The purpose of this study was to evaluate the effect of breed, stage of lactation, and health status of the udder on the plasmin-plasminogen system in ovine milk. A total of 38 ewes were used from 3 breeds [Boutsiko (n = 12), Chios (n = 12), and a synthetic breed (50% Boutsiko, 25% Arta, and 25% Chios, n = 14)] with major differences in their genetic potential with respect to milk yield. Milk samples were collected every 2 wk throughout the lactation period and were analyzed for fat, protein, lactose, and somatic cell count (SCC). In addition, milk plasmin (PL), plasminogen (PG), and plasminogen activator (PA) activities were determined. The Chios breed had the greatest average daily milk yield, the synthetic breed had an intermediate milk yield, and ewes of the Boutsiko breed had the lowest milk yield. Milk samples obtained from the Boutsiko breed had similar PL and PA activities, compared with those obtained from the other 2 breeds. The ratio of PG:PL was less in milk samples from the Boutsiko breed compared with the other 2 breeds, indicative of an increased rate of conversion of PG to PL for this breed. There was no correlation between PL activity and daily milk yield in ewes from all 3 breeds. Activities of PL, PG, and PA were greater in ovine milk with elevated SCC (>300,000/mL) compared with activities in milk with low SCC (<300,000/mL). The ratio of PG:PL was less in the high-SCC group compared with the low-SCC group, which indicates an increased rate of conversion of PG to PL for the high-SCC group. There was a decrease in PG and PA activities as well as in the PG:PL ratio in late lactation milk (mo 5 to 6) when compared with early or mid lactation milk (mo 1 to 4). Thus, the PL-PG system is affected by breed, stage of lactation, and the health status of the udder. No relationship was found between PL activity and daily milk yield in the 3 Greek dairy sheep breeds. Plasmin is not a marker for gradual involution in the Greek sheep breeds studied.  相似文献

We used a Mannheimia haemolytica isolate to study differences in susceptibility to experimental mastitis between two breeds of dairy sheep. The isolate was deposited into the teat duct of Karagouniko (K, n=8) or Frisarta (F, n=8) ewes. The animals were monitored by means of clinical, bacteriological, cytological and pathological methods. K ewes did not develop any systemic or mammary clinical signs, whilst F ewes became ill and developed acute clinical mastitis 12 h later (P<0.001). Bacteria were isolated from 34/48 samples from K ewes and from 46/46 samples from F ewes. Positive California mastitis test (CMT) results were 17/24 samples from K ewes and 23/23 samples from F ewes; leucocytes were seen in Giemsa-stained films. Total pathology score summed over all group K ewes was 41 (maximum possible: 128); Man. haemolytica was isolated from 12/24 tissue samples. Total pathology score summed over all group F ewes was 93; Man. haemolytica was isolated from 24/24 tissue samples. Hyperplastic lymphoid nodules consisting of lymphocytes and plasma cells with germinal activity were characteristically present at the border between teat duct-teat cistern of group K ewes; no such structures were observed in teats of group F ewes. The results identified differences in susceptibility/resistance to a mastitis pathogen among animals of the two breeds. Defence mechanisms of the teat appeared to be inadequate against the invading organisms; as lymphoid nodules have been considered important defensive mechanisms of the ovine teat, their observed lack in Frisarta ewes might have predisposed them to development of mastitis.  相似文献

Acid whey filtrates from the bulk milk of different indigenous greek ovine and caprine breeds were investigated for the quantitative and qualitative characteristics of α-lactalbumin (α-LA) and β-lactoglobulin (β-LG). For comparison reasons acid wheys from bovine milk and from Saanen and Alpine caprine breeds were included. The main characteristic of ovine acid wheys was the low α-LA percentage. The β-LG/α-LA ratio of ovine acid wheys ranged from 3.91 in Chios breed to 6.65 in Boutsiko breed. It was higher than the estimate for bovine acid wheys which ranged from 3.09 to 3.37. The chromatographic and isoelectric focusing profiles of ovine β-LG and α-LA from the different breeds were also variable. The β-LG percentage of caprine acid wheys was lower compared to ovine and bovine acid wheys. Their β-LG/α-LA ratios ranged from 2.02 in Saanen breed to 3.04 in the indigenous breed Skopelos.  相似文献

