摘    要:文章综述了香辛料精油的主要成分、提取方法,以及国内外对香辛料精油的研究进展,此外还介绍了香辛料精油在食品工业的应用,并且对其应用前景做出展望.

Abstract:This paper summarized the main composition,the extraction methods of spices flavour.domestic the foreign research progress of oil and also introduces the applications of spices flavour in food industry in recent years were summarized,and the application future was prospected.
