花期铺膜对蛇龙珠果实及酒品质的影响

摘    要:选取烟台产区蛇龙珠为实验对象,探究在花期进行铺设反光膜处理对果实和葡萄酒品质的影响。结果表明,花期铺膜增加果皮和葡萄酒中的花色苷含量,果皮中的花色苷含量最高,比对照显著提高44.53%(P<0.05);花期铺膜提高了葡萄酒中香气物质关键组分醇类、酯类及萜烯类的含量,分别达6 832.71 μg/L、5 780.86 μg/L及3 219.87 μg/L,其中醇类含量比对照提高27.90%;花期铺膜还改变了果皮中总酚变化趋势,但对单宁的含量及变化趋势影响较小。

Abstract:Using Cabernet Gernischt in Yantai production region area as experimental object, the effect of paving reflecting film (RF) treatment on the quality of fruit and wine during the flowering stage was explored. The results showed that the content of anthocyanin in pericarp and wine with RF treatment was up to 44.53% higher than the control (P<0.05). The content of alcohols, esters and terpenes in the key components of aroma substances in wine were increased up to 6 832.71 μg/L, 5 780.86 μg/L and 3 219.87 μg/L. The content of alcohol was increased by 27.90% compared with the control. The trend of total phenol in the pericarp with RF treatment was changed but the content and trend of tannin in the pericarp with RF treatment were changed a little.
