The results of the assessment of the dietary exposure to annatto, nitrites, tartaric acid and sulphites within the framework of the second French total diet study (TDS) are reported. These 4 additives were selected from the Bemrah et al. study [Bemrah N, Leblanc JC, Volatier JL. 2008. Assessment of dietary exposure in the French population to 13 selected food colours, preservatives, antioxidants, stabilizers, emulsifiers and sweeteners. Food Addit Contam B. 1(1):2–14] on 13 food additives which identified a possible health risk for annatto, sulphites and nitrites and a lack of data for tartaric acid. Among the composite samples selected for the whole TDS, 524 were analysed for additives (a sample was analysed for a given additive when it was identified as a major contributor for this additive only): 130 for tartaric acid, 135 for nitrites, 59 for annatto and 200 for sulphites. Estimated concentrations (minimum lower bound to maximum upper bound) vary nationally from 0 to 9?mg/kg for annatto, 0 to 420?mg/kg for tartaric acid, 0 to 108?mg/kg for sulphites and 0 to 3.4?mg/kg for nitrites. Based on the analytical results, the dietary exposure was calculated for adults and children, separately, using lower bound and upper bound assumptions. The European ADIs for these 4 additives were not exceeded except for the dietary exposure for sulphites among 2.9% of the adult population, where the major contributors were alcoholic drinks and especially wine under both hypotheses (lower and upper bound).  相似文献

Three European directives imply for all member states an evaluation of food additives intakes. This paper describes the French approach, using a step-by-step procedure to evaluate, at a national level, the consumption of 10 food additives or groups of additives (E100, curcumin; E160b, annatto; E200-203, sorbic acid and salts; E210-213, benzoic acid and salts; E220-224, 226-228, sulphites; E249-250, nitrites; E297, fumaric acid; E473-474, sucrose esters and sucroglycerides; E491-492, stearoyl lactates; E952, cyclamic acid). The results are reassuring for the general population, except for sulphites.  相似文献

The results of French intake estimates for 13 food additives prioritized by the methods proposed in the 2001 Report from the European Commission on Dietary Food Additive Intake in the European Union are reported. These 13 additives were selected using the first and second tiers of the three-tier approach. The first tier was based on theoretical food consumption data and the maximum permitted level of additives. The second tier used real individual food consumption data and the maximum permitted level of additives for the substances which exceeded the acceptable daily intakes (ADI) in the first tier. In the third tier reported in this study, intake estimates were calculated for the 13 additives (colours, preservatives, antioxidants, stabilizers, emulsifiers and sweeteners) according to two modelling assumptions corresponding to two different food habit scenarios (assumption 1: consumers consume foods that may or may not contain food additives, and assumption 2: consumers always consume foods that contain additives) when possible. In this approach, real individual food consumption data and the occurrence/use-level of food additives reported by the food industry were used. Overall, the results of the intake estimates are reassuring for the majority of additives studied since the risk of exceeding the ADI was low, except for nitrites, sulfites and annatto, whose ADIs were exceeded by either children or adult consumers or by both populations under one and/or two modelling assumptions. Under the first assumption, the ADI is exceeded for high consumers among adults for nitrites and sulfites (155 and 118.4%, respectively) and among children for nitrites (275%). Under the second assumption, the average nitrites dietary exposure in children exceeds the ADI (146.7%). For high consumers, adults exceed the nitrite and sulfite ADIs (223 and 156.4%, respectively) and children exceed the nitrite, annatto and sulfite ADIs (416.7, 124.6 and 130.6%, respectively).  相似文献

