This investigation was designed to evaluate the effects of variations in antioxidant and fatty acids composition of acorns and grass from two Montanera (free-range system and feeding based on acorns and grass) seasons (2006/07 and 2007/08) on the antioxidant composition and fatty acids profile of m. Longissimus dorsi (LD) and m. Serratus ventralis (SV) from Iberian pigs reared under these Montanera seasons. Acorn and grass composition was affected by Montanera season and consequently, LD and SV muscles showed different contents of α-tocopherol, total phenols, hydrophilic and lipophilic antioxidant activity and fatty acid profile, according with the composition of acorns and grass ingested. Results suggest a lack of uniformity in meat quality between different seasons. This could be due to the variable nature of extensive pig production as reflected in the variability in the composition of the diet (acorns and grass).  相似文献

The effect of three production systems of Iberian pigs namely Montanera (free-range system and feeding based on acorns and grass), Recebo (free-range system and nutrition based in combination of acorns, grass and mixed feeds) and Intensive (confinement with mixed feeds) on some quality traits of Longissimus dorsi (LD) and Serratus ventralis (SV) muscles were studied. Muscles from pigs raised in the Montanera system showed significantly higher CIE L, a and b values and higher haem pigment content than those from Intensive system. Similarly, muscles from pigs raised in the Montanera system had significantly higher contents of α and γ-tocopherol and phenolic compounds contents and higher lipophilic and hydrophilic activity antioxidant than those from pigs raised in the Intensive system. Fatty acids profiles from Montanera pigs had significantly higher monounsaturated (MUFA) and polyunsaturated (PUFA) fatty acids and lower saturated fatty acids (SFA) than those from pigs raised in the Intensive system. In relation to muscle effect, LD showed lower intramuscular fat (IMF), α-tocopherol, phenolic compounds, lipid oxidation and PUFA, but higher MUFA than SV.  相似文献

Five varieties of Spanish dry cured ham were studied to assess their nutritional value in relation to fatty acids. Ten hams of the Traditional Speciality Guaranteed (TSG) “Jamón Serrano”, and the Protected Designations of Origin (PDO) “Jamón de Teruel”, “Dehesa de Extremadura”, “Jamón de Huelva” and “Guijuelo”, were analysed. Iberian hams (“Dehesa de Extremadura”, “Jamón de Huelva” and “Guijuelo”) were characterised by a lower proportion of saturated fatty acids (SFA) and a significantly higher percentage of monounsaturated fatty acids (MUFA) than white hams (“Jamón Serrano” and “Jamón de Teruel”). The Iberian varieties also showed a high proportion (approximately 50%) of C18:1 n − 9, while “Jamón Serrano” showed the highest percentage of C18:2n−6. The PUFA/SFA (P/S) ratio of the five varieties was ? 0.19, with the highest ratio corresponding to “Jamón Serrano” (0.3). The n−6/n−3 ratio was in the order of 13/1 in “Jamón Serrano” and “Jamón de Huelva”, and ranged from 9.3/1 to 10.3/1 in the other varieties. The most favourable hypocholesterolemic/Hypercholesterolemic (h/H) ratio (?2.5) was found in the Iberian varieties. TSG “Serrano” was shown to supply the lowest percentage of the recommended daily intake of MUFA, the Iberian varieties showed the highest percentage of the daily intake of long-chain PUFA, and PDO “Dehesa de Extremadura” showed the highest percentage of the intake of C18:3n−3. The higher MUFA proportion and h/H ratio observed in the Iberian hams, together with their contribution to the recommended daily intake of fatty acids, would make these products more suitable for healthier diets, although consumption must be recommended in moderation.  相似文献

The present work was aimed to study the feasibility of classifying Iberian pigs fattened with two different diets, acorns and grass (AG) and oleic acid enriched concentrate (HO), by means of comparing the fatty acid profile and the content of different compounds of the unsaponifiable lipid fraction (neophytadiene and α- and γ-tocopherol) of subcutaneous (SCF) and intramuscular (IMF) fat of Biceps femoris and Semimembranosus muscles. The proportions of palmitic (C16:0), stearic (C18:0) and linoleic (C18:2 n-6) acids of the three studied tissues did not show a consistent behaviour as influenced by the feeding. The proportion of oleic acid (C18:1 n-9) was significantly affected by the diet in SCF and IMF of Semimembranosus muscle but not in IMF of B. femoris. Some minor fatty acids, such as arachidonic (C20:4 n-6) and linolenic (C18:3 n-3) acids, showed the best ability for the classification of the animals according to their feeding background and the obtained values showed significant differences caused by the diet in the three studied tissues. Neophytadiene and γ-tocopherol contents were statistically higher in AG than in HO pigs, while there were not differences in the α-tocopherol levels between experimental groups. Thus, it seems that procedures based on the quantification of arachidonic (C20:4 n-6) and linoleic (C18:3 n-3) acids as well as neophytadiene and γ-tocopherol levels would be useful to differentiate Iberian pigs fattened outdoors on acorns and grass from those fed MUFA enriched diets.  相似文献

