Fermented foods such as Tempe represent a technological alternative for a great variety of legumes and combination of them to improve their nutritional quality and to obtain edible products with palatable sensorial characteristics. The chemical composition, carbohydrate fraction and nitrogenous constituents were investigated for individual different legumes, i.e. faba bean; lupine, chickpea; peas and their mixture before and after fermentation by Rhizopus oligosporus. Tempe had a higher (P < 0.05) protein and fibre content compared with legume mixtures before fermentation, while it had a lower fat, ash and carbohydrate contents. Also, reducing and non‐reducing sugars, stachyose as well as raffinose were reduced after fermentation of legume mixtures. A significant reduction was observed in non‐protein nitrogen and protein nitrogen, while total nitrogen and true protein were increased.  相似文献

A comparison between the morphological, structural, thermal and viscoelastic properties of starches separated from pigeon pea, chickpea, field pea, kidney bean and blackgram was made. The shape of the starch granules in the different legumes varied from oval to elliptical or spherical. X-ray diffraction of the legume starches indicated a typical C-pattern (mixture of A- and B-type). Granules of blackgram and pigeon pea starch had a higher degree of crystallinity than those of field pea and kidney bean starches. Apparent amylose content of field pea, kidney bean, chickpea, blackgram and pigeon pea starch was 37.9%, 36.0%, 34.4-35.5%, 32.9-35.6% and 31.8%, respectively. Distribution of isoamylase-branched materials among the starches revealed that the proportions of long and short side chains of amylopectin ranged between 13.6-18.5% and 41.7-46.5%, respectively. Field pea and kidney bean starch had the highest apparent amylose content and the lowest amount of long side chains of amylopectin, respectively. Blackgram and pigeon pea starch possessed higher proportions of both long and short side chains of amylopectin than field pea and chickpea starches. The onset, peak and conclusion temperatures of gelatinization (To Tp and Tc, respectively) were determined by differential scanning calorimetry. To and Tc ranged from 59.3 to 77.3°C, 66.8 to 79.6°C, 55.4 to 67.6°C and 68.3 to 69.3°C, respectively, for chickpea, blackgram, field pea and kidney bean starch. The enthalpy of gelatinization (ΔHgel) of field pea, kidney bean, chickpea, blackgram and pigeon pea starches was 3.6, 3.0, 2.6-4.2, 1.6-1.7 and 2.6 J/g, respectively. Pastes of blackgram and pigeon pea starches showed lower storage and loss shear moduli G′ than field pea, kidney bean and chickpea starches. The changes in moduli during 10 h at 10°C revealed retrogradation in the order of: field pea> kidney bean> chickpea> blackgram> pigeon pea starch. In blackgram and pigeon pea starches, the lower proportion of amylose plus intermediate fraction and higher proportion of short and long side chains of amylopectin are considered responsible for the higher crystallinity, gelatinization temperature and enthalpy of gelatinization.  相似文献

 Seeds of yellow pea lupin (Lupinus luteus L., cv. Juno), pea (Pisum sativum L., cv. Ergo) and faba bean (Vicia faba sp. minor Harz., cv. Tibo) were harvested at different stages of seed maturity. Changes in thiamin and riboflavin levels during growth and maturation were studied. The results obtained showed that thiamin and riboflavin were found in high abundance early in the development of lupins and peas, but that their content decreased during maturation. The thiamin content of faba bean seeds increased from 33 to 47 days after flowering (DAF), then a decrease was observed until 61 DAF; however, no significant differences between these levels in faba bean seeds harvested from 61 to 89 DAF were found. The riboflavin content of faba beans increased after 54 DAF, and no significant changes were observed between then and 89 DAF. The thiamin and riboflavin contents in lupin, pea and faba bean seeds during development were fitted to modelling curves in order to predict the vitamin content at different stages of maturity. In this study, the microstructure of starch granule and in vitro starch digestibility were compared in de‐coated seeds of common bean variety Hwachia and its NaN3‐induced mutants. Significant differences in starch granule size (between 17.92 and 27.00 μm), total starch content (between 436.5 and 456.8 mg per seed) and resistant starch content (between 51.6 and 203.3 mg per seed) were found among mutants. Both boiling and autoclaving decreased resistant starch content in processed common beans. Significant difference in predicted gylcaemic index (pGI) (between 48.82 and 64.55%) for processed beans also existed among mutants. However, 96 h of 4 °C storage increased resistant starch content in processed common beans, possibly resulted from starch retrogradation during storage. Mutants SA‐05, SA‐08 and SA‐31, which have smaller seed weight and lower pGI (average of 50.08%) compared to Hwachia (pGI of 57.05%), can be used to produce common bean based low GI dietary carbohydrate.  相似文献