Rheological, physico‐chemical and organoleptic studies were made on five types of yoghurt originally from pure caprine milks of an Alpine breed and local breeds, pure ovine milk of the Lacaune breed, and two mixtures containing 50% caprine milk from an Alpine breed + 50% ovine milk of the Lacaune breed and 70% caprine milk of local breeds + 30% ovine milk of the Lacaune breed. Comparison of the yoghurts showed that it was possible to produce yoghurt of good quality from the last four types of milk. In contrast, pure caprine milk from an Alpine breed was not suitable for the production of yoghurt as this milk is low in dry matter and the yoghurt that was produced had the lowest firmness and significantly inferior organoleptic characteristics. Yoghurts prepared from mixtures of 50% caprine milk of an Alpine breed + 50% ovine milk of the Lacaune breed, and 70% caprine milk of local breeds + 30% ovine milk of the Lacaune breed, were of good quality, with similar consistency, rheological and organoleptic characteristics.  相似文献

The objective of the present study was to evaluate whether immunosuppression occurs in 3 different Greek dairy sheep breeds during the periparturient period. A total of 33 ewes from 3 breeds [i.e., the low-producing Boutsiko breed (n = 11), which is highly adaptable to harsh environments; the high-producing but environmentally fragile Chios breed (n = 11); and an intermediate synthetic breed (50% Boutsiko, 25% Arta, and 25% Chios, n = 11)] were used. Blood samples were collected at 18 and 2 d before parturition and at 15 d after parturition. Total cell-associated and membrane-bound urokinase plasminogen activator (U-PA) activity, free U-PA binding sites on cellular membranes, and superoxide anion (SA) production by activated phagocytes were determined. Results indicated that all immune parameters measured remained constant during the periparturient period for the Boutsiko breed. In contrast, there were reductions in total cell-associated and membrane-bound U-PA activity by both monocytes-macrophages and neutrophils and in SA production by monocytes-macrophages at d 2 before parturition for the Chios breed. In the synthetic breed, there were reductions in total cell-associated and membrane-bound U-PA activity by monocytes-macrophages and in SA production by both monocytes-macrophages and neutrophils at d 15 after parturition. Thus, mild immunosuppression during the periparturient period was observed in the 2 breeds with the highest milk production.  相似文献

In Spain, ewe milk is mainly used for cheesemaking, and farming systems have traditionally been based on the use of autochthonous breeds. However, in recent years, the progressive introduction of highly productive foreign breeds in Spanish farms has led to an increasing interest in the characterization of dairy sheep breeds to evaluate whether genetic selection schemes should focus on productivity or milk technological aptitude. The purpose of this work was to explore milk composition and coagulation to classify 4 of the main dairy sheep breeds used in Spain. This study included 832 individual ewe milk samples from the breeds Manchega, Assaf, Merino de Grazalema, and Merino de Los Pedroches. Samples were analyzed for native pH, composition (fat, protein, lactose, and total solids), coagulation properties, and individual laboratory curd yield. An indicator of coagulation efficiency was also determined. Canonical discriminant analysis was performed to establish differences and similarities among breeds based on the measured variables. In addition, cluster analysis was performed to study and quantify the concrete relationships among the discriminated groups. Discriminant analysis proved to be a powerful tool to accurately draw distinctions between breeds. In all cases, discrimination among breeds was evident and the 4 breeds could be easily differentiated. Cluster analysis showed greater similarity between Merino de Grazalema and Assaf compared with the other breeds, and F-statistics indicated a higher discriminating ability for the variables related to milk composition. However, Merino de Grazalema and Manchega were difficult to separate according to milk composition, but the coagulation process differenced them clearly. Coagulation also evidenced similarities between Manchega and Merino de Los Pedroches, although the latter was revealed to be the most different breed of all 4, which could lay the ground for its differentiation as an independent breed in the Official Catalogue of Spanish Livestock Breeds.  相似文献

