Dairy small ruminants account for approximately 21% of all sheep and goats in the world, produce around 3.5% of the world's milk, and are mainly located in subtropical-temperate areas of Asia, Europe, and Africa. Dairy sheep are concentrated around the Mediterranean and Black Sea regions, where their dairy products are typical ingredients of the human diet. Dairy goats are concentrated in low-income, food-deficit countries of the Indian subcontinent, where their products are a key food source, but are also present in high-income, technologically developed countries. This review evaluates the status of the dairy sheep and goat sectors in the world, with special focus on the commercially and technically developed industries in France, Greece, Italy, and Spain (FGIS). Dairy small ruminants account for a minor part of the total agricultural output in France, Italy, and Spain (0.9 to 1.8%) and a larger part in Greece (8.8%). In FGIS, the dairy sheep industry is based on local breeds and crossbreeds raised under semi-intensive and intensive systems and is concentrated in a few regions in these countries. Average flock size varies from small to medium (140 to 333 ewes/farm), and milk yield from low to medium (85 to 216 L/ewe), showing substantial room for improvement. Most sheep milk is sold to industries and processed into traditional cheese types, many of which are Protected Denomination of Origin (PDO) cheeses for gourmet and export markets (e.g., Pecorino, Manchego, and Roquefort). By comparing break-even milk price among FGIS countries, we observed the following: (1) most Greek and French dairy sheep farms were unprofitable, with the exception of the intensive Chios farms of Greece; (2) milk price was aligned with cost of production in Italy; and (3) profitable farms coexisted with unprofitable farms in Spain. In FGIS, dairy goat production is based on local breeds raised under more extensive systems than sheep. Compared with sheep, average dairy goat herds are smaller (36 to 190 does/farm) but milk yield is greater (153 to 589 L/doe), showing room for improvement. Goat milk is mainly processed on-farm into dairy products for national markets, but some PDO goat milk cheeses (e.g., Murcia al Vino) are exported. Processed goat milk is sold for local human consumption or dehydrated for export. Mixed sheep-goat (e.g., Feta) and cow-sheep-goat milk cheeses are common in many countries. Strategies to improve the dairy sheep and goat sectors in these 4 countries are proposed and discussed.  相似文献

The objectives of this paper are to review small ruminant dairy research in relation to the dimensions of the dairy goat and dairy sheep industries in the United States and the world. At least 10 countries depend on goats and sheep for between 30 to 76% of total milk supply. Leading among developed countries is Greece producing 178 kg milk per person per year with 61% from sheep and goats. Most developing countries need research, extension service, and public support to improve apparent productivity of goats and sheep. Domestic supply from all milk sources is <100 kg/person per year, and annual apparent yields average <100 kg of milk/goat, <50 kg of milk/sheep, which makes supplies of animal protein and calcium from domestic sources very low. Statistical data on goat and sheep production for United States are not available. The small population of DHIA tested US dairy goats averaged in recent years >700 kg of milk/goat per year, and some dairy sheep breeds may produce as much as 650 kg/yr. The need for more milk availability appears to be reflected in the dramatic increases of dairy goat populations during the last 20 yr: 52% for the world, 56% for developing, 17% for developed countries, while sheep populations decreased by 3% for the world, by 6% in developed, but increased 14% in developing countries. Research has been sparse on the unique qualities of goat and sheep milk compared with cow milk. Much development work by various agencies has been devoted to reducing mortality and improving feed supplies in harmony with the environment; this work is mostly published in proceedings of scientific meetings, often not in English. Results have shown in many cases that dairy goats and dairy sheep can be very profitable, even in developing countries with difficult climate and topographical conditions.  相似文献

