裙带菜孢子叶的生物活性物质及其在食品中的应用

裙带菜属于褐藻门植物,营养价值高,是海洋中的经济褐藻之一。人们食用的部分多为其叶与梗,孢子叶是其繁殖器官,因含较多纤维物质,食用口感较差,在加工过程中常作为废料被丢弃,造成资源浪费。研究发现,孢子叶中含有多种生物活性物质,如多糖、多肽、褐藻多酚、岩藻黄素等,具有抗肿瘤、抗炎、抗氧化、降血脂等生理功效,是功能性食品开发的良好原料。文章绍了裙带菜孢子叶生物活性物质的功能特性及提取方法,并对其在食品中的应用进行了分析和展望,以期为裙带菜孢子叶的综合开发利用提供理论参考。

Radial Basis Function Neural Network Based Super-Resolution Restoration for an Undersampled Image

To achieve restoration of high frequency information for an undersampled and degraded low-resolution image, a nonlinear and real-time processing method the radial basis function (RBF) neural network based super-resolution method of restoration is proposed. The RBF network configuration and processing method is suitable for a high resolution restoration from an undersampled low-resolution image. The soft-competition learning scheme based on the k-means algorithm is used, and can achieve higher mapping approximation accuracy without increase in the network size. Experiments showed that the proposed algorithm can achieve a super-resolution restored image from an undersampled and degraded low-resolution image, and requires a shorter training time when compared with the mulfiplayer perception (MLP) network.     

草鱼冰藏期间新鲜度及热加工性质的变化

以草鱼（冰藏0、1、3、7 d）作为研究对象,探讨冰藏期间鱼肉新鲜度如pH值、挥发性盐基氮（totalvolatile base nitrogen,TVB-N）值、可溶性肌浆蛋白（soluble sarcoplasmic proteins,SSP）值、可溶性肌纤维蛋白（soluble myofibrillar proteins,SMP）值和色泽（L*、a*、b*）的变化规律,以及在巴氏杀菌条件下（80、90 ℃,10 min）蒸煮损失率、收缩面积比及色泽的变化。结果表明：草鱼冰藏过程中,TVB-N值由11.8 mg/100 g增加至16.87 mg/100 g,略低于淡水鱼上限值20 mg/100 g;pH值在前3 d由6.72降低到6.52,之后上升至6.56;SSP值无明显变化,SMP值在前3 d逐渐增加,之后轻微下降;鱼肉色泽变化值（ΔE）逐渐升高,表明鱼肉在冰藏7 d期间新鲜度逐渐下降。在热加工过程中,鱼肉逐渐变成白色,蒸煮损失率、收缩面积比和ΔE值随鱼肉冰藏时间的延长而缓慢下降。

亚麻胶胶囊剂的崩解时限研究

研究了亚麻胶胶囊剂的制备及崩解时限。以亚麻胶粉为原料,将亚麻胶与辅料混合,经研磨、过筛,以干法制粒灌成胶囊剂后,采用单因素试验和正交试验对亚麻胶胶囊剂崩解时限进行研究。结果表明:淀粉、滑石粉等辅料的加入,测得最佳崩解时限工艺条件为m_(亚麻胶)∶m_(淀粉)=1∶3,m_(淀粉)∶m_(滑石粉)=3∶1,研磨时间30 min,亚麻胶胶囊剂的崩解时限为119 s,达到中国药典关于胶囊剂的要求,为亚麻胶产品的利用开辟了一条科学合理、简单方便的新途径。
