In this study, we investigated how the extent of ripeness affects the yield of extract, total phenolics, total flavonoids, individual flavonols and phenolic acids in strawberry and mulberry cultivars from Pakistan. In strawberry, the yield of extract (%), total phenolics (TPC) and total flavonoids (TFC) ranged from 8.5-53.3%, 491-1884 mg gallic acid equivalents (GAE)/100 g DW and 83-327 mg catechin equivalents (CE)/100 g DW, respectively. For the different species of mulberry the yield of extract (%), total phenolics and total flavonoids of 6.9-54.0%, 201-2287 mg GAE/100 g DW and 110-1021 mg CE/100 g DW, respectively, varied significantly as fruit maturity progressed. The amounts of individual flavonols and phenolic acid in selected berry fruits were analyzed by RP-HPLC. Among the flavonols, the content of myricetin was found to be high in Morus alba (88 mg/100 g DW), the amount of quercetin as high in Morus laevigata (145 mg/100 g DW) while kaempferol was highest in the Korona strawberry (98 mg/100 g DW) at fully ripened stage. Of the six phenolic acids detected, p-hydroxybenzoic and p-coumaric acid were the major compounds in the strawberry. M. laevigata and M. nigra contained p-coumaric acid and vanillic acid while M. macroura and M. alba contained p-hydroxy-benzoic acid and chlorogenic acid as the major phenolic acids. Overall, a trend to an increase in the percentage of extraction yield, TPC, TFC, flavonols and phenolic acids was observed as maturity progressed from un-ripened to fully-ripened stages.  相似文献

The effects of extraction solvent and conditions on the total phenolic content (TPC) and antioxidant activity of black beans, canola and foxtail millet were investigated. The antioxidant activity was assayed using 2,2‐diphenyl‐1‐picrylhydrazyl radical scavenging activity (DRSA) and oxygen radical absorbance capacity (ORAC). Four solvent systems, namely 70 % acetone, 80 % ethanol, 80 % methanol and a mixture of acetone/methanol/water (7:7:6, v/v/v) were used. The extraction methods adopted in this study included refluxing, homogenization, cold extraction and sonication. The TPC as measured using the Folin Ciocalteu's method were 12.35–28.39, 2.43–16.73, and 1.78–5.06 µmol catechin equivalents/g dry matter (dm) for canola, black beans and foxtail millet, respectively. Aqueous acetone afforded the highest TPC for black beans and canola. Within the same solvent system used, the TPC, DRSA and ORAC obtained from different extraction techniques differed for black beans, canola and foxtail millet. The results demonstrated that the solvent system as well as method influenced the extraction of phenolic compounds and their antioxidant activities, depending on the type of matrix in which phenolics were embedded.  相似文献

This research describes an enhance-fluidity liquid extraction process for extracting total phenolic compounds (TPC) from spent blackberry pulp (SBP) using a modified solvent (CO2–ethanol mixture). Effects of particle size (from 1,400 to 180 μm), pressure (150–300 bar), and cosolvent (ethanol)-to-solid ratio (64, 128, and 192 mL ethanol/32 g solid) on the extraction of TPC at 40°C were investigated. Experimental data was processed using the Sovova's model to obtain the solubility of TPC in the modified solvent. The Peng–Robinson equation of state was used to correlate the solubility of phenolic compounds at high pressures. Results indicated that particle sizes ranging from 600 to 850 μm and pressure of 300 bar allowed obtaining extracts with higher antioxidant activity (94.71% of inhibition) and TPC content (11.59 mg GA/g SBP). High pressure and the modified solvent increased the solubility up to 3.4 × 10−4 (mol fraction).  相似文献