Staphylococcus aureus is an important mastitis pathogen, causing both clinical mastitis (CM) and subclinical mastitis (SCM) in small ruminants. In general, CM has a low incidence in sheep and goats but can be very severe and costly. In contrast, subclinical mastitis (SCM) is common but is associated with less cost. For both sheep and goats, S. aureus is the main cause of CM and is associated with SCM cases with a high SCC. Recently, specific lineages of S. aureus have been identified that are associated with CM rather than SCM in dairy cows. It is unknown whether specific S. aureus lineages are associated with CM in goats and sheep. The aim of this study was to compare the clonal complex (CC), staphylococcal protein A (spa) type, leukocidin lukM-lukF' presence, and potential to produce LukMF' in vitro between CM and SCM S. aureus mastitis isolates obtained from sheep and goats. Differences between isolates from different host species were also compared. Ovine (CM, n = 12; SCM, n = 29) and caprine (CM, n = 14; SCM, n = 30) isolates were obtained from 8 sheep flocks and 8 goat herds in the Netherlands. Overall, the isolates belonged to CC133 (85%), CC398 (7%), CC425 (5%), and CC45 (2%). Seventeen spa types were found, including 6 novel types; the predominant types were t2678 (34%), t544 (18%), and t3583 (18%). Although CC133 was dominant among both sheep and goat isolates, spa type CC133/t2678 was associated with ovine isolates, whereas CC133/t544 and CC133/t3583 were found mostly in goats. The presence of lukM-lukF' among the S. aureus isolates was high (87%), especially in CC133 (96%) and CC425 (100%), but the genes were absent in CC45 and CC398. In vitro-cultured lukM-lukF'-positive isolates produced LukM (71 out of 74 positive isolates tested) in the range of 0.4 to 5.0 µg/mL. Interestingly, the goat-associated lineages CC133/t544 and CC133/t3583 produced more LukM in vitro than the sheep-associated CC133/t2678. We found no difference in LukMF' production potential between CM and SCM isolates. In sheep as well as in goats, no association was found between genotype and CM or SCM, demonstrating that the same lineages of S. aureus are responsible for both CM and SCM. These results suggest that subclinically infected animals in a herd or flock likely act as the reservoir of S. aureus causing CM. This highlights the importance of early identification and control of SCM and suggests that controlling SCM within a herd is an effective intervention to prevent CM in small ruminants.  相似文献

Several physiological and metabolic changes take place in dairy ruminants around parturition (late pregnancy, parturition, and early lactation). Dairy species are genetically selected for their higher milk production compared with non-dairy species. This fact causes a constant stress that impairs the immune status of the animal, with consequences for its welfare and performance. In the present study, we assessed the immune status of high-yield dairy sheep and goats by quantifying IgG and IgM concentrations, as well as chitotriosidase (ChT) and complement system [total complement system (TC) and alternative complement pathway (AC)] activity in blood plasma around parturition. We also measured IgG and IgM concentrations and ChT activity in colostrum and milk during the first 40 d postpartum. The lowest blood IgG concentration was at parturition in both species. We detected no differences in blood IgG concentrations between species. Blood IgM concentrations were constant in both species throughout the study period. However, blood IgM concentrations were greater in sheep than in goats. Blood ChT activity was greater in goats than in sheep, and both species showed constant activity of this enzyme throughout the study period. We observed no differences in complement system (TC and AC) activity between sheep and goats. In addition, both TC and AC activity were constant in both species throughout the experiment. In general, IgG and IgM concentrations were greater in sheep colostrum than in goat colostrum, but these differences disappeared after d 4 (IgG) and d 3 (IgM) postpartum. In both species, the highest IgG and IgM concentrations were measured in colostrum, gradually decreasing during the first days postpartum. Chitotriosidase activity decreased in both species from colostrum to milk, although goats always showed greater ChT activity than sheep. Both sheep and goats seemed to be more susceptible to infectious diseases around parturition. As well, goats showed greater ChT activity in blood, colostrum, and milk than sheep. This fact may give these animals additional protection against parasite and fungal infections.  相似文献

