Twenty-five mature Small Tail Han ewes were used to investigate the effects of supplemental oilseeds in the diet (sunflower seed, safflower seed, rapeseed, and linseed) on fatty acid composition in different tissues (longissimus lumborum muscle, tail fat, subcutaneous back fat and kidney fat). Averaged over tissue, safflower and sunflower seed was most effective (P < 0.05) in enhancing the concentration of conjugated linoleic acid compared to rapeseed, linseed, and control (1.35% and 1.15% vs. 0.80%, 0.80%, and 0.75%, respectively). Linseed supplemented ewes had lesser n−6/n−3 value (2.48, P < 0.05) compared to sunflower and safflower supplemented ewes (6.12 and 3.90, respectively). Fatty acid composition for most major fatty acids differed among tissues (P < 0.05) but tissue differences varied depending on oilseed supplement (P < 0.05). Proportions of conjugated linoleic acid were greatest in tail fat (1.54% vs. 0.82%, 0.79% and 0.70% for kidney, back, and muscle fat, P < 0.05) as were total unsaturated fatty acids (49.1% vs. 42.4%, 36.7% and 33.4% for muscle, back, and kidney fat, P < 0.05) and tail fat was the most responsive tissue to improvement in fatty acid profile through supplementation. Beneficial fatty acid content of tissues can be increased by oilseed supplementation, but the magnitude of increase varies according to tissue.  相似文献

High voltage electrical stimulation (1130 V peak, 14.28 bidirectional half sinusoidal pulses/s) or low voltage stimulation (45 V peak, 36 alternating square wave pulses/s) was used on cattle: (1) low voltage stimulation applied for 10 or 40 s with fast and slow chilling or high voltage stimulation for 60 s with normal chilling, applied to 100% Bos taurus cattle, (2) low voltage stimulation (40 s) and high voltage stimulation (60 s) with normal chilling applied to mixed Bos indicus and B.taurus cattle, (3) high voltage stimulation (54 s) with normal chilling applied to B. taurus and B. indicus cattle of 0–100% B. indicus composition, and (4) high voltage stimulation (60 s) applied to 100% B. taurus and 100% B. indicus cattle. All stimulation parameters enhanced the tenderness of steaks from M. longissimus thoracis et lumborum (LTL) aged at 1 °C up to 28 days compared with non stimulated LTL. Short low voltage stimulation of 10 s was marginally more effective than no stimulation and longer durations of 40 s were very effective and high voltage stimulation was most effective.  相似文献

Seed characteristics and nutrient composition of three morphotypes of big-grained Mucuna urens (L.) Medikus were studied. Results showed that 100-seed weight ranged from 3200.2 to 4700.9 g, cotyledon weight per seed (23.2–26.6 g) and testa weight per seed (9.0–21.2 g). The testa constituted 43.7%, 28.1% and 44.7% of the average seed weight for morphotypes 1, 2 and 3, respectively. The cotyledon also constituted 56.3%, 71.9% and 55.3% of the average seed weight for morphotypes 1, 2 and 3, respectively. Nutrient composition analyses showed that the three morphotypes of M. urens are good sources of crude protein (19.97–20.57 g 100 g−1), carbohydrate (72.39–75.49 g 100 g−1) and fat (1.84–5.05 g 100 g−1). Other nutritional components, including ascorbic acid, calcium and phosphorus are present in the three morphotypes in moderate amounts. The iron content of the M. urens is low. The three morphotypes contain appreciable amounts of essential amino acid. The oxalate content is low. The variations observed in the seed characteristics and nutrient compositions are suspected to be due to genotype. Genetic improvement of this plant is recommended to remove the itching hair trait so as to encourage its cultivation.  相似文献

The antioxidative activities of a lotus seed epicarp extract in different concentrations (6.25, 12.5, 25, 50 and 100 μg.mL− 1) in pork homogenates representative of Chinese Cantonese Sausage were evaluated using three methods: thiobarbituric acid-reactive substances (TBARS) values, peroxide values (POVs) and acid values (AVs). Also the cytotoxic and anti-obesity effects of the lotus seed epicarp extracts were evaluated using an in vitro 3T3-L1 preadipocyte cell model. Results showed that the lotus seed epicarp extracts were non-toxic and effective in inhibiting preadipocyte differentiation. Supplementation of pork homogenate with lotus seed epicarp extracts was effective in retarding lipid oxidation. Moreover, the antioxidative and preadipocyte differentiation inhibition effects of the lotus seed epicarp extracts were dose-dependent. Thus, the lotus seed epicarp extract might be a good candidate as an antioxidant and anti-obesity natural additive in Chinese Cantonese Sausage.  相似文献

