Lactose, glucose and galactose contents in milk and fermented milk products and their lactose-free alternatives, were determined. Storage of products up to the best-before dates had no effect on carbohydrate composition. Total galactose content in yoghurt, i.e., free galactose plus the galactose moiety of lactose, was 2.3–2.4 g 100 g−1 (94–95% of that in milk), whereas that in Swedish soured milk and kefir was 1.9–2.0 g 100 g−1 (75–79% of that in milk). Lactose levels in lactose-free milk and fermented milk products were below or close to detection limits for all products. Only small differences in total galactose content existed for the lactose-free alternatives of milk, yoghurt and filmjölk, all with average total galactose contents of 1.3–1.4 g 100 g−1 (55–60% of that in milk). In contrast, lactose-free kefir had the same galactose content as milk, 2.4 g 100 g−1.  相似文献

Veterinary drugs are necessary to control fluke in animals, and if not properly used, residues of these drugs may be found in milk. The aim of this study was to determine whether residues of nitroxynil, levamisole and oxyclozanide in milk partition into skim milk powder during processing. Milk targeted to contain high, medium or low levels of residue was obtained following treatment of trial animals. On separation of cream and skim milk, > 90% of the residue partitioned with the skim milk in all cases. During powder processing, the residues were not degraded with almost 90% of the residue detected in the powder.  相似文献

The total antioxidant capacity (hydrophilic plus lipophilic) of sixteen different commercial samples of pasteurized and ultra high temperature (UHT) treated milk was determined using the oxygen radical absorbance capacity assay using fluorescein as a fluorescent probe. A significant correlation between the percentage of fat and the value of the total antioxidant capacity was found in milk samples obtained from the same batch of raw milk. Analyses of the whole milk, whey and deproteinized milk showed that the major contributor to the total antioxidant capacity of whole milk was the casein fractions, while albumin was the major contributor to the total antioxidant capacity of whey protein. Hydrophilic antioxidant compounds, such as vitamin C and uric acid, were the main contributors to the total antioxidant capacity of the deproteinized milk. Significant differences in total antioxidant capacities were found between whey and deproteinized samples obtained from pasteurized and UHT-treated milk, the values being higher for the former.  相似文献

Paneer was prepared by substituting 3, 5 and 10% of buffalo milk with either soy milk, buttermilk or skimmed milk prepared by reconstitution of non-fat dried milk powder. In all cases, oil uptake on frying with groundnut oil was not appreciably different from that of the control up to the 5% level of substitution but, at 10%, the oil uptake was higher than the control. Paneers with buttermilk and soy milk had softer textures than the control .  相似文献

Genetic and phenotypic correlations between milk coagulation properties (MCP: coagulation time and curd firmness), milk yield, fat content, protein content, ln(somatic cell count) (SCS), casein content, and pH of milk and heritability of these traits were estimated from data consisting of milk samples of 4664 Finnish Ayrshire cows sired by 91 bulls. In addition, differences in average estimated breeding values (EBV) for the above traits between the cows with noncoagulating (NC) milk and those with milk that coagulated (CO samples) were examined. The estimations were carried out to study the possibilities of indirect genetic improvement of MCP by use of the above characteristics. The genetic and phenotypic correlations between MCP and the milk production traits were low or negligible. The genetic associations between desirable MCP and low SCS were rather strong (-0.45 to 0.29). Desirable MCP correlated both genetically and phenotypically with low pH of milk (-0.51 to 0.50). The rather high heritability estimates for curd firmness in different forms (0.22 to 0.39), and the wide variation in the proportion of daughters producing NC milk between the sires (0 to 47%) suggested that noncoagulation of milk is partly caused by additive genetic factors. Based on the genetic correlations between curd firmness and SCS and the high EBV for SCS obtained for the cows with NC-milk, it is possible that the loci causing noncoagulation of milk and increasing somatic cell count of milk are closely linked or partly the same. One means to genetically improve MCP and to reduce the occurrence of NC milk could thus be selection for low somatic cell count of milk.  相似文献

