This article describes the analysis of heat and mass transfer coefficients for a single board of Pinus radiata (D. Don) timber over a range of high temperature and superheated steam drying conditions. The calculated heat transfer coefficients were in the range 20 to 60 W m-2 K-1. The mass transfer coefficients were of the order of 2 × 10-8 to 3 × 10-7 kg m-2 s-1, based on the vapor pressure difference, and of the order of 0.002 to 0.04 m s-1 (expressed in terms of mass transfer velocity) based on vapor concentration difference between the surface of the board and the bulk drying medium.  相似文献

Thin-layer drying of moist flax fiber was performed at four temperatures of 30, 50, 70, and 100°C with a constant absolute humidity of 0.0065 kg water per kg dry air. The coefficients of diffusion of the fiber at different drying conditions were estimated by modeling the drying process using the one- to five-term solutions of the second Fick's law of diffusion. The models underestimated the drying process during the initial stages of drying and overestimated this process during the final stages. The estimated coefficient of diffusions ranged from 5.11 × 10-9 to 1.92 × 10-8 m2/s and linearly increased with the drying air temperature.  相似文献

A model is presented for drying of a single porous particle with superheated steam and humid air. Experimental data for spherical porous ceramic particle reported in the literature were used for the validation of the model. An inversion temperature at which the evaporation rates within superheated steam and humid air are equal was predicted. The effect of thermophysical properties of the particle (permeability 10?14 ? 10?17 m2, diameter 3 × 10?3 ? 10 × 10?3 m) and operating variables (gas mass flux 0.26 ? 0.78 kg m?2 s?1, drying agent temperature 120–200°C) is tested. The inversion temperature is shown to be affected by the thermophysical properties of the porous particle and of the drying agent.  相似文献

A study was performed to determine the drying characteristics and quality of barley grain dried in a laboratory scale spouted-bed dryer at 30, 35, 40, and 45°C and an inlet air velocity of 23 m/s-1, and in an IR-convection dryer under an infrared radiation intensity of 0.048, 0.061, 0.073, and 0.107 W cm-2 at an air velocity of 0.5 m/s-1. The results show that the first, relatively short, phase of a sharp decrease in the drying rate was followed by the phase of a slow decrease. The time of barley drying depended on temperature of inlet air in a spouted-bed dryer and on radiation intensities in an IR-convection dryer. Barley drying at 45°C in a spouted-bed dryer was accompanied by the lowest total energy consumption. The average specific energy consumption was lower and the average efficiency of drying was higher for drying in a spouted-bed dryer. The effective diffusivities were in the range 2.20-4.52 × 10-11 m2 s-1 and 3.04-4.79 × 10-11 m2/s-1 for barley dried in a spouted-bed and in an IR-convection dryer, respectively. There were no significant differences in kernel germination energy and capacity between the two drying methods tested.  相似文献

Drying of porous solids was experimentally investigated in superheated steam as well as in air. Drying rate curves, including critical moisture contents, in steam at subatmospheric pressure, were compared to those for air at atmospheric pressure; moreover, they were compared to those for steam at atmospheric pressure as well. The former comparison was carried out under conditions of sample temperatures of 41.8-42.5°C (which were nearly equal to saturation temperatures of 42.1-42.2°C at pressures of 8.23-8.30 kPa) for the constant rate period in steam and the corresponding sample temperatures of 42.0-45.0°C (which were close to the wet-bulb temperatures) for the constant rate period in air. There were distinct differences between normalized drying rate curves, including critical moisture contents in steam and in air at the above similar sample temperatures for materials of baked clay, firebrick, and cemented glass balloons over the minimum value of 8.3 × 10-3 µm and up to the maximum value of 1.2 × 102 µm in cumulative pore-size distributions: longer constant rate periods and lower critical moisture contents in steam than in air, and higher drying rates in steam than in air for the falling rate period. Moreover, the latter comparison of the drying rates in steam at subatmospheric pressure to those in steam at atmospheric pressure revealed that the differences in normalized drying rates between subatmospheric pressure and atmospheric pressure were small for both materials under mild external conditions. These findings were common to the baked clay, firebrick, and cemented glass balloons over a wide range of pore-size distributions studied in the present work, as well as sintered coarse glass beads as previously reported.  相似文献

