摘    要:硒是人体必需的微量元素之一,具有多种生理功能.相较于亚硒酸钠等无机态硒,有机硒的生物利用率高,毒副作用小,是机体补充硒元素的重要途径.无机态硒可通过植物的生物转化变成有机态硒,主要以硒蛋白的形式储存在植物体内.所以,蛋白含量高且富硒植物是获得有机态硒的有效途径.许多学者对富硒植物蛋白的生理功能进行研究,发现其效果显著,...

Research Progress of Selenium-enriched Plant Protein
Abstract:Selenium is one of the essential trace elements in human body and has many physiological functions. Compared with inorganic selenium such as sodium selenite, organic selenium has higher bioavailability and less toxic and side effects, which is an important way for the body to supplement selenium. The inorganic form of selenium can be transformed into organic form by plant biology and stored in plants mainly as selenoprotein. Therefore, it is an effective way to obtain organic selenium from selenium-rich plants with high protein content. A large number of studies have found that selenoprotein extracted from selenium-rich plants and its physiological functions have been studied with remarkable results. In this paper, the extraction methods of selenium-rich plant protein and its physiological functions, such as anti-oxidation, anti-tumor, anti-inflammatory and enhancing immunity, were reviewed in detail, which provided a theoretical basis for further study of selenium-rich plant protein and its physiological functions, and made contributions to the protection of human health.
