The aim of this study was to identify the impact of high pressure treatments at sub-zero temperatures (high pressure - low temperature; HPLT) on milk proteins. Whey protein solutions, micellar casein dispersions and two mixtures (micellar caseins:whey proteins, 80:20 and 20:80, w/w) were pressure treated (100–600 MPa) at pH 7.0 or 5.8 at −15 °C, −35 °C and ambient temperature. Solubility data showed that whey proteins could only be affected by HPLT treatments at pH 7.0 if caseins were present, while effects could be induced at pH 5.8 without the presence of caseins. The caseins formed on the one hand large aggregates (flocs) and on the other hand the solubility was increased by the creation of smaller micelles. The formation of flocs could only be observed for HPLT treated samples, which indicates the formation of different protein interactions in milk protein based samples compared with common HP treatments.  相似文献

It has been well known that the greening of Allium sativum cloves could be formed after immersed in acetic acid solution. Nonetheless, no investigation was reported on colour development of A. sativum in response to acetic acid vapour until now. In this study, the brief exposure of A. sativum to acetic acid vapour (200–400 ppm) was combined with controlled atmosphere (5%, 20% and 80% CO2) packaging storage to break cell membrane and green garlic. The garlic bulbs were fumigated with acetic acid before controlled CO2 atmosphere packaging for 25 days at 4 °C. Fumigation with 200 ppm acetic acid followed by high CO2 atmosphere packaging (80% CO2) facilitated the garlic greening. It was also verified that γ‐glutamyl transpeptidase was involved in garlic greening in present study, and the compromise of glacial acetic acid vapour fumigation and CO2 gas atmosphere in package stored at low temperature could result in garlic greening as well.  相似文献

[目的]建立了甜橙全果、果肉、果皮、果渣、橙汁和精油等6项基质中哒螨灵和螺螨酯的QuEChERS-高效液相色谱-串联质谱分析检测方法(HPLC-MS/MS)。[方法]甜橙样品经乙腈提取,PSA、GCB、MgSO4净化,高效液相色谱-串联质谱仪配备电喷雾正离子多反应监测(MRM),外标法定量。[结果]甜橙6种基质通过此分析检测方法,哒螨灵和螺螨酯在0.001~1.25 mg/L质量浓度范围线性相关系数不小于0.9965,3个加标水平(0.01、0.5、5 mg/kg)下哒螨灵回收率为81%~93%,RSD为0.5%~6.5%,螺螨酯回收率为81%~99%,RSD为0.5%~7.9%。[结论]该方法简单、方便、灵敏度、准确度高,覆盖甜橙全项样品基质,可适用于大批量样品快速分析。  相似文献

为了识别一组非特定人、不连续的数字语音信号,本文提出了一种基于支持向量机理论的语音信号识别算法.具体过程主要包括训练过程和识别过程.其中训练过程为:先使用预先建立起来的语音库对选定的支持向量机进行训练,得到一组与该语音信号相关的支持向量;在识别过程中,首先获取被测语音信号,并根据MFFC理论提取特征向量,然后使用训练后的支持向量机进行识别.此外,还提出使用短时区域能量谱的方法对语音信号进行端点检测.结果表明,与目前流行的隐马尔可夫算法比较,本文算法具有识别速度快、准确率高等优点.  相似文献

鉴于城市用水量短期预测中传统的神经网络训练易陷入局部极小点、收敛速度较慢等问题,采用具有全局随机优化思想的PSO算法对GRNN神经网络径向基函数的扩展速度进行优化,提出了城市用水量的PSO-GRNN神经网络预测方法。根据某市日用水量的实测数据进行建模和预测,通过与最小二乘模型、核估计模型、局部线性估计模型的模拟效果进行对比表明:PSO-GRNN网络具有较强的自适应能力和泛化能力,能够有效地提高用水量的预测精度。  相似文献