The 3 objectives of this study were (1) to quantify milk production differences among cows with different paratuberculosis (ParaTB) milk ELISA results; (2) to determine if production differences existed in lactations preceding the test among cows with different ParaTB milk ELISA results; and (3) to assess whether Channel Island breeds were more likely to test positive with the ParaTB milk ELISA than other dairy breeds. Current and completed lactation records from 35,591 dairy cows in Ontario and western Canada that had been tested with a commercial ParaTB milk ELISA were included in the analysis. The first occurrence of the highest categorical test result was used to classify the cow. Cows were then grouped by the lactation in which the first high-positive (HTP), low-positive, or negative milk ELISA occurred, and comparisons were made within lactation groups. High test-positive cows were defined as those that had an optical density ≥1.0 on at least 1 ParaTB milk ELISA. The associations between ParaTB milk ELISA status and milk production, as measured by the 305-d milk yield, were assessed with a series of linear mixed models. The effect of breed on the likelihood of testing positive with the milk ELISA was assessed using a logistic mixed model for the lactation in which the first negative or positive ParaTB milk ELISA occurred. Test-positive cows produced on average 2.9 to 6.8% less milk than negative herdmates in the lactation in which they were tested. The HTP cows produced on average 466, 514, and 598 kg less milk than low-positive herdmates in lactations 1, 2, and 4, respectively. Cows testing low-positive in their second lactation had, on average, a 218-kg higher milk yield in their first lactation than their test-negative herdmates. Otherwise, no association was found between test result and milk production in preceding lactations. Differences in milk production among negative, test-positive, and HTP cows increased with increasing parity. Cows of the Channel Island breeds had 1.4 to 8.3 times the odds to test positive compared with other dairy breeds. The findings of this study are consistent with previous studies that have reported that milk production is lower in test-positive animals. The differences in milk production increased with increasing ELISA optical density scores and parity in which the animal tested positive. However, with the exception of second-lactation cows, no differences in milk production were observed in tests preceding lactations. The differences in milk ELISA status among dairy breeds support the need for further studies investigating the genetic component of ParaTB susceptibility.  相似文献

The objective of this study was to investigate the potential differences among Holstein-Friesian (HF), Montbéliarde (MB), Normande (NM), Norwegian Red (NRF), Montbéliarde × Holstein-Friesian (MBX), and Normande × Holstein-Friesian (NMX) across 2 seasonal grass-based systems of milk production. The effects of breed and feeding system on milk production, body weight, body condition score, fertility performance, hormone parameters, ovarian function, and survival were determined by using mixed model methodology, generalized linear models, and survival analysis. The 5-yr study comprised up to 749 lactations on 309 cows in one research herd. The HF produced the greatest yield of solids-corrected milk, the MB and NM produced the least yields, and NRF, MBX, and NMX were intermediate. The NRF had the lowest body weight throughout lactation, the NM had the highest, and the other breeds were intermediate. Body condition score was greatest for MB and NM, least for HF, and intermediate for NRF, MBX, and NMX. The HF had a lower submission rate and overall pregnancy rate compared with the NRF. The NRF survived the longest in the herd, the HF survived the shortest, and the NM, MB, MBX, and NMX were intermediate. Breed of dairy cow had no effect on selected milk progesterone parameters from 5 d postpartum until 26 d after first artificial insemination. Breed of dairy cow did not influence insulin and insulin-like growth factor-1 around parturition or at the start of the breeding season. Animals offered a high-concentrate diet had greater milk yield, but they did not have improved reproductive performance. Differences observed between the different breeds in this study are a likely consequence of the past selection criteria for the respective breeds.  相似文献