The present study investigated the changes in color, volatile compounds, total phenolic content, total flavonoid content, and antioxidant activity of two holy basil leaves (kaprow in Thai) Ocimum sanctum L. cultivars, kaprow khao and kaprow daeng, after three drying treatments, namely hot air (HA), low relative humidity air drying (LRH), and far-infrared radiation (FIR). Overall, HA dried showed a greater decrease in L values than did LRH and FIR dried for both kaprow cultivars. A significant decrease in total phenolic content (TPC), total flavonoid content (TFC), and ferric reducing antioxidant power (FRAP) was found in hot-air (HA) dried compared to fresh leaves, while TPC, TFC, and FRAP in LRH and FIR dried kaprow were significantly increased. Kaprow daeng and kaprow khao attributes represented by such compounds as β-caryophyllene, methyl eugenol, and eugenol were found to increase during drying. We found that eugenol was a major volatile compound ranging from 18% in HA dried to 23% in FIR dried samples in kaprow khao, whereas methyl eugenol was the main volatile compound in kaprow daeng ranging from 35% in fresh to 49% in FIR dried samples. Our results have demonstrated that LRH and FIR should be considered as a suitable drying method for kaprow with respect to preserving its color, antioxidant property, phenolic compounds, and volatile compounds. The present study has provided useful information for industrial use of kaprow powder production.  相似文献

The antioxidant activities of ethanolic crude extract (ECE) and its four different solvent sub-fractions (namely, petroleum ether fraction (PEF), ethyl acetate fraction (EAF), n-butanol fraction (BF) and the aqueous fraction (AF) from the receptacles of Nelumbo nucifera Gaertn. (Receptaculum Nelumbinis) were investigated using two in vitro antioxidant assays. BF showed the highest total phenolic content (607.6 mg/g gallic acid equivalents), total flavonoid content (862.7 mg/g rutin equivalents) and total proanthocyanidin content (331.0 mg/g catechin equivalents), accompanied with the highest antioxidant activity compared to other fractions through 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radical scavenging assays. Five flavonol glycosides, namely hyperoside (1), isoquercitrin (2), quercetin-3-O-β-d-glucuronide (3), isorhamnetin-3-O-β-d-galactoside (4) and syringetin-3-O-β-d-glucoside (5) were isolated from the Receptaculum Nelumbinis. Compounds 2-5 were isolated for the first time from the Receptaculum Nelumbinis. The five isolated flavone glycosides, particularly compounds 1-3, demonstrated significant DPPH and ABTS radical scavenging activity, with IC(50) values of 8.9 ± 0.2, 5.2 ± 0.2, 7.5 ± 0.1 for DPPH and 114.2 ± 1.7, 112.8 ± 0.8, 172.5 ± 0.7 μg/mL for ABTS, respectively. These results suggest that Receptaculum Nelumbinis has strong antioxidant potential and may be potentially used as a safe and inexpensive bioactive source of natural antioxidants.  相似文献

Phenolic acids have been identified in a variety of legumes including lima bean, broad bean, common bean, pea, jack bean, goa bean, adzuki bean, hyacinth bean, chicking vetch, garbanzo bean, dral, cow bean, rice bean, mung bean and soybean. The present study was carried out with the following aims: (1) to identify and quantify the individual phenolic acid and determine the total phenolic content (TPC); (2) to assess their antioxidant activity, inhibition activities of α-glucosidase, tyrosinase, and formation of advanced glycation endproducts; and (3) to investigate correlations among the phytochemicals and biological activity. Common bean possesses the highest antioxidant activity and advanced glycation endproducts formation inhibition activity. Adzuki bean has the highest α-glucosidase inhibition activity, and mung bean has the highest tyrosinase inhibition activity. There are significant differences in phytochemical content and functional activities among the bean species investigated. Selecting beans can help treat diseases such as dermatological hyperpigmentation illness, type 2 diabetes and associated cardiovascular diseases.  相似文献

