摘    要:利用紫外和硫酸二乙酯对出发酵母菌株进行复合诱变,三重筛选获得高级醇产量少的菌株。同时采用响应面分析方法对发酵条件进行优化,得到最优发酵参数。中试发酵得到总高级醇含量70.67mg/L,感官和其它理化指标优良的啤酒。

Abstract:The good strain of lower higher alcohols was got by compound mutation of UV-DES with triplication screening. The fermentation conditions were optimized by using response surface analytical method and the optimization fermentation parameters were got. The beer with lower higher alcohols and good sense and physical and chemical indicators were got by pilot beer fermentation.
