Twenty-seven lambs were used to investigate the effects of the inclusion of 4% hydrogenated palm oil (HPO) or sunflower oil (SFO) in the concentrate on animal performance, carcass and meat quality and fat characteristics and fatty acid composition. Animals (16.2 ± 0.27 kg initial weight) were fed concentrate (Control, HPO or SFO) and barley straw ad libitum and slaughtered at 25 kg. SFO lambs tended to eat less concentrate than HPO animals (P < 0.10). Neither HPO nor SFO affected any of the carcass characteristics studied, meat pH and meat and fat colour (P > 0.05). SFO decreased proportions of C16:0, C18:1 cis-11 and C18:3 (P < 0.05) and increased C18:1 trans (P < 0.001) and C18:2/C18:3 ratio (P < 0.05). Atherogenicity index was lower (P < 0.05) when SFO was included in the concentrate. HPO did not affected and SFO improved fatty acid composition of fattening lambs without affecting animal performance.  相似文献

Forty Merino Branco ram lambs were used to study the effects of initial diet and duration of supplementation with a conjugated linoleic acid (CLA) promoting diet, on carcass composition, meat quality and fatty acid composition of intramuscular fat. The experimental period was 6 weeks. The experimental design involved 2 initial diets (commercial concentrate (C); dehydrated lucerne (L)), and 2 finishing periods (2 and 4 weeks) on dehydrated lucerne plus 10% soybean oil (O). Data were analysed as a 2 × 2 factorial arrangement with initial diet and time on finishing (CLA promoting) diet as the main factors. The lambs were randomly assigned to four groups: CCO; COO; LLO; LOO according to the lamb’s diet fed in each period.Lambs initially fed with concentrate showed higher hot carcass weights (11.2 vs 9.6 kg) than lambs fed initially with lucerne. The increase of the duration of finishing period reduced the carcass muscle percentage (57.4% vs 55.5%) and increased the subcutaneous fat percentage (5.67% vs 7.03%). Meat colour was affected by initial diet. Lambs initially fed with concentrate showed a lower proportion of CLA (18:2cis-9, trans-11 isomer) (0.98% vs 1.38% of total fatty acids) and most of n−3 polyunsaturated fatty acids than lambs initially fed with lucerne. Initial diet did not compromise the response to the CLA-promoting diet and the proportion of 18:2cis-9, trans-11 in intramuscular fat increased with the duration of time on the CLA-promoting diet (1.02% vs 1.34% of total fatty acids).  相似文献

Forty-eight lambs were fed as follows: GR, lambs and dams grazed perennial pasture; GR+S, the same as GR except that lambs had access to concentrate; DRL-GRE, lambs in drylot and dams in rationed grazing; DRL, lambs with dams were stall-fed. DRL-GRE and DRL lambs were weaned at 45 days of age. Lambs were slaughtered when they reached 22–24 kg of live weight. Plasma cortisol concentration was determined three times before slaughter. Indoor-kept concentrate-fed light lambs (n = 54) were supplemented with 500 mg of dl-α-tocopheryl acetate/kg concentrate for 0, 10, 20 and 30 d before slaughtering at 22–24 kg BW. Simultaneously, 8 lambs with their dams were alfalfa-grazed and the lambs were slaughtered at the same weight. The age at slaughter and carcass characteristics were more affected by grazing than by supplementation with α-tocopherol. The grazing lambs had similar α-tocopherol levels to the lambs fed concentrate with dl-α-tocopheryl acetate for 10 days before slaughter. The length of the feeding period affected the evolution of the color, delaying the blooming and discoloration of the meat. Feeding lambs α-tocopherol enriched concentrate during the last 10 days of life or grazing them on alfalfa drastically diminished the lipid oxidation of the meat. Alfalfa grazing is a feasible alternative to increase light lamb meat shelf life without using additives.  相似文献

Effects of supplementing Small East African (SEA) goats with concentrate diets on fatty acids composition of minced meat, M. longissimus dorsi (LD) and omental fat were assessed using 23 animals (14.5 months old and 20.1 kg body weight). Goats were subjected to four levels of concentrate supplementation: ad libitum concentrate allowance (T100), 66% (T66), 33% (T33) and 0% (T0) of ad libitum concentrate allowance. All goats were slaughtered after 90 days of experimental period. Minced meat from concentrate-supplemented goats had higher (P < 0.05) proportions of unsaturated fatty acids (UFA), monounsaturated fatty acids (MUFA) and desirable fatty acid (DFA) than that of non-supplemented ones (T0). Minced meat from T00 and T66 goats had similar proportions of polyunsaturated fatty acids (PUFA) and n-6 PUFA that were higher (P < 0.05) than that of other dietary groups. There was limited variation in fatty acids composition of LD attributable to concentrate supplementation. Trans-vaccenic and linoleic acids were in higher (P < 0.05) proportion in omental fat from concentrate-supplemented goats whereas margaric and arachidonic acids were in higher (P < 0.05) proportion in omental fat from non-supplemented goats. Overall, LD was associated with PUFA, omental fat with saturated fatty acids (SFA), minced meat with MUFA. It is concluded that finishing SEA goats on concentrate diets will increase the proportion of DFA in meat from them. In addition, the proportion of PUFA in meat from such goats will peak at concentrate supplementation equivalent to 66% of their ad libitum intake. Consumers should avoid high intake of internal fat due to their richness in SFA.  相似文献