Measurement of estrogens in cow's milk, human milk, and dairy products   总被引:2,自引:0,他引:2  
Free natural estrogens in raw and commercial whole milk were quantitated by radioimmunoassay. The ranges of concentration of estrone, estradiol 17-beta, and estriol were 34 to 55, 4 to 14, and 9 to 31 pg/ml. Proportions of active estrogens (estrone and estradiol) in the fat phases of milk by radioactive tracer on separated milk were 80% and 65%. These findings were supported by radioimmunoassay of skim milk and butter. Equilibrium dialysis of skim milk with hydrogen 3 labeled estrogens showed that 84 to 85% of estrone and estradiol and 61 to 66% of estriol were protein bound. Whey proteins demonstrated a greater binding capacity than casein. This result was confirmed by radioimmunoassay of dry curd cottage cheese and whey. The concentrations in curd were 35, 11, and 6 pg/g. In whey they were 4, 2, and 3 pg/ml. The quantity of active estrogens in dairy products is too low to demonstrate biological activity. Butter was highest with concentrations of 539, 82, and 87 pg/g. Human colostrum demonstrated a maximum concentration of 4 to 5 ng/ml for estrone and estriol and about .5 ng/ml for estradiol. By the 5th day postpartum, they decreased to become similar to cow's milk.  相似文献

A 25-d trial was performed to assess the effects of machine and hand milking on behavior, and milk yield and composition of mares; the trial involved 8 Murgese mares. Milk yield was higher (7.69 vs. 4.91 kg) and milking time was shorter (1.80 vs. 5.40 min) in machine-milked than in hand-milked mares. Machine milking of mares also resulted in a greater fat content of milk (1.63%) than did hand milking (1.06%). Milking system did not affect casein content, nitrogen fractions, or somatic cell counts. No differences in behavioral activities and in response to humans emerged. Results indicate that machine milking of mares could improve the yield and gross composition of horse milk, without adverse consequences on mare behavior and response to humans.  相似文献

Advances in dairy foods and dairy foods processing since 1981 have influenced consumers and processors of dairy products. Consumer benefits include dairy products with enhanced nutrition and product functionality for specific applications. Processors convert raw milk to finished product with improved efficiencies and have developed processing technologies to improve traditional products and to introduce new products for expanding the dairy foods market. Membrane processing evolved from a laboratory technique to a major industrial process for milk and whey processing. Ultra-filtration and reverse osmosis have been used extensively in fractionation of milk and whey components. Advances in cheese manufacturing methods have included mechanization of the making process. Membrane processing has allowed uniform composition of the cheese milk and starter cultures have become more predictable. Cheese vats have become larger and enclosed as well as computer controlled. Researchers have learned to control many of the functional properties of cheese by understanding the role of fat and calcium distribution, as bound or unbound, in the cheese matrix. Processed cheese (cheese, foods, spreads, and products) maintain their importance in the industry as many product types can be produced to meet market needs and provide stable products for an extended shelf life. Cheese delivers concentrated nutrients of milk and bio-active peptides to consumers. The technologies for the production of concentrated and dried milk and whey products have not changed greatly in the last 25 yr. The size and efficiencies of the equipment have increased. Use of reverse osmosis in place of vacuum condensing has been proposed. Modifying the fatty acid composition of milkfat to alter the nutritional and functional properties of dairy spread has been a focus of research in the last 2 decades. Conjugated linoleic acid, which can be increased in milkfat by alteration of the cow's diet, has been reported to have anticancer, anti-atherogenic, antidiabetic, and antiobesity effects for human health. Separating milk fat into fractions has been accomplished to provide specific fractions to improve butter spreadability, modulate chocolate meltability, and provide texture for low-fat cheeses.  相似文献

The effects of some nongenetic factors on milk protein fraction contents and relative proportions were estimated in 606 individual milk samples of Mediterranean water buffalo. Content of α(S1)-casein (CN), α(S2)-CN, β-CN, γ-CN, κκ-CN, glycosylated κ-CN (glyco-κ-CN), α-lactalbumin, and β-lactoglobulin was measured by reversed-phase HPLC. Relative contents of α(S1)-CN%, α(S2)-CN%, β-CN%, and κ-CN% were, respectively, 32.1, 17.1, 34.5, and 15.7%, whereas γ-CN% accounted for 0.6% of total casein content. Increasing total casein content in milk would result in a greater proportion of β-CN% at the expense of all of the other major casein fractions, especially of κ-CN%. Values of α(S2)-CN%, β-CN%, and γ-CN% tended to decrease with parity, although their variations were not significant, whereas α(S1)-CN% and glyco-κ-CN% showed the opposite trend. Contents of most protein fractions showed the typical trends observed for milk components as lactation progressed, with high contents in early lactation, a minimum in midlactation, followed by a gradual increase toward the latter part of lactation. Values of α(S1)-CN% increased during lactation, whereas α(S2)-CN% decreased. The proportion of β-CN% had its maximum value between 60 and 160 d of lactation, followed by a decrease, whereas κ-CN% had its minimum value in early lactation (<60 d) and remained relatively constant in the period of mid and late lactation. Glyco-κ-CN% and β-lactoglobulin% decreased in the first part of lactation, to reach their minimum values in midlactation, followed by an increase. Milk of top-producing buffaloes, compared with that of low-producing ones, had a significantly greater value of β-CN% and glyco-κ-CN%, and lower proportion of α(S1)-CN%. The possible effect exerted by protein genetic variants in affecting variation of milk protein fraction contents and relative proportions should be further considered to better get insight into buffalo milk protein composition.  相似文献

