The influence of slaughter season and muscle type on the detailed fatty acid composition, including conjugated linoleic acid isomers, and contents of total cholesterol and lipid-soluble antioxidant vitamins (α-tocopherol and β-carotene) in Mirandesa-PDO veal was assessed. Mirandesa purebred calves (n = 29) were raised in a traditional production semi-extensive system, slaughtered in late spring (June) or early autumn (October) and the longissimus lumborum and semitendinosus muscles were sampled for analysis. Although the lipid composition of PDO veal was only slightly affected by the slaughter season, it was markedly changed by the muscle type. However, PDO veal had values of pasture-fed cattle for lipid grass intake indicators, in both seasons and muscles. From a human health standpoint, intramuscular fat in Mirandesa-PDO veal has a high nutritional value throughout the year, with favorable ratios of n− 6/n− 3 and contents of n− 3 PUFA and α-tocopherol, as a result of the beneficial effects of grass feeding.  相似文献

目的:研究菟丝子的抗疲劳作用。方法:将昆明种小白鼠随机分为4组,分别为空白对照组、菟丝子低、中、高剂量组,分别灌胃给予蒸馏水、5、10、15g生药/kg·bw的菟丝子水提物,连续给药30d,测定小鼠负重游泳时间。采血、分离血清,测定乳酸脱氢酶(LDH)、血乳酸(BLA)含量,并取小鼠肝脏与后腿部肌肉,测定肝糖元(LG)、肌糖元(MG)的含量。结果:菟丝子低、中、高剂量组与空白组比较,能显著延长小鼠负重游泳时间,降低血乳酸水平,增加乳酸脱氢酶的活力及增加肝糖元、肌糖元的含量(p0.01)。结论:菟丝子具有显著的抗疲劳作用。  相似文献

Mass spectrometric methods were developed and validated for the analysis in chicken muscle of a range of antibiotic growth promoters: spiramycin, tylosin, virginiamycin and bacitracin, and separately for two marker metabolites of carbadox (quinoxaline-2-carboxylic acid and 1,4-bisdesoxycarbadox), and a marker metabolite of olaquindox (3-methyl-quinoxaline-2-carboxylic acid). The use of these compounds as antibiotic growth promoters has been banned by the European Commission. This study aimed to develop methods to detect their residues in muscle samples as a means of checking for the use of these drugs during the rearing of broiler chickens. When fed growth-promoting doses for 6 days, spiramycin (31.4?µg?kg?1), tylosin (1.0?µg?kg?1), QCA (6.5?µg?kg?1), DCBX (71.2?µg?kg?1) and MQCA (0.2?µg?kg?1) could be detected in the muscle 0 days after the withdrawal of fortified feed. Only spiramycin could consistently be detected beyond a withdrawal period of 1?day. All analytes showed stability to a commercial cooking process, therefore raw or cooked muscle could be used for monitoring purposes.  相似文献

This trial reports comparative drug residual concentrations in muscular tissue obtained from various anatomical locations after subcutaneous administration of ivermectin (IVM) to sheep and topical treatment with doramectin (DRM) to calves at recommended therapeutic dose rates. Seven muscle samples from different anatomical locations (rhomboideus, supraspinatus, semitendinosus, gluteus medius, longissimus dorsi thoracis, intercostales and diaphragma) were collected at several post-treatment sampling times. Samples were frozen at–20°C until analyzed by HPLC. The highest IVM residual concentrations in muscular tissue from the different locations were found at 15 days post-treatment in sheep. Although the highest IVM mean concentrations were measured at 15 (16.8?±?5.17 ng g?1) and 20 (10.5?±?4.06 ng g?1) days post-administration in the intercostales muscles, at 30 days post-administration, the IVM concentration in this location was similar to that measured in the rhomboideus and diaphragma muscles. DRM residual concentrations were quantified in muscular tissue from all anatomical locations after topical administration to calves. Maximum residue level was observed at 10 days post-treatment in all anatomical sites. The diaphragma muscle showed the highest DRM residue levels at 2 (22.0?±?4.35 ng g?1), 5 (45.2?±?3.78 ng g?1) and 10 (57.9?±?9.57 ng g?1) days post-treatment in calves. These results demonstrated that the pattern of residue depletion from muscular tissue may differ according to its anatomical locations and/or physiological role. This should be considered in implementing residue control strategies in meat safety assurance for human consumption.  相似文献