The chemical analysis and preliminary toxicological evaluation of Garcinia mangostana seeds and seed oil have been investigated in order to determine the possibility of using them for human and/or animal consumption. Proximate analysis showed that the seeds had high amount of carbohydrate and were rich in oil (21.68 ± 6.18%) but have a low protein content. The physical properties of the oil extracts showed the state to be liquid at room temperature (25 ± 1 °C) and the colour of the oil golden-orange. The specific gravity of the oil was 0.98 ± 0.01. Among the chemical properties of the oil extracts, acid value, saponification number, iodine value, percent free fatty acid and peroxide value compared well with those of conventional edible oils. The seed flour was found to be a good source of minerals. It contained considerable amounts of potassium (7071 mg/kg), magnesium (865 mg/kg) and calcium (454 mg/kg). Fatty acid composition of the seed oil indicated that the oil contained one essential fatty acids small proportions: linoleic acid (1.30%). The most prevalent fatty acids were palmitic acid (49.5%) and oleic acid (34.0%). Weanling albino rats appeared to suffer no toxicological effects when fed with G. mangostana seed oil in their diet for 8 weeks. Weekly monitoring of the rats showed good physical appearance and steady weight increase. Histological examination of sections of the heart, liver, kidney, spleen and lung revealed that the kidney of some of the rats had some degrees of pathology which included diffuse glomerular and tubular degeneration. No lesion was found in the heart and liver of the rats. The seed oil could be useful as an edible oil and for industrial applications.  相似文献

Ganoderma lucidum is a famous fungus. The triterpenoids are the main bioactive components and exhibit various pharmacological activities. However, the scarcity of the pure triterpenoid has greatly restrained the modern research of G. lucidum. The present paper first describes a convenient method to separate the main triterpenoids from G. lucidum using counter-current chromatography (CCC) technique. Ganoderic acid C6 (38 mg), E (76 mg), F (32 mg) were successfully separated from the crude extract in 1 day with the HPLC purity of above 90% using stepwise CCC. Ganoderic acid G (36 mg), A (64 mg), B (25 mg), D (28 mg) and ganoderenic acid D (11 mg) were separated in 2 days with the HPLC purity of above 90% using a combination of stepwise CCC and pH-zone-refining CCC. The method presented in the paper is much quicker and easier than the previous methods.  相似文献

Lotus (Nelumbo nucifera) is an extensively cultivated vegetable in eastern Asia, particularly in China. Both lotus rhizome knot (LRK) and lotus leaf (LL) are waste products of the lotus industry. Extracts from LRK and LL are proposed as antioxidants for meat. Porcine and bovine ground meat samples were subjected to three treatments: CONTROL (with no additives), LRK (lotus rhizomes knot extract 3% w/w), and LL (lotus leaf extract 3% w/w). Raw and cooked samples were stored at 4 °C and the antioxidant activity was determined at 1, 3, 6 and 10 days. Antioxidant activity was significantly increased in all meat samples with the addition of both LRK and LL, but LRK was more effective against lipid oxidation. The results show the potential for using LRK and LL extracts in the meat industry to prolong shelf life.  相似文献

