摘    要:概述了膳食纤维具备独特生理功效与其物理特性的关系,对抗氧化膳食纤维研究状况及应用做了系统分析,综述了目前膳食纤维的复合改性方法及提取和加工等生产工艺对膳食纤维性质的影响。

Abstract:An overview of the effectiveness of dietary fiber has unique physical relationship with their physical properties, and antioxidant dietary fiber research situation and application made a systematic analysis ; overview of dietary fiber in the composite modification methods of extraction and processing of such pairs of the nature of dietary fiber impact.
