The aim of this study was to investigate the effect of the refined palm oil addition (20%) on the fatty acid and sterol compositions of refined olive oil or refined soya bean oil and also to investigate the formation of total polar compounds and volatile compounds in these oil blends during fifty successive deep‐frying sessions of potato fries at 180 °C. The blend of refined olive oil and refined palm oil exhibited a higher chemical stability during the frying process than that of refined soya bean oil and refined palm oil. Indeed, the total polar compounds and volatile compounds formed, especially 2,4‐decadienal, were found to be relatively increased in the refined soya bean oil/refined palm oil blend reaching 36.50% and 46.70%, respectively, after fifty deep‐frying sessions. Moreover, the degradation of linoleic acid and β‐sitosterol was significantly (< 0.05) observed for the refined soya bean oil/refined palm oil blend. The results have proven that the proper blending of monounsaturated refined olive oil with refined palm oil increases its stability and hence improves the quality of such olive oil during frying process.  相似文献

Olive oil, sunflower oil and palm olein were used in repeated potato fryings until the oils reached the limit of 25% of polar compounds allowed by law. Six groups of rats, over 28 days, were fed diets containing 8% of: olive oil; olive oil from 69 fryings; sunflower oil; sunflower oil from 48 frying; palm olein, and palm olein from 80 fryings. Body weight and food intake were monitored weekly, during days 21–28 faeces and urine were collected and finally blood and carcasses were also collected and stored. No significant differences were observed in food intake and body weight among the six groups of animals. The type of oil did not modify magnesium intake, the urinary and faecal excretion of this mineral nor its apparent absorption or retention. The consumption of oils from frying, however, induced an increase in apparent magnesium absorption due to a decrease in faecal magnesium excretion, but magnesium retention did not vary owing to the increase in urinary losses. Serum magnesium and magnesium contents and concentrations in carcasses were unaffected. Therefore, it was concluded that the consumption of used frying oils enhances magnesium absorption, independently from the type of oil, although magnesium retention is not affected due to a an elevation of urinary excretion. © 1999 Society of Chemical Industry  相似文献

Olive oil, sunflower oil and soybean oil were enriched with an olive (Olea Europaea) leaf extract rich in oleuropein at a supplementation level of 100 mg total phenolics per kg oil. Supplemented oils were used for deep frying of potatoes for eight successive frying sessions without replenishment under domestic frying conditions. Supplemented oils contained oleuropein while deep frying resulted in a gradual decrease in oils oleuropein content. After the eighth successive frying, oleuropein was still detected in oils, its retention being 3.2–12.4%. Deep frying of potatoes in supplemented oils succeeded in preparing French fries containing oleuropein even after eight successive fryings. Contrary to the oil type, the number of frying sessions affected potatoes oleuropein content. Oleuropein intake by consuming French fries deep‐fried in enriched oils was approximately ten times higher in potatoes prepared in the first frying session as compared to the respective intake after the eighth frying.  相似文献

Interesterification of palm stearin (PS) with liquid vegetable oils could yield a good solid fat stock that may impart desirable physical properties, because PS is a useful source of vegetable hard fat, providing β′ stable solid fats. Dietary ingestion of olive oil (OO) has been reported to have physiological benefits such as lowering serum cholesterol levels. Fat blends, formulated by binary blends of palm stearin and olive oil in different ratios, were subjected to chemical interesterification with sodium methoxide. The original and interesterified blends were examined for fatty acid and triacylglycerol composition, melting point, solid fat content (SFC) and consistency. Interesterification caused rearrangement of triacylglycerol species, reduction of trisaturated and triunsaturated triacylglycerols content and increase in diunsaturated-monosaturated triacylglycerols of all blends, resulting in lowering of melting point and solid fat content. The incorporation of OO to PS reduced consistency, producing more plastic blends. The mixture and chemical interesterification allowed obtaining fats with various degrees of plasticity, increasing the possibilities for the commercial use of palm stearin and olive oil.  相似文献

