Abstract:The market trends of functional dairy productions are summarized. The three mainly trends are emphasized: health, pleasure and convenience. Several yoghurt productions, such as Lactobacillus helveticus-fermented milk, fruit yoghurt, vegetable yoghurt, lactic beverage, high fiber yoghurt, fortified yoghurt and probiotic yoghurt are introduced. The opportunities and strategies in dairy industry according to consumers' needs and demands are discussed.
