摘    要:简要介绍了上世纪八十年代白酒行业微生物细胞固定化技术研究和应用情况。天津酿酒厂和天津啤酒厂合作,研究成功PVA和颗粒活性炭两种己酸菌固定化新材料。颗粒活性炭通过生产规模试验,产酸可达620mg/100m L以上,比传统方法提高两倍,比国内最先用于固定化细胞的琼脂包埋法提高29.4%,载体使用次数提高近两倍,达29次以上。细胞固定化技术,极大的简化了己酸菌培养工艺,降低发酵液成本,对提高津酒和同一类浓香型白酒质量,展示出很大潜力和美好前景,试验中还与南开大学合作,拍了电子显微镜照片,可清楚地看到菌体形态。