目的 探究不同处理对贮藏0~60 d期间蓝靛果实贮藏品质及活性氧(ROS)代谢的影响,为蓝靛果贮藏保鲜提供技术依据。方法 以蓝靛果为实验材料,采后将其装入保鲜箱中,用1−甲基环丙烯(1-MCP)、乙烯吸收剂(EA)、1-MCP+EA进行处理,在(−0.5±0.3)℃下贮藏60 d,每隔15 d取样观察果实的感官品质,并测定其营养、生理及活性氧代谢相关指标。结果 与对照组相比,3种处理方式均能保持果实较好的感官特性,延缓果实抗坏血酸、花色苷、总酚和黄酮等含量的流失,以及果实的软化;在贮藏60 d时,处理组果实的呼吸强度分别比对照组果实的呼吸强度低22.73、12.92、34.04 mg/(kg.h),乙烯生成速率分别比对照组果实的低6.38、3.98、10.11 μL/(kg.h);可抑制超氧阴离子(O2.)活性、过氧化氢(H2O2)含量、丙二醛含量及相对电导率的升高,保持较高的超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、过氧化物酶(POD)、抗坏血酸过氧化物酶(APX)活性。通过SPSS分析可知,综合得分顺序为CK<EA<1-MCP<1-MCP+EA,表明1-MCP+EA处理的效果最好。结论 1-MCP+EA处理对蓝靛果贮藏60 d的保鲜效果最好,可更好地保留果实的外观和内在品质,利于运输和销售。  相似文献

Enriched concentrations of metal contaminants have been reported in surficial sediments and tissues of aquatic organisms in Sydney estuary, New South Wales, Australia. Dietary ingestion of contaminated, suspended sediments is potentially a major route of metal exposure to the filter-feeder Saccostrea glomerata. A dynamically coupled biokinetic-equilibrium bioaccumulation model was developed to explore sediment-oyster-metal uptake interactions. The biokinetic component simulated the sediment dynamics and oyster uptake and loss kinetics while the ion equilibrium model accounted for the metal speciation reactions. Results of a laboratory-based mesocosm experiment as well as data from the literature were used to parameterise the model. The model demonstrated a good fit of the experimental data and indicated that dissolved and particulate organic matter were important determinants of metal bioavailability to this species. The model served also as a unique tool to formulate testable hypotheses and help to better explain the bioaccumulation patterns observed from the experiment.  相似文献

Two-dimensional (2D) pressure field estimation in molecular dynamics (MD) simulations has been done using three-dimensional (3D) pressure field calculations followed by averaging, which is computationally expensive due to 3D convolutions. In this work, we develop a direct 2D pressure field estimation method which is much faster than 3D methods without losing accuracy. The method is validated with MD simulations on two systems: a liquid film and a cylindrical drop of argon suspended in surrounding vapor.  相似文献

A mass spectrometry-based electronic nose (MS e-nose) was used to measure changes in rice quality during storage at different storage conditions. Rice was stored for 4 months at four different temperatures (0 °C, 20 °C, 30 °C, and 40 °C) and tested for fat acidity, sensory characteristics, and flavor pattern analysis using the MS e-nose. When the rice was stored for long durations at higher temperatures, fat acidity increased and sensory quality was low. Flavor volatile profiles of the rice determined by MS e-nose revealed a tendency for the results to separate into three groups (months 1 + 2, 3, and 4). Volatile profile changes in rice during storage depended on the storage time, regardless of storage temperature. It is likely that the fat acidity and sensory evaluation results, which were related, could be distinguished by their volatile-producing metabolic activities. Accordingly, MS e-nose system was successfully used to screen and qualitatively evaluate stored rice.  相似文献

As people shift their attention away from unhealthy foods, healthy fresh produce has become popular. However, fresh produce has contributed to many outbreaks of Listeria monocytogenes, which can form a mature biofilm within 24 h. Recent control strategies have proved ineffective in ensuring safe food production. This study focuses on L. monocytogenes biofilms formed on lettuces and cabbages using a viable plate count method and field emission electron microscopy. We investigated the reduction efficacy of treatment with 200 parts per million (ppm) chlorine, 2% each of citric, lactic, and malic acids, 32 Hz ultrasonication (US), 390 mJ/cm2 ultraviolet-C (UV-C), or 750 mJ/cm2 cold oxygen plasma (COP) on L. monocytogenes biofilms. Following treatment, the quality of the vegetables was analyzed with standard procedures. UV-C and COP showed the best CFU reduction, regardless of the nature of the vegetable surface, while US failed to produce any significant reduction (P > 0.05). Furthermore, chemical treatments reduced count by < 1 log colony forming unit (CFU)/cm2 on lettuces, whereas a > 2 log reduction was observed on cabbages. The effect of chemical treatment largely depended on the particular vegetable, while UV-C and COP achieved high reduction regardless of the vegetable, and had no effect on quality. We, therefore, speculate that UV-C and COP show promise in overcoming L. monocytogenes biofilms on food produce.  相似文献