The retention and distribution of phytosterols in fried oils and French-fries during eight successive pan- and deep-frying sessions of pre-fried potatoes in sunflower oil, palm oil, cottonseed oil, virgin olive oil and a vegetable shortening were evaluated. Phytosterols (β-sitosterol, campesterol, stigmasterol, Δ5-avenasterol) were determined in the unsaponifiable fraction of frying oils and lipids extracted from French-fries by GC/FID after derivatization to trimethylsilyl ethers. French-fries were enriched with phytosterols due to the absorption of frying oil, with β-sitosterol predominating in both fried oils and potatoes. The amount of phytosterols decreased during frying, their overall retentions reaching 9.5–22.8% and 29.4–51.2% after eight successive pan- and deep-frying sessions, respectively, while their deterioration was found to be affected by frying time, frying technique, being more prolonged during pan-frying, and by the oils’ unsaturation, being more extended in polyunsaturated oils. Phytosterols were more or less uniformly distributed between the fried oil and the fried potatoes. The phytosterols dietary intake by consuming potatoes fried in the oils tested is discussed.  相似文献

The effect of frying oil on the lipid oxidation, antioxidants, and in vitro antioxidant activity of gim bugak was studied. Bugak was prepared by pan-frying at 180 °C in unroasted sesame, soybean, extra virgin olive, or palm oil. The degree of lipid oxidation based on conjugated dienoic acid and p-anisidine values was higher in the bugak fried in soybean or sesame oil with high contents of polyunsaturated fatty acids and tocopherols. However, the oil oxidation was lower in olive and palm oils, which showed higher degradation of tocopherols and polyphenols than in sesame or soybean oil during frying. Although the bugak fried in palm oil contained less antioxidants than that fried in soybean or sesame oil, the in vitro antioxidant activity was not different (p > 0.05). Results suggest that palm oil can replace unroasted sesame oil for the preparation of gim bugak with improved lipid oxidative stability and health functionality.  相似文献

为了研究西式快餐条件下煎炸油的品质并建立其评价体系,考察了5种常见煎炸油(大豆油、菜籽油、葵花籽油、棕榈油及稻米油)在模拟西式快餐条件170℃连续7 d煎炸薯条过程中11个品质相关的理化指标,通过主成分分析法综合评价了5种煎炸油在煎炸过程中的煎炸性能,并建立煎炸油品质评价模型。结果表明,5种煎炸油煎炸周期结束后酸价、极性组分、羰基价、茴香胺值、全氧化值和色泽均显著升高(P<0.05),维生素E总量和氧化稳定指数均显著降低(P<0.05)。相关性分析显示茴香胺值、全氧化值、羰基价两两之间均显著性正相关(r=0.877~0.997,P<0.05),色泽与酸价呈极显著正相关(r=0.822,P<0.01),碘值与氧化稳定指数呈极显著负相关(r=-0.846,P<0.01),与亚油酸/棕榈酸比值呈极显著正相关(r=0.833,P<0.01)。主成分分析提取出3个综合性评价指标,累计贡献率达84.115%,反映了原指标的大部分信息,并进一步建立煎炸油煎炸性能的综合评价得分模型F=0.405F1+0.295F2+0.1...  相似文献

Oxidative stability of omega‐3 rich camelina oil in food products and during frying was evaluated and compared with sunflower oil. Camelina oil‐based salad dressings were of similar oxidative stability to those prepared with sunflower oil, as indicated by predominantly insignificant (P > 0.05) differences in peroxide values (PV), ρ‐anisidine values (AV), total oxidation values (TOTOX), conjugated diene levels (CD) and conjugated triene levels (CT). However, thiobarbituric acid reactive substances (TBARS) were significantly higher (P < 0.05) for camelina oil and salad dressings throughout storage. Camelina and sunflower oils, alone and in salad dressings or mayonnaises, were acceptable to a sensory analysis panel with slightly lower scores for camelina oil. PV, AV and TOTOX values were similar for camelina and sunflower oil during deep frying but while PVs remained low (<10 meq kg?1), AV and TOTOX values increased quickly. 生产加工与餐饮企业为降低成本需要合理重复使用煎炸油,为保证煎炸食品的安全性,有必要建立快速有效的检测方法,以便于企业对煎炸油品质进行监控。选用目前生产加工及餐饮企业广泛使用的12种煎炸油为监控对象,包括大豆油、棕榈油、高油酸菜籽油等7种单品油和5种不同组成的调和油,煎炸处理薯条、鸡块和鱼排3种常见快餐食品,试验每12 h取样检测煎炸油中的总极性组分含量(TPC),对比研究柱层析法及TESTO 270快速检测法的结果相关性。试验结果表明,使用快速检测仪检测样品TPC,当TPC20%时,其结果与柱层析法具有显著相关性(Pearson系数为0.744~0.984,P0.01),但当TPC20%时,相关性减弱(Pearson系数为0.553~0.929,P0.01),R~2值为0.149 2~0.863 2。当TPC介于20%至27%之间时,TESTO 270快速检测法的结果有3.6%假阳性,TPC大于27%时,假阴性结果比率为10%。本研究为TESTO 270快速检测法在煎炸油质量监控中的应用提供了参考。  相似文献