Free phenolic (FP), conjugated phenolic (CP), and insoluble-bound phenolic (IBP) acids were extracted from the seeds of seven species of oil-tea camellia and their antioxidant activities were evaluated. The results indicated that Camellia vietnamensis has the highest total phenolic content (TPC) (31.84 ± 0.11 g of gallic acid equivalent [GAE] kg−1) and that Camellia polyodontia has the lowest TPC (12.34 ± 0.22 g GAE kg−1) in the kernel. The average TPC among the species is similar in both the kernels and in the shells, and the content order of the three forms of phenolic compounds is FP > IBP > CP. HPLC-MS analysis showed the presence of 9–11 phenolic compounds in the FP, CP, or IBP extracts of the seven species of oil-tea camellia seed. Among the phenolics identified, ferulic acid, catechin, and epicatechin were the major contributors of antioxidant activity. Hierarchical cluster analysis conducted based on the phenolic properties showed that C. vietnamensis and Camellia semiserrata belong to the group characterized by high antioxidant capacities (FRAP, ferric-ion-reducing antioxidant power; ABTS assay), and Camellia chekiangoleosa and Camellia oleifera are arranged in a group with moderate phenolic properties. The other species constitute the third cluster with low phenolic content and antioxidant activity. The study demonstrated that oil-tea camellia seed contains significant amounts of phenolic acids. In addition, extracts from various parts of the seed could be interesting novel sources of natural antioxidants.  相似文献

Recently, the natural spices and herbs such as rosemary, oregano, and caraway have been used for the processing of meat products. This study investigates the antioxidant activity of 13 spices commonly used in meat processing plants. The hot water extracts were then used for evaluation of total phenolic content, total flavonoids content and antioxidant activities. Our results show that the hot water extract of oregano gave the highest extraction yield (41.33%) whereas mace (7.64%) gave the lowest. The DPPH radical scavenging ability of the spice extracts can be ranked against ascorbic acid in the order ascorbic acid > clove > thyme > rosemary > savory > oregano. The values for superoxide anion radical scavenging activities were in the order of marjoram > rosemary > oregano > cumin > savory > basil > thyme > fennel > coriander > ascorbic acid. When compared to ascorbic acid (48.72%), the hydroxyl radical scavenging activities of turmeric and mace were found to be higher (p < 0.001). Clove had the highest total phenolic content (108.28 μg catechin equivalent (CE)/g). The total flavonoid content of the spices varied from 324.08 μg quercetin equivalent (QE)/g for thyme to 3.38 μg QE/g for coriander. Our results indicate that hot water extract of several spices had a high antioxidant activity which is partly due to the phenolic and flavonoid compounds. This provides basic data, having implications for further development of processed food products.  相似文献

Sweet potato is known to be rich in healthful antioxidants, but the stability of its antioxidant properties under gastrointestinal pH is very much unknown. Hence, this study aimed to evaluate the changes in antioxidant properties (total contents of phenolics and flavonoids as well as antioxidant activity) of sweet potato flour (SPF) under simulated gastrointestinal pH conditions. It was found that the yield of SPF crude phenolic extract increased from 0.29 to 3.22 g/100 g SPF upon subjection to gastrointestinal pH conditions (p < 0.05). Also elevated significantly were the total phenolic content (TPC), total flavonoid content (TFC) and antioxidant activity of SPF (p < 0.05). In summary, the antioxidant properties of SPF were enhanced under gastrointestinal pH conditions, suggesting that SPF might possess a considerable amount of bound phenolic and other antioxidative compounds. The antioxidant properties of SPF are largely influenced by pH and thus might be enhanced during the in vivo digestive process.  相似文献

Fruit wastes are one of the main sources of municipal waste. In order to explore the potential of fruit wastes as natural resources of bioactive compounds, the antioxidant potency and total phenolic contents (TPC) of lipophilic and hydrophilic components in wastes (peel and seed) of 50 fruits were systematically evaluated. The results showed that different fruit residues had diverse antioxidant potency and the variation was very large. Furthermore, the main bioactive compounds were identified and quantified, and catechin, cyanidin 3-glucoside, epicatechin, galangin, gallic acid, homogentisic acid, kaempferol, and chlorogenic acid were widely found in these residues. Especially, the values of ferric-reducing antioxidant power (FRAP), trolox equivalent antioxidant capacity (TEAC) and TPC in the residues were higher than in pulps. The results showed that fruit residues could be inexpensive and readily available resources of bioactive compounds for use in the food and pharmaceutical industries.  相似文献

