摘    要:西藏酒业缺少基础规模,更缺少优质酒,这是白酒行业的遗憾。著名白酒权威沈怡方、金佩璋夫妇为了西藏酒业的发展,不顾年迈及高原反应,毅然进藏考察西藏白酒业。对西藏的气候、水质、微生物环境、酿酒原料等进行了细致的考察。认为:继承传统西藏酿酒工艺的精华,并融入现代工艺的手段,谋求创新发展,是确保西藏酿酒产业的固有特色,并使其健康发展的必由之路。(丹妮)

Abstract:Scarcity of quality liquor products and small manufacturing scales of distilleries in Tibet had always been the regrets in liquor-making industry in C hina. Famous liquor expert SHEN Yi-fang, along with his wife JIN Pei-zhang, with out respect to their old age and probable altitude stress, made first-hand inves tigation on liquor-making conditions including climate, water quality, microbes environment and liquor-making raw materials etc. in Tibet in order to advance qu ick development of liquor industry there. After the investigation, Mr. SHEN beli eved that selective inheritance of traditional Tibet liquor-making techniques in corporating with modern techniques was the necessary approach to ensure original features and health development of liquor-making industry in Tibet.(Tran. by YU E Yang)