为了解煎炸油在煎炸过程中的氧化动力学规律,考察了5种常见煎炸油在西式快餐条件下的氧化稳定性,并对煎炸油中主要不饱和脂肪酸(亚麻酸、亚油酸及油酸)的氧化动力学进行研究。结果表明,煎炸过程中,棕榈油的茴香胺值、全氧化值的生成速率及碘值降低幅度最小,相比其他4种煎炸油具有更好的氧化稳定性。大豆油和菜籽油中亚麻酸的反应规律均同时符合0级和1级反应动力学模型;棕榈油、菜籽油、葵花籽油及稻米油中亚油酸的反应规律均同时符合0级和1级反应动力学模型,大豆油中亚油酸符合1级反应动力学模型;棕榈油、大豆油、菜籽油及葵花籽油中油酸的反应规律均同时符合0级和1级反应动力学模型;模型相应的决定系数R2在0.886~0.987之间,均大于0.85,模型拟合程度均较好。表明所构建煎炸油不饱和脂肪酸氧化动力学模型是可行的。  相似文献

The effect of deep-fat frying on the viscosity, density and dynamic interfacial tension (against air and water) of palm oil and olive oil was investigated. Repeated frying (up to 40 batches) at two different potato-to-oil ratios (1/7, 1/35 kgpotatoes/Loil) was examined. Results were compared to those from simple heating the oils at the same temperatures. Viscosity increased during repeated frying for both oils. However, only palm oil viscosity was sensitive to potato-to-oil ratio. Due to the novelty of dynamic interfacial characterization of such systems a discussion was made about the appropriate timescales and deformation types for interfacial measurements. Significant effects of repeated frying on the dynamic interfacial tension at the oil/water interface were observed. Contrarily, changes in density were not significant. Results were assessed with respect to the evolving chemical profile of the oils determined in previous works. Possible implications of the determined properties on the frying process were discussed.  相似文献

The frying qualities of palm and soybean oils are determined using infrared spectroscopy and multivariate calibration. Compare to soybean oil, palm oil is more resistive to the chemical and physical changes and this is attributed to the high degree of unsaturation of soybean oil (61.9%) compare to palm oil (13.8%). After 48 h in service, the oil samples were effectively clustered into two groups using principal component analysis which indicated that both oils still maintain their chemical identities. Partial least squares regression (PLS1 and PLS2) a long with mid-FTIR data are used for predicting free fatty acid, viscosity, and total polar compounds of the used oils without running expensive standard procedures. PLS1 and PLS2 outperformed PCR and MLR for predicting the quality indicators of the frying oils. For palm oil and at the optimum calibration conditions, the obtained accuracies (SD) are 105.6% (0.05), 99.8% (1.10), and 103.9% (0.16) for free fatty acid, viscosity, and total polar compounds, respectively. The proposed method is simple, less-expensive, and has comparable accuracy/precision with standard procedures that often used for monitoring frying oils.  相似文献

Frying is one of the oldest cooking procedures and is still among the most popular ones for food preparation. Due to their unique sensory characteristics, fried foods are consumed often and with pleasure. During frying, part of the oil is absorbed by the food, thereby becoming part of our diet; most interestingly, in the Mediterranean area approximately 50% of total fat intake is provided by cooking fats. Olive oil is the key lipid component of the Mediterranean diet, the health‐promoting effects of which have been largely attributed to olive oil intake. Olive oil is unique among vegetable oils due to its desirable lipid profile and some of its minor components. Scientific evidence now indicates that during frying olive oil behavior is usually equal or superior to that of refined vegetable oils. Herein, an overview of virgin olive oil performance under frying is given, with special reference to the fate of olive oil microconstituents. The compositional changes of foods fried in olive oil are also reviewed and discussed in detail.  相似文献

