颗粒冷水可溶淀粉制备技术研究

摘    要:研究了采用乙醇-碱溶液处理方法制备颗粒冷水可溶淀粉的工艺技术。以溶解度和粘度作为评价指标,通过正交试验和响应面分析,得出制备颗粒冷水可溶淀粉的工艺中反应温度与乙醇浓度对溶解度影响显著,反应温度、碱用量、乙醇浓度及反应温度与碱用量、碱用量与乙醇用量的交互作用对粘度影响显著。

Abstract:The technology of preparing granular cold - water - soluble starch in a mixture of ethanol - aqueous alkali at atmospheric pressure was studied. The success of the method was estimated by measuring the solubility and viscosity of the modified starch. It is observed that the starch solubility is significantly correlative with the reaction temperature, the percentage of ethanol, and the volume of alkali. Interaction between alkali volume and reaction temperature, as well as interaction between alkali volume and ethanol percentage greatly influence the starch viscosity.
