BACKGROUND: Thymus argaeus Boiss. & Bal. (Lamiaceae), an endemic plant species of Turkey known as wild thyme, is traditionally used as a spice and a wild tea in the Inner Anatolia region of Turkey. In this study the composition of the essential oil and the antimicrobial and antioxidant effects of the methanolic extract and essential oil of T. argaeus were determined. RESULTS: The main components of the essential oil were linalool (499 g kg?1), α‐terpineol (150 g kg?1), linalyl acetate (97 g kg?1) and thymol (94 g kg?1). The total phenolic, flavanol and flavonol contents of the extract were 83.31 ± 0.59 mg gallic acid equivalent g?1, 6.26 ± 0.00 mg catechin equivalent g?1 and 28.81 ± 0.21 mg rutin equivalent g?1 respectively. The antioxidant activities of the extract and essential oil determined by the 2,2‐diphenyl‐1‐picrylhydrazyl radical‐scavenging method were 830.18 ± 0.42 and 20.47 ± 2.3 mg g?1 respectively. The antimicrobial activities of the extract and essential oil against 13 bacteria and two yeasts were studied by the agar diffusion method. The micro‐organisms most sensitive to the essential oil were Aeromonas hydrophila and Pseudomonas aeruginosa, while the micro‐organism most sensitive to the extract was P. aeruginosa. CONCLUSION: Only the extract of T. argaeus could be used as a natural antioxidant, while both the extract and the essential oil could be useful as natural antimicrobial agents in food preservation. BACKGROUND: Red clover (Trifolium pratense L.), a widely used fodder, has recently received considerable interest as a valuable source of isoflavones for many health‐related applications. The aim of this study was to analyse the concentrations of four isoflavones, daidzein, genistein, formononetin and biochanin A, in extracts of leaves, stems, roots and different coloured flowers from red clover by high‐performance liquid chromatography and to determine the antifungal activities of the extracts. RESULTS: Among greenhouse‐grown samples the highest amounts of daidzein and genistein were found in petioles (0.11–0.28 and 0.30–0.54 mg g?1 respectively), while leaves were rich in formononetin and biochanin A (5.57–9.05 and 10.94–14.59 mg g?1 respectively). High formononetin concentrations were found in roots, but very little biochanin A. Among field‐grown samples the highest concentrations of daidzein and genistein were detected in stems collected in August (0.24 and 0.55 mg g?1 respectively), while the highest amounts of formononetin and biochanin A were found in young leaves collected in June (7.47 and 9.69 mg g?1 respectively). Most of the extracts inhibited the growth of Drechslera teres, while the root extract showed the strongest effect against Microdochium nivale. CONCLUSION: High levels of bioactive compounds found not only in inflorescences but also in roots, leaves and stems suggest that red clover may be an inexpensive and valuable resource for many applications. BACKGROUND: Strawberries are nutritive fruits and a source of antioxidants. We evaluated antioxidant properties of ‘Camino Real’ strawberries grown in the Brazilian savannah, harvested in different seasons. Analytical and meteorological data were analyzed by partial least squares regression. RESULTS: Fruits from May showed the lowest contents of total phenolics (1789.78 mg kg?1 fresh weight (FW)), catechin (21.37 mg kg?1 FW), quercetins (4.89 mg kg?1 FW) and total ellagic acid (208.68 mg kg?1 FW) and the lowest antioxidant activity by 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) (11.39 mg Butylated hydroxytoluene (BHT) eq. g?1 FW) and ferric reducing antioxidant power (FRAP) (22.01 mg ferrous sulfate eq. g?1 FW) assays. Strawberries harvested in July presented the lowest concentrations of total (190.61 mg kg?1 FW) and individual anthocyanins (73.88 mg kg?1 FW and 5.96 mg kg?1 FW for pelargonidin‐3‐glucoside and cyanidin‐3‐glucoside, respectively), but the highest contents of vitamin C (685.47 mg kg?1 FW), DPPH (18.87 mg BHT eq. g?1 FW) and FRAP (39.30 mg ferrous sulfate eq. g?1 FW). The highest contents of free ellagic acid (26.11 mg kg?1 FW), pelargonidin‐3‐glucoside (291.82 mg kg?1 FW) and cyanidin‐3‐glucoside (11.84 mg kg?1 FW) were found in strawberries from September. Rain in the previous 30 days to harvest influenced negatively many phenolics and antioxidant activity of strawberries harvested in May. In July, longer photoperiod and