The moisture diffusivities and moisture transfer coefficients characterising the drying of pharmaceutical powders were determined using a correlation proposed by Dincer et al. (2002, Development of a new drying correlation for practical applications. International Journal of Energy Research 26, 245-251). Experimental moisture content data for lactose, Aspirin and Paracetamol samples dried under convective, microwave, combined convective-microwave and combined vacuum-microwave conditions were obtained. The drying coefficients and lag factors were determined from the experimental measurements and incorporated into the model. The mass transfer Bi numbers were found to be in the range 0.058 to 0.194, indicating the presence of finite internal and external resistances. Moisture diffusivity and diffusion coefficient values in the range 0.135 × 10-9 to 102 × 10-9 m2 s-1 and 0.067 × 10-7 to 8.21 × 10-7 ms-1 respectively, were calculated. The predicted moisture profiles showed adequate agreement with the experimental observations, with the average error between experimental and predicted results being ± 15.9%.  相似文献

Osmotic drying was carried out, with cylindrical samples of apple cut to a diameter-to-length ratio of 1:1, in a well-agitated large tank containing the osmotic solution at the desired temperature. The solution-to-fruit volume ratio was kept greater than 30. A modified central composite rotatable design (CCRD) was used with five levels of sucrose concentrations (34-63°Brix) and five temperatures (34-66°C). Kinetic parameters weight reduction (WR), moisture loss (ML), solids gain (SG) were considered. A polynomial regression model was developed to relate moisture loss and solids gain to process variables. A conventional diffusion model involving a finite cylinder was also used for moisture loss and solids gain, and the associated diffusion coefficients were computed. The calculated moisture diffusivity ranged from 8.20 × 10-10 to 24.26 × 10-10 m2/s and the solute diffusivity ranged from 7.82 × 10-10 to 37.24 × 10-10 m2/s. Suitable ranges of main parameters were identified for OD kinetics further study.  相似文献

Constant and Intermittent Drying Characteristics of Olive Cake   总被引:1,自引:0,他引:1  
The drying kinetics of olive cake, the solid by-product of the olive oil extraction process, has been experimentally investigated in a small-scale tray dryer using both constant and intermittent (on/off) heating schemes. The parameters investigated include inlet air temperature and intermittency of heat input. The drying kinetics was interpreted through two mathematical models, the Page equation and the Lewis equation. The Page equation was most appropriate in describing the drying behavior of olive cake. A diffusion model was used to describe the moisture transfer and the effective diffusion coefficient at each temperature was determined. The dependence of the effective diffusion coefficient on drying temperature can be adequately explained based on an Arrhenius-type relation. The effective diffusion coefficient varied between 7.6 × 10-8 and 2.5 × 10-7 m2/min with an activation energy of 38.55 kJ/mol. Comparison of time evolution of material moisture content due to intermittent and constant drying is also made.  相似文献

The effect of microwave output power and sample amount on effective moisture diffusivity were investigated using microwave drying technique on round okra (Hibiscus esculentus L.). The various microwave output powers ranging from 180 to 900 W were used for the determination of effective moisture diffusivity for constant sample amount of 100 g okra. To examine the effect of sample amount on effective moisture diffusivity, the samples in the range of 25-100 g were dried at constant microwave output power of 360 W. By increasing the microwave output powers and decreasing the sample amounts, the effective moisture diffusivity values ranged from 20.52 × 10-10 to 86.17 × 10-10 and 34.87 × 10-10 to 11.91 × 10-9 m2/s-1, respectively. The modeling studies were performed to illustrate the relationship between the ratio of the microwave output power to sample amount and effective moisture diffusivity. The relationship between drying constant and effective moisture diffusivity was also estimated.  相似文献