Perchlorate, which may be naturally occurring or artificial in origin, inhibits iodide uptake into the thyroid gland and disturbs thyroid function. In order to investigate perchlorate contamination in foods in Japan, perchlorate levels in 28 wine samples, 20 seafood samples, 10 polished rice samples, 30 milk (include whole milk, composition modified milk, low fat milk, processed milk, milk drink) samples, 10 powdered milk samples and 10 yogurt samples were measured. Perchlorate was found in all wine, milk, powdered milk and yogurt samples tested. Perchlorate levels ranged from 0.2 ng/g to 103 ng/g in wine samples, from 2 ng/g to 11 ng/g in milk samples, from 3 ng/g to 35 ng/g in powdered milk samples, and from 2 ng/g to 11 ng/g in yogurt samples. Perchlorate levels in the seafood samples were under the LOQ (0.8 ng/g) in 8 samples and ranged from 0.8 ng/g to 72 ng/g in 12 samples. In all polished rice samples, perchlorate level was under the LOQ (1.0 ng/g).  相似文献

Automatic milking systems allow cows voluntary access to milking and concentrates within set limits. This leads to large variation in milking intervals, both within and between cows, which further affects yield per milking and composition of milk. This study aimed to describe the degree to which differences in milking interval were attributable to individual cows, and how this correlated to individual differences in yield and composition of milk throughout lactation. Data from 288,366 milkings from 664 cow-lactations were used, of which 229,020 milkings had milk composition results. Cows were Holsteins, Red Danes, and Jerseys in parities 1, 2, and 3. Data were analyzed using a linear mixed model, with cow-lactation as a random effect and assuming heterogeneous residual variance over the lactation. Cow-lactation variance was fitted using linear spline functions with 5 knot-points. Residual variance was generally greatest in early lactation and declined thereafter. Accordingly, animal-related variance tended to increase with progression of lactation. Milking frequency (the reverse of milking interval) was found to be moderately repeatable throughout lactation. Daily milk yield expressed per milking was found to be highly repeatable in all breeds, with the highest values occurring by the end of lactation. Fat percentage had only moderate repeatability in early to mid lactation but increased toward the end of lactation. Individual level correlations showed that cows with higher milking frequency also had greater yields, but had lower fat percentage. Correlations were slightly weaker in very early lactation than in the remaining parts of lactation. We concluded that individual differences exist among cows milked automatically. Cows with higher yields are milked more often and have lower fat content in their milk.  相似文献

The effects of milk fever, ketosis, and lameness were studied using data from 23,416 Finnish Ayrshire cows that calved in 1993 and were followed for one lactation (i.e., until culling or the next calving). Monthly test day milk yields were treated as repeated measurements within a cow in a mixed model analysis. Disease index variables were created to relate the timing of a disease to the measures of test day milk. Statistical models for each parity and disease included fixed effects of calving season, stage of lactation, and disease index. An autoregressive correlation structure was used to model the association among the repeated measurements. The milk yield of cows contracting milk fever was affected for a period of 4 to 6 wk after calving; the loss ranged from 1.1 to 2.9 kg/d, depending on parity and the time elapsed after milk fever diagnosis. Despite the loss, cows with milk fever produced 1.1 to 1.7 kg more milk/d than did healthy cows. Milk yield started to decline 2 to 4 wk before the diagnosis of ketosis and continued to decline for a varying time period after it. The daily milk loss was greatest within the 2 wk after the diagnosis, varying from 3.0 to 5.3 kg/d, depending on parity. Cows in parity 4 or higher were most severely affected by ketosis; the average total loss per cow was 353.4 kg. Lameness also affected milk yield; milk loss of cows diagnosed with foot and leg disorders varied between 1.5 and 2.8 kg/d during the first 2 wk after the diagnosis.  相似文献

