浓香型白酒流酒速度与产品质量关系的研究

摘    要:浓香型白酒蒸馏过程中,不同流酒速度对曲酒产量、质量会产生不同的影响。该文通过调整蒸汽压力的方法控制流酒速度,研究了流酒速度对曲酒产、质量的影响。结果表明:当蒸汽压力控制在0.013MPa~0.017MPa范围内流酒时,曲酒的产量、质量最佳。

Abstract:During the distillation of Luzhou style liquor, the different velocities of distillation have different effects on quantity and quality of the liquor. The method of adjusting steam pressure was used to control velocity of distillation. The effect of different velocity of distillation on yield and quality of liquor were studied. The results showed that when the steam pressure was 0.013MPa-0.017MPa, the high yield and quality of liquor were obtained.