Desirable flavor qualities of cocoa are dependent on how the cocoa beans are fermented, dried, and roasted. During fermentation and drying, polyphenols such as leucocyanidin and apecatechin are oxidized by polyphenols oxidase to form o-quinone, which later react nonenzymatically with a hydroquinone in a condensation reaction to form browning products and moisture. The objective of this article is to model the cocoa beans drying together with the browning reaction. A Luikov drying model for the moisture and a simple Fick's law diffusion model combined with first-order reactions for both the enzymatic oxidation and nonenzymatic condensation reactions were constructed. Both models were used to identify moisture diffusivity coefficient and total polyphenols diffusivity in cocoa beans from experimental drying and polyphenols degradation data and published kinetic data of the reactions. The theoretical drying model fitted the experimental cocoa bean drying curves with low mean square of residuals. The polyphenols diffusion and reaction model also fitted the experimental polyphenols degradation curves with minimum mean residual squares. The rate of polyphenols degradation in the cocoa beans increases at higher temperature and higher relative humidity. This is because the increasing reaction rate of polyphenols oxidation reaction as well as higher moisture diffusion at higher relative humidity and temperature. The effective moisture diffusivity in cocoa beans is estimated to be between 8.194 × 10-9 and 8.542 × 10-9 m2·s-1, which is of the same order of magnitude as published data. The effective total polyphenols diffusivity is estimated to be between 8.333 × 10-12 to 1.000 × 10-11 m2·s-1 with minimum mean residual squares. It is three orders of magnitude less than the estimated moisture diffusivity because of the larger polyphenols molecules. The estimated polyphenols diffusivity is very close to those published in the literature for sorption and ultrafiltration processes.  相似文献

Drying is applied for moisture removal to allow safe and extended storage. Red pepper (Capsicum annum) samples were heat pump dried in fluidized bed at different air temperatures. A slightly modified solution of the diffusion equation was used to describe the kinetics and drying rates of red pepper. The model well described the low- and medium-temperature drying processes. The determined effective mass diffusivities varied from 0.7831 to 4.0201 × 10-9 m2/s and increased consistently with drying air temperature. The mass diffusivity was correlated to temperature by linear regression with coefficient of determination equal to 0.999 and negligible standard error.  相似文献

The influence of pulsed electric field (PEF) and subsequent centrifugal osmotic dehydration (OD) on the convective drying behavior of carrot is investigated. The PEF was carried out at an intensity of E = 0.60 kV/cm and a treatment duration of tPEF = 50 ms. The following centrifugal OD was performed in a sucrose solution of 65% (w/w) at 40°C for 0, 1, 2, or 4 h under 2400 × g. The drying was performed after the centrifugal OD for temperatures 40-60°C and at constant air rate (6 m3/h).

With the increase of OD duration the air drying time is reduced spectacularly. The dimensionless moisture ratio Xr = 0.1 is reached for PEF-untreated carrots after 370 min of air drying at 60°C in absence of centrifugal OD against 90 min of air drying after the 240 min of centrifugal OD. The PEF treatment reduces additionally the air drying time. The total time of dehydration operations can be shortened when OD time is optimized. For instance, the minimal time required to dehydrate untreated carrots until Xr = 0.1 is 260 min (120 min of OD at 40°C and 140 min of drying at 60°C). It is reduced to 230 min with PEF-treated carrots.