In Italy, more than 75% of milk is used for cheese making. For this reason, milk composition and coagulation traits and cheese quality represent the most important tools for the economic development of the dairy sector. In particular, cheese quality varies in relation to cheese-making technology and breed of cow. The aim of this study was to investigate the effect of 3 types of milk, originating from Holstein-Friesian (HF), Brown Swiss (BS), and mixed of both breeds, on vat milk characteristics, cheese yield, and quality in 3 different typical Italian cheese-making conditions (Casolet, Vezzena, and Grana Trentino). One hundred forty-four cows (66 HF and 78 BS) were involved, and a total of 24 vats of milk were evaluated. At maturity, 30, 21, and 16 wheels of Casolet, Vezzena, and Grana Trentino cheese were analyzed. Brown Swiss cows yielded 9% less milk per day than HF cows, but milk showed greater contents of protein, casein, titratable acidity, and better rennet coagulation time and curd firmness than HF milk. The chemical composition and cholesterol content of the 3 types of cheese were similar between breeds, whereas the cheese made with BS milk showed greater contents of monounsaturated and polyunsaturated fatty acids. Cheese made with BS milk had greater b* (yellow component) than HF. Cheese yield, recorded at different ripening times, demonstrated that BS milk yielded more cheese than HF. Mixed milk showed values, on average, intermediate to HF and BS milk characteristics, and this trend was confirmed in cheese yield at different ripening times.  相似文献

The objective of this study was to quantify differences in udder health and milking characteristics among the Holstein-Friesian (HF), Montbéliarde (MB), Normande (NM), Norwegian Red (NRF), Montbéliarde × Holstein-Friesian (MBX), and Normande × Holstein-Friesian (NMX) genotypes, while considering the effect of feeding system and parity. A total of 749 lactations were available for inclusion in the analysis from 309 cows in 1 research herd over 5 yr. Somatic cell score (SCS; i.e., natural logarithm of somatic cell count) was used as an indicator of udder health. Milking duration (seconds/d) was defined as the sum of the milking duration in the a.m. and milking duration in the p.m. Average daily milk flow (AMF; kg/min) was defined as total daily milk yield divided by total daily milking duration. Peak milk flow (kg/min) was defined as the maximum rate of milk flow achieved in the daily milking process. The SCS of the NRF (10.31 units) and MB (10.47 units) breeds was less than that of the HF (10.96 SCS units), whereas that of the NM (10.88 SCS units), MBX (10.93 SCS units), and NMX (10.84 SCS units) breeds was similar to that of the HF. The MBX and NMX had the greatest AMF (1.56 and 1.54 kg/min, respectively) and the NM had the lowest (1.33 kg/min). Animals offered a high concentrate diet had greater AMF, peak milk flow, and milking duration. The differences expressed by the divergent breeds may reflect differences in the past breeding goals among the breeds, namely the inclusion of traits aimed at maintaining or improving udder health.  相似文献

The objective of this study was to compare fertility, longevity, milkability, and profitability of cows from the Reggiana and Holstein breeds in northern Italy. Profitability was gauged for each breed, with consideration of economic incentive programs and alternative milk pricing scenarios. Calving to first service interval, days open, and calving interval were significantly shorter in Reggiana than in Holstein cows. Reggiana cows conceived approximately one estrus cycle before Holstein and had a calving interval 33 d shorter. Holstein cows released a significantly higher quantity of milk per unit of time (1.81 vs. 1.28 kg/min). Reggiana cows had longer expected total and productive lives than Holstein cows, by 5.8 and 10.0 mo, respectively. Replacement rate was 26% higher in the Holstein. Standard 305-d milk production was 5,360 and 7,870 kg in Reggiana and Holstein, respectively. Comparing breeds on annual milk and meat production, instead of standard 305-d milk yield, changed marginally the difference in annual profitability between the Reggiana and Holstein, from −€696 to −€679 per cow per year. Including feeding, milking, replacement, and insemination costs reduced the gap between breeds by 32%, from −€679, measured on annual milk and meat production, to −€460. These differences in profitability assumed a pricing scenario referring to milk sold to the dairy industry where protein and fat contents are valued but not the breed origin of milk. Incentive payments to farmers of endangered cattle compensated partially (22%) the lower income from Reggiana cows. When Reggiana milk production was sold as branded Parmigiano Reggiano cheese, Reggiana cows were more profitable than Holstein cows by €1,953 per cow per year.  相似文献