In Brazil, there is neither a register of the use of sulphites by the food industry nor is research being undertaken on their dietary exposure to the population. The objective of the work reported here was to estimate the dietary exposure to sulphites in two different groups of high school students, a fee-paying school group and a state school group. The data were collected through a 24-hour dietary recall, which provided estimates of sulphited foods and beverages in the diet. The Maximum Permitted Level (MPL), established by the Brazilian legislation for each of the sulphited food and beverages, was used to measure the dietary exposure to this additive. On this basis none of the students could have exceeded the Acceptable Daily Intake (ADI) of 0.70 mg SO2/kg bw/day, with a average dietary exposure of 0.07 mg SO2/kg bw/day (p<0.001), with no significant statistical difference (p=0.643) between fee-paying and state school students. Highly exposed consumers (dietary exposure to more than 50% of the ADI, or either, 0.35 mg SO2/kg bw/day, to the maximum of 0.52 mg SO2/kg bw/dia) represented 4.5% of the researched samples and reached these levels of intake due to a consumption beyond 500 ml/day of industrialized packaged fruit juices, and, in the fee-paying school, for associating its consumption with alcoholic beverages like beer and wine.  相似文献

As first described in the 1980s, the core food intake model allows a precise assessment of dietary nutrient intake and dietary exposure to contaminants insofar as it reflects the eating habits of a target population and covers the most important foods in terms of consumption, selected nutrient and contaminant contribution. This model has been used to set up the sampling strategy of the second French Total Diet Study (TDS) with the aim of obtaining a realistic panorama of nutrient intakes and contaminant exposure for the whole population, useful for quantitative risk assessment. Data on consumption trends and eating habits from the second French individual food consumption survey (INCA2) as well as data from a 2004 purchase panel of French households (SECODIP) were used to identify the core foods to be sampled. A total of 116 core foods on a national scale and 70 core foods on a regional scale were selected according to (1) the consumption data for adults and children, (2) their consumer rates, and (3) their high contribution to exposure to one or more contaminants of interest. Foods were collected in eight French regions (36 cities) and prepared ‘as consumed’ to be analysed for their nutritional composition and contamination levels. A total of 20 280 different food products were purchased to make up the 1352 composite samples of core foods to be analysed for additives, environmental contaminants, pesticide residues, trace elements and minerals, mycotoxins and acrylamide. The establishment of such a sampling plan is essential for effective, high-quality monitoring of dietary exposure from a public health point of view.  相似文献

Sulphites are extensively used in the food and drinks industry. Their toxicity has been previously evaluated by addition to the diet or drinking water of laboratory animals. Because interactions between sulphites and food constituents occur, the present work was conducted to determine the subacute and subchronic toxicity of sulphite-bound compounds in a finished product: manufactured biscuits. The studies were performed on Sprague Dawley rats for 28 and 85 days of dietary exposure. Diets were prepared from sulphited or untreated (controls) biscuits with the addition of sugar, protein, vitamins and minerals according to the nutritional requirements of the animals. Groups of 10 male and 10 female rats were administered diets containing sulphited biscuits at levels of 0, 10, 35 and 75%, corresponding to 10-15, 35-45, 150-170 and 310- 340mg S02/kg diet. In both studies, no death or clinical abnormalities were reported. Growth rate, food consumption and food conversion efficiency were not affected by treatment. No dose-related changes were observed for haematology, clinical chemistry, ocular examination, renal-function, urinalysis, organ weights or gross and microscopic examinations. The liver concentrations of vitamins A, B1, C and E were not significantly changed except for an increase in vitamin E in high-dose males after 28 days' exposure. Based on these data, the no-observed-adverse-effect level (NOAEL) of sulphites in baked biscuits was judged to be 310mg SO2/kg diet or 25mg/kg body weight/day.  相似文献