Eighty eight lambs were used in a 2 × 2 factorial arrangement 1) to investigate the effect of maternal dietary linseed supplementation and/or lamb linseed supplemented concentrate on growth performance, carcass fat quality and fatty acid (FA) composition of muscle and dorsal adipose tissue of indoor lambs 2) to study the relationships between subcutaneous fat quality and FA composition. Feeding linseed to ewes increased C18:3 n-3 (ALA) proportion in milk and therefore the ALA supply to suckling lambs. However, ALA and n-3 polyunsaturated FA (n-3 PUFA) proportions in lamb tissues were not affected. Feeding linseed to lambs during the post-weaning period significantly increased the proportions of ALA and n-3 PUFA in tissues. Softer and more colored fat was associated with a decrease in even medium-chain saturated FA and increases in odd and methyl FA proportions but not with ALA proportion in subcutaneous adipose tissue.  相似文献

Two kinds of feed (commercial concentrate vs whole supplemented barley) were compared in unweaned lambs and lambs weaned at 40 days of age, fattened at pasture and slaughtered at 28 kg live weight, in order to observe their effects on meat quality and fatty acid composition. The weaning status influenced fatness; unweaned lambs displayed a greater carcass fatness score and more kidney knob and channel fat than weaned lambs. Compared with the unweaned animals, weaned lambs exhibited higher pH values at 0 h and 45 min in the m. longissimus thoracis (LT) and at 45 min and 24 h in the m. semitendinosus. The redness index (a*) of the m. LT of weaned lambs was higher than that of unweaned lambs, and lambs fed concentrate displayed a higher yellowness index (b*) and a higher Hue value than those given whole barley. Water-holding capacity did not vary with the treatments studied. The proportion of saturated fatty acids (SFA) in intramuscular fat was higher (P?0.001) in unweaned lambs than in weaned ones while, on the other hand, the latter displayed a higher proportion of monounsaturated fatty acids (MUFA) and a higher n-6/n-3 ratio in the same tissue. As was the case with intramuscular fat, the subcutaneous fat of unweaned lambs exhibited higher proportions of medium-chain fatty acids (C12:0, C14:0 y C16:0) and lower ones of stearic (C18:0) and oleic (C18:1) fatty acids than that of weaned lambs. Higher levels of heptadecenoic acid (C17:1) were found in the subcutaneous fat of lambs fed whole barley than in that of lambs given concentrate. PUFA/SFA and n-6/n-3 ratios were lower in the m. Fifty seven suckling lambs (28 males and 29 females) of the Churra da Terra Quente breed were used to evaluate the effects of live weight and sex on carcass composition and meat quality traits. Lambs were slaughtered at three weight classes (<8 kg, 8–11 kg and >11 kg) according to “Borrego Terrincho–PDO” specifications. The left sides of the carcasses were totally dissected. The longissimus thoracis and lumborum muscle was used for meat quality determination. Dressing proportion and carcass fatness were not affected by weight class or sex. Muscle proportion was similar in all carcass joints for the three weight classes. The percentage of bone decreased at the higher weight class, while that of subcutaneous and intermuscular fat increased. Female lambs had higher muscle proportions and greater muscle/bone ratios in the carcass side than males. Muscle pH, colour, cooking losses and tenderness were not affected by gender and weight class. Female lambs and weight classes 8–11 kg and >11 kg had higher proportions of intramuscular fat.  相似文献