BACKGROUND: Removal of hulls may be an effective means of reducing the level of some antinutritional factors and improving the feeding value of grain legumes. Published data on the effects of dehulling on the energy utilisation and amino acid digestibility of grain legumes are limited. This study was designed to investigate the influence of dehulling on the nitrogen‐corrected apparent metabolisable energy (AMEn) and apparent ileal amino acid digestibility of faba beans, Australian sweet lupins and peas for broilers. RESULTS: The non‐starch polysaccharide contents of all three legume species were decreased by the removal of hulls. Dehulling increased (P < 0.05) the content and ileal digestibility of starch in faba beans but had no effect (P > 0.05) on those in peas. Dehulling increased (P < 0.05) the AMEn of faba beans and lupins but had no effect (P > 0.05) on that of peas. Removal of hulls increased the amino acid concentrations in all three legume species, but the apparent ileal digestibility coefficients of most amino acids were unaffected (P > 0.05). CONCLUSION: Dehulling of grain legumes is nutritionally beneficial in view of the improved amino acid concentrations and metabolisable energy values. Fresh and sun‐dried faba beans (Vicia faba L.) were cooked, stored for various times at 4 °C and analysed for available starch (AS), resistant starch (RS) and fibre‐associated resistant starch (FARS) contents as well as α‐amylolysis. Fresh beans required a shorter cooking time (25 min) than dried beans (158 min). Cooked fresh faba beans had a higher AS content than cooked dried faba beans. The AS content in both decreased during cold storage, with fresh beans showing a smaller decrease than dried beans with increasing storage time. Cooked fresh faba beans also had a higher total RS content than cooked dried faba beans, although a greater increase in RS content was recorded in the latter upon storage. Starch retrogradation was more prominent in cooked dried faba beans than in cooked fresh faba beans, as indicated by the consistently higher FARS content. The α‐amylolysis rate decreased with increasing storage time, i.e. long‐stored (72 h) cooked faba beans exhibited slower starch digestion, and differences were recorded between fresh and dried beans. The predicted glycaemic index ranged between 60.9 and 58.0% for cooked fresh faba beans and between 57.9 and 55.8% for cooked dried faba beans, which is suggestive of slow glucose release from starch in faba beans. 选取河北崇礼、青海马牙、云南白皮豆、云南透心绿4种高产优质蚕豆品种,对其淀粉的理化性质进行分析研究。结果表明:蚕豆淀粉颗粒呈(椭)圆或不规则球形、表面光滑,粒径在12~32μm,24h沉降积为30~32mL,透明度高于谷物淀粉、低于马铃薯淀粉,蚕豆淀粉一次冻融循环后即开始失水,持水力高于小扁豆和豌豆淀粉。蚕豆淀粉中直链淀粉含量(28%~34%)高于小扁豆和鹰嘴豆淀粉。  相似文献