Three native hazelnut varieties from Turkey, namely, Tombul, Palaz, and Badem, were examined for their proximate composition, minerals, and fatty acid profiles, as well as polyphenol oxidase (PPO), peroxidase (POD), and lipase activities during fruit development stages (early stage: ES, middle stage: MS, and harvest stage: HS). Proximate composition varied considerably (dry weight basis) from ES to MS. Fat was the predominant component at all stages and showed increasing trends. Six essential minerals (calcium, iron, magnesium, phosphorus, potassium, and zinc) were analysed (dry weight basis). Consuming recommended daily amount of 42.5 g hazelnut at HS supplies 23.3–25.0% of phosphorus, 11.6–18.1% of magnesium, 7.0–18.9% of iron, 4.9–8.9% of zinc, 5.1–5.7% of calcium, and 5.1–5.3% of potassium for recommended dietary allowances or adequate intake for adults. Significant (P < 0.05) decreasing trends were found in all mineral contents from early development to maturity, with some exceptions. Sixteen fatty acids were identified, among which 18:1ω9 was by far the most predominant one, followed by 18:2ω6, 16:0, and 18:0. As expected, total monounsaturated fatty acids constituted the main group of fatty acids ranging from 75.51 to 81.07% in Tombul, from 78.21 to 82.71% in Palaz, and from 73.69 to 81.65% in Badem through the maturation stages. In contrast, total polyunsaturated fatty acids showed decreasing trends from ES to HS. No significant changes (P > 0.05) were observed in total saturated fatty acids at different maturation stages. Tombul variety had the lowest PPO activity compared to those of Palaz and Badem. Badem showed highest POD activity compared to Tombul and Palaz at three stages of maturation and significant decreases (P < 0.05) in all hazelnut samples were observed in POD activity from ES to HS. No lipase activity was detected in any hazelnut samples at ES and MS, except in Badem at MS. In contrast, lipase activity was detected in all hazelnut samples at HS. These results suggest that some proximate compositions, minerals, and fatty acids gave good indications during fruit development stages, whereas enzymatic activities of PPO, POD, and lipase behaved differently among varieties and fruit development stages.  相似文献

The quality, composition and colour of 11 oils from six different berries were evaluated before and after filtering of the cold-pressed oils. The filtering did not lead to significant compositional or quality differences, except a minor reduction in oxidative stability. Due to their high degree of unsaturation, the peroxide and p-anisidine values were high for all oils. However, the high level of tocopherols and tocotrienols appears to protect the oils during the oil stability test (significant correlation; r = 0.803; p = 0.003). Tocopherol contents between 138 mg/kg (kiwi seed oil, filtered) and 1639 mg/kg (blackberry seed oil, non-filtered) were found. Phenolic compounds, identified and quantified by HPLC, ranged from 90 mg/kg (blackberry seed oil, filtered) to 15,810 mg/kg (strawberry seed oil, filtered). No correlation was found between the quantified phenolic compounds and the oxidative stability of the oils, suggesting that in these oils the tocopherols were the main antioxidants protecting the lipids during storage.  相似文献

In this study, sea urchins Anthocidaris crassispina, Diadema setosum and Salmacis sphaeroides inhabiting the coastal area of Hong Kong were collected and their gonadal biochemical compositions determined and compared for the first time. The proximate nutritional composition of all species exhibited an order of lipid > protein > carbohydrate. Neutral lipid was the major lipid constituent, accounting for over 80% of the total lipid. The major fatty acids in neutral lipid fraction of the three urchins were C14:0, C16:0, C16:1 (n-7), C18:1 (n-7) and C20:5 (n-3), whereas those in the polar lipid fraction were C16:0, C16:4 (n-4), C20:4 (n-6) and C20:5 (n-3). The dominant carotenoid was echinenone, which accounted for 81.7%, 56.7% and 68.5% of the total carotenoids in A. crassispina, D. setosum and S. sphaeroides, respectively.  相似文献

The present study investigates the antimicrobial activity of various solvent extracts of Eruca sativa (aerial and root) and seed oil against-antibiotic resistant Gram-negative (Escherichia coli, Pseudomoms aeruginosa and Shigella flexneri) and Gram-positive (Staphylococcus aureus and Bacillus subtilis) bacteria. Among the various preparations, seed oil was the most active, exhibiting a maximum zone inhibition of 97% for Gram-positive bacteria and of 74–97% for Gram-negative bacteria. The MIC of the seed oil was found to be 65–75 and 60–70 μg/ml for Gram-negative and Gram-positive bacteria, respectively. Analytical investigation on main volatile and non-volatile components was performed on seed oil. Among the formers allyl isothiocyanate (40 μg/g), 3-butenyl isothiocyanate (260 μg/g), 4-methylsulfinybutyl isothiocyanate (sulforaphane 743 μg/g), 2-phenylethyl isothiocyanate (159 μg/g) and bis(isothiocyanatobutyl)disulphide (∼5000 μg/g) were determined by head space/SPME/GC–MS analysis. Free fatty acids were 1.6% w/w of the oil and overall 25 fatty acids were identified. Erucic and oleic acids were the main fatty acids both in the free (7.8 and 2.1 mg/ml) and esterified forms (50.6% w/w and 14.9% w/w of total fatty acids). Thirty llamas were used to study the effect of a 90 day feed supplementation on meat quality, chemical composition and muscle fatty acid profile. Treatments were: GR = llama on native pasture until slaughter; GR + SH = like GR, but with overnight free access to barley/alfalfa hay; and GR + SC = like GR, but with overnight free access to a wheat bran/sorghum grain concentrate. The supplementation had no effect on postmortem pH and temperature decline in the Longissimus lumborum muscle (LLM), cooking losses nor Warner–Bratzler shear force values (P > 0.05). Meat from GR + SC llama had higher fat content in LLM (P < 0.05) compared to GR and GR + SH llama. Intramuscular fat from GR + SH llama showed higher (P < 0.01) proportions of polyunsaturated fatty acids, higher (P < 0.05) polyunsaturated fatty acids/saturated fatty acids and desirable fatty acids ratio, lower (P < 0.05) omega-6/omega-3 (n − 6/n − 3) ratio, and higher (P < 0.01) conjugated linoleic acid.  相似文献