Three quality branded meats (n = 68), “Vitela Tradicional do Montado”-PGI veal, Mertolenga-PDO veal and Mertolenga-PDO beef were analysed for cholesterol (HPLC-UV), α-tocopherol (HPLC-FD), fatty acid composition (GC-FID), including conjugated linoleic acid (CLA) isomeric profile (Ag+-HPLC), and nutritional value of lipids. All the meats analysed had similar contents (P > 0.05) of cholesterol, α-tocopherol and intramuscular fat. In contrast, the percentage of 18:0 was lower for PGI veal, and that of 18:1 c9 was higher in PDO veal, whilst the percentage of 18:2 n−6 was higher in PDO beef, relative to other two meats. The content of total CLA and the percentage of its t11,c13 isomer were higher, and the n−6/n−3 ratio was lower, in PDO veal, relative to the other two meats. The data suggested that PGI veal has higher variability for most fatty acids than the other two types of meat. Finally, a discriminant analysis was conducted and the three meat types were well discriminated using the meat fatty acid profile as variables.  相似文献

Supercritical CO2 extraction of antioxidants from Spirulina platensis was optimized using response surface methodology. About 10.26 g/kg of extracts from S. platensis could be obtained under the optimum conditions of 48 °C at 20 MPa over a 4 h period. The antioxidant activity of the extracts prepared under the optimized condition, determined by linoleic acid peroxidation inhibition method, was lower compared with BHT and Trolox, but significantly higher than α-tocopherol in 300 min and became similar to α-tocopherol after that. The components of the extracts were further analyzed, and the results showed that the extracts contained 85.1 g/kg of flavonoids, 77.8 g/kg of β-carotene, 113.2 g/kg of vitamin A and 3.4 g/kg of α-tocopherol, which may contribute greatly to their high antioxidant activity. The main fatty acids in the extracts were palmitic acid (35.32%), linolenic acid (21.66%) and linoleic acid (20.58%).  相似文献

The effects of using α-linolenic and α-tocopherol acid-enriched pork on the fatty acids and sensory characteristics of Spanish dry-cured loins were investigated. For the study, five batches of Spanish dry-cured loins were manufactured using pork loin enriched in polyunsaturated n − 3 fatty acids and α-tocopherol. Tissues were obtained from pigs fed on diets with the same ingredients, except for the oil source which corresponded to: [sunflower (C), linseed (L) and linseed and olive (1/1, w/w) (LO)] and two different amounts of α-tocopheryl acetate [20 (C, L and LO) or 200 (LOE and LE) mg/kg diet]. Dry-cured loins with polyunsaturated fatty acid n6/n3 ratios below 4 were obtained from linseed and linseed/olive oil-enriched batches. Dry-cured loin manufactured with pork from animals fed on diets enriched only with linseed oil presented the worst sensory characteristics and higher TBAR values than did dry-cured loins from animals fed on diets enriched with linseed and olive oil and linseed oil plus tocopheryl acetate.  相似文献

The chemical composition and some functional properties of the dried “Ulva lactuca” algae, collected from the littoral between the Taboulba and Sayada area, were determined. The dried “U. lactuca” algae were investigated for their soluble, insoluble and total dietary fibre content, mineral amount, amino acid and fatty acid profiles, swelling capacity (SWC), water holding capacity (WHC) and oil holding capacity (OHC). Results showed that “U. lactuca” alga powder was characterised by a high content of fibres (54.0%), minerals (19.6%), proteins (8.5%) and lipids (7.9%). The neutral fibres contain hemicellulose (20.6%), cellulose (9.0%) and lignin (1.7%). The proteinic fraction analysis indicated the presence of essential amino acids, which represent 42.0% of the total amino acids. The fatty acids profile was dominated by the palmitic acid, which represents about 60.0% of the total fatty acids, followed by oleic acid (16.0%). The study of the functional properties proved that SWC, WHC and OHC of this alga varied with temperatures and that were comparable to those of some commercial fibre rich products.  相似文献