Caseins are widely used for species identification of dairy products. Isoelectric focusing (IEF) of para-κ-casein peptide is used as the official German method for the differentiation between caprine (isoform A) and ovine (isoform B) dairy products, based on their different isoelectric points. The discrimination between Greek goat and ewe dairy products using IEF has, however, been shown to be problematic because of the existence of the ewe isoform in milk from Greek indigenous dairy goats. This could be due to nucleotide polymorphisms within the goat κ-casein gene of Greek indigenous breeds, which alter the isoelectric point of the para-κ-casein peptide and lead to false positive results. Previous DNA analysis of the goat κ-casein gene has shown high levels of polymorphism; however, no such information is available for Greek indigenous dairy goats. Therefore, 87 indigenous dairy goats were sequenced at exon IV of κ-casein gene. In total, 9 polymorphic sites were detected. Three nonsynonymous point mutations were identified, which change the isoelectric point of the goat para-κ-casein peptide so that it appears identical to that of the ewe peptide. Ten composite genotypes were reconstructed and 6 of them included the problematic point mutations. For the verification of genetic results, IEF was carried out. Both goat and ewe patterns appeared in the problematic genotypes. The frequency of these genotypes could be characterized as moderate (0.23) to high (0.60) within Greek indigenous breeds. However, this is not an issue restricted to Greece, as such genotypes have been detected in various non-Greek goat breeds. In conclusion, IEF based on the official German method is certainly inappropriate for ovine and caprine discrimination concerning Greek dairy goat products, and consequently a new method should be established.  相似文献

The objective of these studies was to determine if methyl xanthines can be used to alter milk production or composition in ruminants by enhancing adipose tissue mobilization. Three trials were conducted, one with intravenous caffeine infusions, one with intramuscular caffeine injections, and one with intramuscular injections of 3-isobutyl 1-methyl xanthine. Results indicate that: 1) continuous intravenous infusions of caffeine (720 mg/d) may reverse the milk fat depression of intravenously infused glucose in dairy goats; 2) intramuscular injections of caffeine (200 mg twice daily) do not reverse the milk fat-depressing effects of pelleted dairy goat diets during the 4th mo of lactation; and 3) intramuscular injections of 3-isobutyl 1-methyl xanthine (50 mg twice daily) do not consistently affect milk production of early lactation dairy goats.  相似文献

Goat farming is a low-cost alternative to dairy production in developing countries. In Brazil, goat production has increased in recent years due in part to the implementation of programs encouraging this activity. Mycobacterium avium ssp. paratuberculosis (MAP) is the causative agent of paratuberculosis, a disease that causes chronic granulomatous enteritis in ruminants, but MAP transmission dynamics are still poorly understood in goats. In a previously published study of our research group, 10 dairy goat farms (467 animals) from Minas Gerais state were analyzed for MAP detection; 2 fecal cultures and 11 milk samples tested positive for MAP by conventional PCR and were confirmed by sequencing. Because no clinical signs were observed over 1 yr of monitoring, we hypothesized that these MAP-positive goats could be passive shedders. Thus, in the present study, 4 positive goats (4/13) from the previous study were purchased and feces and milk samples were collected for evaluation (twice, with an interval of 3 mo between tests) by culture of MAP, IS900 PCR, or both. All analyses were negative for MAP. At the last time point, blood samples were collected for ELISA, the animals were killed, and tissues collected for tissue culture and histopathology. At necropsy, no macroscopic lesions related to paratuberculosis were observed. Similarly, no histological changes were observed and MAP in samples stained by Ziehl–Neelsen was not detected. These animals were characterized as potential passive shedders with upward contamination of the teat canal by MAP. This is the first report of the passive shedding phenomenon in goats in Brazil and it highlights the importance of identifying these animals for control programs and to ensure the quality of dairy products.  相似文献

