摘    要:新疆是辣椒产业的新军,辣椒酱产业是新疆的红色产业,以自然发酵辣椒酱和油制辣椒酱为主,目前新疆辣椒酱的研究仍处 于工艺优化,对其营养和安全方面的分析和检测的研究较少。 该文概述了新疆辣椒酱产业发展的现状及存在问题,并针对区域优势 和市场分布提出了发展对策,对推动新疆产品出口经济的发展具有重要意义。

Abstract:Xinjiang is the new "army" of chili industry, and the chili sauce industry is the "red" industry of Xinjiang,which mainly include natural fer- mented chili sauce and oil chili sauce. At present, research on Xinjiang chili sauce is still in the process optimization, but little research on analysis and detection of the nutrition and safety of chilli. The development status and existed problems of chili sauce industry in Xinjiang were summarized, and the development countermeasures were put forward according to the regional advantages and market distribution, it is of great significance to promote the development of Xinjiang's export economy.