The influence of slaughter season and muscle type on the detailed fatty acid composition, including conjugated linoleic acid isomers, and contents of total cholesterol and lipid-soluble antioxidant vitamins (α-tocopherol and β-carotene) in Mirandesa-PDO veal was assessed. Mirandesa purebred calves (n = 29) were raised in a traditional production semi-extensive system, slaughtered in late spring (June) or early autumn (October) and the longissimus lumborum and semitendinosus muscles were sampled for analysis. Although the lipid composition of PDO veal was only slightly affected by the slaughter season, it was markedly changed by the muscle type. However, PDO veal had values of pasture-fed cattle for lipid grass intake indicators, in both seasons and muscles. From a human health standpoint, intramuscular fat in Mirandesa-PDO veal has a high nutritional value throughout the year, with favorable ratios of n− 6/n− 3 and contents of n− 3 PUFA and α-tocopherol, as a result of the beneficial effects of grass feeding.  相似文献

The present work was aimed to study Iberian dry-cured hams from pigs reared outdoors and either fed with acorns and grass (AG) or with oleic acid enriched concentrates (HO), by means of their fatty acid profile, sensory traits and Magnetic Resonance Imaging (MRI). The level of total saturated fatty acids (SFA) was higher in HO than in AG hams, whereas total monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) showed higher proportions in AG than in HO Iberian dry-cured hams. Besides, lower levels of the n ? 6/n ? 3 ratio were found in AG than in HO dry-cured hams. Sensory analyses only showed differences between AG and HO Iberian dry-cured hams in pastiness (higher in AG hams, p = 0.039) and marbling (lower in AG hams, p = 0.002). Pig feeding also leads to differences in two computational texture features obtained by MRI-based analysis. Thus, analysis of the fatty acid profile and MRI-based analysis might be used for classifying dry-cured hams from pigs fattened with different diets.  相似文献

Sorghum bicolor L. Moench (Naga Red) red leaves is an ingredient used in rice and beans that is known as “waakye” in the Hausa language in some African countries. Little is known about its benefits aside from its colourant properties. We studied its bioactive, nutritive compounds and the effectiveness of four organic solvents (methanol, ethanol, acetone and diethyl ether) in isolation of these compounds to gain information regarding its health benefits to consumers. Of the compounds evaluated, the leaves consisted primarily of carotenoids, flavonoids and phenolic acids with small amounts of chlorophyll (a and b), lycopene and β-carotene. The fatty acid profiles of the leaves revealed palmitic, stearic, oleic and linoleic acid as predominant with each having greater than 5% of the total fatty acid identified. The nutritional implication of these findings is that the consumption of diets prepared with the leaves provides natural antioxidant and essential fatty acids that could fight cardiovascular related diseases.  相似文献

The physicochemical properties, fatty acid, tocopherol, thermal properties, 1H NMR, FTIR and profiles of non-conventional oil extracted from Citrullus colocynthis (L.) Schrad seeds were evaluated and compared with conventional sunflower seed oil. In addition, the antioxidant properties of C. colocynthis seed oil were also evaluated. The oil content of the C. colocynthis seeds was 23.16%. The main fatty acids in the oil were linoleic acid (66.73%) followed by oleic acid (14.78%), palmitic acid (9.74%), and stearic acid (7.37%). The tocopherol content was 121.85 mg/100 g with γ-tocopherol as the major one (95.49%). The thermogravimetric analysis showed that the oil was thermally stable up to 286.57 °C, and then began to decompose in four stages namely at 377.4 °C, 408.4 °C, 434.9 °C and 559.2 °C. The present study showed that this non-conventional C. colocynthis seed oil can be used for food and non-food applications to supplement or replace some of the conventional oils.  相似文献

The fatty acid compositions of liver and muscle of male and female Salmo trutta macrostigma, in the Tohma River, Turkey, were determined by gas chromatography. There were quantitative differences between individual fatty acids in the tissues investigated, depending on the sex. The most abundant fatty acids in both tissues of both sexes were palmitic acid (C16:0; 19.0–21.6%), stearic acid (C18:0; 5.32–11.3%), C18:1 ω−7 (5.65–9.38%), oleic acid (C18:1 ω−9; 15.6–22.4%), eicosapentaenoic acid (EPA; C20:5 ω−3; 6.34–7.88%) and docosahexaenoic acid (DHA; C22:6 ω−3; 7.38–15.6%). The ω−3/ω−6 ratio in tissues were found to be 2.89 (♂) and 1.97 (♀) in liver, and 2.59 (♂) and 2.26 (♀) in muscle. S. trutta macrostigma may be a valuable food for human consumption in terms of fatty acids.  相似文献