A total of 90 lactating Holstein cows averaging 628 kg (SE = 8) of body weight (BW) were allotted at calving to 30 groups of three cows blocked for similar calving dates to determine the effects of feeding whole untreated flaxseed on milk production and composition, fatty acid composition of blood and milk, and digestibility, and to determine whether flaxseed could substitute for other sources of fat such as Megalac and micronized soybeans. Cows were fed a total mixed diet based on grass and corn silage and fat supplements for ad libitum intake. The experiment was carried out from calving up to wk 16 of lactation. Cows within each block were assigned to one of the three isonitrogenous, isoenergetic, and isolipidic supplements based on either whole flaxseed (FLA), Megalac (MEG), or micronized soybeans (SOY). Intake of dry matter and change in BW were similar among diets. Cows fed FLA had greater milk yield than those fed MEG (35.7 vs. 33.5 kg/d) and there was no difference between cows fed FLA and those fed SOY (34.4 kg/d). Fat percentage was higher in the milk of cows fed MEG (4.14%) than in the milk of those fed FLA (3.81%) or SOY (3.70%), but milk protein percentage was higher for cows fed FLA (2.98%) than for those fed MEG (2.86%) and SOY (2.87%). Digestibilities of acid detergent fiber, neutral detergent fiber, and ether extract were lower for cows fed FLA than for those fed SOY and MEG. Retention of N was similar among diets. Feeding FLA resulted in the lowest omega-6-to-omega-3-fatty-acids ratio, which would improve the nutritive value of milk from a human health point of view. The data suggest that micronized soybeans and Megalac can be completely substituted by whole untreated flaxseed as the fat source in the diet of early lactating cows without any adverse effect on production and that flaxseed increased milk protein percentage and its omega-6-to-omega-3-fatty-acids ratio.  相似文献

The internal arrangement of the mammary gland cavity system, cisternal and alveolar milk fractions and the characteristics of milk ejection were investigated in buffaloes. Twenty-four Murrah buffaloes in three different stages of lactation and of two age groups were used. Continuous ultrasound cross-sections during milk ejection induced by exogenous oxytocin were performed to record the latency period of milk ejection. Buffaloes had small cisterns and the cavity area in the teat and gland regions were not significantly different (P > 0.05). The animals had long teat canals (3.1 +/- 0.1 cm), longer in the hind than fore quarters. Cisternal milk yield was low (0.17 +/- 0.01 kg) and cisternal fraction was only 4.9 +/- 0.1% of the total milk. The cisternal area (cm2) was 69.6 +/- 4.6, 51.61 +/- 4.8 and 26.01 +/- 4.8 while the cisternal yield (kg) was 0.32 +/- 0.05, 0.18 +/- 0.05 and 0.05 +/- 0.05 in early, mid and late lactation, respectively. A close correlation (r = 0.87, P < 0.05) existed between the ultrasound cisternal area and cisternal milk yield. The latency period of induced milk ejection was similar to that reported for cows (25 +/- 1 s) and was negatively correlated with milk yield (r = -0.75, P < 0.05). Milk ejection occurred shortly after elevated oxytocin concentrations were present. Delayed milk ejection reported earlier in this species must therefore be due to the absence of cisternal milk and delayed oxytocin release. An increase in teat length and circumference at milk ejection was also evident in the ultrasound cross sections.  相似文献

Retinyl palmitate and riboflavin were quantified in milk samples exposed to fluorescent light. Effects of compositional factors were determined by comparing rates of loss of riboflavin and vitamin A in milks with different amounts of milk fat and milk solids. Upon exposure to fluorescent light, rates of vitamin A and riboflavin loss were lower in whole milk than in skim milk. Riboflavin degraded more slowly in skim milk with 1% added nonfat dry milk than in skim milk with no added solids. No additional protective effect for riboflavin was found when added solids were increased from 1 to 3%. Compared with milk with no added solids, 1% added nonfat dry milk did not increased protection for vitamin A, but a protective effect was noted when the skim milk was fortified with 3% nonfat dry milk. Increasing light intensity increased the rates of loss of both vitamins, and riboflavin was lost at a greater rate.  相似文献