Velvet bean (Mucuna pruriens) and lima bean (Phaseolus lunatus) starches were isolated from seeds and their structural characteristics evaluated using XRD, size‐exclusion chromatography and light scattering analyzes. Total starch, available starch, RS and in vitro digestibility were also determined. Structural and nutritional characteristics of Velvet bean and Lima bean starches were compared to those of commercial corn starch. The legumes starches presented a C‐type XRD pattern and crystallite sizes of 43.1 Å for velvet bean and 48.3 Å for lima bean. Lima bean starch average molar mass (4.9 × 106 g/mol) was slightly higher than the velvet bean starch (3.04 × 106 g/mol). Size‐exclusion chromatography indicated structural similarity between the lima bean and corn starches which differed from that of the velvet bean starch. Hydrodynamic radius (RH) for the velvet bean and lima bean starches was 45.5 and 55 nm, respectively, and their radius of gyration (RG) was 67.7 and 82.5 nm, respectively. Total starch content in all three starches was greater than 98%. Their complex crystalline structure provided the legume starches lower in vitro digestibility values than the corn starch. RS content in both the velvet bean starch (7.72%) and lima bean starch (5.66%) was higher than in the corn starch, essentially qualifying these polysaccharides as natural dietary fiber sources, with the associated physiologic advantages.  相似文献

以鹰嘴豆、花芸豆为原料,制备了脱脂豆类粉、脱蛋白豆类粉及豆类淀粉;研究了天然蛋白质、脂肪对豆类粉理化特性、体外淀粉消化速率及估计血糖生成指数的影响。经不同处理后,样品在化学组成、溶解度、糊化特性等方面均有显著差异,尤以豆类粉和豆类淀粉之间的差异最为显著。试验结果表明豆类粉的淀粉水解速率低于脱脂豆类粉、脱蛋白豆类粉和豆类淀粉,蛋白质含量、蛋白质/淀粉与估计血糖生成指数(eGI)呈极显著负相关,脂肪含量、脂肪/淀粉与eGI无显著相关性。  相似文献

The chemical composition and the contents of resistant starch and soluble and insoluble dietary fibre of pea (Pisum sativum L.), common bean (Phaseolus vulgaris L.), chickpea (Cicer aretinum L.) and lentil (Lens culinaris Med.) legumes, were studied. Raw and freeze-dried cooked samples were used, both in the form of flour. Protein values of the legumes ranged from 18.5 to 21.9 g/100 g for the raw grains and from 21.3 to 23.7 g/100 g for freeze-dried cooked legumes. Chickpea stood out for the highest lipid content (p < 0.05), the lowest insoluble fibre values, and soluble dietary fibre not detected. The average content of resistant starch found in the legumes did not differ statistically (p > 0.05), being 2.23 ± 0.24 g/100 g for freeze-dried cooked legumes, and showing a slight reduction in comparison to the raw form.  相似文献

The effect of common domestic processing methods, such as splitting, soaking, boiling and pressure-cooking on the nutritionally significant starch fractions such as rapidly and slowly digestible starches (RDS and SDS), resistant starch (RS) and total starch (TS) in two legumes, Red kidney bean (Phaseolus vulgaris) and Yellow and Green peas (Pisum sativum) were studied. The legumes had comparatively high amount (>30%, dry basis) of RS. Soaking of all legumes resulted in reduced starch fractions, possibly due to leaching of soluble fractions. Ordinary cooking of soaked as well as unsoaked seeds led to a significant (P < 0.01) decrease in RS and increase in RDS, SDS and TS. Pressure-cooking led to even greater reduction in RS and a greater increase in RDS. Cooking of legumes gelatinizes the starch and opens up the starch structure which makes them vulnerable to α-amylase hydrolysis. Splitting of legumes markedly affects the digestibility as well as RS content of raw as well as processed legumes indicating that the seed coat plays a key role in the digestibility of starches in these seeds. Overall, the enzyme resistant starch fraction of legumes was rendered more digestible by all the domestic cooking methods used.  相似文献

Oligosaccharide compositions of flours from dehulled seeds of eleven legumes were determined by gas-liquid chromatography and mass spectroscopy. While soybean contained 11.7% sugars, concentrations in lupine, cowpea, chickpea and lentil were about 8%; lima, navy and northern beans, field pea, mung bean and fababean contained about 5% of sugars. Sucrose represented 20–55% of the total sugars; stachyose was the principal α-galactoside in most species. In addition, high amounts of manninotriose were found in chickpea and lentil flours whereas verbascose was a major component in field pea, mung bean and fababean flours. The nine species and biotypes which contained starch were pin milled and air-classified into protein-rich and starch-rich fractions. The protein fractions were 40–90% higher than the flours in α-galactosides, especially raffinose, manninotriose, stachyose and verbascose. The starch fractions were depleted in α-galactosides, the concentrations varied from 1.2–2.8% of the fraction.  相似文献