The aim of this research was to study the potential for selection of cows with a higher nutritional quality of milk fat by studying the differences in fatty acid profiles within and across the following breeds: Dual Purpose Belgian Blue, Holstein-Friesian, Jersey, Montbeliarde, and non-Holstein Meuse-Rhine-Yssel type Red and White. Six hundred milk samples from 275 animals were taken from 7 herds. Several types of fatty acids in milk and milk fat were quantified using mid-infrared spectrometry and previously obtained calibration equations. Statistical analyses were made using a mixed linear model with a random animal effect. The variance components were estimated by using REML. Results showed breed differences for the fatty acid profile. The repeatability estimate obtained in the present study may suggest the existence of moderate additive genetic variance for the fatty acid profile within each breed. Results also indicated variation for each analyzed milk component in the whole cow population studied. Genetic improvement of the nutritional quality of milk fat based on fatty acid profiles might be possible, and further research and development are warranted.  相似文献

Fourier-transform infrared (FTIR) spectra collected during milk recording schemes at population level can be used for predicting novel traits of interest for farm management, cows' genetic improvement, and milk payment systems. The aims of this study were as follows. (1) To predict cheese yield traits using FTIR spectra from routine milk recordings exploiting previously developed calibration equations. (2) To compare the predicted cheese-making abilities of different dairy and dual-purpose breeds. (3) To analyze the effects of herds' level of intensiveness (HL) and of the cow's level of productivity (CL). (4) To compare the patterns of predicted cheese yields with the patterns of milk composition in different breeds to discern the drivers of cheese-making efficiency. The major sources of variation of FTIR predictions of cheese yield ability (fresh cheese or cheese solids produced per unit milk) of individual milk samples were studied on 115,819 cows of 4 breeds (2 specialized dairy breeds, Holstein and Brown Swiss, and 2 dual-purpose breeds, Simmental and Alpine Grey) from 6,430 herds and exploiting 1,759,706 FTIR test-day spectra collected over 7 yr of milk sampling. Calibration equations used were previously developed on 1,264 individual laboratory model cheese procedures (cross-validation R2 0.85 and 0.95 for fresh and solids cheese yields, respectively). The linear model used for statistical analysis included the effects of parity, lactation stage, year of calving, month of sampling, HL, CL, breed of cow, and the interactions breed × HL and breed × CL. The HL and CL stratifications (5 classes each) were based on average daily secretion of milk net energy per cow. All effects were highly significant. The major conclusions were as follows. (1) The FTIR-based prediction of cheese yield of milk goes beyond the knowledge of fat and protein content, partially explaining differences in cheese-making ability in different cows, breeds and herds. (2) Differences in cheese yields of different breeds are only partially explained by milk fat and protein composition, and less productive breeds are characterized by a higher milk nutrient content as well as a higher recovery of nutrients in the cheese. (3) High-intensive herds not only produce much more milk, but the milk has a higher nutrient content and a higher cheese yield, whereas within herds, compared with less productive cows, the more productive cows have a much greater milk yield, milk with a greater content of fat but not of protein, and a moderate improvement in cheese yield, differing little from expectations based on milk composition. Finally, (4) the effects of HL and CL on milk quality and cheese-making ability are similar but not identical in different breeds, the less productive ones having some advantage in terms of cheese-making ability. We can obtain FTIR-based prediction of cheese yield from individual milk samples retrospectively at population level, which seems to go beyond the simple knowledge of milk composition, incorporating information on nutrient retention ability in cheese, with possible advantages for management of farms, genetic improvement of dairy cows, and milk payment systems.  相似文献

