The antioxidative and anti‐allergic activities of fresh and aged black garlic extracts were investigated. The garlic samples were extracted with 70% ethanol (v/v) and the total phenolic content was measured. The antioxidant capacity of extracts was assessed by determining the scavenging activities on 1,1‐diphenyl‐2‐picrylhydrazyl and hydroxyl radicals, ferricyanide reducing power, ferrous ion‐chelating ability and inhibitory effect on linoleic acid peroxidation. The anti‐allergic activity of extracts was analysed by measuring their inhibitory effects against β‐hexosaminidase release. The aged black garlic exhibited significantly higher phenolic content and greater antioxidative activity than fresh garlic. Both garlic extracts showed strong antioxidant capacity in a dose‐dependent manner. On the other hand, a considerably higher suppression of β‐hexosaminidase release was found in fresh garlic extract at lower concentration compared with that of the black garlic. Results of this study illustrate that ageing of garlic could enhance its antioxidant capacity, but could decrease its anti‐allergic activity.  相似文献

BACKGROUND: Garlic oil (GO) has blood lipid‐lowering effects. Milk fatty acid (FA) originates partly from plasma, and can be affected by the mammary lipogenesis. This study aimed to investigate GO effects on milk FA profile and mammary lipogenesis‐related gene expression. Early‐lactation goats were randomly allocated to four treatments with six goats each, and offered corn silage ad libitum and fixed amount of 0.79 kg day?1 dry matter (DM) concentrate mixed with GO (0, 0.57, 1.14, 1.71 g kg?1 DM) for 30 days consisting of 26‐day adaptation. RESULTS: Intake of corn silage reduced (P≤0.05) as GO level increased in the concentrate. Lipase activity and lactose content linearly increased, while non‐esterified FA concentration quadratically decreased with increasing GO level (P≤0.05). The proportions of short‐ and medium‐chain (C14:0, C15:0 and C16:0) and saturated FA decreased, whereas C18, cis9 trans11 conjugated linoleic acid (c9t11 CLA), t10c12 CLA, monounsaturated and polyunsaturated FA, and some ≥ C20 FA proportions increased in a linear manner with increasing GO level (P≤0.05). The mRNA abundance of genes remained unchanged (P > 0.1) as GO level increased. CONCLUSION: Garlic oil altered milk FA profile and these effects may not be related to the mammary lipogenesis‐related genes expression. © 2012 Society of Chemical Industry  相似文献

BACKGROUND: In this study the effects of ampicillin and aqueous garlic extract on Escherichia coli (ATCC 9637) and Staphylococcus aureus (ATCC 25923) were compared. Atomic force microscopy (AFM) was used to study the possible mechanisms of membrane disruption. RESULTS: Ampicillin disrupted the cell membrane of E. coli, inducing pores and cell leakage. Aqueous garlic extract also induced leakage from the cell membrane in E. coli, but no pores were observed. The trend in Young's modulus for E. coli was EnativeEage > Eamp. In contrast, S. aureus incubated with low ampicillin (≤50µg mL?1) and garlic (≤50 mg mL?1) concentrations showed no significant changes in surface morphology compared with the untreated bacterium. The trend in Young's modulus for S. aureus was EnativeEageEamp. CONCLUSION: The trend EnativeEage for E. coli and S. aureus supports the hypothesis that the compounds in garlic show intracellular activity. This proof‐of‐concept study of the aqueous crude isolate of garlic points to the feasibility of further AFM investigations to compare the antimicrobial properties of various pure thiosulfinate isolates found in garlic. 对玉米蒜苗套作根区进行隔膜、隔网和无隔处理以及各自单作处理,通过处理间的相互比较,分析影响套作产量的主要土壤因素。结果表明:套作蒜苗土壤微生物上升其主要原因是根系间的非接触物质交换;套作玉米除此外,地上部环境的改变也使根部土壤微生物数量上升。根系间的非接触效应还使蒜苗、玉米土壤过氧化氢酶、蔗糖酶活性提高,而环境因素的改变也使玉米过氧化氢酶,蒜苗脲酶活性提高。相关性分析表明:微生物对蒜苗根际土壤酶活性的影响大于对玉米土壤酶的影响。  相似文献