Different studies have shown that people are aware of the benefits of dairy products, but a sizeable part of the world's population still does not consume the recommended amount of dairy produce. The aims of the present research were to determine which dairy products are consumed by the middle-aged and elderly (50–81 yr old) living in Switzerland and to explore why some of this population segment are actually reducing their consumption of dairy products. On average, older Swiss adults consumed 2.6 portions of dairy products per day, which is slightly less than the recommended 3 to 4 portions a day. Additionally, about one-quarter of the respondents indicated that they have reduced their milk or dairy consumption. The main reasons given for this decision were to reduce fat or cholesterol. A reported difficulty in digesting some dairy products may be a further reason for limiting dairy intake, particularly cheese. It follows that a need for the propagation of appropriate nutritional information about dairy products to the middle-aged and elderly exists.  相似文献

The objective of this study was to monitor the viability during storage of Lactobacillus acidophilus LA-5 (A), Bifidobacterium animalis ssp. lactis BB-12 (B), and Streptococcus thermophilus CHCC 742/2130 (T) in probiotic cultured dairy foods made from pasteurized camel, cow, goat, and sheep milks fermented by an ABT-type culture. The products manufactured were stored at 4°C for 42 d. Microbiological analyses were performed at weekly intervals. Streptococcus thermophilus CHCC 742/2130 was the most numerous culture component in all 4 products both at the beginning and at the end of storage. The viable counts of streptococci showed no significant decline in fermented camel milk throughout the entire storage period. The initial numbers of Lb. acidophilus LA-5 were over 2 orders of magnitude lower than those of Strep. thermophilus CHCC 742/2130. With the progress of time, a slow and constant decrease was observed in lactobacilli counts; however, the final viability percentages of this organism did not differ significantly in the probiotic fermented milks tested. The cultured dairy foods made from cow, sheep, and goat milks had comparable B. animalis ssp. lactis BB-12 counts on d 0, exceeding by approximately 0.5 log10 cycle those in the camel milk-based product. No significant losses occurred in viability of bifidobacteria in fermented camel, cow, and sheep milks during 6 wk of refrigerated storage. In conclusion, all 4 varieties of milk proved to be suitable raw materials for the manufacture of ABT-type fermented dairy products that were microbiologically safe and beneficial for human consumption. It was suggested that milk from small ruminants be increasingly used to produce probiotic fermented dairy foods. The development of camel milk-based probiotic cultured milks appears to be even more promising because new markets could thus be conquered. It must be emphasized, however, that further microbiological and sensory studies, technology development activities, and market research are needed before such food products can be successfully commercialized.  相似文献

Although Spain is an important producer of goat milk, less than 2% of this milk is used for direct consumption. The aim of this study was to evaluate the consumer acceptance of milk obtained from goats fed a diet supplemented with aromatic plants as a source of natural antioxidants, in this case distilled thyme and rosemary leaves and nondistilled thyme leaves. Although future production of dairy goats is influenced by kid-rearing practices, little is known regarding which practices maximize kid growth, welfare, and future production success. The objectives of this survey study were to (1) identify common rearing practices of Canadian commercial dairy goat farms and evaluate their associations with 6 farm performance indicators and (2) determine if farms could be grouped by management style on the basis of the 6 performance indicators and compare rearing practices common across the different groups. A survey was sent by post or electronic media to reach dairy goat producers across Canada. The questionnaire contained 70 questions on the following areas of kid rearing: kidding management, care of newborn, colostrum management, milk and solid feeding in the preweaning period, health management, disbudding, housing conditions, weaning strategies, record keeping and growth monitoring, and farm performance data. Performance indicators, calculated on self-reported data, were 305-d milk production, preweaning mortality rate, diarrhea and respiratory disease prevalence, average daily gain from birth to weaning, herd milk production, and replacement rate. A total of 175 questionnaires were returned. After applying inclusion criteria, including herd size (≥40 goats) and completeness of surveys, 104 respondents from Ontario (n = 72, 69%), Québec (n = 23, 22%), and the Western provinces (n = 9, 9%) were retained for analysis, representing 29% of all Canadian producers. Farm sizes ranged from 42 to 2,500 (median = 190) goats. A large amount of variation in rearing practices and farm performance was found between farms. Colostrum and milk feeding management were found to be associated with all performance indicators except for kid respiratory disease prevalence, with timing of colostrum delivery and feeding method accounting for most the associations within each of the 2 areas. Replacement rate was mostly affected by whether or not kids were reared with their dam. Herds surveyed in the study could successfully be divided into 3 distinct groups (production-focused, longevity-focused, and low performance), representing different management styles on the basis of farm self-reported performance levels. Rearing practices found to be associated with higher farm performance could be targeted by advisory services to help improve management practices on Canadian dairy goat farms.  相似文献