The aim of this study was to assess the dietary exposure of 13 priority additives in four European countries (France, Italy, the UK and Ireland) using the Flavourings, Additives and Contact Materials Exposure Task (FACET) software. The studied additives were benzoates (E210–213), nitrites (E249–250) and sulphites (E220–228), butylated hydroxytoluene (E321), polysorbates (E432–436), sucroses esters and sucroglycerides (E473–474), polyglycerol esters of fatty acids (E475), stearoyl-lactylates (E481–482), sorbitan esters (E493–494 and E491–495), phosphates (E338–343/E450–452), aspartame (E951) and acesulfame (E950). A conservative approach (based on individual consumption data combined with maximum permitted levels (Tier 2)) was compared with more refined estimates (using a fitted distribution of concentrations based on data provided by the food industry (Tier 3)). These calculations demonstrated that the estimated intake is below the acceptable daily intake (ADI) for nine of the studied additives. However, there was a potential theoretical exceedance of the ADI observed for four additives at Tier 3 for high consumers (97.5th percentile) among children: E220–228 in the UK and Ireland, E432–436 and E481–482 in Ireland, Italy and the UK, and E493–494 in all countries. The mean intake of E493–494 could potentially exceed the ADI for one age group of children (aged 1–4 years) in the UK. For adults, high consumers only in all countries had a potential intake higher than the ADI for E493–494 at Tier 3 (an additive mainly found in bakery wares). All other additives examined had an intake below the ADI. Further refined exposure assessments may be warranted to provide a more in-depth investigation for those additives that exceeded the ADIs in this paper. This refinement may be undertaken by the introduction of additive occurrence data, which take into account the actual presence of these additives in the different food groups.  相似文献

An exposure assessment was performed to estimate the potential intake of preservatives in the Austrian population. Food consumption data of different population groups, such as preschool children aged 3-6 years, female and male adults aged 19-65 years were used for calculation. Levels of the preservatives in food were derived from analyses conducted from January 2007 to August 2010. Dietary intakes of the preservatives were estimated and compared to the respective acceptable daily intakes (ADIs). In the average-intake scenario, assuming that consumers randomly consume food products that do or do not contain food additives, estimated dietary intakes of all studied preservatives are well below the ADI for all population groups. Sulphite exposure accounted for 34%, 84% and 89% of the ADI in preschool children, females and males, respectively. The mean estimated daily intake of benzoic acid was 32% (preschool children), 31% (males) and 36% (females) of the ADI. Sorbic acid intakes correspond to 7% of the ADI in preschool children and 6% of the ADI in adults. In the high-intake scenario assuming that consumers always consume food products that contain additives and considering a kind of brand loyalty of consumers, the ADI is exceeded for sulphites among adults (119 and 124%, respectively). Major contributors to the total intake of sulphites were wine and dried fruits for adults. Mean estimated dietary intakes of benzoic acid exceeded the ADI in all population groups, 135% in preschool children, 124% in females and 118% of the ADI in males, respectively. Dietary intakes of sorbic acid are well below the ADI, accounting for a maximum of 30% of the ADI in preschool children. The highest contributors to benzoic and sorbic acid exposure were fish and fish products mainly caused by high consumption data of this large food group, including also mayonnaise-containing fish salads. Other important sources of sorbic acid were bread, buns and toast bread and fruit and vegetable juices.  相似文献

Dietary exposure to pesticide residues was assessed in Yaoundé, Cameroon, using the total diet study (TDS) method. Sixty-three composite samples, representative of the foods as consumed in Yaoundé, were collected, prepared, and analysed for residues of pesticides including organochlorine, organophosphorous, and pyrethroids. A multi-residue method was used with a limit of detection (LOD) of 0.005 mg kg(-1). Additional analyses were performed for dithiocarbamates (LOD=0.050 mg kg(-1)), glyphosate (LOD=0.005 mg kg(-1)) and chlordecone (LOD=0.0008 mg kg(-1)) on certain composites samples. The overall contamination was low with 37 out of 46 pesticides below the LOD in all samples. The estimated upper bound (for values less than the LOD equal the LOD; and values less than the LOQ equal the LOQ) of the mean dietary exposures ranged from 0.24% (cypermethrin) to 3.03% (pirimiphos-methyl) of the acceptable daily intakes (ADIs) for pesticides for which at least one analysis was greater than the LOD. This study suggests a low dietary exposure to pesticide residues in Yaoundé.  相似文献

