Hake (Merluccius hubbsi) is the most important fish of Argentinean industry. The preservative effects of an oregano essential oil (EO) nanoemulsion (NE) on hake burgers (FB) during 15 days at 4 °C were studied. Fatty acids determined by gas chromatography coupled with mass spectrometry (CG-MS), volatile compounds determined by solid phase microextraction (SPME) coupled with CG-MS, total volatile basic nitrogen (TVBN), and microbial count was measured. ANOVA and DCG tests were performed. After 14 days, significant differences were detected among samples (P ≤ 0.05). FB with EO (EO-FB) and FB with NE containing EO (NEEO-FB) had the highest content of EPA (eicosapentaenoic acid) (191.82 and 198.42 g kg−1) and DHA (docosahexaenoic acid) (107.97 and 110.87 g kg−1, respectively). Also, NEEO-FB had the lowest microbial count (7 log CFU g−1). The incorporation of the oregano essential oil into a nanoemulsion improves the preserving activity in hake fish burgers.  相似文献

A total of fifty‐six strains of lactic acid bacteria isolated from Chinese sauerkraut juice from Shenyang were screened for glucansucrase production. Among them, strain DRP105 was detected to produce highest yield of glucansucrase in MRS broth, which was identified to be Leuconostoc mesenteroides. Based on Plackett–Burman Experiment, sucrose, sodium acetate and initial pH were found to be the most significant factors for glucansucrase production of L. mesenteroidesDRP105. Afterwards, effects of the three main factors on glucansucrase activity were further investigated by central composite design, and the optimum composition was sucrose 35.74 g L?1, sodium acetate 6.46 g L?1 and initial pH 5.90. Optimum results showed that glucansucrase activity was increased to 6.26 ± 0.09 U mL?1 in 24 h fermentation, 33.19% higher than before. Our study also suggested that Tween 80 and dextran have potential to improve glucansucrase stability at temperature (30 °C) higher than enzyme storage temperature in crude fermented broth.  相似文献

The preservative effects of Zataria multiflora Boiss essential oil (ZEO) at 0.025%, 0.05% and 0.1%, sodium acetate (SA) at 2% and their combination on the quality changes of vacuum‐packaged trout burgers during 21‐day refrigerated storage (4 ± 1°C) were investigated. Results showed that control and ZEO‐treated samples reached undesirable levels of rancidity (< 0.05) at 15th day, whereas samples with the combined effect of SA and ZEOs, especially at higher concentrations, proved to be more stable in sensory, biochemical (PV, TBA, FFA and pH) and microbiological analyses (< 0.05). Therefore, ZEO+SA‐treated samples showed good overall acceptability even until 21st day. Regarding the results obtained from ZEO‐treated samples, it becomes apparent that combined application of SA and ZEO extended the shelf life of fish burgers during cold storage to 21 days, 1.4‐fold longer than other treatments, which indicates the potential application of synergistic activity of these agents in vacuum‐packaged fishburgers.  相似文献

Microbial diversity and volatile compounds in Qingke barley fresh noodles (QBFN) with different storage time at 25 ± 1 °C were investigated. The results showed that Pseudomonas, Pantoea, Erwinia and Alternaria, Pyrenophora, Penicillium were the dominant microorganisms in edible QBFN (stored for 0 and 12 h), while Pantoea, Erwinia, Bacillus and Penicillium, Aspergillus were the dominant spoilage microorganisms in deteriorated QBFN (stored for 18 h). The edible QBFN have high concentration of aldehydes (61.27 μg kg−1), furan and pyrazines (60.87 μg kg−1), alcohols (49.74 μg kg−1) and ketones (29.74 μg kg−1) that give basic flavours to the QBFN. As storage time increased, the concentrations of above volatile compounds decreased, and new esters and sulphuric compounds which gave unpleasant odours to the QBFN appeared. Multivariate data analysis methods showed that 2-pentyl-furan, hexanal, 5-Ethylcyclopent-1-enecarboxaldehy, cyclohexanol and methyl allyl sulphide, ethyl isovalerate were the main volatile compounds that make a difference in flavour between the edible and deteriorated QBFN.  相似文献

