Polymethoxyflavones (PMFs) extracted from citrus peel exhibit potent anti-cancer activity, but are highly hydrophobic molecules with poor solubility in both water and oil at ambient and body temperature, which limits their bioavailability. The possibility of encapsulating PMFs within nanoemulsion-based delivery systems to facilitate their application in nutraceutical and pharmaceutical products was investigated. The influence of oil type (corn oil, MCT, orange oil), emulsifier type (β-lactoglobulin, lyso-lecithin, Tween, and DTAB), and neutral cosolvents (glycerol and ethanol) on the formation and stability of PMF-loaded nanoemulsions was examined. Nanoemulsions (r < 100 nm) could be formed using high pressure homogenization for all emulsifier types, except DTAB. Lipid droplet charge could be altered from highly cationic (DTAB), to near neutral (Tween), to highly anionic (β-lactoglobulin, lyso-lecithin) by varying emulsifier type. PMF crystals formed in all nanoemulsions after preparation, which had a tendency to sediment during storage. The size, morphology, and aggregation of PMF crystals depended on preparation method, emulsifier type, oil type, and cosolvent addition. These results have important implications for the development of delivery systems for bioactive components that have poor oil and water solubility at application temperatures.  相似文献

In this study, a total of 100 fermented food products including dairy (Lben, Rayeb, Rigouta, and Jben) olive and vegetable products, harvested in Northwestern Tunisia, were investigated for the presence of Enterococcus spp. Our results showed high levels of contamination with Enterococcus spp., identified according to standard bacteriological, biochemical and phenotypic criteria. 143 isolates were recovered; E. faecium (46.15%) was the predominant species, followed by E. faecalis (27.27%), E. casseliflavus (12.58%), E. durans (8.39%) and E. mundtii (5.59%). None of the isolates showed acquired resistance againts clinically relevant drugs used for enterococcal infections treatment in human medicins, and no haemolytic activity was demonstrated. Furthermore, over 50% of the isolates within each species exhibited antilisterial bacteriocin production. Further data are needed to enhance understanding of bacteriocin production of enterococci in fermented food products as well as the potential risks to quality and safety, including possible transmission of antibiotic resistant organisms to human consumers.  相似文献

BackgroundHalal products are the only permissible products that can be consumed by Muslim population all over the world. Halal certification process is becoming critical due to processing advancements and conflict of opinions among various Islamic schools of thought. Multiple Halal certification standards are framed by regulatory bodies in different countries, but there is inconsistency about few issues among these standards. One such conflict is Istihalah, which deals with the alteration in physicochemical nature of food and render a non-permissible food (Haram) to an acceptable form (Halal) for Muslims. There is dire need to understand the grey areas, such as the concept of Istihalah, to develop unanimous International Halal Standards complying with the rulings of all Islamic schools of thought.Scope and approachTo understand the Istihalah, scientific and Islamic literature from various schools of thought, has been reviewed. The primary objective of this study is to explain the concept of Istihalah with respect to the physicochemical alteration of food matrix and rulings of various Islamic schools, leading to generate a consensus for international Halal certification standards.Key findings and conclusionsIstihalah is an agreed concept among Islamic schools of thought but the definition for the extent of such alteration (to be considered as Istihalah) is not agreed. This concept should not be used for Halal Certification as it may create ambiguous situation for the global acceptability and credibility of a certificate.  相似文献

Acrylamide (AAm) is a carcinogenic chemical that can form in thermally processed foods by the Maillard reaction of glucose with asparagine. AAm can easily be formed especially in frequently consumed chips and cereal-based foods depending on processing conditions. Considering these properties of AAm, a new, simple and green method is proposed for the extraction of AAm from thermally processed food samples. In this study, an ionic liquid (1-butyl-3-methylimidazolium tetrafluoroborate, [Bmim][BF4]) as extractant was used in the presence of a cationic phenazine group dye, 3,7-diamino-5-phenylphenazinium chloride (PSH+, phenosafranine) at pH 7.5 for the extraction of AAm as an ion-pair complex from selected samples. Under optimum conditions, the analytical features obtained for the proposed method were as follows; linear working range, the limits of detection (LOD, 3Sb/m) and quantification (LOQ, 10Sb/m), preconcentration factor, sensitivity enhancement factor, sample volume and recovery% were 2.2–350 µg kg?1, 0.7 µg kg?1, 2.3 µg kg?1, 120, 95, 60 mL and 94.1–102.7%, respectively. The validity of the method was tested by analysis of two certified reference materials (CRMs) and intra-day and inter-day precision studies. Finally, the method was successfully applied to the determination of AAm levels in thermally processed foods using the standard addition method.  相似文献