In this study, leaves of three indigenous varieties of Mulberry namely, Morus alba L., Morus nigra L. and Morus rubra L. were investigated for their antioxidant potential and their proximate composition was determined. The yields of 80% methanolic extracts ranged between 8.28–13.89%. The contents of total phenolics (TPC), total flavonoids (TFC) and ascorbic acid (AA) ranged between 16.21–24.37 mg gallic acid equivalent (GAE)/g, 26.41–31.28 mg rutin equivalent (RE)/g and 0.97–1.49 mg/g, respectively. The antioxidant activity of leaf extracts was evaluated by measuring 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging actity, 2,2′-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid (ABTS•+) radical cation scavenging capacity and ferric ion reducing power and values ranged between 1.89–2.12, 6.12–9.89 and 0.56–0.97 mM Trolox equivalent/g of dried leaves, respectively. The investigated features reveal good nutritive and antioxidant attributes of all the varieties with mutually significant differences.  相似文献

Abstract

The influence of different drying techniques on guava was investigated, including phenolic components and antioxidant activities. Through drying processes, total phenolic content (TPC) increased and formation of small molecular phenolic acids (multi-methoxy benzoic acid and sinapic acid) was promoted. UPLC-ESI-QTOF-MS determination showed flavanol compounds, hydrolyzable tannins, ellagic acid conjugates and cinnamic acid derivatives were four predominant phenolics of guava. Drying treatments caused degradation of catechin and its derivatives. Contrarily, drying treatments contributed to higher contents of procyanidin trimers. Moreover, thermal drying treatments led to degradation of macromolecular tannins and formation of smaller molecular tannins and ellagic acid conjugates, while simultaneously reduced the stabilities of most intrinsic ellagic acid conjugates. Furthermore, drying processes increased the yield of cinnamic acid dihexose, probably generating from lignin or phenolics–carbohydrate complex. Freeze drying and hot air drying showed better performance on retention of TPC and enhancement of antioxidant activity (AA).  相似文献

The antioxidant and anticorrosive effect of Tragia involucrate L.(T. involucrate L.) was evaluated to aid in finding new compounds which can be used for various purposes. The total phenolic(TPC) and flavonoid content(TFC),antioxidant activity(DPPH, reducing potential and phosphomolybdenum), and electrochemical measurements,Fourier transform infrared(FT-IR), UV–visible(UV–vis) spectral analysis, scanning electron microscopy/energydispersive X-ray spectroscopy(SEM–EDX) and atomic force microscopy(AFM) were done to analyze the potency and also the inhibition efficiency of T. involucrate L. against 1 mol·L~(-1) HCl on low carbon steel. The TPC(145.21 mg GAE·g~(-1)), TFC(52.32 mg QCE·g~(-1)) and antioxidant activities were found to be significant. The electrochemical studies performed by AC impedance measurements showed significant changes in impedance spectra without causing any change in Nyquist plots. An increase in charge transfer resistance(Rct) values, a blockage in active sites exhibiting cathodic and anodic inhibition shows the action of inhibitor on low carbon steel. This was later confirmed by FT-IR and UV–vis which showed variation in absorption band at 270 nm and273 nm(before immersion) and 208 and 281 nm(after immersion). The same was tested again by SEM–EDX through altered strength of iron and oxygen bands and using AFM by analyzing the change in average roughness values of low carbon steel before(61.65 nm) and after(97.87 nm) exposure to blank acid without inhibitor, while it was shifted to 81.58 nm in acid with inhibitor. All these results showed strong evidence adding values to T. involucrate L. plant extract in inhibiting corrosion on low carbon steel and by promoting antioxidant importance of the extract which helps in scavenging free radicals.  相似文献

