on the production of spoilage metabolites, such as free fatty acids and extract release volume, was negligible at higher temperatures (7 and 9C) and more pronounced at lower temperatures (2 and 4C), especially at higher concentrations of CO2 (70% CO2/30% N2). The occurrence and growth of organisms such as Escherichia coli, coliforms , Staphylococcus aureus, Salmonella and Campylobacter in carcasses stored at different temperatures were also documented .  相似文献

Modified atmosphere packaging (MAP) extends shelf-life of most fishery products by inhibiting bacterial growth and oxidative reactions. The achievable extension of shelf-life depends on species, fat content, initial microbial population, gas mixture, the ratio of gas volume to product volume, and most importantly, storage temperature. The shelf-life of fishery products is usually limited by microbial activity, although for some fatty fishes or at superchilled storage, it can be limited by nonmicrobial activity. Packaging of fishery products under modified atmospheres (MA) increases shelf-life compared with those packaged under air, but confers little or no additional shelf-life increase compared with vacuum packaging. The specific spoilage organism (SSO) of MA packaged cod at 0 °C has been found to be Photobacterium phosphoreum . Whether or not this bacterium is the general SSO for all marine temperate fishes at different storage temperatures and under various CO2/N2/O2 mixtures needs to be resolved. Without proper control of storage temperature, the benefits of MAP may be lost. Higher temperatures inevitably lead to less dissolved CO2 in the product and consequently loss of inhibitory effect, which may result in higher microbial and enzymatic activity, and uncertainties concerning the microbial safety, as food-borne pathogens might be present in the product.  相似文献

This study evaluated the shelf life extension of a cheese cake subjected to modified atmosphere (MAP) and active packaging (AP). Cheese cakes were packaged under different N2/CO2 ratios (70/30 and 20/80) (MAP batches), by placing a sachet of an iron oxide-based oxygen absorber inside trays (AP batch) and with air (air batch). Changes in microbial growth, in-package gas composition, chemical–physical parameters including texture and sensory attributes were monitored for 48 days at 20 °C. AP allowed a mould-free cheese cake shelf life of 48 days, MAP extended the shelf life of samples packaged under 30% and 80% CO2 up to 14 and 34 days, respectively, whereas tarts stored with air spoiled after 7 days. MAP resulted in a significant increase in hardness after 14 days of storage, whereas AP tarts recovered the initial texture after 48 days. Panellists judged AP tarts over the acceptability threshold during the whole shelf life of cheese tarts.  相似文献

The effect of initial head spaces of air, 4.9% CO2/2.1% O2/93% N2 and 5% CO2/95% N2 on the microbial flora of shredded carrots was studied at 4 and 10°C. The microbial flora of shredded carrots comprised lactic acid bacteria, pseudomonads and yeasts. Lactic acid bacteria were the predominant organisms in all samples. The pH dropped during the storage of carrots and this was more pronounced at 10°C. The concentration of different organic acids such as lactic, acetic, tartaric, citric and succinic increased in all samples stored under modified atmosphere packaging conditions at both temperatures. The spoilage of carrots stored under 5% CO2/95% N2 was delayed, as indicated by the changes in their texture, colour and odour, compared with those samples stored under air or 4.9% CO2/2.1% O2/93% N2.  相似文献

The aim of this study was to identify factors affecting the preservation of braised kidney beans, a traditional Korean side dish, to extend its shelf life. The effects of ingredient formulation, refrigerated storage and modified atmosphere packaging on storage stability and/or sensory quality were examined. Count of yeast/mold was selected as a primary quality index from the storage test at 10C. A formulation was found in cooked kidney beans, sugar, soy sauce and corn syrup to provide the retarded microbial growth and affordable sensory quality. The temperature dependence value (Q10) for the shelf life of the stretch-wrapped product was 2.0 for temperatures of 5 to 20C. Modified atmosphere packaging (60% CO2/40% N2 or 100% CO2) extended the shelf life at 10C by 500% (to 36 days) compared to air packaging (6 days) based on criteria of yeast/mold growth. Equations for estimating microbial spoilage and shelf life were derived as function of temperature.

PRACTICAL APPLICATIONS


Microbial growth retardation by ingredient formulation change, chilled storage and high CO2 modified atmosphere packaging is useful to design the processing, packaging and distribution of the Korean side dish product. Quality change kinetics of yeast/mold growth established can be used for determining shelf life of the product under different storage temperature conditions. Through the scale-up procedure, the knowledge found in this study will be useful for the industrial processing and storage of the seasoned side dishes.  相似文献

