Forty male Ile-de-France lambs (10 blocks of 4 homologous lambs) were used to study the effects of four feeding systems on muscle fatty acids (FA): raising and finishing on cool-season grasses (G), raising on the same grasses and stall-finishing, indoors, on concentrates and hay, respectively, for 22 (GSS) or 41 days (GSL), and stall-feeding indoors on concentrates and hay during both growing and finishing periods (S). Twenty-four lambs only (6 blocks) were retained for comparison of growth performances, lipid content in the longissimus thoracis muscle (LT) and their FA composition according to treatment. The 16 other lambs (4 blocks) were removed from the comparison, due to a large spread in the growth of the lambs towards the end of the trial. No significant effects of treatment were seen on the rate of growth (221, 228, 243 and 245±SE 8.0g/d, respectively, for G, GSS, GSL and S groups), and the lipid contents of the LT (2.22, 2.16, 2.17 and 2.52±SE 0.11g/100g fresh tissue). Grazing, lowered n-6 PUFA (polyunsaturated fatty acids), and increased n-3 PUFA and C18:2 c9t11 (conjugated linoleic acid cis9, trans11) compared to concentrate feeding. The main effects of grazing were not removed by a short period of finish indoors on concentrate (GSS group), but C20:4 n-6 and C22:6 n-3 contents achieved the lowest contents in this group, with significant differences from the values observed for GSL and S groups (C20:4 n-6) or from the three other groups (C22:6 n-3). After a longer period of finish on concentrate (GSL group), C18:3 n-3 (linolenic acid), C18:2 c9t11 and long chain (LC) n-3 PUFA were brought to the levels observed in the S group. In terms of adequacy for human health, the C18:2 n-6/C18:3 n-3 ratios were favourably low in the four groups (2.6, 3.6, 4.9 and 5.2±SE 0.7, respectively, for G, GSS, GSL and S groups), the level observed in the case of G group being significantly lower than for the three other groups and the level observed for GSS group being significantly lower than for the GSL and S groups. 相似文献

Thirty-two male Ile-de-France lambs were used in a factorial 2×2 design to analyse the effects of feeding systems (grass outdoor, G, or concentrate and hay indoor: stall, S) and of growth rate (low, L, or high, H) on total lipids, triglyceride (TG) and phospholipid (PL) contents and their fatty acid composition in the longissimus thoracis muscle (L.T.). Contents were lower for TG (10.4 vs. 15.8 mg/100 g fresh tissue, P<0.05) and higher for PL (6.4 vs. 5.8 mg/100 g fresh tissue, P <0.05) in grass-fed lambs compared to stall-fed ones. TG of grass fed lambs displayed lower proportions of palmitic acid (C16:0), monounsaturated fatty acids (MUFAs), linoleic acid (C18:2n-6) and other (n-6) polyunsaturated fatty acids (PUFA) and higher proportions of stearic acid (C18:0), linolenic acid (C18:3n-3), cis 9, 11 trans C18:2 and trans monounsaturated fatty acids. In PL of the same lambs only lower MUFA, C18:2n-6 and (n-6) PUFA and higher C18:3n-3, (n-3) PUFA and cis 9, 11 trans C18:2 were observed. Growth rate had no effect on lipid, TG or PL contents of longissimus thoracis. However C18:0 proportions were higher in TG and lower in PL for low growth rate lambs. Low growth rate lambs had also lower cis 9, 11 trans C18:2 in TG. Thus, irrespective of growth rate, the muscle lipids characteristic of grass fed lambs fulfilled the recommended features of human food components much better than that of stall fed lambs, namely for CLA and C18:3n-3. The lower ratios of (n-6) to (n-3) PUFA displayed in grass fed lambs both in TG and in PL were also useful to discriminate all the grass fed lambs from all the stall fed animals. 相似文献

The longissimus thoracis (LT) from USDA Select beef carcasses was used to test the effect of aging period (0, 7, 14, 21, 28, or 35 d) on bloom development (n = 10/aging period). After aging, two 2.54-cm-thick, non-adjacent steaks were cut and instrumental color of the LT was measured at 10-min intervals for 2 h. All instrumental color parameters increased (P < 0.05) over 40% during the first 10 min; however, asymptotic points indicated that color plateaued sometime after 120 min. Although aging did not (P ? 0.05) affect the values where color development plateaued, rate of oxymyoglobin formation tended to be the slowest (P = 0.06) in LT steaks aged 7 d compared to steaks aged 0, 14, 28 and 35 d. Results indicated that as much as 90% of the total increase (P < 0.05) in instrumental color and oxymyoglobin percentages was achieved during the first 60 min after cutting, but aging period had no impact on bloom development. 相似文献