As part of the previous French Total Diet Studies (TDS) focusing on exposure to food chemicals in the population aged 3 years and older, the French Agency for Food, Environmental and Occupational Health & Safety (ANSES) launched a specific TDS on infants to complete its overall chemical food safety programme for the general population. More than 500 chemical substances were analysed in food products consumed by children under 3 years old, including nutrients, several endocrine disruptors resulting from human activities (polychlorinated biphenyls, dioxins and furans, brominated flame retardants, perfluoroalkyl acids, pesticide residues, etc.) or migrating from food contact materials such as bisphenol A or phthalates, but also natural substances such as mycotoxins, phytoestrogens and steroids. To obtain a representative and general view of infant food consumption, food items were selected based on results of a national consumption survey conducted specifically on this population. Moreover, a specific study on food was conducted on 429 households to determine which home-cooking practices are employed to prepare food consumed by infants. Overall, the targeted chemical substances were analysed in more than 450 food samples, representing the purchase and home-cooking practices of over 5500 food products. Foods included common foods such as vegetables, fruit or cakes as well as specific infant foods such as infant formula or jarred baby food. The sampling plan covered over 80% of the total diet. Specificities in infant food consumption and habits were therefore considered to define this first infant TDS. This study, conducted on a large scale and focusing on a particularly sensitive population, will provide accurate information on the dietary exposure of children under 3 years to food chemicals, especially endocrine disruptors, and will be particularly useful for risk assessment analysis under the remit of ANSES’ expert committees.  相似文献

To estimate of food and nutrient intakes, 24-h recalls are frequently used in dietary assessment. However intake data collected for a short period are a limited estimator of long-term usual intake. An important limitation of such data is that the within-person variability tends to inflate the intake distribution leading to a biased estimation of extreme percentiles. Statistical models, named usual-intake models, that separate the within-person variability from the between-persons variability, have lately been implemented. The main objectives of this study were to highlight the potential impact that usual-intake models can have on exposure estimate and risk assessment and to point out which are the key aspects to be considered in order to run these models properly and be sure to interpret the output correctly. To achieve the goal we used the consumption data obtained by the French dietary survey INCA2 and the concentration data collected during the French TDS2, using Monte Carlo Risk Assessment (MCRA) software, release 8.0. For the three substances included in this study (cadmium, acrylamide and sulphites), the exposure of the upper percentiles was significantly reduced when using usual-intake models in comparison with the results obtained in the observed individual mean models, even if in terms of risk assessment the impact of using usual-intake models was limited. From the results it appears that the key aspects to consider when using usual-intake models are: (1) the normality of the log-transformed intake distribution, (2) the contribution per single food group to the total exposure, and (3) the independency of food consumption data on multiple days. In conclusion, usual-intake models may have an impact on exposure estimates although, referring to the results, it did not bring any changes in terms of risk assessment, but further investigations are needed.  相似文献

A study of 401 fish-eating adults living in a coastal region of France was undertaken to establish exposure to dioxins/polychlorinated biphenyls and the intake of long-chain polyunsaturated fatty acids of the n-3 variety. Fish consumption was estimated using food frequency diaries and the dioxin/polychlorinated biphenyl data collected by the French control authorities was used to calculate dietary exposure. The results showed that for a group of adult subjects selected because of their consumption of fish, 60% achieved the nutritional recommendation for long-chain n-3 polyunsaturated fatty acids and 79% were exposed to total dioxins below the toxicological threshold of 14 pg kg(-1) body weight week(-1). Nevertheless, only 41% of these subjects had an optimal balance between the risk and benefit of eating fish, because 19% were meeting the nutritional recommendation but exceeding the toxicological threshold, whereas 38% were exposed below the toxicological threshold but failed to reach the recommended intake of long-chain n-3 polyunsaturated fatty acids. Similar results were found regarding the balance between long-chain n-3 polyunsaturated fatty acids and polychlorinated biphenyls even if a toxicological threshold was not established for these compounds. The results show that meeting the nutritional requirements of 0.5 mg day(-1) of long-chain n-3 polyunsaturated fatty acids is compatible with respect to toxicological thresholds, while an intake higher than 1.5 g day(-1) is likely to lead to a dietary exposure above the provisional tolerable weekly intake for dioxins.  相似文献