The objective of this study was to compare the fatty acid composition of commercially available conventional, certified organic, and omega-3 eggs. Egg components were assessed, and the fatty acid composition of yolk lipids was determined by gas chromatography. Organic egg yolk contained a higher percentage of palmitic and stearic acids than did conventional yolk (P < 0.05) with no differences observed in the monounsaturated or polyunsaturated fatty acid compositions. Compared with organic and conventional eggs, omega-3 egg yolk contained lower percentages of myristic and palmitic acids, and higher omega-3 fatty acids. In a sub-analysis of conventional egg types, the percent of stearic acid in “cage” egg yolk was significantly lower (P < 0.05) than those of “barn-laid” and “free-range” eggs. “Cage” eggs had a significantly lower percentage (P < 0.05) of arachidonic acid than had “barn-laid” eggs. Consumption of omega-3 eggs has the potential to confer health benefits through the increase in intake of omega-3 fatty acids. With regard to organic or conventional methods of production, the small differences in saturated fatty acids observed in the present study are unlikely to have any significant metabolic effect on the consumer.  相似文献

The present study aimed to analyse the chemical composition and oxidative status of Iberian dry-cured hams from pigs fed different finishing diets: extensive feeding on acorns and pasture in a "Montanera" traditional system (MON), fed in confinement with a mixed diet containing high-oleic sunflower oil (115g/kg of diet) and supplemented with 250mg/kg α-tocopherol (HOVE), and fed in confinement control mixed diet (CON) without added tocopherol and oleic acid fat. Muscles from MON dry-cured hams contained significantly (p<0.05) higher amounts of intramuscular fat (IMF) than those from HOVE and CON hams. The feeding background affected the tocopherol levels in dry-cured hams as those from MON and HOVE pigs had significantly higher levels of α-tocopherol than those from CON pigs whereas the extensive feeding provided muscles from MON pigs with significantly higher levels of γ-tocopherol than the experimental diets did to CON and HOVE pigs. The HOVE diet significantly increased the levels of oleic acid in Iberian dry-cured hams with these levels being similar to the oleic acid levels found in MON hams and significantly higher than those in CON hams. Compared to dry-cured hams from CON pigs, those from MON and HOVE pigs exhibited a higher oxidative stability as a likely result of a most favourable fatty acid composition and the presence of higher tocopherol levels. The principal component analysis (PCA) successfully discriminated between dry-cured hams from pigs fed different finishing diets.  相似文献

Physicochemical changes of ω − 3-enhanced farmed rainbow trout (Oncorhynchus mykiss) fillets developed by dietary modification with flaxseed oil and α-tocopheryl acetate (α-TA) were determined during storage at 2 °C. Trout were fed experimental diets for 120 days followed by processing to obtain boneless skinless fillets. The dietary modification increased concentration of total ω − 3 fatty acids in the fillets, which enhanced chances for lipid oxidation during storage. The fillets were vacuum or non-vacuum packed and stored at 2 °C for 10 or 12 days. Dietary α-TA resulted in higher (P < 0.05) concentration of α-tocopherol in fillets during storage; however, it did not retard (P > 0.05) lipid oxidation. Vacuum packaging resulted in much lower (P < 0.05) TBARS and higher (P < 0.05) retention of α-tocopherol during storage than non-vacuum packaging. However, α-tocopherol unlike vacuum packaging better protected ω − 3 FA in the fillets during storage.  相似文献

Prunus armeniaca L. (Rosaceae) is an important medicinal edible plant species commonly known as “apricot”. Apricot is one of the most delicious and commercially traded fruits in the world. The plant is rich in mono- and polysaccharides, polyphenols, fatty acids and sterol derivatives, carotenoids, cyanogenic glucosides, and volatile components due to its appealing smell. P. armeniaca has been also investigated for various biological activities such as antimicrobial, antimutagenic, inhibitory activity against several enzymes, cardioprotective, anti-inflammatory and antinociceptive as well as antioxidant activity. Among these activities, antioxidant activity of apricot has been studied extensively and the plant displayed a high antioxidant effect in both in vitro and in vivo test systems. In this review, the relevant literature summary is given on phytochemistry and biological activity reports published on apricot. The literature survey for this review was performed using the key words “Prunus armeniaca and apricot” through the search Scopus, ScienceDirect, Pubmed, and Web of Science data bases between 1950 and 2010.  相似文献

