This review of the literature on varietal change in sub-Saharan Africa looks in detail at adoption of new varieties of bananas in Uganda, cassava in Nigeria, potato in Kenya, sweetpotato in Uganda and yams in Côte d’Ivoire. The review explored three hypotheses about drivers of varietal change. There was a strong confirmation for the hypothesis that insufficient priority given to consumer-preferred traits by breeding programmes contributes to the limited uptake of modern varieties (MVs) and low varietal turnover. Lack of evidence meant the second hypothesis of insufficient attention to understanding and responding to gender differences in consumer preferences for quality and post-harvest traits was unresolved. The evidence on the third hypothesis about the informal seed system contributing to slow uptake of MVs was mixed. In some cases, the informal system has contributed to rapid uptake of MVs, but often it appears to be a barrier with inconsistent varietal naming a major challenge.  相似文献

For many of the developing world's poorest farmers and food-insecure people, roots, tubers, bananas and plantain crops (RTBs) serve as a critical source of food, nutrition and cash income. RTBs have been particularly important in areas where local agri-food systems are under stress. Under such circumstances, growers, processors and traders often see opportunities to improve food security or increase their incomes with those crops due to shifting tastes and preferences for food and non-food products. Since the early 1990s, cassava output surged in sub-Saharan Africa, while potato production expanded rapidly in Asia. RTBs are consumed by over three billion people in developing countries with a market value of US$ 339 billion. This paper analyses the major changes in production, utilisation and trade of RTBs over the last six decades, assesses estimates of their future trajectory and offers recommendations so that they might achieve their full potential.  相似文献

ABSTRACT: Pumpable purees from purple‐flesh sweetpotatoes (PFSP) were subjected to microwave heating using a 60 kW, 915 MHz continuous flow system, followed by aseptic packaging in flexible containers to obtain a shelf‐stable product. Initial test runs were conducted using a 5 kW 915 MHz microwave system to measure dielectric in‐line properties and examine the puree temperature profiles. The results demonstrated uniformity in heating of the puree at sterilization temperatures (>121 °C), and the dielectric constants and loss factors were within the range of published values for orange‐fleshed sweetpotato purees. The pilot‐scale test runs in a 60 kW microwave unit produced shelf‐stable puree packages stable at room temperature. Polyphenolic content of the PFSP purees were evaluated and the results showed that while total phenolics increased (5.9%) and total monomeric anthocyanins slightly decreased (14.5%) with microwave application, antioxidant activity determined by 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) radical scavenging activity and oxygen radical absorbance capacity (ORAC) assays did not significantly change as a result of microwave processing. Color values showed that microwave‐processed samples differed from fresh puree in saturation and hue angle, but not in overall color change. PFSP purees increased in gel strength when microwave processed, packaged, and stored, but the gel could be easily disrupted into flowable purees. Overall, high‐quality retention can be obtained by microwave processing and aseptic packaging of PFSP purees so that they can be used as functional food ingredients.  相似文献

ABSTRACT: Extruded ready-to-eat breakfast cereals (RTEBCs) were made from varying levels of sweetpotato flour (SPF), whole-wheat bran (WWB), and extrusion cooking. Moisture, protein, and ash contents were lower in the 100% SPF than the 100% WWB. Carbohydrate, β-carotene, and ascorbic acid contents were higher in the 100% SPF. Fat, thiamin, riboflavin contents, bulk densities, and the water absorption index were similar for the cereals. However, the expansion ratio was highest in the 100% SPF cereal. The 100% WWB had the lightest color and most fibrous morphology. Extruded RTEBC containing 100% SPF and 75%/25% SPF/WWB were well-liked and acceptable to sixth graders attending an elementary school in Auburn, Alabama, but the 100% WWB was unacceptable.  相似文献