The main objective of this study was to evaluate the effects of ewe dietary treatments on the intramuscular fatty acid composition of suckling lambs. Twenty-four pregnant Italian Merino ewes were divided into two equal groups. One group (pasture-fed group) was allowed to graze a natural pasture and the other group (stall-fed group) was penned indoors and fed with hay and concentrate. After lambing, all ewes stayed with their respective lambs for the whole experimental period. Lambs were slaughtered at 100 days of age with an average live weight of 20kg. Fatty acid profiles of milk and lamb meat (longissimus lumborum muscle) were analysed. Intramuscular fat from pasture-fed lambs showed higher (P<0.001) proportions of polyunsaturated fatty acids. The percentage of lauric (C12:0; P<0.05), palmitic (C16.0; P<0.001) and oleic (C18.1; P<0.001) fatty acids were higher in the intramuscular fat from stall-fed lambs, whereas pasture-fed lambs showed greater proportions of linolenic (C18:3; P<0.001), eicosapentaenoic (C20:5; P<0.001) and docosapentaenoic (C22:5; P<0.05) fatty acids. Moreover, the intramuscular fat from pasture-fed lambs displayed a higher (P<0.001) PUFA/SFA ratio, and a lower (p<0.001) n-6/n-3 ratio. The conjugated linoleic acid (CLA) tended to be higher (P=0.07) in the intramuscular fat from pasture-fed lambs. This study confirmed that pasture enhanced the unsaturated fatty acid profile of intramuscular fat in lambs including n-3 fatty acids.  相似文献

Sixty-four male lambs of two Southern Spanish breeds, a dairy breed (Grazalema Merino) and a meat breed (Churra Lebrijana), were used to study the effects of slaughter weight and breed on meat traits and intramuscular and subcutaneous fat composition. Lambs were reared following a traditional production system without weaning and slaughtered when live weight reached 12 kg (suckling) or 20 kg (light). Meat from suckling lambs of both breeds had lower fat and myoglobin contents, and was more tender and had higher scores for sustained juiciness in the sensory analysis. Fat from light lambs had lower C12:0 and C14:0 levels than fat from suckling lambs. Grazalema Merino meat had higher fat and ash contents, and its fat had higher conjugated linoleic acid content than Churra Lebrijana meat.  相似文献

The effect of varying concentrate composition to include 5% linseed and 200 IU of vitamin E on the growth performance, fatty acid composition, and muscle color during shelf life was assessed in 46 young Pirenaica bulls finished to two fatness levels. Adding 5% linseed lowered the dressing rate without altering daily gain or carcass classification. It likewise did not alter the total saturated, monounsaturated, or polyunsaturated fatty acids in the intramuscular fat, though the percentage of α-linolenic acid and n − 3 fatty acids increased significantly while the n − 6 fatty acid to n − 3 fatty acid ratio decreased. Higher subcutaneous fat cover depth at slaughter increased the total percentage of oleic acid and monounsaturated fatty acids without affecting the percentage of saturated or polyunsaturated fatty acids. Adding 200 IU of vitamin E in addition to linseed did not alter the color of film-wrapped fresh meat during storage in darkness.  相似文献

The aim of this study was to assess whether different grazing management affect animal performance and meat fatty acid composition. Thirty-five lambs were divided into three groups: 12 lambs grazed from 9 am to 5 pm (8h group); 11 lambs grazed from 9 am to 1 pm (4hAM group) and 12 lambs grazed from 1 pm to 5 pm (4hPM group). The trial was conducted over 72 days. The 8h lambs had greater DMI (P < 0.0005) and final body weight (P < 0.05) than the 4hPM and 4hAM lambs while carcass weight was not different between the three groups. The meat of the 4hPM lambs contained greater (P < 0.05) percentages of polyunsaturated fatty acids, C18:2 cis-9 trans-11 and lower saturated fatty acids and C18:0 than the meat of the 8h and 4hAM lambs. It is concluded that allowing lambs to graze during the afternoon rather than during 8 h does not compromise the carcass yield and results in a healthier meat fatty acid profile.  相似文献

One hundred and twenty-seven lambs were fed as follows: lambs and dams grazing alfalfa (Gr); the same as Gr but lambs had access to concentrate (Gr + S); ewes grazed and lambs received milk and concentrate until weaning and thereafter concentrate and straw (Rat-Gr); ewes and lambs were stall-fed (Ind). Lambs were slaughtered at 22-24 kg live weight and fat and M. rectus abdominis colour was measured instrumentally and subjectively. The evolution of the instrumental colour and texture of M. longissimus lumborum was also recorded.There were significant differences in the instrumental colour of subcutaneous fat amongst feeding systems, but no differences were observed upon visual appraisal. On average, M. rectus abdominis colour in the four feeding systems was classed as pink. Differences in longissimus thoracis colour at 0 h disappeared at 24 h of air exposure and there were no differences in pH or cooking losses. At no time were any differences in instrumental texture found.  相似文献

Thirty-two Merino lambs fed barley straw and a concentrate formulated either with palm oil (CTRL group) or with linseed (+ LS group), both alone or supplemented with quercetin (+ QCT group or + LS + QCT group) were used to assess the effects of these dietary supplements on meat quality attributes. After being slaughtered, the longissimus thoracis muscles were used to study the fatty acid (FA) profile in detail, whilst longissimus lumborum slices were stored under refrigerated conditions to determine the lipid stability. Linseed increased the content of highly unsaturated n − 3 long-chain fatty acid (20:5n − 3; 22:5n − 3; 22:6n − 3). Interestingly, a significant increment of rumenic acid content (9c,11t-18:2) was observed when this seed was administered together with dietary quercetin. Moreover, the feeding of quercetin resulted in a reduction in the proportion of saturated FA and a decrease in lipid peroxidation of meat when the lambs were fed linseed. In conclusion, from both a nutritional and a commercial (shelf-life) point of view, it may be useful to include a source of quercetin when lambs are fed linseed diets.  相似文献