A rapid chromametric method was developed for the assessment of deep frying oil quality based on the strong correlation between colour index and total polar compounds in deep frying oil. Colour indices of frying oil samples, measured by chromameter, decreased significantly during frying and were strongly correlated with frying time (r ≥ 0.95, p < 0.001). Colour indices of a set of oil samples taken from 0 to 80 h of deep frying were also significantly correlated with total polar compounds of the same samples determined using the official method of the American Oil Chemists' Society (r = 0.96, p < 0.001). The equation for conversion of the colour index (x) to the content of total polar compounds (y) in an oil sample is y = 0.0174x2 ? 2.9506x + 124.34. In addition, colour indices of 10 different types of frying oils were strongly correlated with the corresponding contents of total polar compounds in the oils with samples taken from 0 to 80 h of deep frying in duplicate (r = 0.95, p < 0.001, n = 220). The results of colour index analyses agreed well with the results of chemical and sensory analyses of the frying oils tested. This chromametric method is rapid, convenient and reliable. Lipid oxidation has been identified as the major deterioration process of vegetable oils. Undesirable effects are even more profound when food processing involves high temperatures in the presence of oxygen. Natural ground herbs (black pepper, ginger, turmeric, rosemary and oregano) were assessed for their antioxidant capacity, phenolic content and ability to improve the oxidative stability of vegetable oils. The most potent herb was incorporated in vegetable oils formulations which were subjected to consecutive frying cycles. The oxidative stability of the vegetable oils, the formation of conjugated dienes/trienes and the decimation of tocopherol levels after the frying process were assessed. Rosemary powder was the most effective antioxidant among the ones tested. The oxidative stability of tocopherol‐stripped corn oil with rosemary powder (1.53 ± 0.06 h) was significantly higher than the control (0.84 ± 0.02 h) and the oil with synthetic antioxidants (1.20 ± 0.03 h). Rosemary powder effectively improved the oxidative stability of sunflower (128.91%), olive (55.61%) and rapeseed (73.20%) oil during deep‐frying and prevented CD and CT formation in rapeseed oil.  相似文献

Blending polyunsaturated oils with highly saturated or monounsaturated oils has been studied extensively; however, in literature there is negligible information available on the blending of refined cottonseed oil with palm olein oil. Blending could enhance the stability and quality of cottonseed oil during the frying process. In the present study, the effects of frying conditions on physicochemical properties of the palm olein-cottonseed oil blends (1:0, 3:2, 1:1, 2:3, and 0:1, w/w) were determined and compared to the pure oils. The frying process of frozen French fries was performed in duplicate at 170 ± 5°C for 10 h without interruption. The oil degradations were characterized during deep-frying applications; peroxide, free fatty acid, and iodine value by standardized methods, fatty acid profile by using a gas chromatography-flame ionization detector, polar and polymeric compounds by using the high-performance size exclusion chromatography/evaporative light scattering detector technique. The present study clearly indicated that the oxidative and frying performances of pure palm olein oil and cottonseed oil significantly improved by blending application. Results clearly indicated that the frying performance of cottonseed oil significantly improved by the blending with palm olein oil. Except that free fatty acid content, all the physicochemical variables were significantly influenced by type of pure and blend oils. By increasing the proportion of palm olein oil in cottonseed oil, the levels of polyunsaturated fatty acids decreased, while saturated fatty acid content increased. The progression of oxidation was basically followed by detecting polar and polymeric compounds. The fastest increments for polar and polymeric compounds were found as 6.30% level in pure cottonseed oil and as 7.07% level in 40% cottonseed oil:60% palm olein oil blend. The least increments were detected as 5.40% level in 40% cottonseed oil:60% palm olein oil blend and 2.27% level in 50% cottonseed oil:50% palm olein oil blend. These levels were considerably below the acceptable levels recommended by the official codex. Therefore, the present study suggested that blending of cottonseed oil with palm olein oil provided the oil blends (50% cottonseed oil:50% palm olein oil and 40% cottonseed oil:60% palm olein oil, w/w) with more desirable properties for human nutrition.  相似文献