In this study, Chinese-style sausage was subjected to three different air-blast drying conditions commonly employed during the manufacturing process. The fate of Escherichia coli O157: H7 during the drying period was determined and compared. The effect of curing agents on the survival of E coli O157: H7 was also identified. Results showed that populations of E coli O157: H7 decreased ca 1.51 Log CFU g-1 in sausage containing curing agents after a 6-h drying period at 50°C. However, the number of viable cells of E coli O157: H7 increased slightly in sausage without curing agents. When subjected to air-blast drying at 55°C for 6 h or at 55°C for 2·5 h and then 60°C for 3·5 h, a reduction in the number of viable cells of E coli O157: H7 was observed in sausage with or without curing agents. The reduction was more significant in sausage containing curing agents than in those without curing agents. No viable E coli O157: H7 was detected after 6 h of drying in samples containing curing agents, while the control samples still contained a viable E coli O157: H7 population of ca 2·65–4·36 Log CFU g-1. After drying the sausage at 55°C for 4 h, inactivation of E coli O157: H7 increased in the presence of 30·00 g kg-1 sodium chloride or 1·50 g kg-1 sodium sorbate. On the other hand, the presence of 0·07–0·15 g kg-1 sodium nitrite did not increase the inactivation of E coli O157: H7 compared to that in the control. © 1997 SCI.  相似文献

Quality and safety parameters of Atlantic bonito gravad during 42 days of storage at 7 ± 1 °C were analysed using monitoring sensory quality, microbial contamination, nucleotide degradation products, biogenic amines (BA), trimethylamine (TMA) and thiobarbituric acid reactive substances (TBARS). The shelf‐life of vacuum packed Atlantic bonito gravad was found to be 28 days. Total viable count (TVC) did not exceed 6 log CFU g?1. Malonodialdehyde (MDA) content did not surpass 10 mg kg?1. Nine biogenic amines were detected. Histamine level at the end of the storage was 355.3 mg kg?1. TMA increased from 53.9 to 619.1 mg kg?1. Among indicators based on the products of nucleotide degradation, the H value is best correlated with the sensory assessment. It can be concluded that the storage temperature of bonito gravad must be below 7 °C to prevent the threat to safety and quality posed by biogenic amines, especially histamine.  相似文献

The antioxidant activities of ethanol extracts of rosemary (Rosmarinus officinalis L.) (RE) were tested in natural sunflower oil stored at 60 °C by measuring their peroxide values (POV), thiobarbituric acid‐reactive substances (TBARS), free fatty acid (FFA) content and p‐anisidine value (AnV) after regular intervals compared with synthetic antioxidants. After 3 weeks of storage at 60 °C, sunflower oil containing 200 mg kg?1 rosemary extracts showed lower POVs (75.7 ± 0.47  meq kg?1), thiobarbituric acid‐reactive substances (TBARS)(0.161 ± 0.002 μg mL?1), FFA contents (0.45 ± 0.04 mg g?1) and AnV (12.4 ± 0.02) than the control sample. Sunflower oil containing 200 ppm butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tert‐butylhydroquinone (TBHQ) showed POVs (204 ± 0.68, 159 ± 0.55, 20 ± 0.49 meq kg?1), thiobarbituric acid‐reactive substances (TBARS) (0.171 ± 0.002, 0.184 ± 0.002, 0.069 ± 0.001 μg mL?1), FFA contents (0.34 ± 0.03, 0.46 ± 0.03, 0.2 ± 0.01 mg g?1) and AnV (14.7 ± 0.03, 16.5 ± 0.04, 6.77 ± 0.01), respectively, after 3 weeks of storage at 60 °C. These results illustrate that rosemary extracts exhibited very strong antioxidant activity, almost equal to that of synthetic antioxidants (BHA and BHT).  相似文献