lower temperature at 30 days previous to harvest probably led to higher antioxidant activity and vitamin C. Increased photoperiod and temperature at the final stage of maturation seem to raise pigments and free ellagic acid in strawberries. CONCLUSION: It was possible to observe significant relationships among meteorological and antioxidant variables for strawberries grown in the Brazilian savannah. This study aims to determine the effects of chitosan obtained from Metapenaeus stebbingi shells on the shelf life of refrigerated gilthead sea bream. It was determined that 1% chitosan‐coated samples had the lowest thiobarbituric acid (TBA) (3.05 mg malondialdehyde (MDA) kg?1) and free fatty acids (FFA) value (2.79% oleic acid), while the control group had the highest TBA (5.08 mg MDA kg?1) and FFA value (6.13% oleic acid) on the 27th day of storage. In the last day of storage, TVB‐N was found higher in control group (25.62 mg 100 g?1) than chitosan‐coated samples (14.57 mg 100 g?1). Total viable count value of the control group exceeded maximum permissible limit on the 27th day of storage. However, it was lower than 7.0 log CFU/g in chitosan‐coated samples during the refrigerated storage. As a result of this study, it was determined that shelf life of refrigerated gilthead sea bream can be increased up to 27 days with chitosan.  相似文献

BACKGROUND: The present research was conducted to investigate the influences of supplementation with different levels of folic acids in diet on the performance of lactating sows. Twenty Landrace × Yorkshire sows received the same basal corn–soybean diets (folic acid, 1.3 mg kg?1) from gestation to parturition (day 107). After parturition, sows were allotted to four treatments: control group (folic acid supplementation level, 0 mg kg?1), group 1 (12.5 mg kg?1), group 2 (50 mg kg?1) and group 3 (100 mg kg?1), with five replicates of one sow. The experiment lasted for 21 days. RESULTS: (1) Folic acid increased milk production (P > 0.05). (2) Compared with the control, supplementation with folic acid (100 mg kg?1) increased the concentration of butter fat, total substance and non‐lipoid substance significantly (P < 0.01), the concentration of milk protein was also significantly increased in group 2 and group 3 (P < 0.01) in milk. (3) Folic acid supplementation could increase litter weaning weight, average piglet weaning weight and average piglet daily gain (P > 0.05). CONCLUSION: These results suggested that supplementation with folic acid in the diets of lactating sows increases milk production, improved milk quality and the performance of piglets. BACKGROUND By‐products generated during the processing of plant food can be considered a promising source of dietary fibre as a functional compound. The dietary fibre composition, soluble sugars and antioxidant activity of the extractable polyphenols of pea and broad bean by‐products have been analysed in this study. RESULTS: Total dietary fibre using AOAC methods plus hydrolysis (broad bean pod: 337.3 g kg?1; pea pod: 472.6 g kg?1) is higher (P < 0.05) in both by‐products than with the Englyst method (broad bean pod: 309.7 g kg?1; pea pod: 434.6 g kg?1). The main monomers are uronic acids, glucose, arabinose and galactose in broad bean pods. However, pea pods are very rich in glucose and xylose. The soluble sugars analysed by high‐performance liquid chromatography in both by‐products have glucose as the most important component, followed by sucrose and fructose. The ferric reducing antioxidant power (broad bean pod: 406.4 µmol Trolox equivalents g?1; pea pod: 25.9 µmol Trolox equivalents g?1) and scavenging effect on 2,2‐diphenyl‐1‐picrylhydrazyl radical (EC50 of broad bean pod: 0.4 mg mL?1; EC50 of pea pod: 16.0 mg mL?1) were also measured. CONCLUSIONS: Broad bean and pea by‐products are very rich in dietary fibre, particularly insoluble dietary fibre and their extractable polyphenols demonstrate antioxidant activity. BACKGROUND: The purpose of this study was to evaluate the effects of leaf order or crop season on anthocyanins and other chemicals in the anthocyanin‐rich tea cultivar ‘Sunrouge’ (Camellia sinensis x C. taliensis) by using high‐performance liquid chromatography, and to study the effect of ‘Sunrouge’ extract on acetylcholinesterase (AChE) activity in human neuroblastoma SK‐N‐SH cells. RESULTS: The total anthocyanin content was higher in the third (3.09 mg g?1) than in the second (2.24 mg g?1) or first crop season (1.79 mg g?1). The amount of anthocyanins contained in the stem was high (1.61 mg g?1). In the third crop season, the concentrations of delphinidin‐3‐O‐β‐D ‐(6‐(E)‐p‐coumaroyl)galactopyranoside (DCGa), cyanidin‐3‐O‐β‐D ‐(6‐(E)‐p‐coumaroyl)galactopyranoside, delphinidin‐3‐O‐β‐D ‐galactopyranoside, delphinidin‐3‐O‐β‐D ‐(6‐O‐(Z)‐p‐coumaroyl)galactopyranoside, cyanidin‐3‐O‐β‐D ‐galactoside, and delphinidin‐3‐O‐β‐D ‐glucoside were 1.57 mg g?1, 0.52 mg g?1, 0.40 mg g?1, 0.22 mg g?1, 0.14 mg g?1, and 0.11 mg g?1, respectively. DCGa accounted for about 50% of the anthocyanins present. The suppressive effect of ‘Sunrouge’ water extract on AChE activity in human neuroblastoma SK‐N‐SH cells was the strongest among the three tea cultivars (‘Sunrouge’, ‘Yabukita’ and ‘Benifuuki’). CONCLUSION: These results suggested that ‘Sunrouge’ might protect humans from humans from AChE‐related diseases by suppressing AChE activity. To obtain sufficient amounts of anthocyanins, catechins and/or caffeine for a functional food material, ‘Sunrouge’ from the third crop season should be used. The present study evaluates the effect of S‐allylcysteine on marker enzymes, serum and myocardial lipids in normal and isoproterenol‐induced myocardial infarction in male Wistar rats. A significant increase in the activities of marker enzymes such as creatine kinase, lactate dehydrogenase, aspartate transaminase and alanine transaminase in serum of isoproterenol (150 mg kg?1)‐treated rats was observed. The levels of serum lipids (cholesterol, triglycerides, free fatty acids and phospholipids) were significantly increased, while the levels of myocardial cholesterol, triglycerides and free fatty acids were significantly increased in isoproterenol‐administered rats. The concentration of myocardial phospholipids was significantly decreased in isoproterenol‐administered rats. Oral pretreatment with S‐allylcysteine at doses of 50, 100 and 150 mg kg?1 using an intragastric tube daily for a period of 45 days positively modulated the biochemical alterations caused by isoproterenol. The effect of S‐allylcysteine at a dose of 150 mg kg?1 showed a better cardioprotective effect than the other two doses (50 and 100 mg kg?1). α‐Tocopherol (60 mg kg?1) administration orally using an intragastric tube to rats daily for 45 days also exhibited a significant cardioprotective effect. The effect of S‐allylcysteine was compared with α‐tocopherol. Oral administration of S‐allylcysteine (50, 100 and 150 mg kg?1) to normal rats did not show any significant change in this study. Thus, from the present study it can be concluded that a pharmacological dose of S‐allylcysteine exerts a protective effect against isoproterenol‐induced myocardial infarction in rats. BACKGROUND: To evaluate the combined effects of high pressure extraction (HPE) and probiotic fermentation on the antimicrobial and antimutagenic activities, Berberis koreana was subjected to 500 MPa for 30 min and then fermented with Bifidobacterium longum B6 (HPE‐BLF) and Lactobacillus paracasei (HPE‐LPF) at 37 °C for 6 days. RESULTS: The phenol content was significantly increased to 228 mg GAE g?1 by the HPE compared to the conventional extraction (CE, 188 mg GAE g?1). The HPE‐BLF and HPE‐LPF showed the highest antimicrobial activity (MIC < 4 mg mL?1) against β‐lactam antibiotic sensitive and resistant Staphylococcus aureus. No significant mutagenic effect was observed for CE, HPE, HPE‐BLF, and HPE‐LPF extracts. The highest antimutagenic activities against frame‐shift mutant Salmonella typhimurium were observed at the HPE‐LPF (82%), followed by the HPE‐BLF (77%). CONCLUSION: The combined HPE and fermentation process could be used as an alternative extraction method for improving the extraction efficacy of medicinal plants. The combined effect of γ‐irradiation and refrigeration on the shelf‐life of vacuum‐packaged sea bream (Sparus aurata) fillets was studied by monitoring the microbiological, chemical and sensory changes of non‐irradiated and irradiated fish samples using low‐dose irradiation doses of 1 and 3 kGy. Fish species such as sea bream and sea bass are very popular in the Mediterranean countries due to their high quality characteristics, and their preservation is a constant challenge given their extreme perishability. Irradiation (3 kGy) dramatically reduced