Noodles were prepared with sweetpotato flour or puree and defatted soy flour (DSF) added to all-purpose wheat flour. These ingredients provided β-carotene for vitamin A and protein. Test samples were compared with control noodles. Combinations of sweetpotato and DSF increased protein, ash and total dietary fiber and decreased fat and carbohydrates. Sweetpotato contributed orange color and β-carotene, while DSF reduced lightness and added no β-carotene. Both ingredients increased cooking loss—10.4% from sweetpotato to 12.0% from sweetpotato and DSF combinations. Sweetpotato increased color acceptability with no change in flavor or overall acceptabilities. Sweetpotato decreased stickiness and DSF had no effect on acceptability.  相似文献

Sweetpotato storage roots are subjected to several forms of post harvest spoilage in the tropical climate during transportation from farmers' field to market and in storage. These are due to mechanical injury, weight loss, sprouting, and pests and diseases. Sweetpotato weevil is the single most important storage pest in tropical regions for which no control measures or resistant variety are yet available. Several microorganisms (mostly fungi) have been found to induce spoilage in stored sweetpotatoes. The most important among them are Botryodiplodia theobromae, Ceratocystis fimbriata, Fusarium spp., and Rhizopus oryzae. The other less frequently occurring spoilage microorganisms include Cochliobolus lunatus (Curvularia lunata), Macrophomina phaseolina, Sclerotium rolfsii, Rhizoctonia solani, Plenodomus destruens. Microbial spoilage of sweetpotato is found associated with decrease in starch, total sugar, organic acid (ascorbic acid and oxalic acid) contents with concomitant increase in polyphenols, ethylene, and in some instances phytoalexins. Several methods are used to control microbial spoilage. Curing to promote wound healing is found as the most suitable method to control microbial spoilage. Curing naturally occurs in tropical climates where mean day temperature during sweetpotato harvesting season (February-April) invariably remains at 32-35 degrees C and relative humidity at 80-95%. Sweetpotato varieties varied in their root dry matter content, and low root dry matter content attributed for their high curing efficiency. Curing efficiency of varieties also differed in response to curing periods. Fungicide treatment, bio-control, gamma irradiation, hydro warming, and storage in sand and saw dust were found to have intermediate impacts in controlling spoilage and enhancing shelf life of sweetpotato roots. Breeding program has to be chalked out to develop new varieties suitable to curing under tropical conditions in addition to developing varieties having multi-spectrum resistance to major post harvest rot pathogens and sweetpotato weevils.  相似文献

The objectives of this research were to characterize the mechanical and barrier properties of sweetpotato starch (SPS)-based film (SPSF) and to investigate the antimicrobial activity of SPSF containing origanum oil (OG) against foodborne pathogenic bacteria. The SPSF was fabricated with the SPS extracted from commercial sweetpotato roots. Tensile strength (TS), percent elongation at break (E), and water vapor permeability (WVP) were determined to characterize the SPSF fabricated with selected SPS concentrations, plasticizers, and the concentrations of plasticizers. The agar diffusion assay was used to determine the antimicrobial activity of SPSF containing selective concentrations of OG against Salmonella Enteritidis, Escherichia coli O157:H7, and Listeria monocytogenes. The SPSF fabricated with 2.5% SPS exhibited the greatest TS (4.58 MPa). The TS, E, and WVP of SPSF plasticized with 40% sorbitol exhibited 7.96 MPa, 77.92%, 0.212 ng m/m(2) S Pa, respectively. Therefore, the SPSF fabricated with 2.5% SPS and 40% sorbitol was determined as the optimum film. The antimicrobial activity of the SPSF containing OG increased as the concentration of OG increased. And the SPSF containing OG exhibited greater inhibitory effects against the gram-negative bacteria such as S. Enteritidis and E. coli O157:H7 than the gram-positive L. monocytogenes. The greatest antimicrobial activity was observed against S. Enteritidis when the SPSF containing 2% OG was applied, and the maximum square of zone width was 18.43 mm(2).  相似文献