This study aimed to establish an analytical method for α‐dicarbonyl compounds (α‐DCs) including glyoxal, methylglyoxal and diacetyl, to determine the content of α‐DCs in 101 various alcoholic beverages using gas chromatography–nitrogen phosphorous detector (GC‐NPD) and to perform exposure assessment. The limit of detection and limit of quantification for α‐DCs were 0.05–0.22 and 0.15–0.70 μg g?1, respectively. The accuracy and precision were validated in five matrices. The raspberry fruit wine had the highest value at 139.74 μg g?1 total α‐DCs. The lowest α‐DC concentration among the beverages was detected in rice wine (Makgeolli) at 1.59 μg g?1. The levels of α‐DCs in various samples were detected as follows: 1.59–56.68 μg g?1 in rice wine (Makgeolli), 2.73–16.77 μg g?1 in beer, 8.22–139.74 μg g?1 in fruit wine and 8.17–91.56 μg g?1 in rice wine (Cheongju). The estimated daily intake of α‐DCs in the intake‐only group and population group was calculated as 4.22–97.94 μg kg?1 bw day?1 and 0.28–7.13 μg kg?1 bw day?1, respectively.  相似文献

The anchovy (Engraulis anchoita) is a pelagic fish and due to its abundance in South America shows a sustainable exploitation. The enzymatic hydrolysis of anchovy protein associated to the drying technique in spouted bed was analysed in order to obtain products with the best characteristics. The drying conditions were inlet air temperature, concentration and flow rate of suspension. The degree of hydrolysis of the anchovy suspension was of 3.8%, and its available lysine and specific antioxidant activity were of 86 g kg?1protein and 4.31 mm DPPH kg?1 min?1, respectively. In spouted bed drying, the lowest reduction in available lysine (9%) and loss of specific antioxidant activity (8%) were found at 90 °C, and suspension concentration and flow rate of 65 g L?1 and 200 mL h?1, respectively. The dried product was characterised as a protein source of high biological value due to the essential amino acids profile.  相似文献

Treatments of chitosan-epigallocatechin gallate (CE) conjugate nanoliposome (CELP) and unencapsulated CE conjugate (UNCE) at different concentrations (0.025  and 0.05 g 100 g−1) on quality and shelf-life of Asian sea bass slices (ASB-S) kept at 4 °C were studied. Total viable count of ASB-S treated with 0.05 g 100 g−1 CELP (SB-CELP-0.05) was less than permissible limit (6 log CFUg−1 sample) within 15 days. Moreover, SB-CELP-0.05 sample had the lowest pathogenic and spoilage bacterial count than remaining samples during the storage (P < 0.05). Lower thiobarbituric acid reactive substances and peroxide values were obtained for SB-CELP-0.05 sample than those treated with 0.05 g 100 g−1 UNCE (SB-UNCE-0.05) at the end of storage (P < 0.05). The result was also advocated by higher polyunsaturated fatty acid content of SB-CELP-0.05 than SB-UNCE-0.05 (P < 0.05). Therefore, CELP efficiently extended ASB-S shelf-life with high consumer acceptability at 4 °C for minimum 12 days, whereas control had the shelf-life less than 6 days.  相似文献

The impacts of oligochitosan glycosylation and cross‐linking on some properties of a commercial caseinate were investigated in this study. The glycosylated and cross‐linked caseinate with glucosamine content of 4.74 g kg?1 protein was generated by transglutaminase (TGase) and oligochitosan at pH 7.5 and 37 °C, with fixed substrate molar ratio of 1:3 (acyl donor to glucosamine acceptor), caseinate content of 50 g L?1, TGase of 10 kU kg?1 protein and reaction time of 3 h, respectively. In comparison with the caseinate, the glycosylated and cross‐linked caseinate had decreased reactable amino groups (0.58 vs. 0.51 mol kg?1 protein), higher apparent viscosity, decreased emulsifying activity index (about 14.5%) and statistically unchanged emulsion stability index (92.6 vs. 90.5%). Based on the mechanical spectra of the acid‐induced gels, the glycosylated and cross‐linked caseinate showed shorter gelation time (95 vs. 200 or 220 min) than the caseinate or cross‐linked caseinate. The gels prepared from the glycosylated and cross‐linked caseinate also had enhanced hardness, springiness and cohesiveness. The results indicated that TGase‐mediated oligochitosan glycosylation and cross‐linking has the potential to obtain new protein ingredients.  相似文献