Based on the experiments of utilization of garlic processing wastewater in a lotus pond, this study demonstrates that lotus pond wetlands have a remarkable ability to remove organic pollutants and decrease chemical oxygen demand(CODCr), biochemical oxygen demand(BOD5), and suspended substances(SS) in garlic processing wastewater. Results also show evident effects of lotus roots on absorption of NH3-N. The pH value in a lotus pond with wastewater discharged was relatively stable. The water quality in the lotus pond reached the class Ⅱ emission standard, according to the Integrated Wastewater Discharge Standard(GB8978-1996), seven days after pretreated garlic processing wastewater had been discharged into the lotus pond. Garlic processing wastewater irrigation does not produce pollution in the pond sediment and has no negative effect on the growth of lotus roots. Due to utilization of garlic processing wastewater, the output of lotus roots increased by 3.0% to 8.3%, and the quality of lotus roots was improved. Therefore, better purification and utilization results can be achieved.  相似文献

ABSTRACT

The bulk density of garlic slices at different moisture levels (ranging from approximately 3 to 65% MC wet basis) was determined by weighing the contents of a container of known volume. The porosity was calculated using its relationship with bulk and apparent densities. An analysis of variance (ANOVA) revealed that bulk density and porosity were affected significantly by moisture and slice thickness as well as the interaction of these variables. Bulk density varied in a positive linear fashion with moisture and thickness while a negative linear correlation was found for the calculated bulk porosity. The linear model met me adequacy criterion for characterising the behaviour of garlic. Using a laboratory unit, the vertical resistance to airflow through the product and die effect of moisture and slice thickness were investigated for an airflow rates of 0.09 to 1.2 m3/s-m2. A higher resistance to airflow was noted for the wet product with the experimental data fitting to Shedd's model when the airflow range was divided into two sub-flow rates and to a modified Ergun's equation for the full range.  相似文献

The moisture equilibrium isotherms of garlic and apple were determined at 50, 60 and 70 °C using the gravimetric static method. The experimental data were analysed using GAB, BET, Henderson–Thompson and Oswin equations. The isosteric heat and the differential entropy of desorption were determined by applying Clausius–Clapeyron and Gibbs–Helmholtz equations, respectively. The GAB equation showed the best fitting to the experimental data (R2 > 99% and E% < 10%). The monolayer moisture content values for apple were higher than those for garlic at the studied temperatures; the values varied from 0.050 to 0.056 and from 0.107 to 0.168 for garlic and apple, respectively. The isosteric heat and the differential entropy of desorption were estimated in function of the moisture content. The values of these thermodynamic properties were higher for apple (in range 48–100 kJ mol?1 and 14–150 J mol?1 K?1) than for garlic (in range 43–68 kJ mol?1 and 0–66 J mol?1 K?1). The water surface area values decreased with increasing temperature. The Kelvin and the Halsey equations were used to calculate the pore size distribution.  相似文献

Minimum processing associated with an adequate packing system has shown good results in preserving a large group of perishable horticultural produce. The present work was done to determine the effect of the number of layered of low‐density polyethylene (LDPE) or polyvinyl chloride (PVC) film on the quality of minimally processed packed garlic (Allium sativum), known for its short shelf‐life. Polystyrene trays containing 200 g garlic bulbils were wrapped in one to four layers of PVC or one or two layers of LDPE and stored at room temperature. Changes in weight, bulbil colouration, in‐package gas composition and apparent quality were monitored for 14 days. Best results were obtained by wrapping the packages in four layers of PVC film, with insignificant weight loss (5%), changes in colour tone and saturation, and the in‐pack atmosphere (O2 = 0.01% and CO2 = 13.5%) inhibited fungal growth, extending shelf‐life to 13 days at 25 ± 2°C. On the other hand, the high in‐package moisture in LDPE wrapping favoured fungal growth, rapidly depreciating bulbil quality. The shelf‐life of minimally processed garlic can be increased by maintaining an adequate in‐pack atmosphere, which can be achieved by using four layers of PVC or a another film of similar permeability.