This study was conducted to investigate changes in fatty acid profiles of beef cows fed grass hay or barley silage based diets, with or without flaxseed supplementation. Both flaxseed and hay feeding increased levels of α-linolenic acid (LNA; 18:3n-3) in longissimus thoracis and backfat (P<0.001). A forage type by flaxseed level interaction was observed for most LNA biohydrogenation intermediates (P<0.05) that indicated feeding hay combined with flaxseed led to the greatest levels of total conjugated linolenic acid, total conjugated linoleic acid, total non-conjugated dienes and total trans-18:1. Predominant biohydrogenation intermediates included t11,c15-18:2, rumenic acid (c9,t11-18:2) and vaccenic acid (t11-18:1). 相似文献

An experiment with 94 fattening pigs (48 gilts and 46 barrows) was conducted to determine the effect of feeding 25% restricted diets at different body weights on meat quality and fatty acid profile of M. longissimus thoracis (LT). During the 84 days of the experiment (4 periods, 21 days each), animals with an initial weight of about 31 kg were fed in different periods of observation ad libitum (A) or restricted diets (R) in groups AAAA, AARA, RAAA and RARA. After 21 days of the experiment, the restricted-fed pigs, compared to those fed ad libitum, had a lower total fat content of M. longissimus thoracis (P<0.05), higher shear force (P=0.068), and lower proportions of SFA (C14:0, C18:0 P<0.05) and MUFA and higher proportions of PUFA (C20:4, C22:4 P<0.05) in the fatty acid profile. Three weeks after the restricted feed supply was lifted, the total fat content in LT muscle was higher than in animals fed ad libitum throughout (2.34 vs. 2.02), very close after the next 3 weeks of realimentation (3.16 vs. 3.15) and lower after another 3 weeks (3.19 vs. 3.49). Regardless of the time at which restricted feeding was started and the number of restricted feeding periods, the total fat content in the LT muscle at the end of the experiment was similar or lower in groups RAAA, AARA and RARA, compared to group AAAA. The coefficient of correlation between the total fat content in LT and the shear force was -0.36 (P<0.01). Colour, pH and drip loss did not depend on the level of nutrition. After 84 days of observation, animals from groups RARA and AARA, compared to pigs from groups AAAA and RAAA, were characterized by a slightly higher shear force of LT, lower SFA and MUFA (P<0.001), and higher n-6 PUFA (P<0.01) and n-3 PUFA (P<0.01) proportions in the fatty acid profile. The fatty acid profiles of AAAA pigs and pigs undergoing a 63-day realimentation period (RAAA) were similar. Regardless of the feeding scheme, the n-6:n-3 ratio exceeded 10 in all the groups. 相似文献

The present study was accomplished to evaluate the intramuscular fatty acid (FA) composition of different muscles taken from Kundi steers (n = 15), which were approximately 24 months old, fed on a cottonseed cake supplement, and were made to graze on alfalfa pasture for 95 days prior to slaughter. The samples were taken from longissimus dorsi region (loin and ribeye portion) and distal region of semitendinosus muscle for intramuscular FA analysis. Saturated FA, comprising 49.48–52.09% of total FA composition, in all the muscles were studied. Ribeye portion of longissimus dorsi muscle contain relatively higher (P > 0.05) amount of trans FA (3.37%) as compared with loin portion of longissimus dorsi muscle (3.1%) and distal region of semitendinosus muscle (2.84%). The sum of monounsaturated FA in all the muscles studied was estimated in the range of 32.21–34.64%, while polyunsaturated FA contribute 11.39–12.39% of total FA. The mean conjugated linoleic acid was found to be 0.28, 0.35 and 0.41 in ribeye and loin portion of longissimus dorsi muscle and distal region of semitendinosus muscle, respectively. 相似文献

