Injera from tef substituted with two flaxseed forms at 3%, 6% and 9% and control injera showed substitution had a significant effect on injera proximate, energy, titratable acidity (TA), total phenolics (TP) contents and sensory acceptability. Flaxseed forms had influence on moisture, fibre, total carbohydrate (TC) and TA. With 9% flour and whole flaxseed substitution, percentage energy, moisture, ash, crude protein, fibre and TA increase were 3.5, 27.3, 25.9, 20.4, 114.3 and 10.1, respectively. TC and pH were high for control. In all injera samples, condensed tannins and free fatty acid were insignificant. With an increase in the flaxseed substitution, most sensory acceptance increased, whereas injera eyes and colour decreased and appeared superior for control (100% tef injera). The 9% flaxseed‐substituted injera showed good proximate nutritional and energy contents of functional potential of high in dietary fibre, alpha linolenic acid, lignans, proteins and TP of anti‐oxidant nature.  相似文献

BACKGROUND: Condensed tannins in sorghum are powerful antioxidants, beneficial for health. However, tannin sorghums are believed to be unpalatable. The objective was to determine the influence of 6‐n‐propylthiouracil (PROP) taster status on consumer acceptability of food from tannin sorghums. Consumers (n = 194) classified by PROP taster status (super, medium and non) evaluated the appearance, flavour, overall liking and texture of sorghum rice from two tannin‐free sorghums, PAN 8564 and Phofu, and two tannin sorghums, PAN 3860 (82 g catechin equivalents (CE) kg?1) and NS 5511 (18 g CE kg?1), with high antioxidant activity. RESULTS: The PROP tasters could distinguish differences among the sorghum cultivars varying in tannin content levels, finding PAN 3860 less acceptable than the other sorghums. The non tasters preferred all the cultivars equally, presumably because they could not detect taste (bitter and astringent) differences between the sorghums. With the exception of appearance, tannin sorghum NS 5511 was generally equally preferred by PROP tasters to tannin‐free sorghums. CONCLUSION: There appear to some tannin sorghums that are palatable, even to PROP tasters, because the level of tannins is below a sensitivity threshold (ca 20 g CE kg?1). Kinder Training is a play-based professional development training model designed for early elementary school teachers (kindergarten through Grade 2). The goals of Kinder Training include strengthening the teacher-child relationship, developing students’ adaptive skills, increasing academic engagement, and enhancing teachers’ classroom management skills (White et al., 1997). There has been limited research on the effectiveness of Kinder Training, but studies that have been conducted showed promising results. The current study utilized a qualitative approach to examine the acceptability, integrity, and perceived effectiveness of Kinder Training. Findings indicated that the elementary school teachers perceived the Kinder Training model to be acceptable and effective (e.g., improved classroom management skills, improved student behavior, and enhanced teacher-child relationships). In addition, observations were used to document that the intervention was implemented with integrity. Future research may further examine the cross-relationships among acceptability, integrity, and effectiveness of Kinder Training interventions. This study investigated the impact of logistical resources on the acceptability of student assistance team consultation to school staff. Elementary and middle school staff (N = 113) completed a measure of the acceptability of prereferral intervention team procedures while also rating the importance of five logistical supports for effective team functioning. A multiple regression analysis showed that the team process was more acceptable to staff who perceived these teams to be effective for helping students and to those who identified three supports for effective teaming: sufficient staff training in team procedures, adequate numbers of staff, and ample time. Results are discussed in the context of prior investigations, directions for future research, and implications for school practice.