populations of bacteria, namely, total viable counts (3 vs 7 log cfu g?1) for the non‐irradiated samples, Pseudomonas spp (<2 vs 7.6 log cfu g?1), H2S‐producing bacteria typical of Shewanella putrefaciens (<2 vs 5.9 log cfu g?1), Enterobacteriaceae (<2 vs 6.0 log cfu g?1) and lactic acid bacteria (<2 vs 3.5 log cfu g?1) after 10 days of storage. The effect was more pronounced at the higher dose (3 kGy). Lactic acid bacteria, Enterobacteriaceae and H2S‐producing bacteria typical of Shewanella putrefaciens showed higher sensitivity to γ‐radiation than did the rest of the microbial species. Of the chemical indicators of spoilage, Trimethylamine (TMA) values of non‐irradiated sea bream increased very slowly, whereas for irradiated samples significantly lower values were obtained reaching a final value of 7.9 and 6.3 mg N per 100 g muscle at 1 and 3 kGy respectively (day 42). Total volatile basic nitrogen (TVB‐N) values increased slowly attaining a value of 67.3 mg N per 100 g for non‐irradiated sea bream during refrigerated storage, whereas for irradiated fish, lower values of 52.8 and 43.1 mg N per 100 g muscle were recorded (day 42). Thiobarbituric acid (TBA) values for irradiated sea bream samples were higher than respective non‐irradiated fish and increased slowly until day 21 of storage, reaching final values of 1.1 (non‐irradiated), 2.0 (1 kGy) and 2.2 mg malonaldehyde kg?1 muscle (3 kGy), respectively (day 42). Sensory evaluation showed a good correlation with bacterial populations. On the basis of overall acceptability scores (sensory evaluation) a shelf‐life of 28 days (3 kGy) was obtained for vacuum‐packaged sea bream, compared with a shelf‐life of 9–10 days for the non‐irradiated sample. Isoflavone glucosides and aglucons in various soybean varieties (Chiang Mai‐60, S.J.‐5, Chiang Mai‐2, Srisumrong‐1, and Nakhonsawan‐1) harvested from dry vs. rainy seasons were quantified. Isoflavone contents of all soy germs ranged from 16.5 to 30.6 μmol g?1. Regardless of varieties, isoflavone contents in germ of seeds from dry season were higher (P < 0.05) than those from rainy season. The Chiang Mai‐60 germ, having the highest isoflavone content (30.6 μmol g?1), was selected for germ flour production. Freeze‐dried germ flour contained higher isoflavone aglucons (17.72 μmol g?1 daidzein; 6.48 mg g?1 glycitein; 4.28 μmol g?1 genistein) than those (15.07; 5.59; 3.41) of drum‐dried germ flour. However, isoflavone glucoside contents in freeze‐dried germ flour (3.27 μmol g?1 daidzin; 1.86 μmol g?1 glycitin; 1.41 μmol g?1 genistin) were lower than those (5.22; 3.15; 1.89) of drum‐dried germ flour. Total isoflavone contents of drum‐dried and freeze‐dried germ flours were comparable (34.32 vs. 35.02 μmol g?1) but more than that (30.16 μmol g?1) of unprocessed germ flour.  相似文献

BACKGROUND: Jatropha curcas seed cake is generated as a by‐product during biodiesel production. Seed cake containing toxic phorbol esters (PEs) is currently used as a fertiliser and thus it is of eco‐toxicological concern. In the present study the fate of PEs in soil was studied. RESULTS: Two approaches for the incorporation of PEs in soil were used. In the first, silica was bound to PEs, and in the second, seedcake was used. At day 0, the concentration of PEs in soil was 2.6 and 0.37 mg g?1 for approach 1 and 2 respectively. PEs from silica bound PEs were completely degraded after 19, 12, 12 days (at 130 g kg?1 moisture) and after 17, 9, 9 days (at 230 g kg?1 moisture) at room temperature, 32 °C and 42 °C respectively. Similarly at these temperatures PEs from seed cake were degraded after 21, 17 and 17 days (at 130 g kg?1 moisture) and after 23, 17, and 15 days (at 230 g kg?1 moisture). Increase in temperature and moisture increased rate of PEs degradation. Using the snail (Physa fontinalis) bioassay, mortality by PE‐amended soil extracts decreased with the decrease in PE concentration in soil. CONCLUSION: Jatropha PEs are biodegradable. Organic wastes as well as their ethanolic, water and heptane extracts and fermented products derived from herbs, fruit and vegetables obtained worldwide from food and pharmaceutical industries were investigated regarding their antioxidant activities using different methods [1.1‐diphenyl‐2‐picrylhydrazyl, FeIII‐reduction method and photochemiluminescence (PCL)]. The highest antioxidative activities were exhibited by different products of