Commercial food grade enzymes (Neutrase, calf lipase and NaturAge) were incorporated into cheese at various concentrations and ripened at 7° and 13°C. Gas chromatographic analysis indicated that free fatty acid (FFA) production increased significantly (p<0.05) with lipase and high level NaturAge. Neutrase had little effect on FFA production but showed synergistic effects with lipase. The short-chain FFA profiles were similar among control, Neutrase- and NaturAge-treated cheeses. Significant correlations (p<0.05) between C8 and C14, C16 or C18:1 and total free fatty acids were observed in all tested samples. Total concentrations of C4 and C6 may be a good indicator of flavor development during cheese ripening. Cheese with a medium level of NaturAge, ripened at 13°C for 4 wk, showed profiles of FFA similar to those of the control cheese ripened at 7°C for 12 wk.  相似文献

Structural changes in β-isotactic polypropylene (β-iPP) during the heating were studied by means of differential scanning calorimetry and real-time in situ X-ray diffraction using a synchrotron source. Crystalline phase transformation and the memory effect caused by residual nuclei of α-iPP were observed during the heating of β-iPP. The memory effect observed in β-iPP during heating and crystallization is believed to be due to the existence of locally ordered α-from in the melt. The effect of local α-form order was probed by studying the behavior under heating of samples with a range of thermal histories. Samples were heated above the equilibrium melting temperature of iPP to remove all residual local order and the memory effect associated with this local order. The samples crystallized isothermally at different temperatures exhibited a significantly different melting and phase transformation behavior during heating. β-iPP is found to be an excellent material for the study of polymorphism, phase transformations, and characteristic memory effects in semicrystalline polymers.  相似文献

Since the damages caused by disasters associated with climate anomalies and the diversification of the social structure increase every year, an efficient management system associated with a damage assessment of the areas vulnerable to disasters is demanded to prevent or mitigate the damages to infrastructure. The areas vulnerable to disasters in Busan, located at southeastern part of Korea, were estimated based on historical records of damages and a risk assessment of the infrastructure was performed to provide fundamental information prior to the establishment of the real-time monitoring system for infrastructure and establish disaster management system. The results are illustrated by using geographical information system(GIS) and provide the importance of the roadmap for comprehensive and specific strategy to manage natural disasters.  相似文献

IPTV, a technological convergence that combines communication and broadcasting technologies, delivers customized, interactive TV content and other multimedia information over wired and wireless connections. Providing secure access to IPTV services calls for authentication, without proper and secure authentication mechanisms, an individual impersonating a subscriber could steal a service. This paper proposes a new authentication protocol to authenticate IPTV users. The authors based the proposed protocol, a hybrid authentication protocol providing lightweight, personalized user authentication, on RFID (radio-frequency identification) and USIM (Universal Subscriber Identity Module) technologies. In the proposed protocol, USIM performs highly personalized authentication, and the authenticated subscriber’s RFID tags can have a temporary authority to execute authentication. These RFID tags become Agent Tags authorized to authenticate subscribers. Agent Tags identify and authenticate themselves to RFID readers in the set-top box, thus, simplifying the authentication process.  相似文献

A context-aware application in the pervasive computing environment provides intuitive user centric services using implicit context cues. Personalization and control are important issues for this class of application as they enable end-users to understand and configure the behavior of an application. However most development efforts for building context-aware applications focus on the sensor fusion and machine learning algorithms to generate and distribute context cues that drive the application with little emphasis on user-centric issues. We argue that, to elevate user experiences with context-aware applications, it is very important to address these personalization and control issues at the system interface level in parallel to context centric design. Towards this direction, we present Persona, a toolkit that provides support for extending context-aware applications with end-user personalization and control features. Specifically, Persona exposes a few application programming interfaces that abstract end-user customization and control mechanisms and enables developers to integrate these user-centric aspects with rest of the application seamlessly. There are two primary advantages of Persona. First, it can be used with various existing middlewares as a ready-to-use plug-in to build customizable and controllable context-aware applications. Second, existing context-aware applications can easily be augmented to provide end-user personalization and control support. In this paper, we discuss the design and implementation of Persona and demonstrate its usefulness through the development and augmentation of a range of common context-aware applications.  相似文献

In this paper, we have first reviewed the state-of-the-art technologies related to DOCSIS 3.0 high-speed data transmission system and also looked at current trends in the next generation Gbps transmission technology, which is one of key technology for ubiquitous high performance multimedia service environments. In this paper, the problem of outsourcing the selective encryption of a medical image to cloud by resource-constrained devices such as smart phone is addressed, without revealing the cover image to cloud using steganography. In the proposed framework, the region of interest of the medical image is first detected using a visual saliency model. The detected important data is then embedded in a host image, producing a stego image which is outsourced to cloud for encryption. The cloud which has powerful resources, encrypts the image and sent back the encrypted marked image to the client. The client can then extract the selectively encrypted region of interest and can combine it with the region of non-interest to form a selectively encrypted image, which can be sent to medical specialists and healthcare centers. Experimental results and analysis validate the effectiveness of the proposed framework in terms of security, image quality, and computational complexity and verify its applicability in remote patient monitoring centers.  相似文献

The pull-out capacities for soil nailing systems comprising of one single 29 mm diameter (type A) and four 16 mm diameter (type B) rebars with grouted cement were examined. A field test and numerical analysis for the type A and type B systems were carried out to investigate the pull-out capacities and the slope stability reinforcement efficiency in soil and rock slopes. The results of the pull-out tests show the mobilized shear force and load transfer characteristics with respect to soil depth. The load-displacement relationship was examined for both type A and type B systems. Slope stability analyses were carried out to study the relationships between soil and nail reinforcement and bending stiffness as well as combined axial tension and shear forces. Factors of safety were calculated in relation to the number of nails and their outside diameters. Both soil and rock slopes were included in this evaluation.  相似文献