The use of food preservatives, such as benzoic acid, nitrites, and sulphites, as antimicrobials, and butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), ascorbic acid and tocopherols, as antioxidants, has probably changed food production patterns and eating habits more than has the use of any other class of food additive. These food preservative chemicals confer substantial benefits on man, not only by the preservation and increased palatability of food, but also by affording protection against the pathological effects of reactive oxygen species (ROS) which are associated with cancer, cardiovascular disease and aging. Nevertheless, although most preservatives are now considered to be without potential adverse effects and are classified as GRAS, there have been problems concerning the safety of some of these chemicals, including the possibility of allergies from benzoic acid and sulphites, the formation of carcinogenic nitrosamines from nitrites, and the possible rodent carcinogenicity of BHA and BHT. The mechanisms of this toxicity at high dosage, the roles of the cytochromes P450, and the generation and scavenging of ROS in the toxicity of these chemicals, are reviewed and discussed.  相似文献

目的评估江西省居民膳食中山梨酸及其钾盐的暴露水平和潜在健康风险。方法利用2012—2016年江西省食品中山梨酸及其钾盐含量数据、2016年江西省居民食物消费量调查数据,采用简单分布评估法计算江西省居民膳食中山梨酸及其钾盐的暴露水平,并进行健康风险评估。结果江西省居民膳食中山梨酸及其钾盐每日平均暴露量及每日高暴露量(P95)分别为0.031和0.085 mg/kg BW,分别占暂定组每日允许摄入量(ADI,3 mg/kg BW)的1.03%和2.83%。西式糕点、大米制品、熟肉制品是江西省居民膳食中山梨酸及其钾盐暴露的主要来源,贡献率达到总膳食暴露量的75%以上。如果严格执行GB 2760—2014《食品安全国家标准食品添加剂使用标准》中关于山梨酸及其钾盐限量规定,江西省居民膳食中山梨酸及其钾盐每日平均暴露量和每日高暴露量分别下降25.7%~49.5%和14.5%~27.9%,西式糕点、果蔬汁类饮料、新型豆制品则成为膳食中山梨酸及其钾盐暴露的主要来源。结论目前江西省居民膳食中山梨酸及其钾盐暴露量对人群健康造成的风险较低,处于可接受水平,但仍有部分暴露来源于食品添加剂滥用,需要关注。  相似文献

目的 了解内蒙古自治区主要食品中铝的污染现状,对当地居民膳食中铝暴露风险进行评估。方法 对2010—2018年内蒙古自治区食品安全风险监测中主要含铝添加剂食品的铝残留量进行分析,结合2012年内蒙古自治区居民食物消费量数据,按照性别-年龄组计算内蒙古自治区居民膳食中铝摄入量并评估其健康风险。结果 本次评估主要的含铝添加剂食品9类共1 083份,其中铝的检出率为69.44%(752/1 083),铝残留量均值为142.81 mg/kg,含量范围为2.50~2 950.00 mg/kg;全人群膳食中铝每周平均摄入量为0.692 mg/kg BW,低于食品添加剂联合专家委员会(JECFA)制定的每周可耐受摄入量(PTWI,2 mg/kg BW),高食物消费量人群膳食中铝每周摄入量为4.868 mg/kg BW,是PTWI的2.43倍;不同性别-年龄组人群膳食中铝每周平均摄入量均未超过PTWI,但各性别-年龄组人群的平均铝摄入量随年龄增加有降低的趋势。结论 粉条、油条中含铝添加剂超标现象严重,膨化食品、发酵面制品中存在含铝添加剂超范围使用现象。各性别-年龄组高消费量人群铝的暴露风险较大,相关部门需加强含铝添加剂超范围、超标使用的监管力度。  相似文献

European methods for assessing dietary exposures to nutrients, additives and other substances in food are limited by the availability of detailed food consumption data for all member states. A proposed comprehensive European dietary exposure model (CEDEM) applies summary data published by the European Food Safety Authority (EFSA) in a deterministic model based on an algorithm from the EFSA intake method for food additives. The proposed approach can predict estimates of food additive exposure provided in previous EFSA scientific opinions that were based on the full European food consumption database.  相似文献