Global milk production is undeniably dominated by 2 dairy breeds recognized worldwide: Holstein-Friesian and Jersey. A third breed, Simmental, serves as a dual-purpose breed. The objective of the present research was to establish potential changes in the fractional components of bovine milk protein (mainly whey) in relation to the health status of a dairy cow's mammary glands, which is closely determined by somatic cell count (SCC). The milk of 3 breeds was studied: Polish Holstein-Friesian (Black and Red-White varieties), Simmental, and Jersey. The cows were housed in freestall barns and fed according to the total mixed ration feeding system for both winter and summer periods. Milk samples were collected individually from each cow twice a year, in the winter and summer seasons. A total of 1,822 milk samples were evaluated (946 in winter and 876 in summer). The milk was examined for SCC, crude protein, casein, and whey fraction proteins (α-lactalbumin, β-lactoglobulin, lactoferrin, BSA, and lysozyme). The research material for each breed was split into 4 groups based on SCC (group I: ≤100,000 cells/mL; group II: 101,000 to 400,000 cells/mL; group III: 401,000 to 500,000 cells/mL; and group IV: 501,000 to 1,000,000 cells/mL). It was found that an increase of SCC promulgated a progressive decline in the daily yield of milk, which was significantly true for the Polish Holstein-Friesian. The level of crude protein decreased slightly as SCC increased, and casein concentration (r = −0.591) also followed this trend of decline. Elevation of SCC produced a decrease of major albumins (i.e., α-lactalbumin and β-lactoglobulin). However, SCC increase induced an increase in the immunoactive proteins (lactoferrin and lysozyme) as well as BSA. The interactions of a breed with increased SCC, which can be measured based on the BSA content of the milk, has indicated various levels of susceptibility to the increase in different breeds. This is confirmed by different values of correlation coefficients for these relationships: 0.71 in the Holstein-Friesian, 0.58 in Simmental, and 0.47 in the Jersey cows. Holstein-Friesian cows are more sensitive to mammary gland infections causing a greater decline of their daily milk yields, which, in turn, is reflected in an increase of the negative value of the correlation coefficients between SCC and milk efficiency (−0.24). In the other 2 breeds, the correlations were also negative, but substantially lower (−0.12 and −0.15).  相似文献

A comparative fatty acid analysis of raw milk and during in vitro digestion of milk from different breeds of cow (Gir, Sahiwal, Tharparkar, and Karan fries) and buffalo (Murrah) maintained under similar feeding regimes was conducted. Saturated fatty acids were higher in Murrah and Karan Fries, whereas monounsaturated fatty acids were higher in Gir, Sahiwal and Tharparkar. Based on the fatty acid profile, atherogenic, thrombogenic index and hypercholesterolemic saturated fatty acids were lower, and desired fatty acids were higher in milk from indigenous breeds than in crossbred and Murrah. The size of milk fat globules was also lower in indigenous cattle breeds, which has allowed for faster in vitro digestibility of milk fat.  相似文献

The aim of this study was to establish the physicochemical, sensory and microbiological quality of ovine whey-based fruit beverages produced from pasteurised ovine whey (mango flavoured–sugar sweetened [M-Su], pineapple flavoured–extra sugar sweetened [P-ESu], and tropical fruit flavoured–stevia sweetened [T-St]), and the changes in quality of these beverage types during the 15-day storage. The beverages were evaluated for their pH, colour, sediment and particle size distribution, microbiological count and sensory quality. No significant differences in the pH and the microbial counts among the beverages were noted during the storage period; however, the particle size distribution reflected the sediment formation that significantly decreased during the same period in all beverage types. The beverages were getting lighter during storage, which was evident by increasing L* and decreasing a* values for colour. All three beverage types had very high scores for taste and odour after 9 days, and colour and sediment after 5 days of storage. Beverage-type T-St was most preferred by consumers, with the highest scores for taste, odour and sensory appearance. These results can assist in the better determination of the deteriorative changes in a variety of ovine whey-based beverages, necessary changes in product composition that might result in improved product quality, and yet reducing losses incurred during ovine milk processing. In this sense, this research's findings contribute to the utilisation of whey beverages by the dairy industry to the development of functional products.  相似文献

