本文研究了富硒啤酒酵母的自溶条件,并利用酶制剂改进其自溶条件,确定了富硒啤酒酵母的最适水解条件。

Abstract:
This paper study autolysis condition of selenium-enriched brewer's yeast, and the autolysis of selenium-enriched brewer's yeasts was improved by adding enzyme. Finally the best autolysis condition of selenium-enriched brewer's yeast was obtained.
