该试验以香蕉和花生为原料对香蕉的护色、干燥方法及香蕉花生酱的加工工艺进行了研究。试验结果表明:香蕉去皮后,用0.2%柠檬酸 0.01%维生素C溶液浸泡10min护色、打浆,在75℃下热风干燥60min,得到香蕉粉,香蕉花生酱的最佳配方为花生酱73%、香蕉粉15%、单甘酯2%、蔗糖5%、植物油5%;香蕉花生酱适宜的杀菌条件为121℃,16min。  相似文献

对四季豆在加工过程中所采用的护绿措施以及护绿效果进行了研究 ,探讨护绿方法和工艺条件。结果表明 ,经过挑选分级的四季豆于 95~ 10 0℃水中烫漂 1 5min左右 ,充分快速冷却后置于 pH 1 5柠檬酸溶液中 ,室温褪色 2 5h ,流动水浸泡去除多余的酸后 ,于 85℃、30 0mg/LCuSO4 溶液中浸泡 2 5min ,流动水冷却清洗 2h至水无色 ,随后放入质量分数为0 6 %CaCl2 溶液中浸泡 10~ 15min ,捞起后放到 pH 4 2柠檬酸溶液中以四季豆占 6 0 % ,柠檬酸溶液占 4 0 % ,包装封口 ,于 85~ 90℃水浴杀菌 2 0~ 30min。所得产品质地良好 ,色泽理想。  相似文献

采用稀酸萃取加碱中和沉淀法从小麦麸皮中提取植酸钙。利用正交法找出了最佳工艺条件:反应温度30℃、水料浸提比8∶1、浸泡酸度pH为2~2.5、絮凝剂为5%的氯化钠、浸泡时间为6h~8 h、中和剂采用Ca(OH)2和10%的NaOH溶液、中和酸度为先用Ca(OH)2中和pH至5,再加10%的NaOH溶液中和pH至7.5左右。  相似文献

以核桃仁为主要原料,添加适量的荷叶浸提液、增稠剂、乳化剂及其他辅料,研制出核桃仁复合饮料.在实验中解决了核桃仁脱皮、护色、稳定等问题.结果表明:(1)去皮用3%煮沸的NaOH溶液处理核桃仁3~5 min;(2)护色用0.5%的NaCl和0.02%NaSO3的混合液浸泡脱皮后的核桃仁3~4 h;(3)向核桃仁浆液中添加2.0 mL的荷叶浸提液,可以有效地提高产品的品质和延长其保质期;(4)去除苦味在0.4%β-环状糊精溶液中处理1.5 h;(5)饮料配方:5.5%蔗糖,0.4%吐温,0.06%单甘酯,0.3%CMC-Na,0.2%黄原胶,浆液适量.  相似文献

研究了鱼腥草的护色保脆技术及其方便食品的加工工艺。采用L9(34)正交设计,确定了最佳的保脆技术和杀菌条件。结果表明,新鲜鱼腥草洗净切段,用0.2?Cl2和2%NaCl混合液在室温条件下硬化处理90min,再用0.2%柠檬酸结合0.2%NaHSO3溶液在室温条件下护色浸泡90min,经漂洗、调味腌制后进行真空包装,杀菌公式为3-10min/85℃。  相似文献

对水芹菜软包装产品的加工工艺进行了研究。结果表明,水芹菜在浓度0.05%~0.10%的Na2CO3或NaOH溶液中预浸泡30min后,再在95℃的200/50mg.kg-1Cu2 /Zn2 的护绿液中热烫3min、然后在常温条件下在该护绿液中浸泡3h,可使产品获得稳定的护绿效果。采用质量分数为0.2%的CaCl2溶液对水芹菜进行浸泡30min可明显改善其脆度。该水芹菜软包装产品在常压沸水中杀菌10min可达到商业无菌标准。  相似文献

本文对轮叶党参低盐制品进行了研究,根据影响制品质量的主要因素,进行了试验.结果表明:烫漂采用100℃、3~5min;保脆采用0.1%~0.15?Cl2溶液浸泡24h;杀菌采用900W、2min的微波杀菌;配方采用辣椒粉1%、醋3%、盐5%、糖3%.即可得到质地柔韧、脆度适中、酸辣甜咸适口、保质期达6个月以上的产品.  相似文献

为缩短酒糟鱼的生产周期,采用调配法制作酒糟鱼.研究调配工艺和杀菌温度对酒糟鱼品质的影响.结果表明,酒的品种、蔗糖用量、浸泡温度和杀菌温度对酒糟鱼的理化成分含量、色泽、质构特性和感官品质具有重要影响.将腊鱼于10%蔗糖黄酒溶液(1:1,w/v)中10℃浸泡24 h,真空包装后115℃灭菌30 min,所制作的酒糟鱼品质最好.  相似文献

采用微生物挑战试验验证果汁饮料杀菌工序温度控制在(90±2℃),持续10min、15min后杀菌的效果。结果表明,往果汁饮料经(90±2℃)水浴持续杀菌10min和15min后,其对大肠杆菌、金黄色葡萄球菌、酿酒酵母、黑曲霉的杀菌率均大于99.99%,但杀菌后的果汁保存3个月后,(90±2℃)水浴持续杀菌10min的果汁有部分霉菌和酵母计数达到15cfu/m L,而(90±2℃)水浴持续杀菌10min的果汁细菌总数及霉菌和酵母计数均小于10cfu/m L,(90±2℃)水浴持续杀菌15min的杀菌效果良好,用于果汁杀菌安全有效,达到杀菌目的。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

Microgels are ‘soft’ microscopic cross-linked polymeric particles that are being increasingly exploited in a variety of industries for rheology control, encapsulation and targeted delivery. They are valued because of the ability to tune their functionality to address specific applications in oil recovery, coatings, drug delivery, cosmetics, personal care and foods. Food microgels are typically biopolymer hydrogels in the form of microspheres, nanospheres (also called nanogels), spheroids and fibres. The utilisation of engineered microgels in foods has so far been limited, despite their great potential to address several needs in the food industry, including: satiety control, encapsulation of phytonutrients and prebiotics, texture control for healthier food formulations (e.g. reduced fat products), and targeting delivery to specific areas in the digestive tract. We review the scientific and patent literature on the utilisation and manufacturing methods for producing microgels with an emphasis on micro-hydrogels for food applications.  相似文献

Joubert and Burns prepared a large number of fractions from the high-sulphur proteins of wool and estimated their molecular weights and amino-acid compositions. Their data have been re-examined in order to look for statistically significant interrelations between amino acids and between the proportion of various amino acids and molecular weight. Statistical analysis of the data is also used to examine the credibility of some hypotheses concerning the mechanism of keratin biosynthesis and to provide further evidence for the existence of families of proteins within the high-sulphur fractions of wool.  相似文献