The moisture effective diffusivity Deff is calculated for the convective air drying based on Fick's law. The centrifugal OD pretreatment increases drastically the value of Deff. For instance, 4 h of centrifugal OD permitted increasing the value of Deff from 0.93 · 10-9 to 3.85 · 10-9 m2/s for untreated carrots and from 1.17 · 10-9 to 5.10 · 10-9 m2/s for PEF-treated carrots.  相似文献

Thin Layer Drying Models for Osmotically Pre-dried Young Coconut   总被引:2,自引:0,他引:2  
Thin layer convection drying was performed on osmotically pre-dried young coconut, strips, both thin and thick. A drying air temperature range of 50-70°C and an airflow of 0.25 m s-1 was used to dry samples soaked in three sugar solution concentrations (40, 50, and 60°B) during the osmotic drying phase, with the convection drying alone serving as control. An analysis of variance (ANOVA) revealed that sugar concentration and thickness significantly affected osmotic drying rates as shown by their final moisture contents. While the drying air temperature and slab thickness significantly affected the average drying rate and the sugar concentration was an insignificant factor during convective drying phase. Effective diffusivity of water during hot air drying varied from 1.71 to 5.51 × 10-10 m2s-1 over the temperature range investigated, with energy of activation equal to 1173.0 kJ/kg. Three mathematical models available in the literature were fitted to the experimental data, with the Page model giving better predictions than the single or double term exponential model. The temperature dependence of the diffusivity coefficients was satisfactorily described by a simple Arrhenius type relationship.  相似文献

Chitosan complex membranes are prepared and characterized at room temperature. They are expected to be used as proton exchange membranes. The studied membranes are cross-linked membranes with sulfuric acid; salt-complexed membranes with lithium nitrate; cross-linked and salt-complexed membranes; plasticized and salt-complexed membranes; cross-linked, plasticized, and salt-complexed membranes; and doped membranes with sulfuric acid. A fixed amount of ethylene carbonate is used as plasticizer. It is found that the ion exchange capacity and hydrogen gas permeability of all membranes is better than that of Nafion membranes. However, their proton conductivities are worse than Nafion membranes. It can be stated that ethylene carbonate does not improve conductivity. An optimum amount of lithium nitrate salt can enhance conductivity. The formation of a sulfate group in cross-linked membranes is necessary for proton conduction. The proton conductivities of 4%cross-linked and 50%LiNO3 membrane before and after acid doping are (3.11±0.40) × 10-2 and (6.64±0.11) × 10-2 S cm-1, respectively. That of Nafion is (8.02±1.19) × 10-2 S cm-1.  相似文献

The weight and water loss of 6 mm thick pineapple slabs (one of a six part of slice) were analyzed during osmotic dehydration in sucrose solution at different temperatures (50, 60 and 70°C), sucrose concentrations (50, 60 and 70°Bx) and pH's (6, 7 and 8), in 33 experimental design. These results were fitted to a modified Azuara equation to obtain water and sucrose diffusivity results at equilibrium condition. Mean result of water diffusivity was 1.717 × 10-5 cm2/s and sucrose diffusivity varied from 2.0 to 4.6 × 10-5 cm2/s. The results of water loss at equilibrium in pineapple slabs varied between 0.6 to 0.67 g/g of initial sample weight. The results of sucrose gain at equilibrium varied between 0.15 and 0.21 g/g of initial sample weight. The results from mathematical modeling were compared to experimental results with r2 = 0.94.  相似文献

The kinetics of changes in the bound water content in dietetic sucrose-free sponge cakes (DC) during storage was investigated. The effect of edible films of polymyxan, pectin, xanthan, and carboxymethylcellulose upon this kinetics was also investigated. The quantitative changes in both states of water (slightly bound water and strongly bound water) were registered by combined dynamic analysis (thermogravimetry analysis, TGA, and differential thermal analysis, DTA). The moisture changes in DC crumb were analyzed by drying out to constant mass. The rate constants were determined according the equation q = qoe-kt. The values of rate constants 'k', in day-1, concerning the different edible films were as follows: for crumb moisture is (8.00 ≤ k ≤ 12.47) × 10-3, for bound water is (3.07 ≤ kw ≤ 6.26) × 10-2, for slightly bound water is (4.22 ≤ k1 ≤ 8.49) × 10-2 and for strongly bound water is (2.02 ≤ k2 ≤ 5.62) × 10-2 as compared to 18.53 × 10-3, 7.16 × 10-2, 9.04 × 10-2, and 5.36 × 10-2 in the uncovered DC, respectively. The best water-retaining effect in respect to crumb moisture during storage was ascertained in the use of polymyxan and xanthan films. The lowest rate constant values for bound water and its two states were measured for DC covered with pectin. The relation between the kinetics of both bound water states during storage and ageing of the crumb of DC covered with different edible films and the crumb microstructure was represented. By means of scanning electron microscope was read the smallest change in crumb microstructure of pectin-covered DC on the sixth day of storage.  相似文献