Milk coagulation properties (MCP) have been widely investigated in the past using milk collected from different cattle breeds and herds. However, to our knowledge, no previous studies have assessed MCP in individual milk samples from several multi-breed herds characterized by either high or low milk productivity, thereby allowing the effects of herd and cow breed to be evaluated independently. Multi-breed herds (n = 41) were classified into 2 categories based on milk productivity (high vs. low), defined according to the average milk net energy yielded daily by lactating cows. Milk samples were taken from 1,508 cows of 6 different breeds: 3 specialized dairy (Holstein-Friesian, Brown Swiss, Jersey) and 3 dual-purpose (Simmental, Rendena, Alpine Grey) breeds, and analyzed in duplicate (3,016 tests) using 2 lactodynamographs to obtain 240 curd firming (CF) measurements over 60 min (1 every 15 s) for each duplicate. The 5 traditional single-point MCP (RCT, k20, a30, a45, and a60) were yielded directly by the instrument from the available CF measures. All 240 CF measures of each replicate were also used to estimate 4 individual equation parameters: RCT estimated according to curd firm change over time modeling (RCTeq), asymptotic potential curd firmness (CFP), curd firming instant rate constant (kCF), and syneresis instant rate constant (kSR) and 2 derived traits: maximum curd firmness achieved within 45 min (CFmax) and time at achievement of CFmax (tmax) by curvilinear regression using a nonlinear procedure. Results showed that the effect of herd-date on traditional and modeled MCP was modest, ranging from 6.1% of total variance for k20 to 10.7% for RCT, whereas individual animal variance was the highest, ranging from 32.0% for tmax to 82.5% for RCTeq. The repeatability of MCP was high (>80%) for all traits except those associated with the last part of the lactodynamographic curve (i.e., a60, kSR, kCF, and tmax: 57 to 71%). Reproducibility, taking into account the effect of instrument, was equal to or slightly lower than repeatability. Milk samples collected in farms characterized by high productivity exhibited delayed coagulation (RCTeq: 18.6 vs. 16.3 min) but greater potential curd firmness (CFP: 76.8 vs. 71.9 mm) compared with milk samples collected from low-productivity herds. Parity and days in milk influenced almost all MCP. Large differences in all MCP traits were observed among breeds, both between specialized and dual-purpose breeds and within these 2 groups of breeds, even after adjusting for milk quality and yield. Milk quality and MCP of samples from Jersey cows, and coagulation time of samples from Rendena cows were better than in milk from Holstein-Friesian cows, and intermediate results were found with the other breeds of Alpine origin. The results of this study, taking into account the intrinsic limitation of this technique, show that the effects of breed on traditional and modeled MCP are much greater than the effects of herd productivity class, parity, and DIM. Moreover, the variance in individual animals is much greater than the variance in individual herds within herd productivity class. It seems that improvement in MCP depends more on genetics (e.g., breed, selection) than on environmental and management factors.  相似文献