The detection capability (CCβ) of some microbial screening tests currently available was calculated for sheep and goat milk in accordance with Commission Decision 657/2002/EC. The CCβ was at or below the maximum residue limit (MRL) for most β-lactams assessed and other non-β-lactam drugs such as neomycin, tylosin, sulfadiazine and sulfadimethoxine. However, the tests were less sensitive in the detection of most non-β-lactam drugs such as quinolones and tetracyclines at safety levels. When individual sheep milk samples free of antibiotics were analysed, an elevated somatic cell count was related to the occurrence of non-compliant results in all the methods assessed. To guarantee the safety of milk and dairy products from small ruminants, the periodical implementation of screening tests more sensitive towards non-β-lactam drugs would be appropriate.  相似文献

Current FDA regulatory screening and confirmatory methods, electronic cell counting and the direct microscopic somatic cell count (DMSCC), differ for the detection of abnormal milk in sheep and goats. The DNA-specific electronic SCC screening methods such as Fossomatic (Foss, Hillerød, Denmark) can be used for both sheep and goat milk; however, the nonspecific methylene blue-based stains used for DMSCC in sheep cannot be used for goats as they nonspecifically stain cytoplasmic particles naturally present in goat milk. The DNA-specific stain pyronin Y-methyl green (PMG) is currently used for DMSCC in goats. Sheep also shed cytoplasmic particles during the milk secretory process, but in fewer numbers than goats. The objective of this study was to determine whether the nonspecific, methylene blue-based Levowitz-Weber (L-W) stain is the appropriate regulatory stain to use for DMSCC in sheep milk. Composite milk samples from 42 commercial dairy ewes were collected every 4 wk for the duration of each ewe's lactation for a total of 10 sample days. Milk samples were subjected to 3 methods of SCC determination: automated Fossomatic counting, DMSCC with L-W stain, and DMSCC with PMG stain conducted according to FDA regulatory procedures (2400 series forms). The DMSCC from milk smears stained with L-W were greater than those from smears stained with PMG and those from the Fossomatic analysis on 6 of the 10 sampling days. Milk smears stained with PMG did not differ from Fossomatic analysis at any sampling. The average milk SCC for L-W, PMG, and Fossomatic were (mean ± SE) 275 ± 36 × 103, 174 ± 24 × 103, and 164 ± 24 × 103 cells/mL, respectively. The DMSCC for milk stained with L-W was 58% greater than that with PMG and 68% greater than that obtained with the Fossomatic analysis. In conclusion, DMSCC of sheep milk stained with the nonspecific, methylene blue L-W stain resulted in a marked increase in SCC over that of the DNA-specific stain PMG and Fossomatic SCC analysis. The findings of this study support the continued use of Fossomatic SCC but recommend the replacement of the methylene blue-based stains with DNA-specific PMG for determination of DMSCC in sheep milk.  相似文献