Dietary lipid effect, as a consequence of protein supplement, on lamb m. longissimus dorsi fatty acid composition was investigated, with emphasis on biohydrogenation intermediates. Crossbred lambs (White Swedish Landrace × Texel) were fed a barley-based diet without (CON) or with protein supplements including peas (PEA), rapeseed cake (RC) or hempseed cake (HC). The HC diet resulted in the highest muscle 22:6n-3 proportion, with the RC diet being similar (P<0.05). Protein supplement did not affect the c9,t11 conjugated linoleic acid (CLA) proportion, however the HC diet increased some minor CLA isomers, including t10,c12 CLA (P<0.05). The t10-18:1 and total trans-18:1 were lowest for the RC diet (P<0.05), likely relating to rumen conditions and precursor availability. The saturated, monounsaturated and branched-chain fatty acids were largely unaffected by protein supplement. In conclusion, feeding the RC diet lowered the t10-18:1 and total trans-18:1 in meat, and modestly increased 22:6n-3 content. The direction of these changes would be beneficial, making the RC diet the preferred protein supplement; however the magnitude of the changes in the present experiment may not be sufficient to have an impact on human health. 相似文献

Forty-four Japanese Black fattening steers from four groups, produced in four districts and consisting of differing genetic backgrounds were slaughtered to examine the characteristic differences in muscle fiber types at the 6th thoracic vertebra of the M. longissimus thoracis (LT). The influence of percentage, diameter, and relative area of each muscle fiber type on the carcass characteristics and some quantity and quality traits of beef taken from LT, were also investigated. Significant differences in the characteristics of the muscle fiber types were observed among the four groups, except for muscle fiber diameter in the αR fiber, and the relative area of each αW fiber. For all steers, the average percentages and diameters of each muscle fiber type, βR, αR and αW were 26.8, 18.5 and 54.7% and 51.4, 50.6 and 52.4 μm, respectively. The relative area of each fiber type was similar to those of muscle fiber composition. αR Fiber content had significant negative correlations with marbling score (p<0.05), intramuscular fat content (p<0.05) and ultimate pH value (p<0.05). Significant correlations between the diameter of each fiber type, and the quantity or quality traits of the meat were not found, with the exception of red fiber types (βR and αR) and meat color a(?) values (p<0.05) which were positively correlated. 相似文献

Thirty-two lambs were fed with barley straw supplemented by a concentrate alone, or a concentrate enriched with either vitamin E (VITE006: 0.6 g kg−1 feed concentrate) or carnosic acid (CARN006: 0.6 g kg−1 feed concentrate; or CARN012: 1.2 g kg−1 feed concentrate). In order to elucidate the influence of the dietary supplementation of carnosic compared with a reference diet antioxidant (vitamin E), the animals were slaughtered and the longissimus thoracis were lyophilised to determine the FAs profile and the phenolic compounds. In addition, longissimus lumborum slices were stored in a modified atmosphere package for 3 days and then grilled to determine volatile compounds. Dietary carnosic acid did not modify the FAs profile, but had a clear effect on the production of volatile compounds, in a dose-dependent manner. These results have implications for the food industry, since dietary carnosic acid seems to extend the shelf life of lamb meat. 相似文献

This study evaluated effects of feedlot backgrounding strategies (40, 70 or 100% alfalfa hay diets) or pasture grazing on moisture, protein, total lipids, ash, cholesterol concentration, and lipid profiles of the longissimus dorsi muscle (LM) of pasture finished Angus heifers. Ninety six calves were allocated to the strategies over a 114-day period, followed by pasture grazing over 132 days. At the end of the backgrounding stage, the concentration of omega-3 (n-3) fatty acids was highest in the Pasture group and this difference persisted (P < 0.032) until the end of the 132 day pasture finishing phase. Similarly, the n-6/n-3 ratio was lowest in the Pasture group at the end of backgrounding and after pasture finishing. Backgrounding diets based on 70 and 100% hay or pasture grazing showed greater (P < 0.041) conjugated linoleic acid (CLA) concentration in the lipid fraction than 40% hay. Results suggested that residual effects of backgrounding strategies could be detected in intramuscular fat of pasture finished heifers. 相似文献