grape seed wastes (350–830 mg rosmarinic acid equivalent g?1 dried material = rae g?1 dm) followed by ethanolic extracts of blueberry (475 mg rae g?1 dm), larch (219 mg rae g?1 dm), willow (193 mg rae g?1 dm) and sunflower presscake (154 mg rae g?1 dm). Ethanolic extracts of the residues showed comparatively higher activity than water extracts. The least antioxidative capacities were found in heptane extracts of serenoa products (0.4; 0.6 mg rae g?1 dm) and fermented waste of carrots (1.6 mg rae g?1 dm). Correlating different assay methods, the strongest correlation was found between FeIII‐reduction and DPPH‐method (correlation coefficient r2 = 0.99**) and the weakest between FeIII‐reduction and PCL method (r2 = 0.57**) for raw materials.  相似文献

Rice bran contains 120–200 g kg?1 protein in addition to a large amount of fat, carbohydrate, and phytic acid. Rice bran protein (RBP) fractions were refined by a two‐step preparation to eliminate residual carbohydrate. The first step involved the sequential extraction of defatted rice bran into RBP fractions using their distinct solubility to give 37 g kg?1 of albumin, 31 g kg?1 of globulin, 27 g kg?1 of glutelin, and 2 g kg?1 of prolamin. In the second step, carried out by dissolving in respective solvent and isoelectric precipitation, the protein content of each fraction increased from 69% to 97% for albumin, from 71% to 90% for globulin, from 74% to 83% for glutelin, and from 18% to 20% for prolamin. The low protein content in the prolamin fraction might be due to its low solubility in the protein assay. Emulsifying stability index and surface hydrophobicity increased in the second‐step preparation of albumin and globulin, but not of glutelin. Emulsifying properties of RBPs were lower than that of a soybean protein isolate. Denaturation temperatures and enthalpy values of denaturation for albumin, globulin, glutelin, and prolamin were 50.1 °C/1.2 J g?1, 79.0 °C/1.8 J g?1, 74.5 °C/3.0 J g?1, and 78.5 °C/8.1 J g?1, respectively. No significant differences in the denaturation temperatures and enthalpy values of denaturation of RBP fractions were obtained with these two‐step preparations (P < 0.05). As a first step to develop a doenjang possessing functional properties, microbial strains possessing proteolytic activity, fibrinolytic activity, and angiotensin-converting enzyme (ACE) inhibitory activity were screened and isolated from Korean traditional doenjang. First, total 264 isolates showing proteolytic activity were isolated from 14 different doenjang samples. Among them, 4 strains producing both of fibrinolytic activity and ACE inhibitor into the culture medium were selected. The levels of ACE inhibitory effect of G19, G26, P16, and P25 strains were about 82.5, 78.5, 74.5, and 75.6% of inhibition ratio in soybean powder broth, respectively. All isolates were identified as Bacillus amyloliquefaciens based on SDS-PAGE profiles of whole cell proteins and 16S rRNA gene sequence analysis. The result implied that the selected Bacillus strains could be used for the development of doenjang possessing functional properties as potential starter.  相似文献

Stem and pomace of a white grape (Vitis vinifera) variety, Prensal Blanc, were studied for the first time: general composition and dietary fibre components together with the total soluble polyphenol content and antioxidant activity. Both by‐products present high contents of total dietary fibre (TDF), 790 g kg?1 d.m. (stem) and 716 g kg?1 d.m. (pomace). Values of the soluble dietary fibres in relation to TDF differed: 5% (stem) and 14.4% (pomace). Similar values of Klason lignin were found: 229 g kg?1 (stem) and 278 g kg?1 (pomace), however, the pomace exhibited more than twice the content of the condensed tannins (168 g kg?1) with regard to the stem (79 g kg?1). Notable were the high resistant protein contents of both by‐products. Stem and pomace showed appreciable amounts of total soluble polyphenols (87 g kg?1 against 35 g kg?1 respectively). The free radical scavenging capacity of the former by‐products was determined using the 2,2‐diphenyl‐1‐picrylhydrazyl radical (DPPH) method, obtaining EC50 values of 0.79 g d.m. g?1 DPPH (stem) and 1.32 g d.m. g?1 DPPH (pomace). These data shows that both vinification by‐products from the Prensal Blanc variety are a good source of dietary fibre and have antioxidant properties.  相似文献