The extraction parameters for oil extraction from Lycium barbarum seed including extraction pressure, temperature and time were optimized using an orthogonal test design. The optimum conditions for supercritical CO2 extraction were as follows: extraction pressure, 30 MPa; extraction temperature, 45 °C; dynamic extraction time, 60 min; CO2 flow, 25 kg/h. The oil yield under the conditions proposed was 19.28 g/100 g. The effect of cell wall breakage pretreatment was investigated by supercritical CO2 rapid depressurization, and results indicated this pretreatment could result in a rapid and efficient extraction. A sensitive fluorescent reagent 2-(11H-benzo[a]carbazol-11-yl) ethyl 4-methylbenzenesulfonate (BCETS) was utilized as pre-column labeling regent to determine fatty acids (FA) from Lycium barbarum seed oils obtained by different extraction methods. The main FA were: C18:2, C18:1, C16, C20:6, C18:3, and C20. The oil from L. barbarum seed exhibited excellent antioxidant activity in 2,2-diphenyl-1-picrylhydrazyl(DPPH)radical scavenging assay and β-carotene bleaching test, and its antioxidant activity compared well with the references ascorbic acid and α- tocopherol.  相似文献

To investigate the effect of the dietary intake of the cow on milk composition, bulk-tank milk was collected on 5 occasions from conventional (n = 15) and organic (n = 10) farms in Denmark and on 4 occasions from low-input nonorganic farms in the United Kingdom, along with management and production parameters. Production of milk based on feeding a high intake of cereals, pasture, and grass silage resulted in milk with a high concentration of α-linolenic acid (9.4 ± 0.2 mg/kg of fatty acids), polyunsaturated fatty acids (3.66 ± 0.07 mg/kg of fatty acids), and natural stereoisomer of α-tocopherol (RRR-α-tocopherol, 18.6 ± 0.5 mg/kg of milk fat). A milk production system using a high proportion of maize silage, by-products, and commercial concentrate mix was associated with milk with high concentrations of linoleic acid (LA; 19.7 ± 0.4 g/kg of fatty acids), monounsaturated fatty acids (27.5 ± 0.3 mg/kg of fatty acids), and a high ratio between LA and α-linolenic acid (4.7 ± 0.2). Comparing these 2 production systems with a very extensive nonorganic milk production system relying on pasture as almost the sole feed (95 ± 4% dry matter intake), it was found that the concentrations of conjugated LA (cis-9,trans-11; 17.5 ± 0.7 g/kg of fatty acids), trans-11-vaccenic acid (37 ± 2 g/kg of fatty acids), and monounsaturated fatty acids (30.4 ± 0.6 g/kg of fatty acids) were higher in the extensively produced milk together with the concentration of antioxidants; total α-tocopherol (32.0 ± 0.8 mg/kg of milk fat), RRR-α-tocopherol (30.2 ± 0.8 mg/kg of milk fat), and β-carotene (9.3 ± 0.5 mg/kg of milk fat) compared with the organic and conventional milk. Moreover, the concentration of LA (9.2 ± 0.7 g/kg of fatty acids) in milk from the extensive milk production system was found to approach the recommended unity ratio between n-6 and n-3, although extensive milk production also resulted in a lower daily milk yield.  相似文献

Thirty hams were allotted into four groups according to fattening diet ("Montanera" - acorns and pasture; and "Pienso" - concentrated diet) and genotype of pigs (Iberian and Iberian×Duroc pigs). Total lipids, triacylglycerol composition and fatty acids from neutral lipids fraction were measured in biceps femoris muscle. Fattening diet largely affected lipid composition of hams. Total intramuscular lipids and triacylglycerols content were higher in Montanera hams than in Pienso hams. In Montanera hams, triacylglycerols contained more oleic acid (C18:1) and less stearic (C18:0) and palmitic (C16:0) acids (p<0.001) and accordingly less PSO, PPL, PPO, PPS, SSO (p<0.001) and more OLL, OOL, OOO triacylglycerols compared to Pienso hams (p<0.001). Genotype of pigs has an important effect in triacylglycerols composition but only a limited effect on their fatty acids composition. So, Iberian hams contained more of PLLn, PLL, POLn and POL+SLL compared to Iberian×Duroc hams (p<0.001) and POO and SOO were present in a higher quantity in Iberian×Duroc hams (p<0.01).  相似文献