The periparturient period is characterized by sudden changes in metabolic and immune cell functions that predispose dairy cows to increased incidence of disease. Metabolic changes include alterations in the energy balance that lead to increased lipomobilization with consequent elevation of plasma nonesterified fatty acids (NEFA) concentrations. The objective of this study was to establish the influence of lipomobilization on fatty acid profiles within plasma lipid fractions and leukocyte phospholipid composition. Blood samples from 10 dairy cows were collected at 14 and 7 d before due date, at calving, and at 7, 14, and 30 d after calving. Total lipids and lipid fractions were extracted from plasma and peripheral blood mononuclear cells. The degree of lipomobilization was characterized by measurement of plasma NEFA concentrations. The fatty acid profile of plasma NEFA, plasma phospholipids, and leukocyte phospholipids differed from the composition of total lipids in plasma, where linoleic acid was the most common fatty acid. Around parturition and during early lactation, the proportion of palmitic acid significantly increased in the plasma NEFA and phospholipid fractions with a concomitant increase in the phospholipid fatty acid profile of leukocytes. In contrast, the phospholipid fraction of long-chain polyunsaturated fatty acids in leukocytes was diminished during the periparturient period, especially during the first 2 wk following parturition. This study showed that the composition of total plasma lipids does not necessarily reflect the NEFA and phospholipid fractions in periparturient dairy cows. These findings are significant because it is the plasma phospholipid fraction that contributes to fatty acid composition of membrane phospholipids. Increased availability of certain saturated fatty acids in the NEFA phospholipid fractions may contribute to altered leukocyte functions during the periparturient period. 相似文献

The aim of this study was to evaluate the use of forage diets (grazing vs. hay) around the time of ewe parturition, on the fatty acids profile of suckling lamb meat (10-12 kg body weight). Forty-eight multiparous single-bearing ewes were used. The experimental treatments were conducted during the last 5 weeks of pregnancy and the 5 weeks of lactation in a 2 × 2 factorial design. Ewes were fed ad libitum on pastures or hay in the autumn. Results showed that milk from grazing ewes during the pre-partum period had a higher content of PUFA and CLA (P < 0.05) and VA, CLA in their suckling lambs' meat (P < 0.05). The effect in post-partum feeding was greater, revealing higher CLA, PUFA/SFA, PUFA n-3 and PUFA n-6/n-3 in milk and meat (P < 0.05). The CLA, VA and PUFA n-6/n-3 ratios are those that are most affected by grazing. Pre-partum grazing, regardless of post-partum feeding, improves FA composition, increasing CLA content in both milk and meat. 相似文献

Eighteen Barbarine lambs (3 months of age), were assigned for 95 days to 3 treatments: six lambs were fed a barley-based concentrate plus oat hay ad libitum (control group, C); other lambs received the control diet plus essential oil (400 ppm DM) either of Rosmarinus officinalis (R400 group; n = 6) or of Artemisia herba alba (A400 group; n = 6). At slaughter the muscle longissimus dorsi was sampled and subjected to fatty acid and volatile organic compounds (VOC) analyses. The A400 lambs presented a greater amount of vaccenic, rumenic and linolenic acids and of polyunsaturated fatty acids (PUFA) in meat than the C and R400 animals. Essential oils supplementation did not affect meat VOC profile though the sesquiterpenes copaene and β-caryophyllene were detected only in the meat of R400 and A400 lambs. It is concluded that the supplementation of rosemary or artemisia essential oils does not produce detrimental effects on lamb meat VOC profile. The supplementation of artemisia can improve meat healthy properties. 相似文献

The concentrations of fatty acids were measured in total lipids, triacyglycerol and phospholipid fractions of intramuscular fat (IMF) from the Longissimus dorsi (LD) muscle of 10 lambs reared to approximately 30kg live weight on natural pasture with their dams. Fatty acid composition was also measured in 25 (five of each) Semitendinosus (ST), Semimembranosus (SM), Rectus femoris (RF), Gluteus (GLU) and Tensor fascia latea (TFL) muscles. Intramuscular fat percentages were similar for all muscles. Aspects of the fatty-acid patterns of relevance to human nutrition tended to favor the leg muscles with lower saturated fatty acids (SFA %), n-6/n-3 fatty acid ratios (p<0.01) and higher concentrations of the conjugated linoleic acid (CLA) (p<0.05). The estimated fatty acid concentrations (mg/100g of meat) showed higher contribution of arachidonic (C20:4 n-6), eicosapentanoic (C20:5 n-3), docosapentanoic (C22:5 n-3) and docosahexanoic (C22:6 n-3) acids in leg compared to LD lipids. 相似文献

