苹果汁作为我国苹果的主要加工产品,在加工和贮藏过程中易发生褐变反应,造成颜色不稳定、品质劣变,导致商业价值降低。如何有效利用抗氧化剂解决苹果汁的褐变问题是果汁加工行业面临的重要难题。本文综述了苹果汁褐变机理的研究现状,阐述了四种常用抗氧化剂: 苹果多酚、抗坏血酸、二氧化硫和谷胱甘肽的护色作用机理,并对比分析了各抗氧化剂的优缺点,进而提出采用多种抗氧化剂协同护色可以弥补单独使用存在的问题,提高抗氧化效果,以期为苹果汁褐变问题的解决提供思路。 相似文献

ABSTRACT
Apple fruit skin, a rich source of dietary fiber and phenolics, is a by‐product of apple processing. The feasibility of incorporating dried apple skin powder (ASP) as a value‐added food ingredient in bakery food products using a model system of muffins was investigated. The blanched, dehydrated and ground ASP was incorporated into muffins at 0, 4, 8, 16, 24 or 32% (w/w) levels with replacement of equivalent amount of wheat flour of a standard muffin mixture. The highest level of replacement (32% w/w) had a significant adverse effect on the baking characteristics. A taste panel of 66 panelists showed that the replacement of wheat flour with 8, 16 or 24% ASP in the muffin mixture did not affect the overall acceptability.PRACTICAL APPLICATIONS
Identification of ways to incorporate apple skins, one of the by‐products of apple pie and sauce manufacturing, as a health food ingredient in human diet could provide many health benefits. Furthermore, better use of the by‐product will also provide benefits to the apple industry as well as solutions for environment concerns associated with disposal. The results of the present study indicate that blanched and dehydrated apple skin powder (ASP) could be considered as an alternative dietary fiber source or specialty food ingredient for muffins. Therefore, the potential for the industrial exploitation of ASP as a health food ingredient for the bakery industry and selected functional foods is promising. 相似文献15.

我国水产加工业已发展成为一个包括渔业制冷和冷冻品、干制品、鱼糜及其制品、罐头、腌熏品、鱼粉、鱼油、藻类食品、医药化工和保健品等系列产品的加工体系.2004年水产品加工企业达到8745家,年加工能力1427万t,水产品加工总量1032万t.高投入、设备新、管理规范的加工企业明显增多,一些供应出口的企业从硬件设施到软件管理已达到世界先进水平.企业质量安全意识明显改善,水产品质量安全水平明显提高,但也存在许多不足之处,如行业标准体系还不够完善和科学,水产品出口过分集中在日本、韩国、美国和欧盟这四大市场,精深加工水产品比率较小,产品技术含量低、加工废弃物综合利用水平不高,水产品质量安全问题较多,行业组织化程度缺乏力度,其内部管理协调机制不健全等,并对未来发展提出了几点建议. 相似文献

An apple puree formulated with red grape skins was developed on pilot scale as a new beverage with antiglycation properties. The addition level of grape skins was selected by a liking test with 70 consumers. The selected formulation was a fibre‐rich source and delivered grape anthocyanins, flavonols and flavanols resulting in ~ twofold higher antiglycation activity than the apple puree. Pasteurisation (3‐D in the target microorganism Alicyclobacillus acidoterrestris) did not affect the antiglycation activity, which decreased by 30% upon sterilisation. Storage for 1 month in the temperature range 15–35 °C affected the contents of anthocyanins, monomeric, dimeric and oligomeric flavanols, while chlorogenic acid, flavonols and dihydrochalcones were stable. About 90% antiglycation activity was retained after one‐month storage at 15 °C. The use of red grape skin as ingredient could represent an opportunity for the apple processing industry to develop a value‐added product. 相似文献

This work evaluates consumers' perception of apple juice processed by high pressure processing (HPP) and pulsed electric field (PEF) compared with thermal processing. As a case study, young Chinese immigrants living in New Zealand were selected. Targeting a broad understanding of process impact, three industrially relevant apple cultivars (New Zealand Jazz, Rose and Granny Smith) were chosen. The consumer study was performed using napping with ultra‐flash profiling technique (n = 38). The process impact on sensory perception seems to vary among the investigated apple cultivars. For Jazz and Granny Smith apple cultivars, PEF‐ and HPP‐treated juices are perceived as fresh, natural, sweet and balanced flavour. For Rose apple cultivar, however PEF‐processed juices appear to be perceived as fresh flavour in comparison with HPP and thermally treated juices. Moreover, thermal processing caused cooked flavour. With respect to colour, immediately after processing, HPP retains the natural apple juice colour compared with other treatments. 相似文献
