摘    要:利用实时荧光定量PCR技术及预测微生物学建立可培养酿酒微生物资源数据库和预测微牛物学数学模型,可探究在白酒酿造过程中可培养酿酒微牛物的变化规律及不同环境因素对可培养酿酒微生物菌群变化的影响,为白酒酿造工艺优化提供重要参数。

Abstract:The establishment of liquor culturable microorganisms resource data bank and forecast microbiology mathematical model, which is based on the technique of Real-time PCR and forecast microbiology,could make further understanding of the change laws of each kind of liquor culturable microorganisms in liquor production and the effects of environment factors on the change of liquor culturable microbiological groups. In addition, it could provide important parameters for the optimizing of craft of liquor production.