The effect of stepwise replacement of dietary sunflower oil (SO) with linseed oil (LO) on carcass composition, meat colour and fatty acid (FA) composition of intramuscular lipids of lamb meat was investigated. Thirty-six lambs were fed one of four diets consisting of pellets of lucerne with oil (60 g/kg): the diet varied in the composition of oil added and were: 100% SO; 66.6% SO plus 33.3% LO; 33.3% SO plus 66.6% LO and 100% LO. The experimental period was 7 weeks. Live slaughter weight, hot carcass weight and intermuscular fat percentage of chump and shoulder increased linearly with replacement of SO by LO.  相似文献

The aims of the study were to investigate the effects of immunization against GnRH using OL protein (Ovalbumin-LHRH-7) on feedlot performance, carcass, meat quality and some reproductive traits in K?v?rc?k ram lambs. Ram lambs in the immunization (I, n = 7) group were immunized against GnRH using OL protein and boosted 2 weeks later. Control (C, n = 7) group was not treated. The animals were kept at pasture for 6 weeks after the first immunization, subjected to a 70 day fattening program, and then slaughtered. Growth performance, various carcass and meat quality characteristics were not affected from the immunization. GnRH immunization induced GnRH antibody production, suppressed testosterone production and testicular growth (P < 0.01). Testicular structure was negatively affected from the immunization, but not pituitary. These results suggest that immunization against GnRH with OL could be an alternative castration technique in ram lambs without negatively affecting carcass and meat quality characteristics.  相似文献

The effects of gender and castration of females (IF, intact females; CF, castrated females; CM, castrated males) on performance and carcass and meat quality were studied in crossbred pigs (Landrace × Large White dams × Duroc sires) slaughtered at 119.2 (experiment 1) or 131.6 (experiment 2) kg body weight. Intact females had better feed conversion and less carcass fat than CF and CM. Trimmed shoulder yield was higher for CM than for CF with IF being intermediate. Primal cut yield and meat quality were similar for all treatments. Proportion of linoleic acid in backfat was lower in CF than in IF or CM and the differences were significant when pigs were slaughtered at 131.6 kg. The higher fat content and the fatty acid profile favor the use of castrated females and males over intact females for the production of heavy pigs destined to the dry-cured industry.  相似文献

Effect of production system on carcass and meat quality was investigated in four groups of lambs: i. W-C lambs were weaned between 45 and 60 days of age and then were fattened with concentrate feed until slaughter; ii. W-G-S lambs were weaned and then taken to pasture and wheat stubble; iii. UW-C lambs were fattened with concentrate feed and they suckled their dams until slaughter; iv. UW-G lambs were kept with their dams and were taken to pasture in the day-time. Hot carcass weight was 13.62, 12.52, 14.37 and 13.88 kg (P < 0.001), and dressing percentage was 55.24, 51.77, 57.83 and 55.38% (P < 0.001), for W-C, W-G-S, UW-C and UW-G lambs, respectively. Ultimate meat pH was higher in W-G-S lambs than lambs from W-C and UW-C systems (P < 0.05). W-G-S lambs had higher shear force value in longissimus dorsi muscle (P < 0.05) and lower meat lightness (P < 0.001) than those of other systems. Panellists gave the lowest sensory scores, except juiciness, to meat of W-G-S lambs.  相似文献

Carcass and meat quality traits of 60 Nellore young bulls fed diets without crude glycerin (CG); with CG replacing corn (CGc; 10% of dry matter — DM) in the concentrate; and with CG replacing soybean hull (CGsh; 10% of DM) in the concentrate were evaluated. Diets were evaluated at two concentrate levels (CLs). The CL did not affect cold carcass weight (CCW; P = 0.6074), cold carcass dressing (CCD; P = 0.9636), rib fat thickness (RFT; P = 0.8696) and longissimus muscle area (LMA; P = 0.7524). Animals fed diets with CGc or CGsh showed meat with greater deposition of monounsaturated fatty acid (MUFA; P = 0.0022) and CLA (18:2 cis-9, trans-11) contents (P = 0.0001) than animals fed diets without CG. The inclusion of 10% of CG in diets CGc or CGsh does not affect the carcass and meat quality traits; however, it increases the MUFA and CLA contents in beef, although these changes are very small in nutritional terms.  相似文献