Bone-in pork loins (n = 45) were selected from a commercial facility, subjected to one of three gas flush packaging treatments: NC: 75% N2, 25% CO2; ONC1: 45% 02, 35% N2, 20% CO2; ONC2: 66% O2, 9% N2, 25% CO2, and stored for 7, 14 or 21 days at 0±2C. After storage, treatment and storage effects on visual evaluations, storage characteristics, microbial analysis and retail display characteristics were determined. The ONC1 and ONC2treated loins had less discoloration after 21 days than NC treated loins, and NC treated chops had the least desirable retail display characteristics (P < 0.05). Fewer (P < 0.05) lactic acid producing bacteria (day 21) were found on NC treated loins, resulting in chops with a shorter retail shelf-life. These results indicate that higher oxygen levels (45 and 66%) are necessary for the modified atmosphere storage of fresh pork loins for 21 days.  相似文献

ABSTRACT:  This study compared 3 package systems for their influence on the stability of shell-on red claw crayfish tail meat stored at 2 °C for 14 d. Modified atmosphere packaging (MAP, with 80% CO2/10% O2/10% N2) suppressed ( P < 0.05) the growth of aerobic bacteria and coliforms when compared with aerobic packaging using polyvinylchloride (PVCP) and vacuum packaging (VP). MAP and VP tended to retard lipid oxidation, inhibited Ca-ATPase activity change, but produced more intense protein denatuation when compared with PVCP. The MAP packaging enhanced proteolysis and resulted in more ( P < 0.05) cooking losses and a higher ( P < 0.05) shear force than VP and PVCP for samples stored for 6 and 14 d ( P < 0.05). Sensory panel results were in general agreement with the physicochemical changes, suggesting that the specific package systems had a significant impact on the quality of refrigerated red claw crayfish raw meat.  相似文献

The effects of modified atmosphere packaging on growth of adventitious microorganisms in Portuguese whey cheese ( Requeijão ) were studied following a response surface methodology using storage time (2, 6, 10 and 15 days), storage temperature (4, 12 and 18C) and fraction of CO2 in the overhead gaseous mixture also containing nitrogen (0, 50 and 100%) as manipulated variables. the viable numbers of Enterobacteriacea , staphylococci, yeasts and spore-forming bacteria in the experimental whey cheeses did not increase within 15 days when storage was at 4C under 100% CO2; those of enterococci increased significantly after 6 days under similar conditions, and a similar inhibiting effect was observed against Bacillus , pseudomonads, lactobacilli and streptococci. It was observed that 100% N2 at 4C was able to completely inhibit growth of staphylococci, lactobacilli and Bacillus for 2 days. the loci (and the nature) of the optima in terms of manipulated variables were obtained for all microbial groups studied. No true overall minimum was found, but storage conditions preset at 4C and 100% CO2 led to a 15 day extension of the shelf-life of Requeijão.  相似文献

ABSTRACT:  The effects of modified atmosphere packaging (MAP) (30:40:30 O2:CO2:N2 and 5:95 O2:CO2) on the quality of 4 ready-to-cook seafood products were studied. In particular, the investigation was carried out on hake fillets, yellow gurnard fillets, chub mackerel fillets, and entire eviscerated cuttlefish. Quality assessment was based on microbiological and sensorial indices determination. Both packaging gas mixtures contributed to a considerable slowing down of the microbial and sensorial quality loss of the investigated seafood products. Results showed that sensorial quality was the subindex that limited their shelf life. In fact, based primarily on microbiological results, samples under MAP remained acceptable up to the end of storage (that is, 14 d), regardless of fish specie. On the other hand, results from sensory analyses showed that chub mackerel fillets in MAP were acceptable up to the 6th storage d, whilst hake fillets, yellow gurnard fillets, and entire cuttlefish became unacceptable after 10 to 11 d. However, compared to control samples, an increase in the sensorial shelf life of MAP samples (ranging from about 95% to 250%) was always recorded.
Practical Application: Modified atmosphere packaging (MAP) is an inexpensive and uncomplicated method of extending shelf life of packed seafood. It could gain great attention from the fish industrial sector due to the fact that MAP is a practical and economic technique, realizable by small technical expedients. Moreover, there is great attention from the food industry and retailers to react to the growing demand for convenience food, thus promoting an increase in the assortments of ready-to-cook seafood products.  相似文献

ABSTRACT:  Quality changes during 3 wk of refrigerated storage (1.3 °C) were studied on pre -rigor filleted farmed Atlantic cod packed in modified atmosphere (MAP, 60% CO2 and 40% O2) or vacuum. The packages of MAP contained either a CO2 emitter and low gas volume to product volume (g/p ratio) of 1.3, or a 3.9 g/p ratio and no emitter. The CO2 level remained stable or increased in the packages with CO2 emitter, whereas the CO2 level in the packages with no CO2 emitter decreased to 40% after 4 d of refrigerated storage. High levels of oxygen in the gas mixture prevented formation of trimethyl amine (TMA) during storage of the MA-packed fish, whereas the TMA content increased significantly after 10-d storage in vacuum. MA-packed samples had the highest values of 1-penten-3-ol. Sensory scores of sour, sulfur, and pungent odors were significantly higher for vacuum-packed cod compared to the 2 MA-packaging methods measured 14 d after slaughtering. No differences in sensory scores were observed between the 2 methods of MAP, and shelf life of these samples seemed to be 14 to 21 d. Cod samples packaged in vacuum packages had higher pH values compared to ordinary MAP and packages containing a CO2 emitter. Bacterial growth was inhibited by MAP and resulted at the end of the storage period in dominance of Carnobacterium and some Photobacterium . In MA packages with high O2 levels the Photobacterium was inhibited. It is concluded that CO2 emitters are well suited for reduction of transport volume for MA-packaged farmed cod.  相似文献

