In this study, it is aimed to investigate and evaluate the use of molasses which is a by-product of sugar production as a novel bulking agent in ice cream as a sugar replacer. Sugar beet molasses (75%) and 12 DE maltodextrin (25%) were converted into powder form by spray drying. Spray-dried sugar beet molasses (SDSM) was then used as a substitute of sugar in different ratios (0:100, 25:75, 50:50, 75:25 and 100:0) in the ice cream products. The increased amount of SDSM decreased the overrun, L*, whiteness index (WI) and melting behaviours and increased a*, b*, total phenolic content, consistency and viscosity. Meanwhile, thermal properties have not been affected by the use of SDSM (P < 0.05). The sensory findings have been particularly interesting especially when replacing above 50% sugar with SDSM, aroma, flavour and general acceptability decrease. According to the results of this study, substituting 25% of total sugar with SDSM as a bulking agent can decrease cost of the product and improve total phenolic content and some quality parameters without compromising sensorial properties.  相似文献

The effects of multiple injection molding cycles on the chemical and mechanical properties of PA6/ABS and PA6/PA66/ABS blends are investigated. The chemical structures of both PA6/ABS binary and PA6/PA66/ABS ternary blends do not alter after recycling process. For PA6/ABS binary blend, it is found that the tensile strength, strain at break, elastic modulus, impact strength, flexural strength, and modulus of recycled blend decrease by 6.49%, 15.19%, 21.00%, 9.41%, 7.09%, and 8.25%, respectively, while MFI increases by 23.59% as compared with the virgin blend. After five recycling process for PA6/PA66/ABS ternary blend, the tensile strength, strain at break, and impact strength of recycled blend decrease by 18.00%, 50.80%, and 87.27%, respectively. However, flexural strength and modulus of PA6/PA66/ABS blend increase slightly. For virgin PA6/PA66/ABS blend, MFI value was 7.7 g/10 min and with recycling this value showed an important increase to 31.56 g/10 min after five cycles. © 2014 Wiley Periodicals, Inc. J. Appl. The cell is the smallest unit of living beings, which has structural and functional properties. Almost all cell behaviors are regulated by various intracellular reactions initiated by the signaling. The signaling and the distance between cells influence each other. Thus, cell-location-based modeling and analyzing of histopathological tissues provide important information to the expert. In literature, methods such as distance-based threshold, K-Nearest Neighbor, Voronoi graphs, Delaunay triangulation, and colored graph have been used. However, circular neighborhood relationships of cells have not been considered by any CAD system so far despite of its crucial impact. Thus, we developed the circular neighborhood cell-graph. Histopathological images of liver were classified by using features extracted from T-Distance, K-Nearest Neighbor, Voronoi, Delaunay, and the proposed cell-graph. Then, the classification performances of the methods were compared. Experimental results show that liver tissue images can be classified with accuracy of 95.7% by using the features provided by the proposed cell-graph model.  相似文献

The aim of this study was to develop alginate and zein films containing natamycin, a natural antifungal agent, in order to limit/prevent the mould growth on the surface of kashar cheeses. The films were prepared by casting, and characterized in terms of antimicrobial and mechanical properties (tensile strength, elongation-at-break, and elastic modulus), and their morphology was examined by scanning electron microscopy (SEM). Mechanical properties of the zein films were found to be weaker than the alginate films. SEM analysis indicated that alginate films have a more regular structure than zein films, and a more homogenous distribution was observed at lower concentrations of natamycin. The antifungal activities of both films increased as the natamycin concentration (100, 200, 500, 1000, 2000, and 4000 ppm) increased; however, alginate films exhibited relatively high antifungal activity. The effects of films on the shelf life of kashar cheeses inoculated with Aspergillus niger and Penicillium camemberti were investigated during their storage under refrigerator conditions for 45 days. At high-natamycin concentrations, zein films showed higher antifungal activity against both fungi at the end of the storage period.  相似文献