Smoked beef and pork ham samples were analysed during process of smoking (after packing and storing) for the presence of the 16 EU priority PAHs via Fast GC/HRMS method. This study showed that there are differences in PAH contents between final smoked beef ham samples from traditional smokehouse (TS) (3.9 μg kg−1) and industrial smokehouse (IS), (1.9 μg kg−1). Also there is a difference in PAH contents in final smoked pork ham samples (4.9 μg kg−1, TS; 4.2 μg kg−1, IS). In beef and pork ham samples from the same smokehouse different PAH contents were observed during smoking. The highest content of examined PAHs in all beef and pork ham samples during smoking showed benzo[c]fluorene (BcL) (beef ham: from 0.3 μg kg−1 to 1.5 μg kg−1; pork ham: from 0.2 μg kg−1 to 2.1 μg kg−1).The maximum level for benzo[a]pyrene (BaP) of 5 μg kg−1 in smoked meat products was not exceeded in any samples. Correlation statistic analysis (P < 0.05) of obtained contents from samples both from TS and IS showed that BaP is a good marker both for 16 EU priority PAHs and 12 IARC probably and possibly carcinogenic PAHs (IS: R BaP/Σ16PAHs = 0.95, R BaP/Σ12PAHs = 0.96; TS: R BaP/Σ16PAHs = 0.71, R BaP/Σ12PAHs = 0.88).  相似文献

The antioxidant properties of tert-butylhydroquinone (0·5 g kg?1 + 20 g kg?1 ascorbic acid—TBHQ-AS) and an extract of rosemary (2·5 g kg?1) alone and in combination were determined by their addition as solutions to cooked fish flakes stored at - 20°C. Oxidation was measured by following changes in free fatty acids, thiobarbituric acid number, fatty acid composition and sensory evaluation. The order of effectiveness in inhibiting oxidation was TBHQ-AS > combination > rosemary > untreated control ?70°C > untreated control -20°C. Sensory evaluation indicated that green aroma and flavor notes were associated with the rosemary extract, while fish oil notes were associated with untreated samples.  相似文献

Photocentrifugation at 1200  g and 60 °C was used to monitor emulsion stability of spreadable processed cheese (PC) with a low content (0.7 and 1.0 g 100 g?1) of typical emulsifying salts (ES) after different manufacturing conditions. This method of dispersion analysis has been used more frequently for nonfood materials rather than for foodstuffs. The PC contained 36.5 g 100 g?1 dry matter, 40 g 100 g?1 fat in dry matter and was manufactured in a laboratory cooker at 82 or 92 °C and 1000–3000 rpm cutter speed for 5–19 min. Insufficient fat emulsification and a heterogeneous casein matrix of a PC with 0.7% was well illustrated by photocentrifugation. At 1 g 100 g?1 ES and 3000 rpm cutter speed, the effect of manufacturing time on the behaviour of the colloidal dispersion was demonstrated by the different evolutions of the corresponding transmission profiles. Sedimentation velocities were measured at a level of 20% transmission. These results showed that dispersion analysis of spreadable PC by photocentrifugation at 60 °C is a sensitive method and applicable as a new approach for characterisation of emulsion stability resulting from physicochemical changes during manufacture.  相似文献

The in vitro inhibitory activities of different seed extracts prepared from cranberry bean mutant SA‐05 and its wild‐type variety Hwachia against aldose reductase, α‐glucosidase and α‐amylase were examined. The results indicated that the polyphenolics‐rich extracts obtained using 800 g kg?1 methanol and 500 g kg?1 ethanol demonstrated inhibitory activities against aldose reductase (IC50 of 0.36–0.46 mg mL?1) and α‐glucosidase (IC50 of 1.32–1.94 mg mL?1). The 500 g kg?1 ethanol extracts also showed α‐amylase inhibitory activities (IC50 of 70.11–80.22 μg mL?1). Subsequent extracts, prepared further with NaCl and H2O from precipitates of 800 g kg?1 methanol or 500 g kg?1 ethanol extracts, exhibited potent α‐amylase inhibitory activities (IC50 of 17.68–38.68 μg mL?1). A combination of 500 g kg?1 ethanol extraction plus a subsequent H2O extraction produced highest polyphenolics and α‐amylase inhibitors. The SA‐05 α‐amylase inhibitor extracts showed greater inhibitory activities than that of Hwachia. Thus, cranberry bean mutant SA‐05 is an advantageous choice for producing anti‐hyperglycaemic compounds.  相似文献