Oxidation and vitamin E loss in four frying oils (two partially hydrogenated soybean oils, one with methyl silicone, the other with tertiary butyl hydroquinone, citric acid and dimethyl siloxane added; a semi-solid hydrogenated soybean and palm oil shortening with mono and diglycerides added; and 100% corn oil) were studied under experimental and ‘actual’ operational conditions. Vitamin E loss in the frying oil increased significantly with increasing fatty acid oxidation. Added antioxidants, vitamin E and hydrogenation of fat decreased the rate of vitamin E loss. No significant change in vitamin E of the French fries occurred during 4 days of commercial frying; a significant increase in French fry fat uptake improved the 40% reduction in vitamin E of the frying oil. Vitamin C in the French fries (a major source of the vitamin in fast food meals) decreased significantly as the vitamin E content of the oils was reduced.  相似文献

The purpose of this work was to determine the chemical stability of vegetable oils in the frying process and the consumer acceptance of fried-salted peanuts prepared in different vegetable oils. Fatty acids composition was determined in sunflower, corn, soybean, peanut and olive oils. A chemical study (free fatty acid and p-anisidine values) of these oils at frying temperature (170 °C) was developed during 96 h. Consumer test of fresh products was performed on fried-salted peanuts prepared in the different oils. Peanut oil and virgin olive oil presented oleic acid as predominant fatty acid (44.8% and 64.2%, respectively), making it more resistant to lipid oxidation at frying temperature than the other refined vegetable oils (sunflower, corn and soybean oils). Virgin olive and peanut oils showed less increment of free fatty acids and p-anisidine value than the other oils along the heating essay. In addition, fried-salted peanuts prepared with refined peanut oil showed higher consumer acceptance than those prepared with other vegetable oils such as sunflower, corn, soybean and olive oils. Peanut oil could be used to fry peanuts obtaining products with higher consumer acceptance and shelf-life, thus preventing loss of their sensory and nutritional quality.  相似文献

Two electron transfer (ET) reaction-based methods, ferric reducing antioxidant power (FRAP) and Folin–Ciocalteu (FC) reducing capacity, were used for the determination of total antioxidant capacity of vegetable oils (rapeseed, palm and extra virgin olive oils), meat samples (poultry and pork) and potatoes before and after the frying process under domestic frying conditions. Before frying, potatoes had the highest FRAP value (276.7 μmol Trolox/100 g), whereas extra virgin olive oil revealed the highest Folin–Ciocalteu Index (FCI = 443.2 μmol Trolox/100 g). Antioxidant capacity of methanolic extracts of raw meat (9.0–9.4 μmol Trolox/100 g and 135.7–160.1 μmol Trolox/100 g for FRAP and FC methods, respectively) was lower than FRAP (133.4–149.6 μmol Trolox/100 g) and FCI (156.2–443.2 μmol Trolox/100 g) of unheated rapeseed and extra virgin olive oils. However, antioxidant capacity of the studied food samples changed after frying process. Positive correlations (correlation coefficients ranged between 0.5742 and 0.9942) were found between the two analytical methods used to determine the antioxidant capacity of unprocessed and processed food products. The results of principal component analysis (PCA) indicate that there are differences between total amounts of antioxidants in raw and fried food products.  相似文献

The American Heart Association recommended the fatty acid balance contributed by all the fats in our diet, suggesting it would be best at approximately 1:1:1 for saturated (SFA), monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA), respectively. Three individual oils: palm oil (PO), soybean oil (SBO) and sunflower oil (SNF) and their binary and ternary blends were prepared and used for repeated deep‐fat frying of French fries. The acid value, peroxide value, p‐anisidine value and Totox values, as well as oxidative stability, contents of total polar compounds, tocochromanols, triacylglycerol dimers and oligomers, were determined in individual and blended oils. The lowest Totox value and highest stability were found for PO, and the opposite data were obtained for SNF and SBO. The degradation of tocochromanols in blends ranged from 91% to 95% after 4 days of frying, while in individual oils, it was 63% in SBO, 71% in SNF and 100% in PO. The lowest formation of dimers and oligomers was observed for the PO: SNF blend. Obtained results showed that only pure PO was a better frying medium than its blends with SBO and SNF. However, a prepared blend had a better fatty acid composition for human health and was more stable than pure SBO and SNF.  相似文献