Early identification of dairy goat herds and dairy sheep flocks infected with Mycobacterium avium ssp. paratuberculosis is important for controlling this infection and minimizing economic losses. The objective of this study was to evaluate 2 bulk tank milk (BTM) paratuberculosis tests (PCR and modified ELISA) as potential herd-level tests. These tests were compared with the results obtained from testing 20 randomly selected lactating animals per farm (>2 yr) with an individual animal test (fecal culture, fecal PCR, serum ELISA, and milk ELISA). The study was conducted using 29 dairy goat herds and 21 dairy sheep flocks in Ontario, Canada, visited between October 2010 and August 2011. The sensitivity of the BTM PCR was poor in both the dairy goat herds (0.0%) and dairy sheep flocks (25.0%), but exhibited 100% specificity in both species. In comparison, the BTM modified ELISA demonstrated higher sensitivity. In goats, sensitivity ranged from 33.3 to 34.8% when fecal culture and PCR were the reference tests, respectively (specificities were both 100%), and 71.4 to 87.5% when the milk and serum ELISA, respectively, were the reference tests (specificities were 86.4 and 95.2%). The BTM modified ELISA in dairy sheep demonstrated comparable sensitivities, but lower specificities. When fecal culture and PCR were the reference test, sensitivities were 50.0 and 46.7%, respectively (specificities were 77.8 and 83.3%). The sensitivities when the milk and serum ELISA were the reference tests were 87.5 and 72.7%, respectively (specificities were 92.3 and 100%). Fecal PCR was the only individual animal test to identify significantly more farms as positive than the BTM PCR and modified ELISA test in both species. Therefore, whereas the BTM modified ELISA may provide an organization or control program with a high level of confidence that a BTM-positive farm is actually positive (high positive predictive value), if a producer wishes to increase the odds that a positive farm will test positive, so as not to miss an infection, then sampling and testing 20 animals with fecal PCR will better meet that objective.  相似文献

The purpose of the present study was to investigate the influence of diets supplemented with anionic salts on bone metabolism of dairy goats and sheep. Twelve Saanen goats and 12 Ostfrisean milk sheep (fourth lactation) were divided into 2 groups each [sheep control (SC), goat control (GC); sheep anionic salts (SA), goat anionic salts (GA)]. Each group was fed a different diet in the last 10 d of gestation. Groups SC and GC received a normal diet according to the requirements of goats and sheep in this stage of gestation. Groups SA and GA received supplemental anionic salts. The dietary cation-anion difference (DCAD) was +524 (SC) and +515 (GC) vs. −163 (SA) and −164 (GA) mEq/kg of dry matter. Blood and urine samples were collected daily until parturition. Serum Ca, P, Mg, serum crosslaps (CTX), osteocalcin, 1,25-dihydroxy-vitamin D (VITD), urinary pH, and urinary Ca concentrations were analyzed. Bone mineral density and bone mineral content were measured with peripheral quantitative computer tomography. The bone resorption marker CTX showed significant differences between the animals supplemented with anionic salts and the control animals in goats, but not in sheep. The goats receiving anionic salts had greater CTX concentrations throughout the administration of the salts. In sheep, a difference was only observed on the day of parturition. Similar observations were made in VITD concentrations, although a significant difference between the goat groups was only observed 3 d prepartum. The bone formation marker osteocalcin was lower prepartum in the animals supplemented with anionic salts. The urinary pH was lower in the SA and GA animals, whereas urinary Ca concentrations were greater. Bone mineral content and bone mineral density decreased in all groups around parturition. In conclusion, this experiment showed that the addition of anionic salts in goats led to greater bone resorption rates while on this feeding regimen. It can be concluded that the anionic salts induced a mild metabolic acidosis with all its effects on calcium metabolism. These effects were not evident in milk sheep.  相似文献