Papaya was subjected to osmotic dehydration (OD) prior to hot air drying (HA; 70 °C) and microwave vacuum drying (MVD; 3.75 W g?1 and 13.3 kPa). An increase in immersion time in a sucrose solution [65/100 g (w/w)] at 40 ± 2 °C from 0 to 4 h decreased moisture content from 7.5802 to 1.2215 kg water kg dry solid?1. During HA and MVD, effective moisture diffusivity was in the range 7.09 × 10?8 to 9.13 × 10?8 m2 s?1 and 2.85 × 10?6 to 3.50 × 10?6 m2 s?1, respectively, depending on immersion time. The hue angle of HA samples was 0.83–0.91, whereas that of MVD samples was 48.55–50.32. Both drying methods decreased springiness. Porosity was clearly observed in MVD samples. Rehydration rate was enhanced by increased immersion time and MVD (P ≤ 0.05). From preference mapping, MVD samples were more preferable than HA samples. Moreover, MVD samples with 1–3 h OD were more preferable than those with 4 h OD.  相似文献

In this study, sugar cane fibre (SCF) partially replaced meat in beef burger formulations. The effects of SCF on cook yield, dimensional changes, sensory characteristics of beef burgers and in vitro gut fermentation characteristics were evaluated. Replacing beef with 1 to 5% SCF in burgers significantly increased cook yields from 13.8 ± 0.3 to 59.1 ± 0.3% due to its high water-binding capacity of 5.89 ± 0.08 g g−1 and oil-binding capacity of 4.68 ± 0.03 g g−1. The inclusion of SCF improved cooking properties whilst improving sensory characteristics. Burgers with 1% SCF had the highest overall acceptability. SCF was steadily fermented with a porcine faecal inoculum for up to 72 h, producing short-chain fatty acids. The characteristics of high water/oil binding and fermentability suggest that SCF has the potential to provide a range of dietary fibre benefits, and therefore deserves further study.  相似文献

Phenol and fibre‐rich flour obtained by air‐drying and grinding of lettuce waste was partially substituted (26, 53, 170 and 575 g kg?1) to wheat flour to produce functional bread. The addition of flour progressively decreased dough leavening capacity while increased bread moisture and firmness. Lettuce waste flour significantly increased the polyphenolic content (up to 3.4 g GAE kg?1) of bread samples and enhanced their antioxidant activity by 200%. Bread containing 170 and 575 g kg?1 of lettuce waste flour presented sensory properties and consumer acceptability comparable to those of commercial wholemeal bread with similar rye bran content. Bread containing at least 170 g kg?1 of lettuce waste flour could be associated to nutritional claims related to its enhanced fibre content (>30 g kg?1). Data obtained by conjoint analysis demonstrate the possibility of increasing consumer preference for lettuce waste flour bread by proper nutritional (fibre content) and sustainability (lettuce waste valorisation) claims.  相似文献

Effect of autochthonous starter cultures on the volatile flavour compounds of Chinese traditional fermented fish was studied. Lactobacillus plantarum 120, Staphylococcus xylosus 135 and Saccharomyces cerevisiae 31, isolated from Suan yu, were selected as starter cultures. Volatiles were extracted by headspace solid‐phase microextraction (SPME) and analysed by gas chromatography–mass spectrometry technology (GC‐MS). Esters and alcohols were the main components of volatiles, accounting for over 50 percentage points in all samples. The highest content of esters (3034.54 μg kg?1) was observed in S1 inoculated with L. plantarum 120, while the highest content of alcohols (2164.53 μg kg?1) and ketones (379.98 μg kg?1) was detected in S3 inoculated with S. cerevisiae 31. The content of acids and aldehydes was lower in inoculated samples. Principal component analysis revealed that the volatile composition was primarily influenced by the nature of the starter cultures. L. plantarum 120 and S. xylosus 135 could accelerate fermentation.  相似文献