The supercritical fluid extraction (SFE) trends and antioxidant activities of Hibiscus cannabinus seed oils were studied. SFE results indicate that extraction pressure is the major factor determining the oil yield. In comparison, classic Soxhlet extraction (SOX/L) yielded higher oil content than SFE (P < 0.05). However, no significant differences in oil content were observed in SFE at 600 bars/80 °C, rapid Soxhlet extraction (SOX/S) and conventional ultra-sonic assisted solvent extraction (SONIC) (P > 0.05). Antioxidant activities of H. cannabinus seed oils were compared with 7 types of commercial edible oils. DPPH scavenging activity test indicated that H. cannabinus seed oil extracted by SFE at 200 bars/80 °C possessed the highest antiradical activity whereas beta-carotene bleaching (BCB) assay revealed that all H. cannabinus seed oils (except for SFE at 400 bars/80 °C and 600 bars/80 °C) exhibited higher antioxidant activity than all commercial edible oils (P < 0.05). Thus, SFE – H. cannabinus seed oil may serve as an excellent source of solvent-free edible oil with high antioxidant properties.  相似文献

The effects of steam explosion (1.5 MPa, 1 min) on the treatment of rice straw with Pleurotus ostreatus were evaluated in terms of the change in composition of the components and the susceptibility to enzymatic hydrolysis. When rice straw was pretreated with a steam explosion prior to biological treatment, the treatment time required for obtaining a 33% net glucose yield was reduced to 36 days from 60 days. The reduction is probably due to loosening of networks of Klason lignin with sugar moieties and partial collapse of the structure during the biological treatment.  相似文献

Nutritional and antinutritional qualities, and functional properties of raw and electron beam-irradiated (doses: 0, 2.5, 5, 7.5, 10, 15 and 30 kGy) lotus seeds were studied. Seeds were rich in protein, amino acids, unsaturated fatty acids and minerals, without heavy metal contamination. Irradiation of seeds revealed a decrease in crude protein and fibre, which was not significant at any of the doses. However, significant increase of ash (10 kGy onwards) and carbohydrates (at 30 kGy) were recorded after irradiation. Seed flours showed a significant dose-dependent decrease in water absorption capacity, while oil absorption capacity significantly increased from 10 kGy onwards (p < 0.05). Also, significant increase in protein solubility (5 kGy onwards) and foaming capacity (7.5 kGy onwards) with improvement in the least gelation capacity (5 kGy onwards) of seed flour (p < 0.05) was recorded after irradiation. Electron beam irradiation of seeds resulted in significant dose-dependent elevation of total phenolics and tannins, while phytic acid was eliminated at 5 kGy. Seeds of lotus can serve as food and minimise protein-energy malnutrition of economically weaker sections of the population in developing countries. The seed flours also possess great potential for development of new food products and formulations. As a physical method of preservation, electron beam irradiation was effective in the retention of the nutritional qualities of lotus seeds and is recommended for commercial exploitation.  相似文献