Combined far-infrared radiation with hot-air convection (FIR-HA) drying was used for improving colour and antioxidant properties of mulberry leaf tea. Antioxidant properties and phenolic compounds of FIR-HA dried mulberry tea were determined and compared with the commercial product and with fresh leaves. We found that a smaller decrease in L and b values of the FIR-HA dried tea than those of commercial tea was observed. FIR-HA tea was found to have similar colour to fresh leaf while the commercial tea had darker colour. A significant decrease in total phenolic acid content (TPC) and total flavonoid content (TFC) was found in hot-air (HA) dried commercial tea compared to fresh leaves, while TPC in FIR-HA dried tea was significantly increased. Similar results were found in 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical activities. However, the results were different for ferric reducing antioxidant power (FRAP). Both teas had lower FRAP values compared to fresh leaves. Eleven phenolic compounds were identified in fresh leaf and in mulberry tea, namely p-coumaric acid, benzoic acid, (+)-catechin, chlorogenic acid, vanillic acid, syringic acid, sinapic acid, protocatechuic acid, ferulic acid, gallic acid and caffeic acid. The total content of phenolic compounds (TPCC) increased in FIR-HA dried samples compared to those of HA dried tea, except for chlorogenic and syringic acids, which were found in greater amounts in HA dried commercial tea. Our results have demonstrated that FIR-HA should be considered as a suitable drying method for mulberry tea with respect to preserving its antioxidant properties and phenolic compounds.  相似文献

Three walnut (Juglans regia L.) drying methods (sun drying, direct oven drying, and intermittent oven drying) were employed, and the consequent changes in lipid oxidation attributes, such as acid value (AV), peroxide value (POV), saponification value (SV), fatty acid composition, and antioxidant activity [including reducing power, superoxide anion scavenging activity, 1,1-diphenyl-2-picrylhydrazyl free radical scavenging activity (DPPH), lipoxygenase (LOX) activity, total phenols content (TPC), and total flavonoids content (TFC)] were investigated in this study. Sun drying resulted in the highest AV, POV, and SV, followed by direct oven drying and intermittent oven drying. Antioxidant activities and related compounds, TPC and TFC, were initially increased and then declined during drying, and a significant correlation was found between antioxidant activity and TPC and TFC. The LOX activities of all samples showed an increasing trend, although those of the sun-dried samples were the lowest. The walnuts dried with the intermittent oven drying method contained more linoleic acid than those dried by direct oven drying. Overall, intermittent oven drying appears to be a promising strategy for fresh walnut drying.  相似文献

Phenolic extracts from seven millet varieties, namely kodo, finger (Ravi), finger (local), proso, foxtail, little and pearl were evaluated for their inhibitory effects on lipid peroxidation in in-vitro copper-mediated human LDL cholesterol oxidation and several food model systems, namely cooked comminuted pork, stripped corn oil, and linoleic acid emulsion. The total phenolic content (TPC) and free radical scavenging activities were measured. The TPC ranged from 146 to 1156 μmol ferulic acid equiv (FAE)/g crude extract and the corresponding values based on defatted weight of grain ranged from 8.6 to 32.4 μmol FAE/g. At a final concentration of 0.05 mg/mL, millet extracts inhibited LDL cholesterol oxidation by 1–41%. All seven varieties exhibited effective inhibition of lipid oxidation in food systems used in this study and kodo millet exhibited superior inhibition of lipid peroxidation, similar to butylated hydroxyanisole at 200 ppm. Thus, millets may serve as a natural source of antioxidants in food applications and as a nutraceutical and functional food ingredient in health promotion and disease risk reduction.  相似文献

Chemical composition, antioxidant and antimicrobial activities of the fresh leaves and stems oils of Piper caninum were investigated. A total of forty eight constituents were identified in the leaves (77.9%) and stems (87.0%) oil which were characterized by high proportions of phenylpropanoid, safrole with 17.1% for leaves and 25.5% for stems oil. Antioxidant activities were evaluated by using β-carotene/linoleic acid bleaching, DPPH radical scavenging and total phenolic content. Stems oil showed the highest inhibitory activity towards lipid peroxidation (114.9 ± 0.9%), compared to BHT (95.5 ± 0.5%), while leaves oil showed significant total phenolic content (27.4 ± 0.5 mg GA/g) equivalent to gallic acid. However, the essential oils showed weak activity towards DPPH free-radical scavenging. Evaluation of antimicrobial activity revealed that both oils exhibited strong activity against all bacteria strains with MIC values in the range 62.5 to 250 μg/mL, but weak activity against fungal strains. These findings suggest that the essential oils can be used as antioxidant and antimicrobial agents for therapeutic, nutraceutical industries and food manufactures.  相似文献

