Summary Current texture-measuring instruments and a recently developed measuring method (two-dimensional measuring of the force necessary to spread a sample) were compared in measuring the spreadability of processed cheese. How far subjective assessment by a qualified panel correlates with the instrumental results in determining spreadability and firmness was also investigated. Samples of processed cheese with various consistencies were measured by an Universal testing machine, a buttermeasuring instrument (DIN 10331), a rotational-type rheometer (oscillation mode) and a two-dimensional force measuring instrument. The evaluation of the results shows that an oscillating rheometer is most suitable to measure the spreadability of processed cheese; the correlation coefficient (r) between the dynamic Weissenberg number, calculated from parameters of the rheometer, and the subjective judgement by the panel wasr=0.91. For the determination of firmness the two-dimensional force measuring instrument is most suitable. The correlation coefficient between the parameter tangential energy (S t) and the sensorially evaluated firmness wasr=0.95.
Vergleich verschiedener Bestimmungsmethoden für die Streichfähigkeit und Festigkeit von Schmelzkäse
Zusammenfassung Verschiedene gebräuchliche Meßinstrumente und ein neu entwickeltes Gerät zur zweidimensionalen Messung der Kräfte, die zum Ausstreichen einer Probe erforderlich sind, wurden vergleichend zur Charakterisierung der Streichfähigkeit von Schmelzkäse erprobt. Dabei wurde auch geprüft, inwieweit die subjektiven Beurteilungen eines qualifizierten Prüferpanels mit den Meßwerten für Streichfähigkeit und Festigkeit korrelierten. Gemessen wurde mit einer Universalprüfmaschine, dem Butterprüfgerät (DIN 10331), einem Rotationsrheometer und mit dem zweidimensional registrierenden Kraftmeßgerät. Dabei zeigte sich, daß das Rheometer im oscillierenden Modus die Streichfähigkeit am besten zu charakterisieren vermag. Die Korrelation zwischen den Rheometerwerten, berechnet als dynamische Weissenbergzahl, und den sensorisch ermittelten Werten für die Streichfähigkeit betrugr=0,91. Zur Bestimmung der Festigkeit ist das zweidimensional registrierende Kraftmeßgerät am besten geeignet, was sich in einem Korrelationskoeffizienten vonr=0,95 zwischen dem ParameterS t und den im Sensoriktest ermittelten Werten für dieFestigkeit ausdrückt.

A modified Krukenberg operation was used in 25 patients to reconstruct their limb function. We modified the operation as follows: (1) only pronator teres and supinator are preserved as motor muscles, (2) the flexor carpi ulnaris is included in the ulnar ray flap and the brachioradialis in the radial ray flap, and (3) the length of the forearm trunk is kept 12 to 15 cm. A field model code, JASMINE, has been adopted to calculate ceiling jet flows caused by plumes from unsteady fire sources in a large corridor. The idealized fast- and medium-fire energy release rates, obeying thet 2 law for fire growth, were used. The effects of vents were studied by simulating three different configurations: a centrally located vent—that is, a vent directly above the fire source; an eccentrically located vent; and no vent. The results were compared with recent large-scale experiments conducted at the Swedish National Testing and Research Institute (SP) and with results from the computer program LAVENT. Some calculated sprinkler temperatures with three different RTI values are also presented.The present JASMINE simulations agree reasonably well with measured ceiling temperatures and velocities in large-scale tests. In general, the calculated ceiling jet temperatures are slightly overestimated and the velocities slightly underestimated. Also, the layer thicknesses calculated by JASMINE are somewhat thinner than those measured. The ceiling jet theory and present LAVENT results predict very thin layer thicknesses. However, these theories are only valid when wall effects are eliminated. From the present study it can be concluded that CFD models are generally more accurate when used to predict confined and unconfined flows.  相似文献

A laboratory test facility for solar radiation detectors has been built and is in operation at the Aerological Station of the Swiss Meteorological Institute (SAP/SMI). This installation is conceived as a universal test bed for solar radiation exposed meteorological instruments, and consists of a commercially available solar simulator, a laser alignment system, a translation mechanism with instrument mounts, and an adjustable projection mirror. The solar simulator produces a well characterized radiation beam which can be filtered to match the terrestrial or outer space solar spectrum with an irradiance of up to one solar constant (1367 Wm−2). The instrument mounts and a HeNe laser beam provide a precise and easy alignment of the reference and the test instruments in the radiation beam, allowing for incident angles in the range of 15°–75°. The measurement is based on a comparison of the response of an active cavity absolute radiometer PMO6 with the signal of the test instrument.Detailed investigations of the Haenni Solar 111B type heliometer have revealed important irregularities in the sunshine threshold irradiance angular distribution. Measurements performed with and without the protection glass cover prove the exceedingly high threshold values at large declination angles to be a consequence of enhanced reflections due to the incident angle and inhomogeneities in the glass cover.Very satisfactory results have also been obtained on characterization measurements of pyranometers showing the mean values of the responsivity to be within 0.8% of the calibration values measured at the world radiation center (WRC) at Davos.  相似文献

Similarities for Extraversion (E) and Neuroticism (N) scale scores from the Eysenck Personality Inventory were evaluated in 7,144 adult twin pairs, drawn from the population-based Finnish Twin Cohort, as a function of the co-twins' genetic resemblance, gender, age, and the frequency of their social interaction with each other. To separate effects of shared genes from those of shared experience, we performed hierarchical multiple regressions of double-entry data matrices. Results establish the predictive significance of both genetic and experiential influences: Genetic effects remained significant when tested after the effects of social contact were first removed; conversely, for N scores, the effects of social contact remained significant when assessed after genetic influences were first removed. These findings establish genetic variance in major dimensions of adult personality but assign a significant role to common experience as well. The first finding constructively replicates reports by others; the second challenges the widespread assumption that shared experiences have a negligible impact on sibling similarity in adult personality.
