The study was made in connection with wide utilization of aluminum kitchen-ware, the effect of aluminium on the human blood sugar and phosphorus level not being known well enough. The calcium metabolism has not been investigated earlier in this aspect. The basic group included 62 male- and female-workers of a brewery, the control one being made up of 51 male and female-workers of a dairy. The former consumed almost daily together with beer and food 200-300 mg of aluminium, inasmuch as beer is brewed in vessels made of realively little resistant chemically iron-containing aluminium. The food ration of the examined from the control grop contained up to 70 mg of aluminium which is quite common when food is cooked in vessels made of aluminium A 99.50. Otherwise, the dietary of both groups had practically no difference. The blood was analyzed by following generally accepted procedures (A. A. Pokrovsky, 1969). The blood of the male- and female-workers of the brewery and dairy showed no statistically significant difference in the sugar, inorganic phosphorus and calcium content, nor the results of the investigations and the analysis of the pertinent figures varied from those adopted as normal for healthy individuals. This implies that considerable quantities of aluminum oxide and hydroxide, found chiefly in beer and food, do not affect adversely the glycolysis, phosphorylation and the calcium metabolism, contingent upon the latter.  相似文献

Previous work has identified the optimal two‐stage static mixing process for a small‐scale pilot rig. Protocols for scale‐up to any brewery process line have been specified. A full‐size prototype has been installed in a cask ale brewery. In most cases superior product clarity was obtained when the prototype was operated. Unexpected further benefits were demonstrated from mixing downstream of the mixing system and also disturbance and subsequent resettlement in the cask.  相似文献

The designing of plants for brewery waste water treatment is seriously hampered by the fact that published figures for the biochemical oxygen demand (B.O.D.) of brewery waste are so discordant that no generally applicable averages can be extracted from them. Even in an operating brewery it is a costly and time-consuming affair to procure representative figures by direct measurements, owing to the intricacy of the sampling problems and the inaccuracy of the analytical methods. In an effort to meet this need it is suggested that an objective and sufficiently exact basis for planning treatment plants and for costing treatment is obtainable by estimating the volume and B.O.D. of brewery waste by calculation. It is demonstrated by reference to a practical example how such calculations may be made by keeping account of all materials going into or leaving the brewery.  相似文献

Some of the factors that contribute to the loss of viability of brewery yeast strains during lyophilization (freeze-drying) have been investigated. A lyophilization technique for the maintenance of brewery yeast strains with higher viabilities than those previously reported has been developed. Three lyophilized strains of ale yeast still had a survival rate of 60% after periods of storage of up to three years, while a lager yeast strain maintained a viability of approximately 50% during storage for eighteen months.  相似文献

The application of the adjunct fermentation method (see previous paper) to the fermentation of lager beer leads to potential savings in capital cost. These are calculated in detail for the case of a new brewery construction and for the case when, in an existing brewery, its capacity is to be increased by using adjunct fermentation. The results show that the procedure would be more profitable than conventional fermentation when applied to the new construction, and extremely so when used to increase production from an existing brewery.  相似文献