The effects of germinated faba bean (Vicia faba minor var Alameda)‐ and chickpea (Cicer arietinum kabuli var Athenas)‐based diets on performance, N utilisation, amino acid ileal digestibility and plasma concentrations were studied in growing male Wistar rats. Raw and germinated faba bean and chickpea seed meals were incorporated in essential amino acid‐supplemented and energy‐equalised diets as the only sources of protein. A lactalbumin‐based diet equalised in protein (100 g kg?1) and digestible energy (15.5 kJ g?1) with the test diets was used as control. Weight gains, gain/feed ratios, N retention and NPU values of animals fed raw or germinated legumes were lower than those of rats given the control (lactalbumin) diet, while faecal dry weights were higher. However, N retention and NPU values of rats fed germinated faba bean diets were higher and faecal dry weights lower than those of animals fed non‐germinated faba bean diets. Liver and thymus fresh and dry relative weights were lower than controls for all legume diets, whilst small intestine, caecum and colon relative weights were higher than controls for non‐germinated faba beans and chickpeas either germinated or not. Caecum and colon fresh and dry relative weights of rats fed germinated faba bean seeds were lower than those of rats fed non‐germinated faba beans and not different from controls. Except for aspartic acid and proline in rats fed raw faba bean diets, apparent ileal digestibilities of amino acids were not different or higher in rats fed legume diets as compared with controls. Except for arginine, apparent ileal amino acid digestibility was higher for germinated than for non‐germinated faba bean seeds. The amounts of glycine, arginine and ornithine in plasma significantly increased whilst those of threonine, alanine, leucine and lysine decreased with respect to controls in faba bean‐ or chickpea‐fed rats, either germinated or not. We conclude that (a) germination of faba bean seeds gave rise to a significant (P < 0.01) but limited improvement in performance, N retention and apparent ileal digestibilities of some amino acids in growing rats compared with non‐germinated seeds, while there was no detectable effect in the case of germinated chickpea seeds, and (b) the apparent ileal amino acid digestibility of essential amino acid‐supplemented diets based on faba bean or chickpea meals, either germinated or not, is similar or even higher than controls. © 2002 Society of Chemical Industry  相似文献

Abstract: Spaghetti is considered to be a slowly digestible starch food, a feature ruled by the particular physical properties of the product. Several studies have been reported to increase nutritional value of spaghetti, using legumes. We have studied the addition of common bean flour on the starch in vitro digestibility. Spaghetti was prepared with semolina and different concentrations of common bean flour (0%, 15%, 30%, and 45%, w/w). Proximate analysis, optimal cooking time, and cooking loss were estimated in crude spaghetti. Total, available, and resistant starches, indigestible fractions, and in vitro starch hydrolysis kinetics were accomplished in cooked spaghetti. Pasta with 30% and 45% of common bean flour showed higher values of protein. Particularly, the lowest cooking time was observed for composite spaghetti with 45% of common bean flour. There was a significant increase in cooking loss when common bean flour in the composite was added. Composite spaghetti samples with increasing common bean flour showed decreasing values of total starch but an important increase in the resistant starch (RS) level and indigestible insoluble fraction values. Plain pasta made with semolina showed the highest enzymatic hydrolysis rate, which decreased when common bean flour was added to the spaghetti. Spaghetti with a higher level of common bean flour was more slowly available, which may have positive implications for human health.  相似文献