The effect of modified atmosphere packaging (80% CO2, 10% O2, 10% N2) on ATPase activity, surface hydrophobicity, sulfhydryl content and degradation of proteins in seabass muscle during storage at 4C was investigated. No changes in Ca2+-, Mg2+-, Mg2+-Ca2+-ATPase activities of natural actomyosin (NAM) in seabass slices kept under MAP were observed throughout the storage for up to 21 days (P > 0.05). However, a slightly increased Mg2+-EGTA-ATPase was found. For seabass slices stored under air atmosphere, Ca2+-ATPase activity decreased, whereas Mg2+-EGTA-ATPase activity increased (P < 0.05) with a concomitant loss in Ca2+-sensitivity. Lower decreases in total sulfhydryl content but higher increases in surface hydrophobicity were observed in samples stored under MAP, compared to those kept under air atmosphere. No marked autolytic degradation in samples kept under MAP was observed throughout the storage as monitored by no changes in myosin heavy chain, free α-amino acid and trichloroacetic acid soluble peptide. Conversely, a considerable degradation was found in samples kept under air atmosphere, especially after 9 days of storage. Therefore, MAP is a promising means to retard the changes in muscle proteins, especially degradation.  相似文献

A solid-surface model system was used to study the effects of gas atmospheres encountered in modified atmosphere packaging of vegetables on the survival and growth of Listeria monocytogenes and competing micro-organisms. The effects of increasing CO2 levels (from 5% to 20%), 100% N2 and 3% O2 were determined. The model system allowed for estimation of the growth of L. monocytogenes alone or in the presence of competing microflora. CO2 concentrations of 5–10% (with 5% O2 in N2) had no inhibitory effect, by comparison with air, on the growth and survival of pure cultures of L. monocytogenes . At 20% CO2 population densities were reduced up to day 8, but the final population densities reached were not. An atmosphere of 100% N2 allowed survival of pure cultures of L. monocytogenes , but populations did not significantly change ( P  > 0.05) during storage, whereas a low O2 (3%, balance N2) atmosphere allowed significant growth ( P  < 0.05) of L. monocytogenes . Growth and inhibitory activities of Enterobacter cloacae and E. agglomerans were inversely related to the concentration of CO2. By contrast, the growth and anti-listerial activities of Leuconostoc citreum increased with elevated CO2 concentrations. In the low O2 atmosphere, L. monocytogenes grew considerably better in the presence of populations from the indigenous microflora of lettuce than when in pure culture. The results indicate that the gas atmospheres present within modified atmosphere packages of minimally processed vegetables may affect the interactions between the pathogen and the natural competitive microflora sufficiently to indirectly enhance L. monocytogenes growth.  相似文献

ABSTRACT: An optimal combination of O2, CO2, and N2 for storage of cut Belgian Endive was defined, investigating visual quality aspects. In the experimental design, principles of mixture theory were used. The acceptability of cut endives stored under different gas combinations, selected in the range where both CO2 and O2 were varied between 2% and 18%, was evaluated by a consumer panel at different time intervals during storage. The response was modeled with a second-degree polynomial, the response surface pointed in the direction of a gas mixture 10% CO2, 10% O2, and 80% N2 for maximum acceptability or best quality during storage. Repeated experiments, including different varieties from 2 different growers, confirmed the optimal gas concentration, (10% CO2, 10% O2, and 80% N2). In a second step, the effect of temperature on quality degradation of cut endives stored under optimal atmosphere conditions, was quantified using the Arrhenius equation. An activation energy of 16.3 kcal/mol was obtained.  相似文献

Smoked catfish were inoculated with Listeria ivanovii then packaged under 80% CO2/20% N2 (M1) and 40% CO2/30%O2/130% N2 (M2) and stored at 2 and 8C. Noninoculated samples packaged under air (A) served as controls. Fillets stored under M2 at 8C showed the fastest growth of L. ivanovii. L. ivanovii counts in samples stored under M1 at both temperatures decreased significantly over time. Listeria growth was observed in samples stored under air at 2 and 8C after 2 weeks. APC results were similar to that of Listeria The highest TBA values were observed in M2-stored samples followed by air-stored samples. Lightness ("L" values) increased significantly, whereas "a" (redgreen) and "b" (blue/yellow) values decreased in all atmospheres at both temperatures over time. The combined use of M1 and 2C improved the quality of smoked catfish by inhibiting microbial growth and minimizing the extent of lipid oxidation.  相似文献