BackgroundFunctional foods are a fastest growing sector of the food industry. The development of functional foods comprising omega-3 fatty acids and probiotic bacteria, through complex coacervation process is an emerging area of research and product development.Scope and approachWe reviewed relevant literature concerning the use of complex coacervation in microencapsulation, focusing primarily on the inclusion of probiotic bacteria and omega-3 oils into a single delivery format. This review covers advantages and disadvantages of the complex coacervation process to microencapsulate bioactive ingredients, viability of probiotic bacteria and oxidative stability of omega-3 oil during the complex coacervation process, the bioaccessibility of omega-3 oil and probiotic bacteria during simulated gastrointestinal conditions and in-vivo testings.Key findings and conclusionsThe review describes the advantages of co-encapsulation using complex coacervation followed by spray drying. It also describes the technological hurdles that need to be resolved for further development of industrial applications of co-encapsulation of probiotic bacteria and omega-3 lipids. The co-encapsulation concept has been widely used in pharmaceutical delivery systems, but is a relatively new concept in food ingredient stabilisation and delivery. There is a commercial need of co-encapsulation of multiple bioactive ingredients within a single microcapsules, due to decreased cost and enhanced product quality. Complex coacervation has been shown to be a useful method for the co-encapsulation of multiple unstable bioactive ingredients. Although in-vitro evaluation deliver useful bioavailability information, additional in-vivo and clinical trials are needed to determine the efficacy of bioactive release, particularly for microcapsules containing multiple bioactive ingredients.  相似文献

The trans as well as the cis C16:1 isomer profiles were established in 43 ewe milk fats supplemented with different dietary lipid sources representative of the variety of unsaturated fatty acids found in nature such as olive, sunflower, linseed and fish oils. Fractionation by silver-ion solid phase extraction facilitated a rapid separation of the trans, cis and saturated FA before gas chromatography analysis took place. C16:1 isomers with a double bond in positions 7, 9 and 13 in the cis group and 8 and 9 in the trans fraction were the most abundant. Dietary lipid supplementation produced a noticeable increase in the total trans C16:1 content and elevated correlations were observed between trans-8 C16:1 and trans-10 C18:1 as well as trans-9 C16:1 and trans-11 C18:1. These results support the idea that altering the trans C18:1 profile affects trans C16:1 isomer composition consistent with the β-oxidation products from the trans C18:1 isomers.  相似文献

There is a paucity of data in respect of the nutritional quality of complementary foods for infants and young children aged between 6 and 12 months. The primary objective of this study was to examine nutritive values of such complementary infant food on the UK market in order to ascertain their suitability relative to dietary guidelines for the 6–9 months age group. Quantitative analyses were conducted on eight different products representing four popular brands (meat and vegetable based) currently on sale in the UK. Eight major mineral and trace elements, namely: calcium, copper, magnesium, iron, zinc, potassium, sodium and selenium were measured by ICP–OES and ICP–MS. The results of these studies were referenced to the Recommended Nutrient Intake (RNI) values for 6–9 months old children, and a menu of entire daily intake of minerals and trace elements was composed taking into consideration the nutrient and energy intake from milk consumption. Based on these comparisons, all the food samples studied in this work contained less essential minerals than expected from the RNI values except for potassium in meat and vegetable based recipes. These results suggest that commercial complementary infant foods on the UK market may not contain the minimum levels of minerals required for the labelling declaration of micronutrient content (Commission Directive 2006/125/EC). This provides opportunities and scope for product optimisation to improve their nutritive value.  相似文献

Salt is one of the most widely used additives in food industries because of its low cost and varied properties. It has a preservative and antimicrobial effect as a direct consequence of the capacity of sodium chloride to reduce water activity values. In addition, sodium chloride is a flavour enhancer as a consequence of its effect on different biochemical mechanisms. It also has flavour enhancing effects from reducing or enhancing the enzymatic activity of some enzymes responsible for the development of different organoleptic parameters. Trends in sodium chloride use in food industries point to salt replacement or reduction by means of the use of sodium chloride substitutes such as KCl or phosphates; flavour enhancers and the optimisation of the physical form of salt. This trend has arisen as a result of the greater awareness of the negative effects of excess dietary intake of sodium, which has been linked to hypertension and consequently an increased risk of cardiovascular disease. The average total daily sodium intake per individual in developed countries is 4–5 g of Na, which is up to 25 times greater than the minimum adult requirement.  相似文献

Linseed oil, also known as flaxseed oil, is obtained from the dried, ripened seeds of the flax plant (Linum usitatissimum). The oil is obtained by pressing, sometimes followed by solvent extraction supported by a refining process. Linseed oil is an edible oil that is in demand as a nutritional supplement, as a source of α‐linolenic acid an n‐3 fatty acid. The aim of this work was to investigate: (1) the influence of the corn crisp extrusion process on the degradation of fatty acids in linseed oil (LO) and some preparations obtained from the linseed oil such as ethyl ester (EE) and free fatty acids (FFA) added to the corn in order to increase the nutritional value of the crisps, (2) influence of the oil and two fatty preparations obtained from it on the quality of corn crisps, (3) interaction of the lipid fraction with starch. The extrusion process did not degrade the fatty acids significantly. Expansion ratio obtained in the corn crisp extrusion process decreased from 620 % down to 153 %, the size of pores/thickness of the starch–protein walls forming the structure of the extruded product decreased from 10 μm down to 4 μm, the hardness of the crisps increased from 20 to 75 N, and number of lipid–starch complexes increased with rising polarity of the lipid fraction. FFA were complexed mostly by starch (about 90 %), to a lesser degree by EE (about 60 %) and to the least extent by triacylglycerols (about 10 %). The studies performed under industrial conditions using the single screw extruder for the production of corn crisps with the application of standard parameters of the extrusion process indicated that the addition of a mass of 5 % of the various lipids (triacylglycerols of linseed oil, ethyl esters and fatty acids obtained from linseed oil) to corn grits prior to the extrusion process significantly affect the quality of corn crisps.  相似文献