Dietary exposure of Hong Kong adults to the sum of the six indicator PCBs (Σ6 PCBs; PCB 28, 52, 101, 138, 153, and 180) was estimated in this study using the Total Diet Study (TDS) approach. Seventy one commonly-consumed food items of animal origin were sampled in four seasons and prepared as consumed in 2010–2011. The results showed that the main dietary source of Σ6 PCBs to the adult population was ‘fish, seafood and their products’ which accounted for 84.3% of the total exposure. About 50% of the total exposure was contributed by four fish species: salmon (cooked salmon and salmon sashimi, 19.9%), mandarin fish (14.7%), pomfret fish (8.5%) and yellow croaker (7.5%). Salmon was found to contain the highest mean level of Σ6 PCBs of 5.7 ng g?1 fresh weight at upper bound estimation, ranging from 4.4 to 6.3 ng g?1. The lower bound and upper bound exposure estimates of ?6 PCBs to the average consumer of the population were found to be 0.68 and 1.38 ng kg?1 body weight day?1 respectively while for high consumers, the lower bound and upper bound exposure estimates were 3.08 and 3.84 ng kg?1 body weight day?1 respectively. In addition, the dietary exposures to individual indicator PCB congeners were also estimated.  相似文献

An estimate of the dietary intakes of nitrite, nitrate and N-nitroso compounds is presented, based on the analytical data supplied by the Finnish Food Quality Control. Figures on the food consumption of the Finnish population, taken from a national dietary survey, and food consumption of 1768 children and adolescents over a 48-h recall period were used. The mean daily dietary nitrate intakes were estimated to be about 55 mg for the total population and for children and adolescents. The mean nitrite intakes were 1.88 mg for the total population and 1.07 mg for children and adolescents. The intake of N-nitroso compounds (NDMA) was estimated to be 0.08 micrograms for the total population and 0.02 micrograms for children. Nitrates were found to originate mainly from vegetables (80%), nitrites from meat products (97%) and nitrosamines mostly from fish products and beer. A comparison of the estimate of dietary intake of with ADI values indicated that the nitrite intake of the total population was 23% and by children 39% of ADI. The average weight was approximately 60 kg for adults and 20 kg for children. When measured average weight (39 kg) was used, and the nitrite intake was found to be 28% of ADI. Nitrate intakes from food additives were 2.5% and 1.4% of the ADI value, respectively. When the total nitrate intake from various food sources was compared with the ADI (which is given only for food additives), the estimated nitrate intake of the total population was 25% and that of children 28% of the ADI value.  相似文献

目的了解广西部分食品中铝的污染状况,评估居民膳食中铝暴露的风险。方法对2009—2013年广西检测的部分食品中铝含量进行分析,结合2002年广西居民膳食营养调查中的食物消费量数据,计算广西居民膳食中铝暴露量。结果 2009—2013年共检测食品样品10类5 679份,铝含量的平均值为132.17 mg/kg,检出率为73.01%(4 146/5 679),超标率为29.51%(1 676/5 679)。其中以海蜇、紫菜干(海带干)、油条3种食品的检出率和超标率最高,且铝的平均含量也是极高。油条样品中铝含量的均数和中位数均最高,分别超过国家残留量标准的3.8倍和3倍。10类居民膳食中铝平均每周摄入量为0.426 mg/kg BW,低于JECFA制定的每周耐受摄入量(PTWI)。馒头、海蜇、油条和油饼高消费量人群的每周铝摄入量分别是PTWI的3.07、2.40、2.23和1.23倍。结论广西监测的油条、紫菜、海蜇等食品中铝含量超标较严重,居民平均膳食摄入铝的量虽然低于PTWI,但高消费量人群铝的暴露风险较大,仍需要加强对生产经营者科学合理使用含铝添加剂的技术指导,以降低居民膳食中铝的摄入量。  相似文献