The aim of this study was investigate risk factors as possible causes for bruising and high muscle pH under commercial operating conditions in Colombia. Data was recorded for 86 journeys referring to 1179 animals. Carcasses were analyzed in terms of muscle pH and bruises (site, size, severity and shape). Our results indicate that truck load density, stops during transportation of cattle and the lairage time at the plant increased the risk of bruises appearing on carcasses. A lairage time of 18 to 24 h at the plant increased the prevalence of bruises 2.1 times compared to lairage periods of between 12 and 18 h. Furthermore, intermittent stops during transit are a risk factor for the increase in the incidence of bruises. However, the transport time (up to 4 h) was not related to the presence of bruises and high muscle pH. Finally, steers were found to have less risk of presenting a high muscle pH.  相似文献

目的 探究贮藏期间,不同温度下(4、15、25和37℃)即食中华管鞭虾肌肉品质变化情况,并构建即食中华管鞭虾的货架期模型。方法 以即食中华管鞭虾为研究对象,测定不同温度下虾仁肌肉中挥发性盐基氮(total volatile basic nitrogen, TVB-N)含量、菌落总数、硫代巴比妥酸(thiobarbituric acid, TBA)值、色差、pH、持水力和感官评分变化,以虾仁肌肉TVB-N构建货架期模型。结果 随着贮藏时间的延长,不同温度下贮藏的即食中华管鞭虾肌肉TVB-N含量、菌落总数、TBA值和b*值均呈上升趋势;肌肉pH呈先下降后上升趋势;肌肉L*值和感官评分呈下降趋势,且贮藏温度越高,即食中华管鞭虾虾仁肌肉品质劣化越快。此外,受贮藏温度影响,4和15℃贮藏的虾仁肌肉持水力呈先上升后下降的趋势,而25和37℃贮藏虾仁肌肉持水力呈下降趋势。采用Pearson相关系数分析,确定了TVB-N含量和菌落总数为虾仁肌肉品质变化的关键性因子,其变化特征符合一级动力学模型。Arrhenius方程结果显示,虾仁TVB-N值的拟合精度更高,用TVB-N值建立货架期模型结果更为准确。通过模型验证发现,以虾仁肌肉TVB-N含量建立的货架期模型能够较为准确的预测其货架期。结论 贮藏温度升高会加速即食中华管鞭虾品质的劣化。4~37℃贮藏时,以虾仁肌肉TVB-N含量建立的货架期模型可较为准确地预测其货架期。  相似文献

Using full‐cycle cultured Pacific bluefin tuna (BW: 33.5 ± 2.7 kg, cultured for about 33 mo), the physical/ chemical composition and histological properties of the cephalal parts of the dorsal ordinary muscles (DOMs) and ventral ordinary muscles (VOMs) were investigated during chilled storage at 4 °C for 69 h. VOM showed high fat content compared with DOM. The breaking strength of DOM increased up to 33 h but decreased thereafter, whereas VOM decreased gradually after 15 h. The pH and glycogen content of DOMs and VOMs decreased gradually after 9 h. The met‐myoglobin (met‐Mb)% and K‐value of DOMs and VOMs increased gradually during storage. Extension of intercellular spaces of DOM was observed by LM during storage. The abundant quantity of glycogen granules that accumulated around the myofibrils of DOM was confirmed by TEM to decrease during storage (especially, from 15 h).  相似文献

The prostate is a mammalian gland that shows a complex process of organogenesis. Here, a morphological study to characterize the organogenesis of the ventral prostate lobe in male gerbils was conducted. The urogenital sinus (UGS) was dissected out and processed for paraffin embedding. Histological sections were subjected to cytochemical, immunofluorescence, immunohistochemical, and three‐dimensional reconstruction techniques. We found that the first ventral buds emerged from the ventral urethral epithelium between the days 20 and 21 of prenatal life, reaching the ventral mesenchymal pad and initiating the branching process on the first day of postnatal life. The buds presented a V‐shaped elongation, suggesting that the smooth muscle layer (SML) plays an important role during budding events. Indeed, whereas the androgen receptor (AR) was preferentially found in the UGS mesenchyme (UGM), estrogen receptor alpha (ERα) was localized in both the UGM and in the emerging buds. This study characterized the morphological aspects of the budding process in a different rodent from rat and mice, serving as a new model for future studies on developmental biology of the prostate.
