Application of multiple sensory evaluations to produce fermented beverages made from sole whey using Kluyveromyces marxianus

Various fermented whey-based beverages have been developed to reduce waste. However, approaches to increase the preference of whey-based beverages are required because of the low sensory acceptability of whey. Here, we identified the better starting material (whey type), between raw whey (RW) and demineralised whey (DMW), and determined the optimal initial concentration using multiple sensory evaluations to develop acceptable fermented beverages made from sole whey with pure cultured Kluyveromyces marxianus (i.e. without additional ingredients and processing methods). Acceptance tests showed that fermented beverages made from DMW were superior to RW as the starting material. The amounts of ethanol produced were 5.0%, 7.6% and 9.5% v/v from the different initial DMW concentrations of 10%, 15% and 20% w/v, respectively. We observed a significant positive correlation (r_s = 0.32, P < 0.05) between the assessment attributes, strength of taste as alcohol beverage and overall acceptability, indicating that higher concentrations of DMW yielded a more desirable product.     

Eu@C86 isomers: Calculated relative populations

Abstract

Relative populations of four energy-lowest IPR (isolated-pentagon-rule) isomers of Eu@C₈₆ are computed using the Gibbs energy based on characteristics from density functional theory calculations (M06-2X/3-21G?～?SDD entropy term, M06-2X/6-31G*～SDD or B2PLYP(D)/6-31G*～SDD energetics). The calculations confirm that the recently isolated Eu@C₁(7)-C₈₆ species is a major isomer in a relevant temperature region. Relationship to the empty C₈₆ cages is discussed, too.

Performance Impacts of Web-Enabled Retail Services: An Empirical Study

Prior studies suggest that the growth in online retail is attributed to the effective implementation of media-rich and interactive services and functionalities that help overcome the para-social distance between customers and online retail stores. However, few studies have offered empirical evidence that demonstrates the specific impacts these interactive services and functionalities have on the financial performance of online retailers. Using data on the operations and financial performance of the top 500 online retailers in the U.S., this study investigates the impact that website features and functionalities have on sales performance and other intermediate performance measures. Our findings suggest that website features and functionalities have a significant direct impact on sales as well as an indirect impact through intermediate performance measures. Furthermore, our model identifies the specific performance measures that each website feature targets to improve.     

Continuous Improvement Methodology Applied to United Kingdom Academic Library Websites Via National Survey Results

This article analyzes the possibilities of applying Continuous Improvement principles to the management and maintenance of academic library websites. Current practice is mapped onto Continuous Improvement principles, with evidence distilled from a United Kingdom national survey of academic library web practitioners. The survey data informs a website organizational framework and operational model. The framework describes the setting within which library websites are managed, while the model focuses on library specific aspects to the management and development of their site.
