概述了酿造调味品用水的品质对发酵过程的影响,以实际为例介绍了发酵过程中水的品质对生物活性的影响,直接促进或阻碍着有效成分的生成、口感及呈香等风味物质的生成。建议调味品生产企业在提高调味品质量和风味的同时,要把水资源的品质放在重要位置考虑。     

Effect of Mesona Blumes gum on physicochemical and sensory characteristics of rice extrudates

The aim of this study was to evaluate effects of Mesona Blumes gum (MBG) on some physical, chemical, sensory and antioxidant properties of rice extrudates. MBG was added to rice flour at 0%, 5%, 10%, 15% and 20% (w/w). The water solubility index (WSI) increased from 4.19% to 15.32% with MBG addition. Both water absorption index (WAI) and moisture retention (MR) reached maximum at 15% MBG. Bulk density (BD) was the highest at 5% (131.22 g cm^?3) and the lowest at 15% MBG (121.44 g cm^?3). Hardness was maximal at 5% (8.44 N mm^?2) and minimal at 15% MBG (5.98 N mm^?2). Expansion ratio (ER) and lightness (L*) decreased for all extruded products with MBG. MBG at 5% or 10% level could improve sensory characteristics of final products. The extract of extrudates at 15% MBG had the highest antioxidation ability among those extrudates. Thus, it was possible to produce a new palatable rice extrudate with MBG.     

Improvement of the Oxidation Resistance of the Single-Crystal Ni-Based TMS-82+ Superalloy by Ni–Al Coatings with/without the Diffusion Barrier

Oxidation behavior of the uncoated base, Ni–Al coated and Re–Cr-Ni plus Ni–Al coated single-crystal (SC) Ni-based TMS-82+ superalloy is studied under cyclic air at 900 °C for 200 h to assess the oxidation resistance. Regardless of the coating processing, Ni–Al coating is effective in improving the oxidation resistance due to the formation of a continuous α-Al₂O₃ layer in the scale. For the uncoated base superalloy, the mass-gain curves are fitted by a subparabolic relationship, and complex oxide products including predominately NiO, some CrTaO₄, α-Al₂O₃, Cr₂O₃, a minor of spinels of (Ni, Co)Al₂O₄, AlTaO₄ and θ-Al₂O₃ are detected. Time-dependence of the oxide growth rate for both coated superalloy with/without the diffusion barrier is explained by the parabolic relationship. The oxide scales consist predominately of α-Al₂O₃ and a minor of θ-Al₂O₃. The diffusion barrier of σ-phase plays a negligible effect on the oxidation resistance during the cyclic exposure environment. The amount of detrimental γ′-phase and topologically close-packed (TCP) phases in the interdiffusion zone in the coated superalloy with the diffusion barrier is greatly reduced compared with that without the diffusion barrier due to the distinct barrier effect limiting diffusion of elements between the bond-coat and the substrate.