An investigation was undertaken with the aim of studying the repetitive region of the MUC1 gene and analyzing its polymorphisms in some Italian sheep breeds. Two primers previously used for the goat MUC1 gene analyses allowed for the amplification of 4 different alleles. The sequence analysis showed that the repetitive region of the sheep MUC1 gene is an array of 60-bp repeats, in accordance with the information reported in humans, cattle, and goats. The polypeptide sequence encoded by the consensus repeat was very similar to the corresponding sequences of goats and cattle. The average homology of all repeated units was 82%; when the repeats were compared with the derived consensus repeat, homology dropped to 78%. The repeats were not all perfectly conserved, but the sequence homology was nevertheless clearly sufficient to preserve the mechanism giving rise to the variable-number tandem-repeat polymorphism. In spite of their reduced sequence homology, the sheep repeats shared a high number of potential glycosylation sites. The conservation of the exact number and position of glycosylation sites did not seem to be very important for the purpose of functional integrity, but glycosylation appeared to be conserved as a bulk property. Analysis of the polymorphism in 6 Italian breeds showed that the sheep repetitive region seemed to be less variable and smaller in size than the repetitive region of the goat. The findings of this study suggest that ruminants can be a useful model to study the mechanisms by which the variation in the repeat number and the extracellular domain size can modulate the effectiveness of MUC1 as a cell-surface shield.  相似文献

PURPOSE: Much has been published on the nutritional and health benefits of fermented dairy products, especially those containing probiotic microorganisms. However, consumers may not be familiar with the term "fermented dairy products," and therefore may not take full advantage of them. University students' knowledge and consumption patterns of fermented dairy products were assessed. METHODS: University students (n=223) completed a survey consisting of a section on demographics and another on knowledge and consumption patterns. RESULTS: The majority of respondents (62%) were not familiar with the term "fermented dairy products." Most respondents consumed yogourt a few times a week (40%) or a few times a month (30%). Almost all respondents (92%) were unable to identify the difference between regular and probiotic yogourt. Most respondents (93%) had not heard of acidophilus milk, but the majority (65%) would be willing to try it. Most respondents were unsure whether sour cream (65%), yogourt beverages (74%), and cheddar cheese (61%) were fermented dairy products. Sixty percent of respondents never consumed yogourt drinks. CONCLUSIONS: Education is needed about fermented dairy products, especially probiotics, and their nutritional and health benefits. Milk products like yogurt, flavoured milk-drinks, curd and cheese may be composed of milk different from cow, namely of ruminant species like sheep and goat. Such products experience an increasing demand in Europe and are recognised as healthy and naturally finished specialities. To verify declared milk compositions in these dairy products, two different quantitative multiplex PCR systems have been evaluated in a comparison test with eleven participating laboratories employing two unknown, traditionally manufactured cheeses with different degrees of ripening to determine milk fractions from cow, ewe and goat. Precision and accuracy was investigated by calibration to dilutions of DNA mixtures and to homologous matrix-adapted reference cheeses, respectively. As expected, independent of the particular method, best inter- and intra-laboratory accuracy has been achieved through the use of homologous reference cheese standards. Furthermore, it has been shown that cheese ripening and the concomitant DNA degradation exert an inverse effect on the method’s sensitivity and performance characteristics. Additionally, a broad market survey of different milk products demonstrated its applicability as an efficient analytical tool for food control laboratories to challenge the authenticity of milk and its products from small ruminants.  相似文献

Carcass composition and meat quality attributes were compared in yearling sheep and goats. After weaning at 3 months of age, the animals were maintained under stall fed condition up to 1 year of age. Throughout the study, the animals were maintained on ad libitum complete feed (50:50 roughage and concentrate). The yearling sheep had higher (P<0.05) pre slaughter weight, hot carcass weight and dressing % than the goats. The muscular development as indicated by loin eye area was significantly (P<0.01) greater in sheep than goats. In general, total non-carcass fat contents were more in sheep than goats. Similarly, the dissected total fat of half carcass was also more (P<0.01) in sheep than the goats. Neck and shoulder portion was heavier (P<0.01) in goats than the sheep. Shear force value was greater (P<0.01) in goats (7.42 kg/cm2) than sheep (3. 74 kg/cm2). Goat meat had more (P<0.01) moisture and less fat than mutton. In sensory evaluation both the species were rated almost equal in overall palatability scores. The current study showed that dressing yield was higher in sheep than goats. But goat yielded leaner carcass which is desirable for the calorie concern consumers. It was also revealed that meat from goat carcasses was tougher than mutton.  相似文献