The effect of carboxymethyl cellulose (CMC) coating on the mass exchanges during the osmotic dehydration of apples and its effect on the quality of final product were studied. Coating semi-rings of apple with CMC solution (1%) was found to prevent solute uptake and to reduce salt diffusion coefficient from 4.35 × 10-10 m2/s to 2.86 × 10-10 m2/s. However, coating did not significantly affect the diffusivity of water. The effective diffusivity of salt and consequently solids gain were found to be depended on the concentration of CMC solution in the range of 0-1%. Increasing the concentration of CMC further from 1% had no effect on the mass exchanges during the osmotic process. Maximum performance ratio, defined as water loss/solids gain, and the lowest solids diffusion was observed for coated samples (with 1% CMC solution) treated with an osmotic solution containing glucose syrup (50%) and NaCl (2%).  相似文献

This article presents experimental and modeled drying kinetics of potato slices of the Desiree variety (9 × 9 × 3 mm3) in a pulsed fluid bed as a function of the air velocity, air temperature, and rotating disk velocity of the pulse generator. A statistical multifactor experimental design (23) was applied to analyze the drying process with two levels each of drying temperature, air velocity, and rotating disk velocity. The results showed that the significant factors were air temperature, air velocity, rotating disk velocity, and the binary interactions of air velocity with both the temperature and the rotating disk velocity. The simplified variable diffusivity model (SVDM) gave the least deviation for the experimental data. The effective diffusivity values determined in this work are similar to those reported in the literature.  相似文献

Experimental investigation on drying of ragi (Eleusine corocana) in a fluidized bed has been attempted covering the operating parameters such as temperature, flow rate of the drying medium, and solids holdup. The drying rate was found to increase significantly with increase in temperature and marginally with flow rate of the heating medium and to decrease with increase in solids holdup. The duration of constant rate period was found to be insignificant, considering the total duration of drying and the entire drying period was considered to follow falling rate period. The drying rate was compared with various simple exponential time decay models and the model parameters were evaluated. The Page model was found to match the experimental data very closely with the maximum root mean square of error (RMSE) less than 2.5%. The experimental data were also modeled using Fick's diffusion equation and the effective diffusivity coefficients were estimated. The effective diffusion coefficient was found to be within 5.7 to 14 × 10-11 m2/s for the range of experimental data covered in the present study with RMSE less than 5%.  相似文献

The aseptic processing of a non-Newtonian fluid in a tubular heat exchanger with no holding section was simulated numerically. Two tube diameters (1·270 × 10-2 m and 1·905 × 10-2 m), two process temperatures (410 K and 422 K) and three flow rates (1·0, 1·5 and 2·0L/min) were included in the analysis. A model liquid food with temperature dependent and shear thinning viscosity was used. For each case, the length of heating section needed to provide a required lethality (F0) of approximately 6·0 min on the center line for low-acid foods was calculated. The lethalities for Clostridium botulinum and other microorganisms of interest were calculated using the modified General Method. Increasing the temperature from 410 K to 422 K decreased the required length of the heating section by about 20 to 30% for the same average velocity. Thiaminc retention was also calculated for each case and was found to be higher for a smaller diameter tube and lower temperature.