A homofermentative l(+)-lactic acid producer Bacillus coagulans B179 has been evaluated as starter cultures for low-salt potherb mustard pickle process. This study examined the impact of inoculation by B. coagulans B179 as starter culture on the spontaneous lab-scale fermentation process of potherb mustard pickle. Three different salt concentrations trials, i.e., 5 g/100 g, 8 g/100 g and 10 g/100 g, respectively, were carried out. As a result, the addition of starter culture of B. coagulans B179 to 5 g/100 g salinity fermentation showed an inhibiting effect upon the population of non-lactic acid bacteria (LAB) and marked increase in population of LAB and production of titratable acidity but did not significantly influence the pickle end products quantity of acid produced by fermentation as compared with a treatment without inoculation. However, in the higher salt concentrations, i.e., 8 g/100 g and 10 g/100 g NaCl trials, inoculation had no impact on the fermentation of the pickle. From the standpoint of fermentation, as a functional starter culture, inoculated B. coagulans B179 can effectively improve desired native LAB growth and inhibit the growth of undesired fungi, which will thereby allow it to shorten fermentation period and enhance the pickle quality in the low-salt potherb mustard pickle production.  相似文献

This work describes radiation-induced effects on edible seed protein profiles, carbohydrates, amino acids and genomic DNA during gamma sterilization. The total protein and carbohydrate was decreased with increasing dose compared to control samples. Oryzasativa L. Cv-2233 exhibited a minimum effect in terms of its loss in total soluble protein content, compared to other seeds at 6 kGy, and the soluble protein fraction, containing 14–16 kDa albumins and 22 kDa globulin, was unchanged up to 6 kGy. In Cicer arietinum, the effect of gamma rays was more pronounced on albumin and prolamin with respect to glutelin and globulin. The easy-to-digest and difficult-to-digest proteins were not significantly affected up to 4 kGy. However, the soluble free amino acids of all the seeds increased with increasing dose. The total DNA content and band intensities both decreased with increasing absorbed dose; however, the band positions were unchanged for all seed types.  相似文献

The geometric mean diameter, sphericity, grain surface area, 1000 grain mass, true density (toluene displacement method), terminal velocity, dynamic angle of repose, coefficient of internal friction, coefficient of static friction at different surfaces (sun mica, canvas and mild steel surfaces), specific deformation and rupture energy of the grain were found to increase 12.21%, 4.79%, 30.47%, 30.75%, 6.74%, 32.99%, 127.05%, 60%, 18.57%, 34–67%, 69.2% and 88.87% respectively at increase of moisture content from 0.065 to 0.265 kg kg−1 dry matter. However, true density (proximate composition method), bulk density, interstices and rupture force of grain was found to be decrease 8.64%, 20.1%, 86.49% and 21.17% respectively at increase of moisture content. Similar trend was observed for barnyard kernel also. True density (toluene displacement method) was found lower as compared to true density (proximate composition method) at all experimental moisture range indicated that the presence of void space inside the grain and kernel.  相似文献

Immersion vacuum cooling (IVC) was compared against air blast cooling (AB) and vacuum cooling (VC), to establish its applicability to cool water-cooked beef joints. Process parameters (cooling time and cooling loss) and quality parameters (proximate; physical; sensory and microbial analysis) were compared. Results showed IVC samples have lower cooling losses and improved quality properties compared to VC, while generally comparable to AB samples. IVC cooling times were slower then VC, but faster than AB. Sensory results showed no preference between samples (P > 0.05), even though differences in tenderness and juiciness were detected. Cooling methods had no significant effect on thermoduric spore survival or heat activation in the case of Bacillus atrophaeus and Geobacillus stearothermophilus spores. Results confirmed IVC is capable of combining rapid process times and lower mass losses producing microbiologically safe beef joints of overall high quality in terms of sensory, physical and composition characteristics.  相似文献

The effect of mild heat treatment (below gelatinization temperature) towards the susceptibility of granular starch to enzymatic hydrolysis was investigated. Tapioca and sweet potato starches were subjected to enzymatic hydrolysis with a mixture of fungal α-amylase and glucoamylase at 35 °C for 24 h. Starches were hydrolyzed in native (granular) state and after heat treatment below gelatinization temperature (60 °C for 30 min). The dextrose equivalent (DE) value of heat-treated starch increased significantly compared to native starch, i.e., 36–50% and 27–34% for tapioca and sweet potato starch, respectively. Scanning electron microscopy examination showed that enzymatic erosion occurred mainly at the surface of starch granules. Hydrolyzed heat-treated starch exhibited rougher surface and porous granules compared to native starch. X-ray analysis suggested that enzymatic erosion preferentially occurred in amorphous areas of the granules. The amylose content, swelling power and solubility showed insignificant increase for both starches. Evidently, heating treatment below gelatinization temperature was effective in enhancing the degree of hydrolysis of granular starch.  相似文献