BACKGROUND: To make nutrients more accessible and further increase biological activity, cooked black soybeans were inoculatedwith Bacillus natto and fermented at 37 °C for 48 h. The changes in physiochemical properties of fermented black soybean natto were investigated. RESULTS: The inoculation procedure significantly increased moisture, viscosity, color, polyphenol compounds and anthocyanin, and significantly decreased hardness after 48 h fermentation. Fibrinolytic and caseinolytic protease, β‐glucosidase activities, TCA‐soluble nitrogen, and ammonia nitrogen contents in the inoculated samples significantly increased as fermentation time increased. Genistin and daidzin concentrations gradually decreased with increased fermentation time. However, genistein and daidzein increased with fermentation time, which reached 316.8 and 305.2 µg g?1 during 48 h fermentation, respectively. DPPH radical scavenging activities of the fermented black soybeans increased linearly with fermentation time and concentration. Compared with the soaked black soybeans and cooked black soybeans, the fermented black soybeans with B. natto resulted in higher scavenging activity towards DPPH radicals, which correlated well with the content of total phenols (r = 0.9254, P < 0.05) and aglycone isoflavone (r = 0.9861, P < 0.05). To produce doenjang with enhanced biological activities, doenjang was prepared by fermenting regular soybeans (RS), germinated soybeans (GS), and germinated black soybeans (GBS) for 90 days. The isoflavone contents in GS and GBS-doenjang were slightly higher than in RS-doenjang in the early stage of fermentation. The DPPH radical scavenging activity of GBS-doenjang was highest at 70.00% after 30 days of fermentation. The angiotensin-converting enzyme (ACE) inhibiting effects increased as the fermentation period progressed, and were significantly (p<0.05) higher in GBS-doenjang (58.69%) than in other preparations after 75 days of fermentation. The greatest fibrinolytic activities were 127.59 and 100.00% in nontreated GBS-doenjang and GBS-doenjang treated for 30 min at 55°C, respectively. There were significant (p<0.05) correlations between the total isoflavone content and the antioxidant activity (0.779) and between the isoflavone content and the ACE activity-inhibiting effects (0.669). GBS-doenjang exhibited greater antioxidant activities, ACE-inhibition, and fibrinolytic activities than RS and GS-doenjang.  相似文献

BACKGROUND: Escherichia coli O157:H7 can survive commercial manufacture of some uncooked fermented meats. External application of microencapsulated allyl isothiocyanate (AIT) or hot (non‐deheated) yellow mustard powder was used to inactivate the pathogen during dry‐cured Westphalian ham manufacture. RESULTS: Within 45/80 days, E. coli O157:H7 numbers were reduced 5 log10 CFU g?1 by 400 µg kg?1 AIT or 60 g kg?1 mustard powder, but 80 days were required in the untreated control. Mustard powder but not AIT reduced numbers of lactic acid bacteria and staphylococci. Mustard powder or ≥ 300 µg kg?1 AIT inhibited yeasts and moulds but did not affect ham pH or water activity. CONCLUSION: The commercial Westphalian ham process without AIT or mustard powder treatment was validated capable of reducing E. coli O157:H7 5 log10 CFU g?1. Surface treatments with ≥ 300 µg kg?1 microencapsulated AIT or 60 g kg?1 yellow mustard powder reduced the time required for this reduction by 40–50%. The present work aimed to determine the bioactive compounds in two rosemary water extracts (RWE1 and RWE2) and to assess their antimicrobial, anti‐adhesive and antibiofilm potentials against the food‐related Bacillus and Pseudomonas species at concentrations; 4, 8, 12, 16 and 20 mg mL?1. Phenolic compounds and isoflavones in the RWEs were determined using HPLC. The concentrations of most bioactive compounds of RWE1 (benzoic, ellagic, gallic and rosmarinic acids, daidzein and genistein) were higher than that of RWE2. The MIC90 of RWE1 and RWE2 against all tested bacteria was 12 and 16 mg mL?1, respectively. The anti‐adhesive and antibiofilm doses were higher than MIC90. RWE1 and RWE2 showed potential reduction in the bacterial cell adhesion to HEp‐2 cells – 17.5–64.7 and 12.2–52.9%, respectively. In conclusion, this study emphasises the effective use of RWE as a natural anti‐adhesive and antibiofilm agent against Bacillus and Pseudomonas, without difficult extraction procedure.  相似文献
