Volatile Compounds Produced in L-Cysteine/D-Glucose Model System by Sunlight Irradiation

Abstract:Samples of the browning model system consisting of L-cysteine and D-glucose were exposed to sunlight or held in the dark for 1 to 28 days to determine the effect of sunlight on the volatile compounds formed. Nitrogen- and sulfur-containing compounds predominated. 2-Acetylthiazole was one of the major compounds of the sample exposed to sunlight but was not found in the samples kept in darkness. Other compounds including thiazoles and thiophenes were produced in greater quantities in the samples exposed to light.