Edible flowers are commonly used in human nutrition and their consumption has increased in recent years. The aim of this study was to ascertain the nutritional composition and the content and profile of phenolic compounds of three edible flowers, monks cress (Tropaeolum majus), marigold (Tagetes erecta) and paracress (Spilanthes oleracea), and to determine the relationship between the presence of phenolic compounds and the antioxidant capacity. Proximate composition, total dietary fibre (TDF) and minerals were analysed according to official methods: total phenolic compounds (TPC) were determined with Folin-Ciocalteu’s reagent, whereas antioxidant capacity was evaluated using Trolox Equivalent Antioxidant Capacity (TEAC) and Oxygen Radical Absorbance Capacity (ORAC) assays. In addition, phenolic compounds were characterised by HPLC-DAD-MSn. In relation to the nutritional value, the edible flowers had a composition similar to that of other plant foods, with a high water and TDF content, low protein content and very low proportion of total fat—showing significant differences among samples. The levels of TPC compounds and the antioxidant capacity were significantly higher in T. erecta, followed by S. oleracea and T. majus. Thirty-nine different phenolic compounds were tentatively identified, with flavonols being the major compounds detected in all samples, followed by anthocyanins and hydroxycynnamic acid derivatives. In T. erecta small proportions of gallotannin and ellagic acid were also identified.  相似文献

A liquid chromatography-tandem mass spectrometry method (LC-MS/MS) was developed for the determination of phenolic acids and flavonoids in a medicinal Chinese herb Taraxacum formosanum Kitam. Initially, both phenolic acids and flavonoids were extracted with 50% ethanol in a water-bath at 60 °C for 3 h and eventually separated into acidic fraction and neutral fraction by using a C(18) cartridge. A total of 29 compounds were separated within 68 min by employing a Gemini C(18) column and a gradient solvent system of 0.1% formic acid and acetonitrile at a flow rate of 1.0 mL/min. Based on the retention behavior as well as absorption and mass spectra, 19 phenolic acids and 10 flavonoids were identified and quantified in T. formosanum, with the former ranging from 14.1 μg/g to 10,870.4 μg/g, and the latter from 9.9 μg/g to 325.8 μg/g. For further identification of flavonoids, a post-column derivatization method involving shift reagents such as sodium acetate or aluminum chloride was used and the absorption spectral characteristics without or with shift reagents were compared. An internal standard syringic acid was used for quantitation of phenolic acids, whereas (±) naringenin was found suitable for quantitation of flavonoids. The developed LC-MS/MS method showed high reproducibility, as evident from the relative standard deviation (RSD) values for intra-day and inter-day variability being 1.0-6.8% and 2.0-7.7% for phenolic acids and 3.7-7.4% and 1.5-8.1% for flavonoids, respectively, and thus may be applied for simultaneous determination of phenolic acids and flavonoids in Chinese herb and nutraceuticals.  相似文献

Apricot kernels were roasted at various temperatures (120–180 °C) for 10 min and changes in the fatty‐acid profiles, oxidative stability, and antioxidant activity, as well as the total phenolic contents (TPC) of the oils and skin (seed coat), were monitored. Roasting has no obvious influence on profiles and contents of fatty acid, induction period (IP), browning index, TPC, and antioxidant activity (2,2‐diphenyl‐1‐picrylhydrazyl (DPPH), 2,2‐azinobis(3‐ethylbenzothiazoline‐6‐sulfonic acid), (ABTS) and Oxygen Radical Absorbance Capacity (ORAC) of oils obtained from apricot naked‐kernel, but increases IP, TPC, and oxidative stability in oils obtained from apricot kernel with skin. All results in the present work demonstrated that thermal treatment accelerated the production and transference of alcohol‐soluble phenolics into the oil, and improved the oil oxidative stability. It is not Maillard reaction products but alcohol‐soluble phenolic compounds in skins that play a role in improving the oxidative stability and antioxidant activity of oils, and inhibition for primary peroxide production was more effective than secondary peroxide production at a low roasting temperature and a short roasting time. The present findings can advance knowledge on the conditions used for utilization of coproducts (skin) of apricot kernel and facilitate large‐scale production of stable oil against oxidation.  相似文献