Samples of herd milk (506) were analyzed to assess sources of variation for milk coagulation properties (MCP) for 5 different dairy cattle breeds. Data were recorded in 55 single-breed dairy herds in the Trento province, a mountain area in northeast Italy. The 5 cattle breeds were Holstein-Friesian (8 herds), Brown Swiss (16 herds), Simmental (10 herds), Rendena (13 herds), and Alpine Gray (8 herds). Herd milk samples were analyzed for the MCP traits, milk rennet coagulation time (RCT), curd-firming time, and curd firmness (a30), as well as protein and fat percentages, somatic cell count, Soxhlet-Henkel acidity, and bacterial count. An ANOVA was performed to study the effect of breed, herd within breed, DIM, month of lactation, protein and fat percentages, somatic cell score, titratable acidity, and log bacterial count within breed on MCP. Breed was the most important source of variation. In particular, the Rendena breed showed the best MCP traits at 13.5 min and 27.0 mm for RCT and a30, respectively. The Holstein-Friesian breed had the worst coagulation properties at 18.0 min and 17.5 mm for RCT and a30, respectively. The other 3 breeds showed intermediate coagulation properties. The RCT values were better at the beginning of lactation, whereas RCT and a30 values were better in September and October (14.3 min and 25.7 mm, respectively). Among the composition traits, only the titratable acidity affected MCP traits of herd milk positively.  相似文献

Milk fatty acid (FA) composition was compared among 4 cattle breeds in the Netherlands: Dutch Friesian (DF; 47 animals/3 farms), Meuse-Rhine-Yssel (MRY; 52/3), Groningen White Headed (GWH; 45/3), and Jersey (JER; 46/3). Each cow was sampled once between December 2008 and March 2009 during the indoor housing season, and samples were analyzed using gas chromatography. Significant breed differences were found for all traits including fat and protein contents, 13 major individual FA, 9 groups of FA, and 5 indices. The saturated fatty acid proportion, which is supposed to be unfavorable for human health, was smaller for GWH (68.9%) compared with DF (74.1%), MRY (72.3%), and JER (74.3%) breeds. The proportion of conjugated linoleic acid and the unsaturation index, which are associated positively with human health, were both highest for GWH. Differences in milk fat composition can be used in strategies to breed for milk with a FA profile more favorable for human health. Our results support the relevance of safeguarding the local Dutch breeds.  相似文献

In this study, we aimed to estimate and compare the genetic parameters of dry matter intake (DMI), energy-corrected milk (ECM), and body weight (BW) as 3 feed efficiency–related traits across lactation in 3 dairy cattle breeds (Holstein, Nordic Red, and Jersey). The analyses were based on weekly records of DMI, ECM, and BW per cow across lactation for 842 primiparous Holstein cows, 746 primiparous Nordic Red cows, and 378 primiparous Jersey cows. A random regression model was applied to estimate variance components and genetic parameters for DMI, ECM, and BW in each lactation week within each breed. Phenotypic means of DMI, ECM, and BW observations across lactation showed to be in very similar patterns between breeds, whereas breed differences lay in the average level of DMI, ECM, and BW. Generally, for all studied breeds, the heritability for DMI ranged from 0.2 to 0.4 across lactation and was in a range similar to the heritability for ECM. The heritability for BW ranged from 0.4 to 0.6 across lactation, higher than the heritability for DMI or ECM. Among the studied breeds, the heritability estimates for DMI shared a very similar range between breeds, whereas the heritability estimates for ECM tended to be different between breeds. For BW, the heritability estimates also tended to follow a similar range between breeds. Among the studied traits, the genetic variance and heritability for DMI varied across lactation, and the genetic correlations between DMI at different lactation stages were less than unity, indicating a genetic heterogeneity of feed intake across lactation in dairy cattle. In contrast, BW was the most genetically consistent trait across lactation, where BW among all lactation weeks was highly correlated. Genetic correlations between DMI, ECM, and BW changed across lactation, especially in early lactation. Energy-corrected milk had a low genetic correlation with both DMI and BW at the beginning of lactation, whereas ECM was highly correlated with DMI in mid and late lactation. Based on our results, genetic heterogeneity of DMI, ECM, and BW across lactation generally was observed in all studied dairy breeds, especially for DMI, which should be carefully considered for the recording strategy of these traits. The genetic correlations between DMI, ECM, and BW changed across lactation and followed similar patterns between breeds.  相似文献