Thirty male lambs were assigned to one of 3 concentrate diets supplemented with 45 (E0), 286 (E1) or 551 (E2) mg/kg DM of dl-α-tocopheryl acetate to test the effect of vitamin E supplementation on muscle, caudal and perirenal fatty acid (FA) compositions. Specific attention was paid to C18:1 10t, usually observed in high proportions with high-starch or high-unsaturated FA diets. Vitamin E supplementation increased the α-tocopherol plasma concentrations of lambs. It did not modify lamb growth and slaughter parameters. Vitamin E supplementation did not modify FA composition in most tissues but it increased the C18:2 n − 6/C18:3 n − 3 ratio in muscle and adipose tissues of the E1 group compared to E0 and E2 groups. Vitamin E supplementation enhanced the C18:1 10t proportion in muscle and adipose tissues and it decreased the C18:2 9c,11t proportion in adipose tissues, especially in the E2 group. Thirty-two Merino lambs fed barley straw and a concentrate formulated either with palm oil (CTRL group) or with linseed (+ LS group), both alone or supplemented with quercetin (+ QCT group or + LS + QCT group) were used to assess the effects of these dietary supplements on meat quality attributes. After being slaughtered, the longissimus thoracis muscles were used to study the fatty acid (FA) profile in detail, whilst longissimus lumborum slices were stored under refrigerated conditions to determine the lipid stability. Linseed increased the content of highly unsaturated n − 3 long-chain fatty acid (20:5n − 3; 22:5n − 3; 22:6n − 3). Interestingly, a significant increment of rumenic acid content (9c,11t-18:2) was observed when this seed was administered together with dietary quercetin. Moreover, the feeding of quercetin resulted in a reduction in the proportion of saturated FA and a decrease in lipid peroxidation of meat when the lambs were fed linseed. In conclusion, from both a nutritional and a commercial (shelf-life) point of view, it may be useful to include a source of quercetin when lambs are fed linseed diets. 相似文献

In five short-term experiments conducted in Victoria in 1997 and 1998, grazing dairy cows were given either pasture alone or pasture supplemented with high-energy concentrates, and the fatty acid profiles of milk fat were measured. We established the effects of these feeds on some aspects of milk fat of importance for human nutrition, but we specifically focused on the hypothesis that conjugated linoleic acid (CLA) concentrations in milk fat increase as pasture intake increases, and decrease as more concentrates are fed. In agreement with previous research, feeding fresh pasture alone resulted in high concentrations (1.0-1.8 g/100 g milk fat) of CLA. When the effect of level of pasture consumption on CLA content was examined, a significant positive relationship (r2 = 0.35; P < 0.05) was obtained. When cereal grain concentrates were used to supplement pasture intake, the CLA content of milk fat generally declined (P < 0.05), except where the amount of concentrates given led to a marked reduction in total milk fat concentration. The use of cereal grain concentrates also generally resulted in significant (P < 0.05) increases in medium-chain saturated fatty acids, but always reduced the contribution of butyric acid to milk fat, from 4.5 to 3.9 g/100 g milk fat, on average. 相似文献

The relationship between muscle vitamin E, forms of iron, polyunsaturated fatty acids (PUFA) and the redness of meat (retail display) at days 3 to 4 post slaughter from lambs offered 2 different diets was examined. Meat redness was positively related to vitamin E and heme iron and negatively related to total n-3, total n-6 and total PUFA content. However, after adjusting for the effects of vitamin E and heme iron content, there was no indication of any residual relationship between redness at days 3-4 of retail display and total n-3, total n-6 or total PUFA. This indicates that the relationship between PUFA and redness in meat is mediated through the effects of heme iron and vitamin E in the muscle. It appears that the level of highly oxidisable PUFAs in muscle tissues do not play a major role in maintenance of redness at days 3-4 of retail display, but the level of vitamin E and heme iron content are important. 相似文献

Correlations between 4-hydroxy-2-hexenal (HHE) or 4-hydroxy-2-nonenal (HNE) and fatty acids were statistically investigated
in 73 kinds of commercially available food sources of n-3 or n-6 polyunsaturated fatty acids (PUFA). The analysis revealed that the level of HNE was obviously correlated with the contents
of PUFA (r=0.462), n-6 PUFA (r=0.512), and saturated fatty acids (r=0.535). Significant correlation was also observed between HHE and HNE (r=0.486) although whose source fatty acids were different. Regarding the sesame oils and perilla oils currently available on
the Korean markets, no appreciable difference in the levels of HHE or HNE was found depending on their manufacturing types. 相似文献