Abstract: Two assays were conducted to investigate the changes of faba bean (Vicia faba L.) and azuki bean (Vigna angularis L.) phosphatases (phytase [Phy] and acid phosphatase [AcPh]) and the degradation of its substrates (inositol phosphate esters) during seed germination. The 1st assay was to establish the optimal germination conditions of faba bean and azuki bean to improve the endogenous phosphatases and increase the hydrolysis of phytate and, in the second assay, to determine the different lower phosphate esters of myo‐inositol produced during the germination process. In the 1st assay, seeds were soaked for 12 and 24 h and germinated for 3 and 5 d with and without the addition of gibberellic acid (GA3). In the second assay, seeds were soaked for 12 h and germinated for 1, 3, and 5 d with GA3. Phy (up to 3625 and 1340 U/kg) and AcPh (up to 9456 and 2740 U/g) activities, and inositol hexaphosphate (IP6) (8.23 and 7.46 mg/g), inositol pentaphosphate (IP5) (0.55 and 0.82 mg/g), and inositol tetraphosphate (IP4) (0.26 and 0.01 mg/g) were detected in ungerminated faba bean and azuki bean, respectively. The germination process caused a significant increase of Phy and AcPh activities in faba bean (up to 147% and 210%) and azuki bean (up to 211% and 596%) and a reduction in the phytate phosphorus content (up to 81% and 63%, respectively). Phytate phosphorus content was affected only by soaking time in the case of faba bean. Finally, during the course of germination, IP6 and IP5 were rapidly degraded in faba bean (88% and 39%) and azuki bean (55% and 56%), and IP4 was only a short‐living intermediate, which was increased during hydrolysis and degraded to inositol triphosphate. In this manner we could obtain a low‐phytate, endogenous phosphatase‐rich ingredient for enhancing human nutrition.  相似文献

Grain legumes contain numerous phytochemicals useful for their nutritional or nutraceutical properties, such as tocopherols, involved in the prevention of cardiovascular disease and eye pathologies. In this work, tocopherols were quantified in soybean, chickpea, lentil, pea, common bean, broad bean, and three lupin species. In all samples, the gamma congener was the most abundant tocopherol, followed by minor quantities of alpha-tocopherol (with the exception of common bean lacking in this congener) and delta-tocopherol (with the exception of Lupinus angustifolius and Lupinus mutabilis). Beta-tocopherol and tocotrienols were never detected. Some samples of soybean, pea, white lupin and chickpea contained over 10 mg/100 g seeds of total tocopherols. In order to estimate the nutritional value, the vitamin E activity was calculated. Chickpea, soybean and, to a lesser extent, lupin, broad bean and pea may contribute in a relevant way to the daily intake of this vitamin.  相似文献

The physico-chemical properties of starch from jackfruit seed and mung bean were investigated. Jackfruit seed starch had much higher resistant starch content (26.99%) than that of mung bean starch (4.04%). Furthermore, jackfruit seed starch had a higher gelatinization temperature (To) that required more gelatinization energy (ΔH) compared to mung bean starch. However, mung bean starch had higher amylose content and its granules were much larger than that of jackfruit seed starch. Mung bean starch had the highest peak viscosity, breakdown, and setback whereas jackfruit seed starch had the highest pasting temperature. Amylopectin chain length of mung bean starch contained higher proportion of short chains (degrees of polymerization 6–12) but lower proportion of very long chains (degrees of polymerization > 37 ) comparing with jackfruit seed starch. The X-ray diffraction patterns showed both starches to be Type-A crystallinity. In addition, both starch gels showed higher the storage modulus (G′) than the loss modulus (G?) designating as rubber like material. However, mung bean starch gel exhibited higher G’ and less tan δ than that of jackfruit seed starch indicating much stronger of gel structure.  相似文献

In-vitro iron dialysability from five Italian legumes (mottled bean, white bean, faba bean, chickpea, lentil) and the influence of phytate and extrusion cooking on it were evaluated. Iron dialysability was 2·3 and 2·4% in mottled and white bean respectively, 1·2% infaba bean, 2·7% in chickpea and 1·1% in lentil. After extrusion cooking the flours showed a marked iron contamination and a decrease in iron dialysability, but these changes were significant only for mottled bean. Enzymic phytate removal induced an increase in iron dialysability > 100% in all the raw legumes except mottled bean which showed an increase of only 57%. This finding indicates that, although phytate consistently modifies iron dialysability, it is difficult to identify a quantitative relationship between phytate content and iron dialysability.  相似文献
