To reduce the energy consumption of the shrimp blanching process and improve the economic value of the blanched product, a transcritical CO2 heat pump blanching system (THPB system) was designed in this paper. The trends of astaxanthin were investigated at atmospheric pressure near boiling temperature, combined with the color and structural properties of shrimp samples, and the optimal blanching times of 270 s and 240 s were obtained at 90°C and 95°C, respectively. In contrast to the fuel blanching system (FB system) at 100°C, the annual standard coal consumption of the THPB system with 90°C blanching is decreased by 79%, and the annual operating cost can be saved by CNY 63,800, with a payback period of about 3.13 years.Industrial relevanceBlanching is one of the effective ways to prolong the shelf life of shrimp. However, the research on the blanching time and temperature of shrimp is not comprehensive. In addition, the traditional fuel blanching process has high energy consumption and pollution, and can no longer meet the quality requirements of the modern food processing industry. In this study, the cellulose nanoparticles (CNP) isolated from potato peel were used for reinforcement of polyvinyl alcohol (PVA)-based active packaging film. The above film was used to pack the raw prawns (Penaeus monodon) at −20 °C, and the colour change, protein content, TVB-N, TMA and microbial analysis were done at regular interval for prawns stored in CNP-PVA active packaging film. A significant difference was observed in the quality of prawns stored in potato CNP-PVA film compared with prawns packed and stored in polyethylene film. The newly designed active packaging with CNP and fennel seed oil enhanced the shelf life of prawns up to two months for both HOSO (head on shell on) prawn and PD (peeled and deveined) prawn. Hence, the study recommends the potato peel CNP-PVA film with fennel seed oil as better choice to extend the shelf life of the prawns during storage compared with polyethylene packaging. 相似文献

The dumping of spent grains is going to be more difficult because of the increasing number of cattle. That means new ways of dumping must be developed.The goal of the work was to test the technical properties of bricks produced with spent grains added to increase porosity.The flexural strength of the fired samples remained at 8.5 MPa; the air-dried samples exhibited a small increase in flexural strength. The shrinkage and true density were almost identical, while the raw density, capacity for water absorption and open porosity showed minor differences.In the large-scale experiment no problems were observed during the production. The bricks produced with spent grains possessed a comparable or higher strength, a higher porosity and a reduced density after firing than those from a standard production clay. Because of the lower sintering temperatures the fired clay product was more strongly sintered, exhibiting both greater strength and higher porosity. 相似文献

This study investigated the effects of oxidised linoleic acid (18:2) on Nε‐carboxymethyl‐lysine (CML) and Nε‐carboxyethyl‐lysine (CEL) formation in Maillard reaction systems. Model systems of lysine/glucose (L/G), lysine/18:2 (L/18:2), lysine/18:2/glucose (L/18:2/G), myofibrillar protein/glucose (MFP/G), MFP/18:2 and MFP/18:2/G were maintained at 37 °C for 6 weeks. The results showed that CML/CEL contents in L/G (6.99 and 0.96 mmol mol?1 lysine, respectively) were significantly higher than those in L/18:2/G (1.43 and 0.41 mmol mol?1 lysine, respectively), and there is a small amount of CML/CEL generation in L/18:2. However, the CML/CEL levels in MFP/G (197.2 and 83.8 ng mg?1 protein, respectively) were markedly lower than those in MFP/18:2/G (283.2 and 118.5 ng mg?1 protein, respectively). 18:2 favours the formation of CML/CEL in MFP/18:2/G, not in L/18:2/G. All these findings indicated that the role of 18:2 on CML/CEL formation in Maillard reaction system was complex, and depended on CML/CEL formation rate and substrate types (lysine or lysine residue in protein). 相似文献

Aspergillus carbonarius is the major ochratoxin A (OTA)-producing fungus that contaminates wine grapes. To investigate the effect of the initial amount of A. carbonarius on winemaking and ochratoxin A contamination, different conidial concentrations of A. carbonarius were manually added to the grape musts before fermentation. Sampling was carried out at different stages in alcoholic fermentation, including crushing, maceration, pressing and alcoholic fermentation. The levels of alcohols, soluble solids, and reducing sugars in the musts were analyzed before and during the whole procedure of alcoholic fermentation. Aspergillus spp. and other fungal contaminants increased rapidly after crushing, however most died at 48 h. OTA levels in the musts increased during the first 8–48 h and then decreased sharply in A. carbonarius inoculants (1 × 104 to 1 × 106 spores/g) in a spore concentration-dependent manner. Most OTA was retained in the pomaces fraction after the pressing operation. High amounts of A. carbonarius did not significantly affect yeast growth, sugar use, and alcoholic production during fermentation. In conclusion, high levels of contamination with A. carbonarius in the grape musts did not inhibit alcoholic fermentation, but caused high OTA residues in the wine produced. 相似文献

Microalgae represent diverse branch of microorganism that can produce a wide range of unique functional ingredients that can be used in food, cosmetics, pharmaceuticals, and energy. Among them, Haematococcus pluvialis is known for accumulating the highest levels of a potent natural antioxidant, astaxanthin, which has demonstrated positive health effects. Therefore, the aim of numerous studies has been to develop novel and efficient extraction techniques to produce high-quality (purity and antioxidant activity) extracts, while complying with the Green Chemistry Principles. Supercritical CO2 (scCO2) emerges as an alternative to organic solvents because of its high selectivity and bioactivity-preserving qualities. Nevertheless, astaxanthin is a large molecule with low solubility in scCO2 that usually requires long extractions at high pressures. Ethanol has been used as co-solvent to increase astaxanthin solubility in scCO2. In this work, a Box–Behnken experimental design was used to study the effects of operating pressure (20–35 MPa), temperature (40–70 °C), and ethanol content in scCO2 (0–13%, w/w) on the yield, astaxanthin content, and antioxidant activity of H. pluvialis extract. Results showed that ethanol content in CO2 has a more significant effect on all responses than pressure and temperature. These results lead us to investigate the effect of a further increase in ethanol content, up to the region of gas-expanded liquids. We studied the effects of temperature (30–60 °C) and ethanol content (50–70%, w/w) at a fixed pressure (7 MPa) on the same response variables using CO2-expanded ethanol (CXE). Results showed that temperature and ethanol content had a significant influence on astaxanthin yield and antioxidant activity. Also, the overall responses of CXE surpassed scCO2 extractions to match conventional extraction with acetone, maintaining high quality extracts, thus validating the use of this new type of green technology for extraction of high-value compounds. 相似文献

Flavonoid components in flowers of 48 Zhongyuan tree penoy cultivars were identified by means of a hyphenated technique of HPLC coupled with a photodiode array detection and electrospray ionization mass spectrometry (HPLC-DAD-ESIMS). The total phenolic content (TPC) was determined by Folin–Ciocalteu method and the antioxidant activity with both 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ferric reducing antioxidant power (FRAP) assays. About 14 flavonoids including five anthocyanins, three flavonol glycosides and six flavone glycosides were described. Apigenin-pento-hexoside and Apigenin-hexo-glucuronide were reported for the first time. TPC, expressed as gallic acid content, varied between 3.97 and 21.73 mg/g fresh weight. Antioxidant activity varied among the cultivars (7.66–31.36 and 4.80–17.87 mg ascorbic acid equivalents/g fresh weight for DPPH and FRAP assays, respectively) and highly corresponded with TPC. 相似文献
